Hello and welcome to "Health for a Lifetime" 00:00:51.67\00:00:54.73 We're glad that you've joined us today, 00:00:54.76\00:00:56.17 and we hope that as a result of today's program, 00:00:56.20\00:00:58.63 you WILL have health that lasts for a lifetime! 00:00:58.66\00:01:01.33 Today we're going to be talking about healthy eating. 00:01:01.34\00:01:04.06 The Bible, that ancient Book that now many are seeing 00:01:04.09\00:01:08.66 as a book of health, is something you might want to 00:01:08.69\00:01:10.55 go and get right now. 00:01:10.58\00:01:11.72 Do you have a Bible at home? 00:01:11.75\00:01:13.01 If you do, keep listening, but go and get your Bible. 00:01:13.04\00:01:16.17 We're going to be looking at some texts today from the Bible. 00:01:16.20\00:01:19.56 We're joined today with Dr. Glen Wiltse 00:01:19.59\00:01:22.39 He is from South Dakota, actually North Dakota, 00:01:22.42\00:01:25.94 but you work in South Dakota; you consult for the 00:01:25.97\00:01:29.46 Black Hills Health and Education Center. 00:01:29.50\00:01:31.27 Right.. And, so you've been teaching 00:01:31.31\00:01:33.05 people about healthy eating for MANY years! 00:01:33.08\00:01:35.69 The Bible says, "Why do you spend money for that which is 00:01:35.72\00:01:38.31 not food?" And He asks the question... 00:01:38.34\00:01:41.52 Why do you spend money for things that really are not bread 00:01:41.55\00:01:44.33 Those types of things, the prophet Isaiah tells us. 00:01:44.36\00:01:46.61 Well what should we be eating? 00:01:46.64\00:01:48.11 What is a healthy diet? 00:01:48.14\00:01:51.08 Well eating, of course, is one of THE most fundamental 00:01:51.11\00:01:55.34 actions of our entire lives. 00:01:55.37\00:01:57.71 We need to have it to keep us going. 00:01:57.74\00:01:59.74 And, we need to eat the right things prepared in the right way 00:01:59.77\00:02:04.54 And there are actually two basic problems 00:02:04.57\00:02:07.11 with the foods that we eat. 00:02:07.14\00:02:09.33 #1 is that we eat too much. 00:02:09.34\00:02:12.78 #2 is that we eat the wrong kind. 00:02:12.81\00:02:15.56 And if we can just straighten out those 2 things, 00:02:15.57\00:02:18.04 we'd be okay. 00:02:18.07\00:02:19.55 Someone said once that the average American eats 00:02:19.58\00:02:23.47 7-10 of the same things day in and day out. 00:02:23.50\00:02:26.18 The problem is that they are the wrong things. 00:02:26.22\00:02:27.93 Would that be a good way to put it? 00:02:27.96\00:02:29.10 That is a good way to put it... That's exactly right, yes! 00:02:29.13\00:02:30.87 Well, why is it that we have this problem? 00:02:32.21\00:02:35.22 We have deviated from the original instruction. 00:02:35.25\00:02:39.37 I think we need to go to the operator's manual. 00:02:39.40\00:02:43.86 You know you buy a new vehicle, you by a new car, 00:02:43.89\00:02:45.94 you buy a new lawn mower... 00:02:45.97\00:02:47.04 An instruction book comes along 00:02:47.05\00:02:48.36 and tells you how to take care of it. 00:02:48.39\00:02:49.74 Well, can't we just watch maybe programs like this 00:02:49.77\00:02:53.40 or others and watch the commercials and live by those? 00:02:53.43\00:02:56.01 We could if we're looking at the right commercials, 00:02:56.04\00:02:58.75 but you know, these programs are okay, 00:02:58.78\00:03:01.03 but there are some commercials out there in the world 00:03:01.06\00:03:02.96 that aren't the best. 00:03:02.99\00:03:04.08 They promote things that aren't the best for us. 00:03:04.11\00:03:06.06 We hope that you've gotten your Bible, 00:03:06.09\00:03:09.17 or you've found a Bible at home, 00:03:09.20\00:03:10.69 an you can follow along. 00:03:10.72\00:03:12.02 We're going to be looking at 00:03:12.05\00:03:13.04 the original Book on health, the Bible. 00:03:13.07\00:03:15.60 And Dr. Wiltse, where should we go first? 00:03:15.61\00:03:18.28 Let's go to the beginning. 