Hello and welcome to "Health for a Lifetime" 00:00:47.10\00:00:48.85 I'm your host Don Mackintosh, 00:00:48.88\00:00:50.21 and today, I'm going to be talking with Dr. David DeRose 00:00:50.24\00:00:52.89 Welcome back doctor! 00:00:52.92\00:00:54.24 Good to be back with you, Don 00:00:54.27\00:00:55.43 Now you work at the Lifestyle Center of America 00:00:55.46\00:00:57.78 in preventive medicine. 00:00:57.81\00:00:59.69 What exactly does that mean? 00:00:59.70\00:01:00.99 Well, you know, most people, Don, when they think of 00:01:01.02\00:01:03.02 preventive medicine, they think of preventing things 00:01:03.05\00:01:05.20 from ever happening in the first place... 00:01:05.23\00:01:07.05 and that really is a part of preventive medicine. 00:01:07.08\00:01:09.07 That's what we call primary prevention... 00:01:09.10\00:01:11.11 preventing a disease process, or condition from ever occurring 00:01:11.14\00:01:14.91 But really, much of what we do 00:01:14.94\00:01:16.52 at the Lifestyle Center of America is secondary prevention 00:01:16.55\00:01:20.17 and tertiary prevention. 00:01:20.20\00:01:22.58 Wow, that sounds like a very important work. 00:01:22.61\00:01:24.61 Yeah, we usually don't tell the public about that... 00:01:24.64\00:01:27.29 but we tell them... we're helping them with 00:01:27.32\00:01:29.02 their disease processes. 00:01:29.05\00:01:30.85 So people come to us with their diabetes, or their heart disease 00:01:30.88\00:01:34.38 ...their high blood pressure, their weight problems, 00:01:34.41\00:01:36.46 their cholesterol problems, their arthritis. 00:01:36.49\00:01:38.92 They come with these conditions and we intervene... 00:01:38.93\00:01:42.14 We work with them on a lifestyle-based program 00:01:42.17\00:01:44.96 trying to deemphasize the need for medications; 00:01:44.99\00:01:48.41 trying to avoid surgery, and use more natural 00:01:48.42\00:01:51.43 lifestyle-based approaches. 00:01:51.46\00:01:52.98 So "lifestyle," what exactly is that? 00:01:53.01\00:01:54.81 Well lifestyle has to do with the things that we choose 00:01:54.84\00:01:57.24 to do on a day-to-day basis. 00:01:57.27\00:01:58.77 It has to do with how we sleep... 00:01:58.80\00:02:00.70 how many hours we sleep. 00:02:00.73\00:02:01.90 It has to do with how we eat. 00:02:01.93\00:02:03.55 It has to do with whether or not we exercise, 00:02:03.58\00:02:05.87 and if we do, what we choose to do. 00:02:05.90\00:02:07.64 It has to do with our social contacts... 00:02:07.67\00:02:09.56 our spirituality. 00:02:09.59\00:02:10.63 Let's talk about eating... you know, I hear a lot about 00:02:10.66\00:02:12.92 vegetarian diets, and there's 00:02:12.95\00:02:15.65 a lot of benefits we hear about that. 00:02:15.68\00:02:18.48 Do you have to be a total vegetarian to 00:02:18.51\00:02:20.88 get the maximum benefits? 00:02:20.91\00:02:22.53 Well, it's an interesting question 00:02:22.57\00:02:25.09 the way you ask it, Don. 00:02:25.10\00:02:26.32 Let me tell it to you this way, first. 00:02:26.35\00:02:28.57 The more we move in the direction of a plant-based diet, 00:02:28.60\00:02:31.88 the more we get a number of benefits; 00:02:31.89\00:02:33.84 when it comes to heart disease, 00:02:33.87\00:02:35.71 when it comes to cholesterol reduction, 00:02:35.72\00:02:37.63 cancer prevention... 00:02:37.66\00:02:39.00 But you don't have to be a TOTAL 00:02:39.03\00:02:40.93 vegetarian to get some benefit. 00:02:40.96\00:02:42.78 In other words, someone who starts decreasing their meat 00:02:42.81\00:02:45.36 and eating more fruits and vegetables, 00:02:45.39\00:02:47.01 is going to benefit themselves in terms of decreasing their 00:02:47.04\00:02:50.14 risk of a host of killer diseases. 00:02:50.17\00:02:52.09 A recent study in Iowa, looking at women's health... 00:02:52.12\00:02:55.81 They found that women who were eating more whole grains, 00:02:55.84\00:02:58.55 for example, were decreasing their risks... substantially 00:02:58.58\00:03:02.00 of developing diabetes in a short a time as 00:03:02.03\00:03:05.03 5 years down the road. 00:03:05.06\00:03:06.59 So using more whole grains like whole wheat, 00:03:06.60\00:03:09.43 and whole oats, instead of, maybe, so much 00:03:09.46\00:03:12.18 meat and fat, butter, cheese... 00:03:12.21\00:03:15.08 These women are benefiting their health. 