Very good. 00:01:44.10\00:01:47.27 We will be preparing a special dish called Tostada. 00:01:47.30\00:01:51.67 Tostada has its name from the word toast. 00:01:51.71\00:01:58.25 Because in the old days when people didn't use their 00:01:58.28\00:02:02.15 tortilla's and they became old...before they became rancid, 00:02:02.18\00:02:08.12 what they end up doing is put them somewhere where there 00:02:08.16\00:02:15.00 is some sort of heat. Then as they were leaving that tortilla 00:02:15.03\00:02:19.43 there for a while, it became hardened, it became toasted 00:02:19.47\00:02:22.97 and in that way they could reuse that tortilla. 00:02:23.00\00:02:26.78 Today we have two forms of tortilla's, 00:02:26.81\00:02:31.48 we have the baked ones and the fried ones. 00:02:31.51\00:02:36.55 We prefer to have the toasted ones even though the still 00:02:36.58\00:02:42.12 the fried ones can be an option once in a while type of dish. 00:02:42.16\00:02:48.23 Susan what do we need for this dish apart from the Tostadas? 00:02:48.26\00:02:54.30 Well apart from the Tostadas we will need some refried beans 00:02:54.34\00:02:57.97 which you can prepare your beans the day before. 00:02:58.01\00:03:00.78 Then you can cook them and you can just mash them up, 00:03:00.81\00:03:04.91 the refried beans as we had mentioned before... 00:03:04.95\00:03:07.38 They're not fried, they're just mashed basically... 00:03:07.42\00:03:09.92 you can mash them with a little bit of cooked onion 00:03:09.95\00:03:12.15 and then we have some salsa. You can also bake the tortillas 00:03:50.09\00:03:54.56 couldn't you? That's right. This dish is actually an Arabic 00:07:23.64\00:07:28.04 dish. The history of how this came into our home... 00:07:28.08\00:07:31.41 One time we saw a documentary from Tunisia and they had this 00:07:31.45\00:07:37.52 yummy dish they were eating there and as we investigated 00:07:37.55\00:07:41.49 we realized that this dish was called LaBlabi. 00:07:41.52\00:07:45.53 In order to help us with this dish of LaBlabi, we have the 00:07:45.56\00:07:50.10 help of my middle daughter. What is your name? Rebekah. Rebekah. 00:07:50.13\00:07:55.40 One of the main things in this dish is going to be chick peas. 00:07:55.44\00:08:01.58 Now you can call this La Blabi or you can call this Mexican, 00:08:01.61\00:08:06.25 Arabic, Garbanzos, either way will fit well. 00:08:06.28\00:08:10.35 Mexican dishes have some influences from the 00:08:10.39\00:08:15.96 Arabic world. They started due to the history of Spain. 00:08:15.99\00:08:22.36 Arabic's conquered Spain, they stayed in Spain many years 00:08:22.40\00:08:28.17 and they brought with them many food items, spices, 00:08:28.20\00:08:32.14 and so forth. Then these Spanish went and conquered Latin America 00:08:32.17\00:08:38.01 and brought some of those things to Latin America. 00:08:38.05\00:08:41.15 That's what that influence of the Arab world is a little bit 00:08:41.18\00:08:45.42 present on Mexican dishes. 00:08:45.45\00:08:48.26 So Susan what ingredients do we need to make this dish? 00:08:48.29\00:08:53.19 We are going to use two tablespoons of Olive Oil, 00:08:53.23\00:08:57.50 we're going to use four garlic cloves crushed, 00:08:57.53\00:09:00.50 we're going to use one table- spoon of cumin, 00:09:00.54\00:09:03.47 one tablespoon of Paprika, we have 1/4th to 1/2 cup of lemon, 00:09:03.51\00:09:08.64 depending on your taste, we like a lot of lemon. 00:09:08.68\00:09:11.31 To garnish, we have the Humus and the tomatoes which we'll 00:09:11.35\00:09:14.55 put on our bread later after we have our Garbanzo's ready 00:09:14.58\00:09:17.39 to cook. As in the Arab world, in Mexico what you do with 00:09:17.42\00:09:23.26 the older tortillas, you can put them in some sort of heat 00:09:23.29\00:09:28.33 for some time and they will become hardened 00:09:28.36\00:09:30.27 and you can keep them longer. In the Arab world you can 00:09:30.30\00:09:34.00 actually have that bread that is getting old, what they do, 00:09:34.04\00:09:38.37 they put them on their heat also and they toast that bread 00:09:38.41\00:09:42.31 so they can last longer...This is a dish that is served 00:09:42.34\00:09:45.88 for breakfast and is served over some toasted bread. 