00:03:18.31\00:03:19.45 Let's go to the Book of the Beginnings! 00:03:19.46\00:03:20.99 GENESIS! If we look there, we're going to look at some 00:03:21.02\00:03:24.21 facts, some verses, some information that a lot of 00:03:24.24\00:03:27.99 our viewers are probably pretty familiar with already. 00:03:28.02\00:03:30.88 But sometimes we need to have a little reminder 00:03:30.91\00:03:34.47 It's easy to backtrack... it's easy to backslide, 00:03:34.50\00:03:37.78 and so I think a reminder once in a while is okay. 00:03:37.79\00:03:40.59 Let's look at Genesis 1:28 to see what did God say? 00:03:40.60\00:03:44.23 He planted man in the Garden of Eden. 00:03:44.26\00:03:45.95 He gave him the beautiful surroundings, 00:03:45.96\00:03:48.23 and all the animals to look at, 00:03:48.26\00:03:49.67 and a beautiful climate, and then He said, 00:03:49.70\00:03:52.97 "I've given you food to eat. " 00:03:53.00\00:03:55.15 In verse 28, He says, "I've given you the seeds, 00:03:55.18\00:03:58.28 the trees bearing fruit, the grains, 00:03:58.31\00:04:01.85 everything that grows from the ground that 00:04:01.88\00:04:05.41 comes from the flower. " 00:04:05.42\00:04:07.04 So He didn't pass out T-bone steaks that day. 00:04:07.07\00:04:09.09 He didn't put the gravy on the table. 00:04:09.12\00:04:11.06 It was fruits, nuts and grains. That's right. 00:04:11.09\00:04:15.34 And they stayed on this until after the fall... 00:04:15.37\00:04:17.69 And if we go to Genesis 3, we find that after the fall... 00:04:17.72\00:04:20.61 ...A couple of chapters over Genesis 3, after the fall of man 00:04:20.64\00:04:23.41 you meaning the falling into sin and they fell away from God 00:04:23.44\00:04:26.36 Right... So God changed their diet. 00:04:26.39\00:04:28.59 Now I'm not sure exactly why that was... 00:04:28.62\00:04:30.62 We could do some study and try to figure out, physiologically, 00:04:30.65\00:04:34.11 WHY they had to add vegetables, the plants, the stems, 00:04:34.14\00:04:39.28 the leaves, the tubers. 00:04:39.31\00:04:41.34 Before that, they were just eating the seeds, the grains, 00:04:41.37\00:04:44.21 the legumes, the nuts, the fruits, and so forth. 00:04:44.24\00:04:46.76 But then the rutabagas and potatoes and carrots, 00:04:46.79\00:04:51.80 and then the plants... the celery and Swiss chard 00:04:51.81\00:04:55.82 and so forth... All of these things were added 00:04:55.85\00:04:57.32 to man's diet at that time. 00:04:57.35\00:04:59.23 And they stayed on this diet or were supposed to at least 00:04:59.26\00:05:01.93 until after the time of the flood. 00:05:01.96\00:05:04.46 And following that, if we go on a little further over in 00:05:04.49\00:05:06.56 Genesis 9, we find there that God gave permission, 00:05:06.59\00:05:11.58 on an emergency situation, to use a flesh diet. 00:05:11.61\00:05:15.19 BUT, there were some restrictions... 00:05:15.22\00:05:17.88 So in Genesis 9, He said you can use a flesh diet... 00:05:17.91\00:05:21.06 This was after the flood... assuming that maybe there wasn't 00:05:21.09\00:05:24.33 as much vegetation; there wasn't 00:05:24.36\00:05:26.62 this or that after they got out of the big boat. Okay 00:05:26.65\00:05:29.84 So they were not to eat the blood; 00:05:29.87\00:05:33.34 they were restricted to not eat the fat, 00:05:33.37\00:05:35.45 and they were not to eat unclean animals. 00:05:35.48\00:05:38.44 What would meat like that taste, 00:05:38.47\00:05:40.07 if they had no fat or no blood? 00:05:40.10\00:05:41.65 It would be pretty bland. 00:05:41.68\00:05:43.50 If don't know whether any of our viewers have 00:05:43.53\00:05:45.08 ever tried eating it or not, 00:05:45.11\00:05:46.35 but if you eat an animal which the blood has all been drained, 00:05:46.38\00:05:49.34 it's a pretty flat taste. 