00:03:15.11\00:03:17.80 But the more we move in that direction of eating more 00:03:17.83\00:03:20.34 plant foods, the more it seems, we benefit. 00:03:20.37\00:03:22.52 Classic case in point is with prostate cancer... 00:03:22.55\00:03:25.49 in the famous Adventist Health Study. 00:03:25.52\00:03:27.34 They looked at men and their eating habits 00:03:27.37\00:03:30.05 in terms of things like meat, things like milk, 00:03:30.06\00:03:33.41 things like eggs, things like cheese. 00:03:33.44\00:03:35.29 They looked at each of those categories, 00:03:35.32\00:03:37.07 and the more of those animal products they ate, 00:03:37.10\00:03:40.16 the higher the risk of death from prostate cancer. 00:03:40.19\00:03:44.02 So it does really matter... 00:03:44.05\00:03:45.25 and even small changes can make a big difference. 00:03:45.29\00:03:47.97 That's the message I try to give people. 00:03:48.00\00:03:50.26 They don't have to be overwhelmed by the 00:03:50.30\00:03:52.53 thought of being a total vegetarian. 00:03:52.56\00:03:54.38 Move in that direction, and you're going 00:03:54.41\00:03:56.47 to experience benefits. 00:03:56.50\00:03:57.94 Should anyone NOT be a vegetarian? 00:03:57.95\00:04:00.21 Should anyone NOT be a vegetarian... 00:04:00.24\00:04:01.87 In other words, should everyone 00:04:01.90\00:04:03.17 BE a vegetarian... another way to say that. 00:04:03.20\00:04:05.26 Well, Don, I like people to know... when I work with 00:04:05.30\00:04:08.63 them as my patients, when I speak publically, 00:04:08.66\00:04:10.83 when we're doing this program together... 00:04:10.86\00:04:12.47 I don't want people to feel 00:04:12.48\00:04:13.95 like they've got to be a vegetarian. 00:04:13.98\00:04:16.00 That is not the BIG message in health. 00:04:16.03\00:04:18.68 The message that I try to give is... Yes, 00:04:18.71\00:04:21.00 the research is pointing to the vegetarian diet 00:04:21.03\00:04:24.03 as being the optimal diet... The best diet. 00:04:24.06\00:04:26.52 But if a person feels that they can't embrace that diet 00:04:26.55\00:04:29.81 for whatever reasons... 00:04:29.82\00:04:31.06 If they feel socially; if they 00:04:31.09\00:04:33.23 feel physically there's problems with it... 00:04:33.26\00:04:35.40 If they feel income-wise... 00:04:35.44\00:04:36.72 Now, it's interesting, Don, the income issue... 00:04:36.76\00:04:39.04 Because most people find that when they adopt a 00:04:39.07\00:04:41.24 vegetarian diet, they save a lot of money. 00:04:41.27\00:04:43.38 But whatever the barriers are, you don't have to 00:04:43.41\00:04:46.19 look at this huge MOUNTAIN and say... 00:04:46.22\00:04:48.16 "I can't climb the mountain" 00:04:48.17\00:04:49.25 "I can't be a total vegetarian" 00:04:49.28\00:04:50.83 ...Start moving in that direction, add more fruits. 00:04:50.86\00:04:53.48 Add more vegetables. Add more whole grains. 00:04:53.49\00:04:55.72 Add the beans and the nuts! 00:04:55.75\00:04:57.22 All of these things have been demonstrated 00:04:57.25\00:04:59.37 to make a difference as far as our health. 00:04:59.40\00:05:01.30 Well let's say... I really like my milk, 00:05:01.33\00:05:03.14 I really like my eggs, I really like my cheese, 00:05:03.17\00:05:05.31 and I like a little bit of my meat too... 00:05:05.34\00:05:08.21 You know, let's say I just 00:05:08.24\00:05:10.69 REALLY don't want to give those things up. 00:05:10.72\00:05:12.30 What do you say to patients like that, 00:05:12.33\00:05:13.88 that come to the Lifestyle Center of America? 00:05:13.91\00:05:15.56 Don... NOBODY likes to change. 00:05:15.59\00:05:18.58 NONE OF US DO! 00:05:18.62\00:05:19.68 We're comfortable with the way we live. 00:05:19.72\00:05:22.87 But the beauty of lifestyle change is the way 00:05:22.90\00:05:26.14 the Creator made us. 00:05:26.17\00:05:27.78 God created us with the ability to choose 00:05:27.81\00:05:32.26 what we will enjoy, and when we realize that 00:05:32.29\00:05:35.33 and we realize that I can develop new tastes, 00:05:35.36\00:05:37.37 new enjoyments, I can look at changing lifestyle 00:05:37.40\00:05:41.08 as an adventure rather than a burden. 00:05:41.11\00:05:44.66 I gotta tell you about a patient who came to the 00:05:44.69\00:05:46.98 Lifestyle Center of America... "Larry Martin" 00:05:47.01\00:05:49.40 Now Larry is a high-powered engineer. 00:05:49.43\00:05:53.50 He's literally a rocket scientist. 