Yes 00:01:15.82\00:01:19.27 Soybeans are quite a cash crop. 00:01:19.30\00:01:21.10 Oh yes, #2 in the United States. 00:01:21.13\00:01:24.28 They're all over the place. 00:01:24.31\00:01:25.59 Well why would a brain scientist need to talk about soy? 00:01:25.62\00:01:29.32 Because we're looking for answers instead of just problems 00:01:29.35\00:01:34.32 So there's something to soybeans besides money... 00:01:34.35\00:01:36.65 Oh yes! A LOT in soy besides money. 00:01:36.68\00:01:40.07 DuPont has discovered soy. 00:01:40.10\00:01:43.89 Okay... What do you mean by that? 00:01:43.92\00:01:46.22 They're putting millions of bucks into exploiting 00:01:46.25\00:01:50.49 the nutritional potential of soy. 00:01:50.52\00:01:54.08 Okay, so what good is there in soy for our lives? 00:01:54.11\00:01:59.67 Excellent question! Okay... excellent question! 00:01:59.70\00:02:02.74 #1... My biochemistry teacher at George Washington University, 00:02:02.77\00:02:06.48 Dr. Treadwell won a quarter of a million dollars 00:02:06.51\00:02:09.97 to find a cholesterol blocking agent... 00:02:10.00\00:02:13.39 And he went all the way around the molecule in Germanic fashion 00:02:13.42\00:02:18.83 with methyl, ethyl, propyl, isopropyl groups... 00:02:18.86\00:02:22.60 all around the molecule, and he found some that really worked! 00:02:22.63\00:02:27.66 But he said, "Students, the best blocking agents we've been 00:02:27.69\00:02:31.44 able to find in all our years of research 00:02:31.47\00:02:36.07 are already available in soy and whole wheat. 00:02:36.10\00:02:40.91 Is that right? "Yes" 00:03:28.09\00:03:30.73 And the body replies, "SIR, soy has been here first!" 00:03:30.76\00:03:38.78 "The men's room is to your left" 00:03:38.81\00:03:43.35 And with a high fiber diet, this cholesterol is 00:03:43.38\00:03:47.12 soaked up with the fiber, and it goes bye-bye forever. 00:03:47.15\00:03:51.83 That's probably the most inventive 00:03:51.84\00:03:54.68 depiction of soy I've ever heard. 00:03:54.71\00:03:57.40 What else does soy have for us besides saying... 00:03:57.41\00:03:59.62 "goodbye to cholesterol" 00:03:59.65\00:04:01.01 Soy has got a super combination of amino acids. 00:04:01.04\00:04:05.07 Okay, and what does that mean? 00:04:05.10\00:04:08.67 Plenty... In the old days, the more lysine a food had in it, 00:04:08.68\00:04:15.24 the BETTER IT WAS! 00:04:15.27\00:04:16.67 Because look, the animals grow FASTER on very high lysine. 00:04:16.70\00:04:21.18 And then they found out, after years of promoting this concept, 00:04:21.21\00:04:25.87 and after pushing this on the developing third world, 00:04:25.90\00:04:29.13 all of a sudden they find out... 00:04:29.16\00:04:30.52 OOPS!