00:05:49.37\00:05:50.62 So you couldn't get a... like say a hamburger from a 00:05:50.65\00:05:54.05 hamburger stand with no blood in it. 00:05:54.08\00:05:56.30 It would be impossible, they're just not slaughtered that way. 00:05:56.33\00:05:59.75 So even people that are eating meat, may think that's okay 00:05:59.78\00:06:02.12 because maybe the Bible says to do that if it has taste... 00:06:02.15\00:06:06.30 a lot of taste, then it probably 00:06:06.31\00:06:08.58 doesn't have all the blood taken out. 00:06:08.61\00:06:09.91 Yeah, that's probably true. 00:06:09.94\00:06:11.83 But the best thing is to, even today, 00:06:11.86\00:06:14.31 especially with the disease that's coming into the 00:06:14.34\00:06:16.80 animal kingdom now, even the permission that man was given 00:06:16.83\00:06:20.29 at that time, I think that God is revoking. 00:06:20.32\00:06:24.72 Now, each person has to make his own decision on this. 00:06:24.75\00:06:27.28 We all know that a vegetarian diet has been proven 00:06:27.31\00:06:30.71 scientifically to be the more healthy. 00:06:30.74\00:06:33.13 But it's not a prerogative for church membership, 00:06:33.16\00:06:37.49 or for anything you do, but I think each person 00:06:37.52\00:06:39.33 needs to make up his own mind whether he's 00:06:39.36\00:06:41.11 going to follow a vegetarian 00:06:41.14\00:06:42.14 diet, or continue to eat some animal products. 00:06:42.17\00:06:44.95 You are a Seventh-day Adventist Christian and you're talking 00:06:44.98\00:06:47.69 in your church and the Seventh-day Adventist Church, 00:06:47.72\00:06:50.20 they don't make that a TEST of being a member, 00:06:50.23\00:06:52.71 but it's looking more and more 00:06:52.74\00:06:55.57 like really the original diet is the best. 00:06:55.61\00:06:58.44 You mentioned clean and unclean foods, tell us about that. 00:06:58.48\00:07:01.22 The first intimation that we have that there was a 00:07:01.25\00:07:03.69 distinction between clean and unclean is at the time Noah 00:07:03.72\00:07:06.89 was admitting the animals into the ark. 00:07:06.92\00:07:09.96 At that time, the record states 7 clean and 1 pair of unclean 00:07:09.99\00:07:14.71 animals into the ark. 00:07:14.74\00:07:16.44 So there was a distinction there... Even before the flood. 00:07:16.47\00:07:19.59 Even before the flood! Okay 00:07:19.62\00:07:21.09 This was enlarged upon when Moses was bringing the 00:07:21.12\00:07:23.42 Children of Israel out of the land of Egypt, 00:07:23.45\00:07:25.03 and the ceremonial laws were given. 00:07:25.06\00:07:27.16 But if we analyze the eating habits of these animals, 00:07:27.19\00:07:31.80 we find that, in general, the unclean animals 00:07:31.83\00:07:34.38 are the scavengers... Clean up all the trash. 00:07:34.41\00:07:36.57 The pig, the hawk, the vulture, 00:07:36.60\00:07:38.57 the fish that eat often the bottom and scavenge 00:07:38.60\00:07:41.89 what's on the ocean floor, and lake floor. 00:07:41.92\00:07:44.75 You know recently, a lot of people have talked about 00:07:44.78\00:07:47.61 what we eat and why... I mean there are things like 00:07:47.64\00:07:49.68 mad cow disease; there's all 00:07:49.72\00:07:51.07 these other different things that are coming up. 00:07:51.11\00:07:52.63 Really, it's focused the scientific community on this. 00:07:52.66\00:07:55.72 What do you think of the food pyramid? 00:07:55.75\00:07:58.08 Well I think that it's something that serves as a 00:07:58.12\00:08:02.01 fairly good guide, but it does need to have a 00:08:02.04\00:08:04.89 little bit of modification if a person is going to 00:08:04.92\00:08:06.77 REALLY follow the very best lifestyle. 00:08:06.80\00:08:09.86 We'll notice that... and this is a new food guideline 00:08:09.89\00:08:14.13 that was introduced just a few years ago, 00:08:14.16\00:08:16.56 and it is considerably better than what it used to be, 00:08:16.59\00:08:18.92 but the foundation, of course, is complex carbohydrates; 00:08:18.95\00:08:21.81 you know the fruits and vegetables, and so on. 00:08:21.84\00:08:24.81 Then the higher up, we have on one side, they do allow 00:08:24.84\00:08:30.01 some milk and some eggs and so forth... 