00:05:53.53\00:05:55.70 From NASA... or something like that. 00:05:55.73\00:05:57.02 You got the idea. 00:05:57.03\00:05:58.30 And Larry came to us from Texas, and he had drawn some 00:05:58.33\00:06:02.64 lines before he came. 00:06:02.67\00:06:04.29 He was a man who liked his meat. 00:06:04.32\00:06:06.06 He wasn't really open to change, 00:06:06.07\00:06:08.88 but he was willing to come to the Lifestyle Center of America 00:06:08.91\00:06:11.89 where we serve a total vegetarian diet, 00:06:11.92\00:06:14.07 and some dramatic things happen. 00:06:14.10\00:06:16.76 We've got a clip of Larry sharing himself 00:06:16.79\00:06:19.51 with what happened during that time... 00:06:19.54\00:06:20.74 Probably nothing more eloquent than listening to Larry himself 00:06:20.77\00:06:23.00 Let's join Larry... 00:06:23.03\00:06:24.09 Ha, ha, ha, ha... YES... that was probably 00:06:28.38\00:06:33.39 the biggest surprise I had here... 00:06:33.42\00:06:35.70 other than all the staff and the apparent care and interest 00:06:35.73\00:06:41.44 that they had. 00:06:41.47\00:06:43.87 I don't guess I'd ever had a meal in my life 00:06:43.90\00:06:47.14 that didn't have at least one type of meat on it. 00:06:47.17\00:06:51.86 And, on the literature you sent me before I came down, 00:06:51.89\00:06:59.74 you had this nice little quiet phrase buried in all of that 00:06:59.77\00:07:03.69 that said, "You'll get to enjoy 3 wonderful 00:07:03.72\00:07:06.81 vegetarian meals a day. " 00:07:06.84\00:07:09.13 And I knew that someone had lost their mind. 00:07:09.16\00:07:16.56 It just... That wasn't going to be! 00:07:16.59\00:07:19.20 But then I convinced myself that I could put up with it 00:07:19.23\00:07:26.19 for a while... being an engineer and all that type of thing, 00:07:26.20\00:07:29.75 I knew I could make that happen. 00:07:29.76\00:07:33.51 So I got in my truck and started up here. 00:07:33.54\00:07:36.32 But long about "Ardmore," I'd run into a 00:07:36.35\00:07:40.74 significant moment of weakness, 00:07:40.77\00:07:43.00 and I pulled into a grocery store there, 00:07:43.03\00:07:46.97 and I bought $93-worth of prepared meats 00:07:47.00\00:07:50.88 and hid it in my luggage. 00:07:50.91\00:07:52.69 All the jerky they had... things like that, 00:07:52.72\00:07:57.43 because I knew darn good and well, 00:07:57.46\00:07:58.83 I wasn't going to last 19 days with no meat. 00:07:58.86\00:08:02.75 Got up here and I quickly hid it in the chest, 00:08:02.78\00:08:06.94 and covered it up with all my clothes and all that, 00:08:06.97\00:08:09.52 but I knew exactly... I had it laid out where I knew 00:08:09.55\00:08:12.46 all the different things I had, and I was visualizing 00:08:12.49\00:08:15.44 how great they were going to be to go with this 00:08:15.47\00:08:17.23 bunch of vegetables you guys were going to try to feed me. 00:08:17.26\00:08:20.14 Surprisingly enough, as you are well aware, 00:08:20.17\00:08:23.93 I gave that entire stock, totally unopened, 00:08:23.94\00:08:28.07 to my doctor when I left here because I never missed it. 00:08:28.10\00:08:32.13 I loved the food... It was fantastic! 00:08:32.16\00:08:38.08 That's an amazing story! 00:08:38.11\00:08:42.17 Hides the jerky... ha, ha, ha 00:08:42.20\00:08:45.24 Yeah... He had all this contraband meat 00:08:45.27\00:08:47.19 in our vegetarian institution. 00:08:47.22\00:08:48.93 So what happened? 00:08:48.96\00:08:49.96 Did he bring it down to a program and CONFESS? 00:08:49.99\00:08:52.93 That's what he did... at the graduation, 00:08:52.96\00:08:55.33 He said, "Look it, I never needed this stuff. " 00:08:55.36\00:08:58.47 And he gave it all to the physician who was caring for him 00:08:58.50\00:09:02.73 The thing that it illustrates, Don, is here was someone 00:09:02.74\00:09:06.93 who was a dyed-in-the-wool meat-eater... 00:09:06.96\00:09:08.82 He could not imagine life as a vegetarian 00:09:08.85\00:09:12.07 but he made a critical decision. 00:09:12.10\00:09:15.15 He was actually going to try a vegetarian lifestyle for a while 00:09:15.18\00:09:19.48 Now if you heard him talking, 00:09:19.51\00:09:20.80 that wasn't really why he came to us. 00:09:20.83\00:09:22.41 He came to us because he had other health problems 00:09:22.44\00:09:24.92 but he was kind of hedging his bets... 00:09:24.95\00:09:28.02 He didn't burn all his bridges, but he was willing to 00:09:28.05\00:09:30.72 try a vegetarian diet though. 