00:09:45.91\00:09:50.69 What do we do Susan to cook this dish? 00:09:50.72\00:09:53.59 What we are going to do is put our olive oil in the pan 00:09:53.62\00:09:57.39 to sauté a little bit the garlic. 00:09:57.43\00:10:04.87 The garlic you have to watch very carefully because garlic 00:10:06.60\00:10:09.90 burns easily. So we are just going to sauté it a little bit 00:10:09.94\00:10:14.71 and then we'll add our seasonings. Now our garbanzos 00:10:14.74\00:10:19.08 are pre-cooked, they've been cooked for a while, they're also 00:10:19.11\00:10:24.22 pre-salted so you shouldn't need to add much more salt 00:10:24.25\00:10:28.42 to your garbanzos, you can just salt it as needed. 00:10:28.46\00:10:31.29 Once we have our garlic cooked a little bit, you can start to 00:10:31.33\00:10:36.60 smell the aroma and garlic always smells so good 00:10:36.63\00:10:39.23 when it's cooking. Be careful with your garbanzos 00:10:39.27\00:10:42.97 or chick peas, make sure that you cook them well. 00:10:43.00\00:10:46.24 I've seen some people that are not used to eating chick peas 00:10:46.27\00:10:49.04 and those chick peas are hardened and it's just not the 00:10:49.08\00:10:53.25 nicest sensation to be eating hard chick peas. 00:10:53.28\00:10:56.62 Yes and I do not like crunchy chick peas, I like my chick peas 00:10:56.65\00:11:01.29 my garbanzos to be nice and soft. Already you can start 00:11:01.32\00:11:05.29 to smell the flavors of the cumin and paprika, 00:11:05.33\00:11:08.46 doesn't that smell good Rebekah? Yes. Thank you sweetheart. 00:12:01.18\00:12:05.49 What's nice about the garbanzos is that the flavor is actually 00:12:05.52\00:12:12.96 better the next day so this is a dish that I love to do 00:12:12.99\00:12:16.56 for Sabbath because the flavor just intensifies while it's 00:12:16.60\00:12:20.30 sitting and...but there is one ingredient that you are not 00:12:20.34\00:12:25.84 going to put until the last minute and that's the lemon 00:12:25.87\00:12:28.84 juice. So if I was going to leave these over for Sabbath, 00:12:28.88\00:12:32.48 for the next day, I would just let them go to the refrigerator 00:12:32.51\00:12:37.19 like this and the next day when I heated up my garbanzos, 00:12:37.22\00:12:40.59 once they are well heated like these are, 00:12:40.62\00:12:43.09 I would just add the lemon juice...Rebekah, do you want 00:12:43.12\00:12:45.43 to give me the lemon juice? That lemon juice does something 00:12:45.46\00:12:53.44 with those spices, it just brings the flavor much better. 00:12:53.47\00:12:57.54 Alright Rebekah, what are we going to put on our bread 00:12:57.57\00:13:03.45 with our garbanzos? Some humus. 00:13:03.48\00:13:05.85 Okay you want to go ahead and start putting the humus 00:13:05.88\00:13:07.52 on your bread because we're just about ready to serve them? 00:13:07.55\00:13:10.49 Again, humus is not a Mexican dish, it's an Arabic dish but 00:13:10.52\00:13:17.73 yet it mixes very well with this garbanzo dish. 00:13:17.76\00:13:21.90 As much as you like there... It may seem strange to eat bread with a fork but it just 00:13:52.66\00:13:55.50 tastes so good... and we like to finish it up with some 00:13:55.53\00:13:59.23 chopped tomatoes on top. It manifests itself with skin problems, 00:14:49.88\00:14:54.26 stomatal problems and the fact that is has such high levels of 00:14:54.29\00:14:59.16 cholesterol...It's not the best thing for your cardiovascular 00:14:59.19\00:15:03.30 health. Instead, here's a nice way of closing a meal 00:15:03.33\00:15:07.74 in a healthy way. This dish... will be helping us to make this 00:15:07.77\00:15:14.11 dish, my youngest daughter, what is your name? 00:15:14.14\00:15:17.31 Elizabeth. Elizabeth.