00:08:30.04\00:08:32.99 But as vegetarians, we feel that this should be a total 00:08:33.00\00:08:35.46 vegetarian pyramid. 00:08:35.47\00:08:37.38 And then, of course, at the very top there are the 00:08:37.41\00:08:40.16 fats, the refined products, the fats and sugars 00:08:40.19\00:08:43.50 which should be eaten in extremely small quantities. 00:08:43.53\00:08:46.18 So this pyramid can be used by 00:08:46.21\00:08:48.34 a vegetarian with only a little bit of modification. 00:08:48.37\00:08:52.63 I know the 4 food groups, it's been shown now that there 00:08:52.66\00:08:56.27 were some special interest groups that 00:08:56.30\00:08:58.42 monkeyed around with that a bit... 00:08:58.46\00:08:59.73 Do you think there has been any 00:08:59.76\00:09:01.00 monkeying around with this pyramid? 00:09:01.03\00:09:03.66 At the time that this pyramid was recommended, 00:09:03.69\00:09:06.26 by a select group that was appointed to do this work, 00:09:06.29\00:09:10.48 and to analyze whether there was a need for improvement, 00:09:10.51\00:09:13.96 there was a lot of change between what they recommended 00:09:13.99\00:09:17.99 and what the Department of Agriculture finally came up with 00:09:18.02\00:09:21.43 as the food pyramid there. 00:09:21.44\00:09:23.53 It's pretty good as it is, but it could be better. 00:09:23.56\00:09:26.27 It should be total vegetarian to be real good; 00:09:26.30\00:09:28.34 it should be less fat, less animal products in it. 00:09:28.37\00:09:31.15 You know, I have a lot of friends that talk to me and 00:09:31.18\00:09:33.67 they know that I'm a vegetarian, 00:09:33.70\00:09:36.21 but they say, "So am I," and then they say, 00:09:36.24\00:09:38.09 "I eat fish, I eat chicken, I eat this," 00:09:38.10\00:09:40.43 and then they said, "but I'm a vegetarian. " 00:09:40.46\00:09:41.95 Are there different types of vegetarians? 00:09:41.98\00:09:43.99 I found this through the years that many times my patients 00:09:44.02\00:09:46.60 will say, "Well, I'm a vegetarian, but I eat some fish" 00:09:46.63\00:09:49.44 Or, I come up to eat a meal at a banquet or something 00:09:49.47\00:09:52.38 and they say, "Well, could we bring you some chicken?" 00:09:52.41\00:09:54.35 ...when I tell them I'm a vegetarian. 00:09:54.38\00:09:55.90 As though that chicken didn't eat or didn't breathe. 00:09:55.93\00:10:00.21 So there are different types of vegetarians. 00:10:00.24\00:10:02.13 Of course the omnivorous diet 00:10:02.14\00:10:03.52 is the typical American diet most people eat. 00:10:03.55\00:10:06.34 And then there are those that use... 00:10:06.37\00:10:09.38 Omnivorous means they eat anything... They eat anything. 00:10:09.39\00:10:13.25 Then there's the lacto-ovo vegetarian diet. 00:10:13.28\00:10:15.63 They eat vegetables, plus eggs, milk and dairy products. 00:10:15.66\00:10:20.09 And then some people even break that down to the 00:10:20.12\00:10:22.53 ovo-vegetarian; they eat just vegetables and eggs. 00:10:22.54\00:10:25.30 And then there are those that are pure vegetarian... 00:10:25.33\00:10:28.26 They don't eat any animal products. 00:10:28.29\00:10:30.95 And then this is something that 00:10:30.98\00:10:32.53 a lot of people don't understand well is 00:10:32.56\00:10:34.50 "Who is a vegan?" 00:10:34.53\00:10:36.16 A lot of people think... A "veegan" or "vaagan" 00:10:36.19\00:10:38.20 The people who classify themselves in this category 00:10:38.23\00:10:42.05 used to consider that if they just ate vegetables 00:10:42.08\00:10:45.73 and nothing else they were vegan. 