00:09:30.75\00:09:33.33 And once the guy starts eating it, 00:09:33.36\00:09:35.51 he says, "this is really palatable" 00:09:35.52\00:09:38.12 This is a good diet! 00:09:38.15\00:09:39.74 And I want to give a message to people, Don... 00:09:39.77\00:09:42.32 If they feel like they've tried vegetarian foods, 00:09:42.35\00:09:45.02 and it doesn't taste good, 00:09:45.03\00:09:46.31 they've been eating the wrong foods! 00:09:46.35\00:09:48.51 They haven't been eating foods from the right chef. 00:09:48.55\00:09:50.80 Now, I'm exaggerating a little bit... 00:09:50.83\00:09:53.83 Because it does take a while for our tastes to change. 00:09:53.86\00:09:57.30 But the point is, if we make a change and stick with it... 00:09:57.33\00:10:00.41 Larry did it for 19 days... 00:10:00.44\00:10:02.58 Let me ask you this question, speaking about choice... 00:10:02.61\00:10:05.66 It's all well and good... we hear Larry, 00:10:05.69\00:10:07.65 and it's quite amusing, and yet he made a choice. 00:10:07.68\00:10:11.19 Is there any scientific data that goes along with our 00:10:11.22\00:10:14.05 ability to make a choice? 00:10:14.08\00:10:15.40 Have scientists found out that we can, indeed, 00:10:15.43\00:10:18.12 make choices and actually change? 00:10:18.15\00:10:20.08 Oh, I mean, this is very clear when it comes to 00:10:20.11\00:10:22.73 dietary practices; study after study, 00:10:22.76\00:10:25.54 I mean a classic study has to do with salt. 00:10:25.57\00:10:27.50 When people dramatically decrease their salt consumption, 00:10:27.53\00:10:30.77 the food, at first, tastes bland! 00:10:30.80\00:10:32.85 People could say, "Well, am I going to live the 00:10:32.88\00:10:34.66 rest of my life enjoying this bland food?" 00:10:34.69\00:10:36.97 Is it worth it for my blood pressure, my fluid build up, 00:10:37.00\00:10:40.26 or my congestive heart failure?" 00:10:40.29\00:10:41.92 Whatever reason they decreased the salt... 00:10:41.95\00:10:44.18 At first, the food tastes terrible! 00:10:44.19\00:10:46.57 But when they stick with it, they develop new enjoyment. 00:10:46.60\00:10:50.06 They start to enjoy the low sodium foods... 00:10:50.09\00:10:53.46 And when you give them that choice morsel 00:10:53.49\00:10:56.13 that they had saved from a year ago, 00:10:56.14\00:10:57.68 that high salt menu item... 00:10:57.71\00:10:59.85 it's distasteful... They don't like it. 00:10:59.88\00:11:02.15 The same has been shown with fat. 00:11:02.18\00:11:04.70 A classic pilot study... 00:11:04.73\00:11:07.17 "The Women's Intervention Nutrition Study" 00:11:07.20\00:11:09.45 A study looking at decreasing fat consumption in women 00:11:09.48\00:11:12.57 that have had breast cancer. 00:11:12.60\00:11:14.81 In the pilot research, in the preliminary research 00:11:14.84\00:11:16.97 to this big study, they actually had women decrease 00:11:17.00\00:11:19.80 their fat consumption. 00:11:19.83\00:11:21.16 Those that decreased their fat consumption 00:11:21.19\00:11:23.79 NOT ONLY... NOT ONLY did you see changes 00:11:23.82\00:11:27.90 in different measurements; their weight, 00:11:27.93\00:11:30.49 their blood fats, and things, but importantly 00:11:30.52\00:11:33.61 from the standpoint of our discussion, 00:11:33.64\00:11:36.09 their tastes changed. 00:11:36.12\00:11:38.35 They developed a distaste for the high fat foods 00:11:38.38\00:11:41.53 they used to enjoy. 00:11:41.54\00:11:42.62 That was true for the majority of those women. 00:11:42.65\00:11:45.09 So, you know, scientists studied this... 00:11:45.12\00:11:46.77 Have they ever gotten nervous... 00:11:46.80\00:11:47.97 that as they do this study, people won't make the 00:11:48.00\00:11:50.14 right choices, and they'll lose all their research money? 00:11:50.17\00:11:52.54 Have they ever done a study that says... 00:11:52.57\00:11:54.23 "Hey! Can these people really change, because I'm 00:11:54.24\00:11:56.34 researching this, and I really want to know whether or not" 00:11:56.37\00:11:59.50 This is a big issue; that's why they do pilot studies. 00:11:59.53\00:12:02.17 Can people change and stick with it... 00:12:02.20\00:12:04.03 And they find in this kind of research 00:12:04.06\00:12:05.87 that people, especially when they get benefits from 00:12:05.88\00:12:08.61 their lifestyle change, they stick with these things. 