Yes, and the fact that we have 00:03:02.34\00:03:06.55 actually made this on a number of occasions, for birthdays 00:03:06.58\00:03:09.48 it's something that you can make easy and it's very easy 00:03:09.52\00:03:12.29 to eat. So to start with, we have our cooked cauliflower 00:03:12.32\00:03:16.16 here, we're just going to dump this in the bowl like we are 00:03:16.19\00:03:18.96 going to do everything else. 00:03:18.99\00:03:20.33 You'll see that it's quite fast once... the work is involved 00:03:20.36\00:03:24.27 in cutting up all the vegetables and that's why you get your 00:03:24.30\00:03:29.00 children on board, right Talitha. 00:03:29.04\00:03:30.37 So they can help doing all that cutting work. 00:03:30.41\00:03:33.41 One of the keys here is you are going to use healthy ingredients 00:03:33.44\00:03:39.15 that are fresh, that makes a big difference. 00:03:39.18\00:03:43.05 Some people like to put this Civiche in the fridge after it's 00:03:43.08\00:03:49.02 prepared so it's nice and cold, this makes it an ideal dish 00:03:49.06\00:03:53.19 for a hot day but you can use it immediately after putting 00:03:53.23\00:03:57.50 all the ingredients. Another thing I want to mention 00:03:57.53\00:04:01.74 about chili, there's a little misconception about chili's. 00:04:01.77\00:04:05.07 In Mexico there's more than 100 different types of chili's. 00:04:05.11\00:04:10.65 When people think chili, they think jalapeno, spicy. 00:04:10.68\00:04:14.65 That's actually the wrong association, there is a wide 00:04:14.68\00:04:18.55 variety of chili's, some of them just give color, 00:04:18.59\00:04:21.29 some of them just give taste and I actually discourage 00:04:21.32\00:04:25.83 people from eating chili's that are spicy because that's 00:04:25.86\00:04:31.17 irritating, that's actually not the best thing for you. 00:04:31.20\00:04:33.47 But chili's that give color, chili's that give flavor 00:04:33.50\00:04:37.67 are actually really good for you as they provide a good amount 00:04:37.71\00:04:42.24 of antioxidants. So now we have put all the ingredients... 00:04:42.28\00:04:46.11 So now what are we doing? We are just stirring this 00:04:46.15\00:04:48.78 and I also want to mention too, here we've used fresh tomato 00:04:48.82\00:04:53.76 juice. Now in Mexico what they use is something called Clamato. 00:04:53.79\00:04:58.33 What kind of tomato juice is that? 00:04:58.36\00:05:00.80 It's a tomato juice that they add clams, so that's not the 00:05:00.83\00:05:06.50 best thing for you, so it is better for you to use 00:05:06.53\00:05:10.57 tomato juice. You can make your own or you can get 00:05:10.61\00:05:13.27 a store bought tomato. Yeah and some people I think even use 00:05:13.31\00:05:17.51 ketchup to don't they. Now in Mexico when you say lemon, 00:05:35.20\00:05:38.73 are you referring to the yellow lemon? 00:05:38.77\00:05:41.20 In Mexico what they call lemon is the little lime that 00:05:41.24\00:05:46.04 in some other parts of the world they call the lime, 00:05:46.07\00:05:48.14 that is called the lemon in Mexico. 00:05:48.18\00:05:50.65 So usually this dish, after you prepare it, 00:05:50.68\00:05:54.15 the way that you serve this is you like to put it either on 00:05:54.18\00:05:58.75 crackers or this toasted tortilla's that are called 00:05:58.79\00:06:04.56 tostadas', or you can put it in a little dish and eat it 00:06:04.59\00:06:10.07 with some chips. 00:06:10.10\00:06:11.43 Yes, and some people eat them with chili's on top, 00:06:11.47\00:06:14.87 we don't use chili's, what do we like to put on top? 00:06:14.90\00:06:18.34 Avocado. Well, we are going to be using prepared black beans 00:07:14.96\00:07:19.37 which I've prepared. We soaked and we cooked the black beans 00:07:19.40\00:07:22.77 and you know in Mexico when my mother-in-law makes 00:07:22.80\00:07:25.87 black beans, she doesn't chop up the onion and the garlic, 00:07:25.91\00:07:29.08 she actually just puts in the whole onion and the whole garlic 00:07:29.11\00:07:33.62 in with the beans while they are cooking and once the beans 00:07:33.65\00:07:36.52 are cooking, then we actually take out the onion and garlic 00:07:36.55\00:07:40.89 and discard it. Something that I can have and this is 00:11:08.10\00:11:11.33 something...when do you usually eat Enfrijolada's Eddie? 00:11:11.37\00:11:14.50 Many people use them for breakfast but some people 00:11:14.54\00:11:18.61 like to have them for their tea or also in the middle of the 00:11:18.64\00:11:23.08 day type of meal, but at home usually we have them 00:11:23.11\00:11:26.85 mostly for breakfast. This is the type of breakfast 00:11:26.88\00:11:30.09 you want to have, nice nutritious that will give you 00:11:30.12\00:11:34.09 that energy that will last the whole day, especially in the 00:11:34.12\00:11:38.46 morning as you are starting your day. 00:11:38.49\00:11:40.43 And so people, you are going to using some tortillas... 00:11:40.46\00:11:44.97 some people like to fry the tortillas. 00:11:45.00\00:11:47.40 It's not the best thing to fry those tortillas because 00:11:47.44\00:11:51.34 you add more fat and so forth, it is much better to just warm 00:11:51.37\00:11:57.38 the tortillas and put it in the dish as Susan will do that 00:11:57.41\00:12:01.82 in a minute. 00:12:01.85\00:12:03.18 You know speaking of having the beans for breakfast, 00:12:03.22\00:12:06.09 when Talitha was having finals in her school 00:12:06.12\00:12:10.83 I asked her, okay Talitha, what food do you want to have for 00:12:10.86\00:12:14.03 breakfast. She said mom, I want to have beans because she knew 00:12:14.06\00:12:17.63 that beans were going to give her the energy and the clarity 00:12:17.67\00:12:19.93 of mind that she needed to do well in her finals and she did, 00:12:19.97\00:12:22.10 she did very well in her finals. 00:12:22.14\00:12:23.71 So now that I have my beans smashed, and there are 00:12:23.74\00:12:27.61 some people that prefer to put the beans actually in a blender, 00:12:27.64\00:12:30.81 but I like them smashed myself, I don't like them to be 00:12:31.11\00:12:34.55 so liquid.