00:10:45.76\00:10:47.36 But actually, a true vegan not only doesn't 00:10:47.39\00:10:50.41 eat animal products, but he also doesn't use any 00:10:50.44\00:10:55.63 animal products; no leather shoes, 00:10:55.66\00:10:57.39 nothing that comes from the animal kingdom at all. 00:10:57.42\00:11:00.40 So it's more than just a diet! 00:11:00.43\00:11:02.54 There are probably less vegans watching 00:11:02.57\00:11:04.17 right after that comment than before. 00:11:04.20\00:11:06.18 Probably so! Probably more pure vegetarians 00:11:06.21\00:11:08.71 than pure vegans. 00:11:08.72\00:11:09.74 Well, what is so great about a vegetarian diet? 00:11:09.77\00:11:12.54 What are the advantages of it? 00:11:12.57\00:11:14.04 What I like about it is that it makes it so that 00:11:14.05\00:11:16.65 we follow the Bible dictum of preserving the body temple. 00:11:16.68\00:11:21.27 We have learned that the standard American diet 00:11:21.28\00:11:25.55 which is SAD... S- A-D 00:11:25.58\00:11:30.02 People who follow that have a shorter lifespan, 00:11:30.05\00:11:33.09 and they found that total vegetarians... 00:11:33.12\00:11:35.12 Their lifespan is, on the average, 12 years longer 00:11:35.15\00:11:38.71 than that of the average population. Is that right? 00:11:38.74\00:11:41.54 SO, if we are trying to preserve that body temple, 00:11:41.57\00:11:44.86 to preserve it in just the way that God would have it to be, 00:11:44.87\00:11:48.68 if we're going to avoid breaking the commandment that 00:11:48.71\00:11:51.30 that says, "Thou shalt not kill," 00:11:51.33\00:11:52.80 actually we're killing ourselves... 00:11:52.83\00:11:54.63 if we allow ourselves to eat a diet that causes us 00:11:54.66\00:11:57.71 to die sooner than we would otherwise. 00:11:57.72\00:11:59.58 Is it cheaper? Actually, it is... 00:11:59.61\00:12:01.78 And a lot of people don't believe that. 00:12:01.81\00:12:03.46 They think that... No, it costs more to eat a vegetarian diet. 00:12:03.49\00:12:07.22 But it really doesn't. 00:12:07.25\00:12:08.87 There have been a lot of financial consultants 00:12:08.90\00:12:12.03 and the statisticians who have studied this out, 00:12:12.04\00:12:14.04 and it's cheaper... 00:12:14.07\00:12:15.25 A lot of other advantages too, you know. 00:12:15.28\00:12:17.30 Like? A cleaner kitchen! Less grease in the air. 00:12:17.33\00:12:22.96 Another thing, there's less protein in it, 00:12:22.99\00:12:26.13 and so we'll be discussing this in another program. 00:12:26.14\00:12:29.37 The relationship between protein and osteoporosis 00:12:29.40\00:12:33.63 and loss of calcium from the body is very marked. 00:12:33.64\00:12:37.89 Are you able to have as much endurance, 00:12:37.90\00:12:41.38 or do you need that meat to be able to run those 00:12:41.39\00:12:43.02 15 miles you run every morning. 00:12:43.05\00:12:44.46 We don't have time to go into all of the tests 00:12:44.49\00:12:46.22 that were done on them, but there have been a number of 00:12:46.25\00:12:48.03 studies done that have definitely proven that an 00:12:48.06\00:12:50.87 athlete's endurance is increased by using a total 00:12:50.90\00:12:54.55 pure vegetarian diet, lots of carbohydrates... 00:12:54.58\00:12:57.88 And not only are they able to endure longer, 00:12:57.91\00:13:01.90 but they feel better during the time that they're doing it. 00:13:01.93\00:13:04.31 Less cancer, less heart disease, less diabetes, 00:13:04.32\00:13:07.52 less all those different things. Less obesity, more longevity. 00:13:07.55\00:13:10.36 They're just healthier all the way around. 00:13:10.39\00:13:12.63 Even arthritis is less common among people who are 00:13:12.66\00:13:15.36 following a total vegetarian diet than those who don't. 00:13:15.37\00:13:18.93 You even mentioned to me kidney stones. That's right. 00:13:18.96\00:13:21.33 Kidney stones are less common as well. 00:13:21.36\00:13:23.55 Primarily because of the lower amount of protein 00:13:23.58\00:13:26.02 The average American eats about 95 grams of protein a day, 00:13:26.05\00:13:29.76 whereas the authorities determined that about 00:13:29.79\00:13:31.60 45 to 55 grams is enough... 