00:12:08.64\00:12:11.40 The tastes change, PLUS they get the benefits 00:12:11.43\00:12:14.99 of a new way of living. 00:12:15.00\00:12:16.18 Well then, why is it that every time I... 00:12:16.21\00:12:18.37 well, not myself personally, 00:12:18.40\00:12:20.67 but I hear people... They come through our 00:12:20.70\00:12:22.24 health program, and they come through yours, 00:12:22.27\00:12:23.82 and many times, they'll say things like... 00:12:23.85\00:12:25.36 "Well, I went to my doctor, and my doctor says, 00:12:25.39\00:12:28.14 "This is what you really should do, but I don't think anybody 00:12:28.17\00:12:30.74 can make that change. " 00:12:30.77\00:12:31.75 Why do doctors say that? 00:12:31.78\00:12:32.85 Why do other people say that? 00:12:32.88\00:12:34.61 Well I tell you, I believe it's unfortunate, Don. 00:12:34.64\00:12:37.23 And the reason it's unfortunate is most doctors have not had 00:12:37.26\00:12:41.18 the experience of making dramatic lifestyle changes. 00:12:41.21\00:12:44.01 Now, I have a unique advantage because I was not 00:12:44.04\00:12:46.54 raised a vegetarian; I was raised on a pretty typical 00:12:46.57\00:12:50.42 American lifestyle, and I don't blame my parents for that. 00:12:50.45\00:12:53.22 And some people think I had better habits than others 00:12:53.25\00:12:57.34 when they hear that I ate a regular breakfast. 00:12:57.37\00:12:59.72 But my regular breakfast, when I arrived in high school, 00:12:59.75\00:13:04.14 was going to the vending machines, 00:13:04.17\00:13:06.12 and having a Coke and a candy bar. 00:13:06.15\00:13:08.10 That was my routine, and I would frequent the 00:13:08.13\00:13:11.28 fast-food restaurants, but I've changed my lifestyle... 00:13:11.31\00:13:14.56 And you know what? 00:13:14.59\00:13:15.76 The quality of my life is better... 00:13:15.79\00:13:17.57 I enjoy my new way of eating better. 00:13:17.60\00:13:19.71 I don't have a lot of stomach problems that I used to have. 00:13:19.74\00:13:22.85 And so, when I talk with patients, Don, about 00:13:22.88\00:13:25.64 lifestyle change, it's not just based on the medical research, 00:13:25.67\00:13:29.03 it's based on my own experience. 00:13:29.06\00:13:30.99 And I've made dramatic changes... 00:13:31.02\00:13:32.69 Yeah, it's difficult to make the changes at first, 00:13:32.72\00:13:35.56 but over the long haul, once you've done it, 00:13:35.59\00:13:38.07 you wouldn't have it any other way. 00:13:38.10\00:13:39.69 Still have an occasional candy bar? 00:13:39.72\00:13:41.95 You know what? 00:13:41.98\00:13:43.35 I have not had a candy bar in 00:13:43.36\00:13:45.94 probably 20 years... Now I have had... 00:13:45.97\00:13:49.58 20 YEARS? How do you do this? 00:13:49.61\00:13:50.98 Because I've developed new tastes. 00:13:51.01\00:13:53.10 I don't want a candy bar. Okay, great! 00:13:53.13\00:13:55.01 I was in an awkward situation once... 00:13:55.04\00:13:58.00 where I felt socially constrained to accept a... 00:13:58.03\00:14:02.03 I'll tell you the story. 00:14:02.06\00:14:03.22 I was in kind of an informal singing group 00:14:03.25\00:14:07.41 and we'd sing for shut-ins. 00:14:07.44\00:14:09.49 It was kind of a captive audience, you'd say... 00:14:09.50\00:14:12.29 For those that can't get out of their home... 00:14:12.32\00:14:13.97 Right, right, and so we'd go in, and we went to a new home 00:14:14.00\00:14:18.26 one day; we were singing for them. 00:14:18.29\00:14:20.01 Apparently the people that were caring for those who 00:14:20.04\00:14:23.01 couldn't get out of the house... were so touched 00:14:23.04\00:14:25.43 that they slipped off into the kitchen, unbeknownst to us, 00:14:25.46\00:14:28.60 and all of the sudden, they appear with a big tray 00:14:28.63\00:14:30.95 with individual paper plates with cookies and ice cream. 00:14:30.98\00:14:35.02 Now, at this point, I was several years into 00:14:35.05\00:14:37.92 a new lifestyle, even though every NIGHT, 00:14:37.95\00:14:40.97 some years before, I'd have things like 00:14:41.00\00:14:43.17 cookies and ice cream... 00:14:43.20\00:14:44.58 Now, I didn't want cookies and ice cream. 00:14:44.59\00:14:47.47 Now the fellow next to me... 00:14:47.50\00:14:48.72 I looked at him, and he had a real good strategy. 