00:13:31.63\00:13:34.09 And the extra load on the kidney to get rid of that extra protein 00:13:34.12\00:13:37.76 causes problems with the kidneys and produced kidney stones. 00:13:37.79\00:13:41.30 We've been talking with Dr. Glen Wiltse 00:13:41.33\00:13:44.14 He's a health educator. That's right! 00:15:53.27\00:15:54.45 They're there naturally; the Lord outlined this diet 00:15:54.48\00:15:57.84 for us and He put in it the things that we need. 00:15:57.85\00:15:59.92 And the chemists have been analyzing the content of 00:15:59.95\00:16:04.81 these foods and they found out a lot of different things. 00:16:04.84\00:16:06.91 There are things that are called "phytochemicals" 00:16:06.94\00:16:08.78 "Phyto" is a Latin word which refers to plants, 00:16:08.81\00:16:11.07 so these are really just plant chemicals. 00:16:11.10\00:16:13.37 Things like antioxidants, vitamin A, vitamin E, 00:16:13.40\00:16:17.80 and vitamin C. 00:16:17.83\00:16:20.38 And what do antioxidants do? Briefly 00:16:20.41\00:16:22.53 Okay, they remove the byproducts of tissue metabolism. 00:16:22.56\00:16:26.07 Our cells burn up the food that we supply it, 00:16:26.10\00:16:28.44 and is a waste product just like the exhaust 00:16:28.47\00:16:31.31 from your automobile that needs to be gotten rid of. 00:16:31.34\00:16:33.77 If it stays in the cell, it can be damaging to it. 00:16:33.80\00:16:36.51 So these antioxidants are things that are present 00:16:36.54\00:16:39.15 in the foods that we eat, and help to remove these 00:16:39.18\00:16:42.25 harmful agents called "free radicals" from the cells 00:16:42.28\00:16:45.51 so that they don't do damage to our cells. "Hey, look at these 00:17:49.65\00:17:51.69 texts and look at this" and now you're beginning to 00:17:51.72\00:17:53.70 give some scientific evidence. 00:17:53.73\00:17:55.55 Is the Bible a scientific book? 00:17:55.58\00:17:57.48 Well, I guess there was a Master Scientist 00:17:57.51\00:18:01.19 who was behind the writing of it... 00:18:01.23\00:18:02.72 The men who penned the words probably were not scientists. 00:18:02.76\00:18:05.49 They were given information which is very valuable 00:18:05.52\00:18:08.24 for us today. 00:18:08.27\00:18:09.84 But interestingly enough, we find that the scientists 00:18:09.87\00:18:12.53 today who are going through the foods, 00:18:12.56\00:18:16.39 and through the lifestyle that we follow 00:18:16.42\00:18:18.44 come forth with some very interesting conclusions... 00:18:18.47\00:18:21.57 and here's a quotation from a medical magazine called... 00:18:21.60\00:18:24.56 "Patient Care" back in 1990, so it's fairly recent... 00:18:24.59\00:18:28.23 You can read it here on the screen... 00:18:28.26\00:18:30.04 So here's a conclusion from a medical writer, 00:18:43.01\00:18:45.55 and this is corroborated by other medical researchers too. 00:18:45.58\00:18:48.12 This is not just isolated. This is just an example of many. 00:18:48.15\00:18:49.96 Right, exactly! 00:18:49.99\00:18:52.26 What kind of advantages or diseases... 00:18:52.29\00:18:54.66 You know it mentioned some diseases, 00:18:54.69\00:18:56.31 probably one of the biggest ones that people think about 00:18:56.34\00:18:59.01 is a disease they don't want to get is cancer. 00:18:59.04\00:19:00.69 Does the vegetarian diet help protect against cancer? 00:19:00.72\00:19:03.55 The epidemiologic studies... the research, definitely show 00:19:03.58\00:19:06.99 that various cancers are much less common among people 00:19:07.02\00:19:10.35 who follow a vegetarian diet. 00:19:10.38\00:19:11.89 Cancer of the breast, cancer of the prostate, 00:19:11.92\00:19:13.76 cancer of the uterus, cancer of the colon, the pancreas; 00:19:13.79\00:19:16.53 all of these are much less frequent among people 00:19:16.54\00:19:19.00 who follow a vegetarian diet. 00:19:19.03\00:19:20.85 And it has been found that, actually, just one specific food 00:19:20.86\00:19:24.27 can even make a difference. 