00:14:48.75\00:14:50.96 He slipped the cookies into his pocket... NICE! 00:14:50.97\00:14:54.56 But it doesn't work for ice cream, Don. 00:14:54.59\00:14:58.44 That could be a problem. 00:14:58.47\00:14:59.81 So I said, I know what I'm going to do, 00:14:59.84\00:15:01.24 I'm going to just kind of play with the ice cream 00:15:01.27\00:15:03.34 a little bit; I really didn't want to eat it... 00:15:03.37\00:15:04.76 and eat a little bit of it, I didn't want to offend 00:15:04.79\00:15:08.18 the people... I thought it was important 00:15:08.21\00:15:10.00 socially, to do this, accept their hospitality. 00:15:10.03\00:15:13.39 And so as I'm eating a little bit of this ice cream, 00:15:13.40\00:15:16.21 it tastes sickeningly sweet, and fat; 00:15:16.24\00:15:20.94 and I'm thinking to myself... I'm literally kind of feeling 00:15:20.97\00:15:23.65 sick... I mean I didn't actually GET sick, but 00:15:23.68\00:15:26.57 I said, "I used to eat this food ALL THE TIME!" 00:15:26.60\00:15:30.09 "I used to ENJOY it!" 00:15:30.12\00:15:31.63 "But now it is distasteful. Amazing! 00:17:57.93\00:17:59.36 He never ate the meat the whole 19 days. 00:17:59.39\00:18:01.62 And so there is the ability to change, 00:18:01.65\00:18:04.18 and people can make that choice. 00:18:04.19\00:18:05.40 But I really want to hear what you have to say about this... 00:18:05.43\00:18:09.45 And I think you're going to show us some footage of this 00:18:09.48\00:18:11.62 I think it's really important when someone is making 00:18:11.65\00:18:14.79 that transition that the food that they're now experiencing 00:18:14.82\00:18:17.73 is GOOD food! Do you think that's important? 00:18:17.76\00:18:19.76 You know, you're right... the food has got to taste good 00:18:19.79\00:18:21.83 but the OTHER thing is... 00:18:21.86\00:18:23.46 I mean, it was not just enough for Larry, or anyone 00:18:23.49\00:18:26.04 who goes through our program 00:18:26.07\00:18:27.08 at the Lifestyle Center of America... 00:18:27.09\00:18:28.83 to see that the food tastes good... 00:18:28.84\00:18:31.32 We're in rural Oklahoma, yes, we have a great program, 00:18:31.35\00:18:36.39 people come from all over the country, and outside the country 00:18:36.42\00:18:38.96 But let's face it, it's a long commute from New York City, 00:18:38.97\00:18:42.42 where we've had patients come, and from Southern California 00:18:42.45\00:18:45.77 to come to Oklahoma. 00:18:45.78\00:18:48.75 So, people have to be convinced, not only that vegetarian meals 00:18:48.78\00:18:53.47 can taste good, but that they're accessible to them in their home 00:18:53.48\00:18:57.09 That they can either prepare these things, 00:18:57.79\00:18:59.57 that they can somehow take advantage of a 00:18:59.58\00:19:02.36 vegetarian diet in their own environment, 00:19:02.39\00:19:04.99 and that's why we have cooking classes. 00:19:05.00\00:19:07.46 It's not unique to our program here on 3ABN. 00:19:07.47\00:19:10.02 There are programs that help 00:19:10.05\00:19:11.37 educate people on cooking... This is vital! 00:19:11.41\00:19:14.07 Don, at your church, in the CHIP program, 00:19:14.11\00:19:15.69 you teach people how to cook. It's a BIG thing. 00:19:15.72\00:19:19.17 And so, what I want to introduce our viewers to is 00:19:19.21\00:19:22.63 Gardenia Montalvo... 00:19:22.66\00:19:24.27 Gardenia came to us in dire physical straits, 00:19:24.30\00:19:28.18 and one of the things that changed her perspective 00:19:28.21\00:19:31.04 was seeing that a vegetarian diet was accessible... 00:19:31.07\00:19:34.14 It was something she could do. 00:19:34.17\00:19:35.45 Not the WHAT but the HOW. That's right 00:19:35.46\00:19:37.34 That's what she learned. 00:19:37.37\00:19:39.48 Well let's look at that... 00:19:39.51\00:19:41.59 The cooking classes are incredibly fun 00:19:41.62\00:19:44.80 because first, you get a demonstration 00:19:44.83\00:19:48.44 by 2 professionals trained in cooking, 00:19:48.47\00:19:52.72 and then you go hands-on to the stations, 00:19:52.75\00:19:55.56 and you make a couple of dishes and it's so enjoyable. 00:19:55.59\00:19:59.22 And, you learn to work with soy-based products, 00:19:59.25\00:20:03.48 and make delicious food which I thought was impossible... 00:20:03.51\00:20:07.67 Like I didn't miss, at the Thanksgiving table, ANTHING! 