00:19:24.30\00:19:25.64 They've discovered that, in a large survey, 00:19:25.67\00:19:28.56 the people who ate beans 3 or more times a week 00:19:28.59\00:19:31.85 had a 30% reduction in the incidence of colon cancer. 00:19:31.88\00:19:35.57 Wow, so beans instead of red meat! 00:19:35.60\00:19:37.40 Go get those red beans if you want something red, 00:19:37.43\00:19:39.47 not red meat. Exactly! 00:19:39.50\00:19:41.40 And they found out that people who ate meat regularly, 00:19:41.43\00:19:44.85 2 to 4 times a week, actually had twice as much cancer 00:19:44.88\00:19:48.91 of the bladder than people who didn't eat meat at all. 00:19:48.92\00:19:51.60 So there's a lot of evidence from the researchers 00:19:51.63\00:19:54.74 to demonstrate that we really are better off. 00:19:54.77\00:19:56.69 And then of course, mad cow disease... 00:19:56.70\00:19:58.47 We've all heard about this, and we know how that's spread. 00:19:58.48\00:20:00.55 Lots of people are becoming 00:20:00.58\00:20:01.93 vegetarians in England, I understand. 00:20:01.97\00:20:03.66 That's what I've heard. Yes, and understandably so! 00:20:03.69\00:20:07.01 And heart disease? 00:20:07.04\00:20:08.17 Heart disease... Well, we've discussed heart disease on a 00:20:08.20\00:20:10.34 previous program, and actually pure vegetarians 00:20:10.37\00:20:14.15 compared with the average population, 00:20:14.18\00:20:16.18 had only 12% of heart attacks... the average population had. 00:20:16.21\00:20:20.09 I mean, that's significant, and that's enough to make 00:20:20.12\00:20:21.92 a person want to make a change. 00:20:21.95\00:20:24.05 But don't we need milk? 00:20:24.08\00:20:25.50 Milk is something that we absolutely do not need. 00:20:25.53\00:20:28.78 In fact, humans are the only species who continue to 00:20:28.81\00:20:32.62 eat milk after the age of weaning. 00:20:32.65\00:20:34.99 There must be a reason for that. 00:20:35.02\00:20:39.24 Another problem with milk too, is that a lot of people are 00:20:39.27\00:20:41.59 allergic to it; a lot of people don't have the enzyme 00:20:41.62\00:20:44.53 in the stomach that digests milk sugar, 00:20:44.56\00:20:46.43 so they have reactions from it. 00:20:46.46\00:20:48.46 So, there are a lot of good reasons 00:20:48.49\00:20:50.41 why a person should leave milk alone. 00:20:50.45\00:20:51.93 So the milk moustache isn't everything 00:20:51.96\00:20:53.41 that it's cracked up to be. That's exactly right! 00:20:53.44\00:20:55.36 What about fish? 00:20:55.39\00:20:56.50 "Pesco," I guess they call them vegetarians... 00:20:56.53\00:20:59.23 Yes, the pesco-vegetarians. 00:20:59.26\00:21:00.98 We have some information on that that we'd like 00:21:01.01\00:21:02.91 to show our viewers here. 00:21:02.94\00:21:04.45 Actually, 38-95% of all fish that have been analyzed 00:21:04.48\00:21:09.86 have been found to contain cancer... 00:21:09.89\00:21:11.95 depending on the source from which it was taken, 00:21:11.98\00:21:14.35 whether it was from a lake. 00:21:14.38\00:21:15.47 ...1 in 10 hogs have trichinosis in them, even in spite of 00:21:15.48\00:21:21.14 care that the farmers give them. 00:21:21.17\00:21:22.97 Trichinosis is what? 00:21:23.00\00:21:24.61 That's a little worm that burrows into the muscles 00:21:24.64\00:21:27.73 of the body and stays there for the rest of your life. 00:21:27.76\00:21:29.42 It doesn't sound too appetizing. It isn't. 00:21:29.43\00:21:31.04 It isn't good at all; it's a microscopic-size worm. 00:21:31.07\00:21:33.50 And then, of course, chickens! 00:21:33.53\00:21:35.28 Kentucky Fried Chicken is great stuff... 00:21:35.31\00:21:38.17 But actually, those chickens as they go through the 00:21:38.20\00:21:40.48 packing plant, are inspected... 1 chicken is inspected 00:21:40.51\00:21:45.82 every 2 seconds; so you know they don't 00:21:45.85\00:21:47.92 get a very careful inspection. 00:21:47.95\00:21:50.03 So a lot of diseases come through from them. 00:21:50.06\00:21:52.61 In fact, 81 out of 84 meat inspectors who were interviewed, 00:21:52.64\00:21:57.94 said that birds that were formerly taken off 00:21:57.97\00:22:01.58 the production line because of disease, 00:22:01.61\00:22:03.99 pass at the present time. 00:22:04.02\00:22:05.66 Is that right? So they're not really watching out for you.. 00:22:05.69\00:22:07.95 Just because it's on the shelf, 00:22:07.98\00:22:09.07 it doesn't mean that it's going to be the best for you. 00:22:09.10\00:22:11.06 That's right; in fact, there was just a recent report 00:22:11.07\00:22:13.24 about the number of salmonella infections that were 00:22:13.27\00:22:15.74 directly related to chickens. 00:22:15.77\00:22:18.07 And, there were over 300,000 cases of salmonella last year, 00:22:18.10\00:22:22.05 and 20 cases of death. 00:22:22.08\00:22:23.25 So fish is not what it's cracked up to be... 00:22:23.28\00:22:25.53 Chicken is not what it's cracked up to be. 00:22:25.56\00:22:27.29 The other white meat is the other white meat that can 00:22:27.32\00:22:30.26 cause problems and we have to be careful with 00:22:30.29\00:22:33.24 the chickens and the inspectors as well... Anything else? 00:22:33.27\00:22:35.80 Well, even when they find a cancer on a beef, or a chicken 00:22:35.83\00:22:39.66 that's going through the production line, 00:22:39.69\00:22:41.14 they'll just cut out the cancer, 00:22:41.17\00:22:42.97 sell the rest of it off at the meat markets so you can 00:22:43.00\00:22:46.44 take your chances there. 00:22:46.47\00:22:49.53 If there was cancer in that animal, 00:22:49.54\00:22:51.18 there probably was metastases and so there could be cancer 00:22:51.21\00:22:53.99 cells in the part of it that you're getting actually. 00:22:54.02\00:22:56.38 And sometimes also, spoiled meat, and meat that has 00:22:56.41\00:22:59.34 gotten off-color will be sent back to the processors; 00:22:59.37\00:23:01.84 they re-color it and send it back for resale again. 00:23:01.87\00:23:05.36 There are a lot of bad things about the animal industry. 00:23:05.39\00:23:09.01 Most of the world doesn't eat meat, 00:23:09.04\00:23:10.37 it's only the affluent places, right? That's right! 00:23:10.40\00:23:12.29 So, are there environmental issues? 00:23:12.32\00:23:14.22 What if everybody started to eat meat? 00:23:14.23\00:23:16.05 We would really be unable to supply the whole world 00:23:16.08\00:23:19.71 with meat if we were to try to do such. 00:23:19.74\00:23:23.20 In addition to that, much more water is used 00:23:23.23\00:23:27.86 to produce a pound of meat than a pound of vegetable foods. 00:23:27.89\00:23:32.59 In fact, if we can get the next slide on here... 00:23:32.60\00:23:36.55 Environmental - it shows that 16 pounds of grain or soybeans 00:23:36.58\00:23:40.89 to produce only 1 pound of beef. 00:23:40.90\00:23:42.73 So see what a waste! 00:23:42.74\00:23:45.14 A person could eat the 16 pounds of grain or soybeans 00:23:45.17\00:23:47.78 but if he eats it in the form of meat, 00:23:47.81\00:23:50.34 he just gets 1 pound of it. 00:23:50.37\00:23:52.37 Wow... 5,000 gallons of water to produce 1 pound of beef! 00:23:52.40\00:23:56.29 That must be for the feed, for what the cow eats, 00:23:56.32\00:24:00.27 and then, I don't know where the other water... 00:24:00.30\00:24:03.43 There was a researcher several years ago, 00:24:03.46\00:24:05.34 who analyzed the amount, and they said that 00:24:05.37\00:24:07.17 the amount of meat that's eaten by 1 family 00:24:07.20\00:24:10.56 ...the amount of water to make this amount of meat, 00:24:10.59\00:24:13.18 would be enough to float the Queen Elizabeth!