00:20:07.68\00:20:11.52 I thought it was like having a totally normal 00:20:11.55\00:20:14.93 thanksgiving dinner, and there was only plant foods there 00:20:14.96\00:20:17.96 on the table, and everything was delicious. 00:20:17.99\00:20:21.92 That's great, and now she's saying... 00:20:21.95\00:20:23.48 "Maybe I know how to do this; I know what I'm doing" 00:20:23.51\00:20:27.39 The cooking classes we do at the Lifestyle Center of America 00:20:27.42\00:20:29.84 are different than some cooking programs. 00:20:29.87\00:20:31.73 They're actually hands-on. 00:20:31.77\00:20:33.61 I think it would help our viewers, Don, 00:20:33.64\00:20:35.91 if I showed you some footage of our cooking classes 00:20:35.94\00:20:39.43 and just explain a little bit of how we do things there. 00:20:39.46\00:20:42.40 Good! Great! Let's look at that, 00:20:42.43\00:20:43.78 and why don't you just talk me through it, 00:20:43.81\00:20:45.30 walk me through it as we're watching. 00:20:45.31\00:20:46.67 I'll do that. All right! 00:20:46.70\00:20:48.35 So right here, this is the situation we have, 00:20:48.38\00:20:51.34 what's going on here? 00:20:51.37\00:20:53.05 What you see... we've actually got 6 different stations 00:20:53.08\00:20:55.77 We're focused in on 2 of the stations... now on one here. 00:20:55.80\00:20:59.18 And these are guests that are preparing food? 00:20:59.21\00:21:00.41 These are guests... people with various health concerns 00:21:00.42\00:21:03.28 Some just wanting to prevent disease, 00:21:03.31\00:21:05.09 but many with things like diabetes, heart disease, 00:21:05.12\00:21:07.57 high blood pressure, weight problems... 00:21:07.60\00:21:09.16 And they're learning actually to cook. 00:21:09.19\00:21:10.76 There's our cooking instructor, Jodi Crandall, 00:21:10.79\00:21:13.09 there in the white apron. 00:21:13.12\00:21:14.77 And she's explaining to some of our guests, 00:21:14.78\00:21:17.70 that's what we call our patients... 00:21:17.71\00:21:19.23 how to prepare the meal. 00:21:19.27\00:21:20.44 They've got the recipe there. 00:21:20.47\00:21:21.87 They're cutting the food. They're preparing it. 00:21:21.91\00:21:24.02 And it's astounding to many of them... because they say to us 00:21:24.05\00:21:28.78 "Wow! We're not only learning a better diet, 00:21:28.81\00:21:33.59 but we're actually preparing it ourselves. " 00:21:33.62\00:21:35.68 And not only do they prepare the food, they taste the food. 00:21:35.71\00:21:38.93 They see how they do, and this is shortly before our 00:21:38.96\00:21:42.95 noon meal is served, and they're trying out 00:21:42.98\00:21:46.37 what's actually going to be served then in the dining room. 00:21:46.40\00:21:49.41 They're going to eat the food that they made! 00:21:49.44\00:21:51.77 Oh so this menu goes along with what they're going to 00:21:51.80\00:21:53.63 actually be eating. That's exactly right, 00:21:53.66\00:21:55.21 and, as they are experiencing the diet there at the 00:21:55.24\00:21:57.71 Lifestyle Center of America the first few days, 00:21:57.74\00:22:00.04 I mean it is good. It's good food. 00:22:00.07\00:22:01.59 And the guests do a great job. 00:22:01.62\00:22:03.28 I often joke with them, Don... 00:22:03.31\00:22:04.45 I say, "Boy, if you lose your job, you've got 00:22:04.48\00:22:08.60 another profession to fall back on" 00:22:08.63\00:22:10.43 ...Because they're learning the skill of cooking. 00:22:10.46\00:22:12.89 You know, I think that's so important in our program 00:22:12.92\00:22:14.70 What we try and do is each week, 00:22:14.73\00:22:18.28 they have a day that they prepare everything, 00:22:18.29\00:22:20.67 and they prepare the food. 00:22:20.70\00:22:21.78 And there might be 6 to 10 people around the table, 00:22:21.81\00:22:24.67 and each of them take a different menu item, 00:22:24.70\00:22:26.70 and as they take that menu item, then they come back 00:22:26.73\00:22:28.90 and there are always disasters... 00:22:28.93\00:22:30.57 I mean, especially when I'm involved in cooking. 00:22:30.60\00:22:33.47 But where there are failures, there are also successes, 00:22:33.50\00:22:35.84 and by the end of it, we getting adept. 00:22:35.87\00:22:38.72 So the points we're trying to make here... 00:22:38.75\00:22:41.05 is that people that when they look at their diet, 00:22:41.08\00:22:43.85 and they've been told they need to change, 00:22:43.88\00:22:45.68 or they're reading things and saying they need to make 00:22:45.71\00:22:47.47 changes, I first always try to tell people... 00:22:47.50\00:22:50.59 "Don't be afraid to make dramatic changes" 00:22:50.62\00:22:53.13 "Don't be afraid to make clean breaks with certain things 00:22:53.16\00:22:56.37 if that's what you need to do" 00:22:56.40\00:22:57.56 And it doesn't mean, necessarily being a total vegetarian. 00:22:57.59\00:23:00.45 It may mean making a clean break with red meat. 00:23:01.59\00:23:03.66 Maybe that's what someone needs to do... The initial step 00:23:03.69\00:23:05.75 Yeah, or a clean break with ice cream... 00:23:05.79\00:23:07.62 if that's one of the things that's undermining your health. 00:23:07.66\00:23:09.68 Careful now... I know I can get on some thin ice here. 00:23:09.71\00:23:13.15 It's not a message I'm telling everyone that they've got to 00:23:13.18\00:23:15.29 give up certain foods, but YOU'VE got to identify 00:23:15.32\00:23:18.01 what things are getting in the way of your health goals. 00:23:18.04\00:23:21.29 What you want for you... 00:23:21.33\00:23:22.44 In other words, you know this causes this, or that... 00:23:22.47\00:23:24.24 You know it's going to lead to, so you make the decision 00:23:24.27\00:23:26.67 in light of the scientific facts. 00:23:26.70\00:23:28.99 That's right... and Don, I always try to bring it on 00:23:29.02\00:23:31.80 to a spiritual level. 00:23:31.83\00:23:33.37 Because we've got a God who tells us... 00:23:33.40\00:23:36.75 He's interested in us having abundant life. 00:23:36.78\00:23:39.79 God is willing to direct us in lifestyle. 00:23:39.82\00:23:42.50 Think about the 10 Commandments... 00:23:42.53\00:23:44.11 That's a pattern for lifestyle isn't it? 00:23:44.14\00:23:47.81 In relationships, basically. Exactly 00:23:47.84\00:23:51.74 The interesting thing about the 10 Commandments 00:23:51.75\00:23:54.00 is they talk MOSTLY, for the most part, about clean breaks. 00:23:54.03\00:23:59.10 It doesn't say... It would be a good idea to kill less. 00:23:59.13\00:24:02.90 Right? It doesn't say... Limit adultery. 00:24:02.94\00:24:07.22 It says, "Don't do it. " That's right. 00:24:07.25\00:24:09.08 But we're afraid, as people, to often make those clean breaks 00:24:09.11\00:24:13.09 But there is power in clean breaks 00:24:13.12\00:24:15.19 ESPECIALLY if God has called you to do it. 00:24:15.22\00:24:17.92 And so I tell people, "PRAY," 00:24:17.95\00:24:19.82 ask God... what He's calling you to do. 00:24:19.85\00:24:22.36 What He wants you to make a clean break from. 00:24:22.39\00:24:24.39 That's right... Does He want you to walk away from the meat. 00:24:24.42\00:24:26.77 Does He want you to walk away from certain sweet foods. 00:24:26.80\00:24:29.34 It doesn't mean you have to be a total vegetarian 00:24:29.37\00:24:31.89 and never touch dessert. 00:24:31.92\00:24:33.68 Now, here's where it really gets interesting. 00:24:33.71\00:24:38.46 Not only does it demand that we 00:24:38.49\00:24:41.76 are willing to make some changes... 00:24:41.77\00:24:43.42 Not only does it demand that we can see the new lifestyles 00:24:43.45\00:24:48.75 accessible... whether it's your cooking class or something else, 00:24:48.78\00:24:51.69 How to do it... " 00:25:48.89\00:25:50.74 I could burn water in a pan 00:25:50.77\00:25:52.77 and I have learned to cook, and I LOVE it! 00:25:52.80\00:25:55.01 I became a vegetarian when I was going to college 00:25:55.05\00:25:58.41 because it was an adventure. 00:25:58.44\00:26:01.75 I never heard of it before. 00:26:01.78\00:26:03.11 I thought it would be fun to try, 00:26:03.14\00:26:04.78 and it has been a lot of fun. 00:26:04.81\00:26:06.53 I have found so much variety... 00:26:06.56\00:26:09.20 For every meat that you have out there, 00:26:09.23\00:26:11.77 there's got to be at least 7 beans to each one. 00:26:11.80\00:26:14.81 And the grains... people don't really know 00:26:14.84\00:26:18.15 about all the grains that are out there. 00:26:18.18\00:26:19.70 You've got whole wheat, rather than just white flour. 00:26:19.73\00:26:22.87 You've got millet... they think it's JUST for birds. 00:26:22.90\00:26:26.26 But it's actually delicious. 00:26:26.29\00:26:30.44 I like that she's looking at this as an adventure. 00:26:30.47\00:26:33.35 More than just a...
