Hello and welcome to "Health for a Lifetime" 00:00:50.72\00:00:53.70 I'm your host Don Macintosh, 00:00:53.73\00:00:55.52 and today we're going to be talking about a very 00:00:55.55\00:00:57.98 interesting subject. 00:00:58.01\00:00:59.14 We have in the studio with us Dr. Glen Wiltse 00:00:59.17\00:01:02.73 He is a specialist in family practice, 00:01:02.74\00:01:05.37 and also one of his great interests is preventive medicine 00:01:05.40\00:01:08.80 ...that is preventing things from happening before they do. 00:01:08.83\00:01:12.32 And today, we're going to be talking about "excitotoxins," 00:01:12.35\00:01:15.35 or the taste that kills. 00:01:15.38\00:01:17.01 Now Dr. Wiltse is a consultant for the institute in 00:01:17.04\00:01:21.25 South Dakota, "Black Hills Health and Education Center" 00:01:21.28\00:01:23.85 Welcome Dr. Wiltse, and we're talking about a subject 00:01:23.88\00:01:27.26 that I think is really something that has interested me 00:01:27.29\00:01:32.24 as we've been talking before the program... 00:01:32.27\00:01:33.57 "The Taste That Kills" 00:01:33.60\00:01:34.76 The Bible mentions that in many 00:01:34.79\00:01:37.65 people, their stomach is their god, 00:01:37.68\00:01:41.04 and there can be destruction because of that. 00:01:41.07\00:01:43.92 What are excitotoxins? 00:01:43.95\00:01:47.14 We're talking about a group of substances that have been 00:01:47.17\00:01:49.88 discovered just during the last few years; 00:01:49.91\00:01:54.47 at least the major information about them has been 00:01:54.50\00:01:56.78 uncovered in the last few years. 00:01:56.81\00:01:58.19 Actually one of them has been known for several thousand years 00:01:58.22\00:02:01.01 But they're poisonous substances that are commonly used 00:02:01.04\00:02:04.56 in our food substances, and they have a toxic effect 00:02:04.57\00:02:08.60 on the nervous system of the body. 00:02:08.63\00:02:10.39 Well, we're going to come back to that... 00:02:10.42\00:02:11.60 But why do you think people are so caught up 00:02:11.63\00:02:14.71 in eating these things, or taking these things in? 00:02:14.74\00:02:18.26 Well I think it's like you referred here previously... 00:02:18.29\00:02:20.99 that many people look upon their stomach as their gods... 00:02:21.02\00:02:24.62 Whatever it tells them, that they want, 00:02:24.65\00:02:27.65 or that they should desire, they're going to go ahead 00:02:27.68\00:02:30.39 and indulge in that, and they begin worshipping 00:02:30.42\00:02:33.46 this god, and as a result of this worship, 00:02:33.49\00:02:35.50 they start patronizing various places out there. 00:02:35.53\00:02:39.38 We could mention a few names, but I think everybody knows 00:02:39.41\00:02:41.74 where the fast food comes from... 00:02:41.75\00:02:43.70 And many of these foods are permeated; 00:02:43.73\00:02:47.71 they're taste-enhanced by these so-called excitotoxins. 00:02:47.74\00:02:53.79 So they put... A toxin is something that's 00:02:53.82\00:02:56.23 toxic to us, and excite probably means they're exciting to us too 00:02:56.26\00:03:01.20 But what exactly are excitotoxins? 00:03:01.23\00:03:03.92 Let's talk a little bit more about that. 00:03:03.95\00:03:05.19 Okay, well the term was first 00:03:05.20\00:03:06.71 coined by a Dr. Russell Blalock, who is a neurosurgeon, 00:03:06.74\00:03:11.59 Associate Professor of Neurosurgery at 00:03:11.62\00:03:13.40 the University of Mississippi Medical School... 00:03:13.43\00:03:16.84 And he became interested in this partly as a result of 00:03:16.87\00:03:20.76 his work as a neurosurgeon and taking care of people 00:03:20.79\00:03:24.03 with the neurodegenerative diseases, 00:03:24.06\00:03:26.70 and this interest was sparked specifically because his 00:03:26.73\00:03:30.91 father was a victim of Parkinson disease, 00:03:30.94\00:03:33.87 and finally succumbed to this disease. 00:03:33.90\00:03:36.28 So this really started him on a journey of trying to help others 00:03:36.31\00:03:41.12 to avoid this terrible injury from the substances. 00:03:41.15\00:03:44.40 So what are they exactly? 00:03:44.43\00:03:45.93 Well, we have a graphic that we could show that will 00:03:45.96\00:03:49.15 list these for us. 00:03:49.18\00:03:51.01 Actually, monosodium glutamate, or MSG as everybody knows it by. 00:03:51.04\00:03:57.47 The second one is aspartame which is commonly used 00:03:57.50\00:04:01.19 as a sweetener in food substances. 00:04:01.22\00:04:03.16 It's known as Equal or NutraSweet, Spoonful, 00:04:03.17\00:04:07.73 NatraTaste, and I think there are other names for it as well. 00:04:07.76\00:04:11.73 And then, there's a third one that's less well known, 00:04:11.76\00:04:15.10 a hydrolyzed vegetable protein. 00:04:15.13\00:04:17.60 And this was found to be apparently just as effective 00:04:17.63\00:04:21.95 as producing ill health as these other two. 00:04:21.98\00:04:24.98 So many times, I hear this... 00:04:25.01\00:04:26.65 There's a problem that developed and then someone who is in 00:04:26.68\00:04:29.30 medicine, or another one of the scientists says, 00:04:29.33\00:04:30.84 "Look, I want to figure out what's causing the problems, 00:04:30.87\00:04:34.32 what's happening. " Dr. Blalock, you mentioned... 00:04:34.35\00:04:36.16 But really, what IS the problem with excitotoxins? 00:04:36.19\00:04:39.08 The problem with them is that they have an adverse 00:04:39.11\00:04:41.46 effect on the nervous system. 00:04:41.49\00:04:43.10 They interfere with the proper transmission of our 00:04:43.13\00:04:47.04 nerve impulses, and actually work in an 00:04:47.05\00:04:51.16 adverse way to cause the nerves to overreact, and to overwork 00:04:51.19\00:04:55.51 so finally they wear themselves out. 00:04:55.54\00:04:57.75 The nervous impulse that causes our nervous system to 00:04:57.78\00:05:01.49 function actually starts out as an electrical impulse 00:05:01.52\00:05:04.33 and it's transmitted from one nerve to another one 00:05:04.36\00:05:08.38 at an area called the synapse, 00:05:08.41\00:05:10.22 and the neurotransmitter, 00:05:10.25\00:05:12.47 the thing that helps to transfer this electrical impulse 00:05:12.50\00:05:15.28 is actually an amino acid. 00:05:15.31\00:05:17.64 And these excitotoxins are actually amino acids, 00:05:17.65\00:05:22.24 and so when they're too many of them, too much of that, 00:05:22.27\00:05:24.63 in the body... it causes these nerves to overreact. 00:05:24.66\00:05:29.69 They just keep firing and finally wear 00:05:29.72\00:05:31.42 themselves out and die. 00:05:31.45\00:05:32.82 Well, I want to come back to that and maybe you can 00:05:32.85\00:05:34.97 explain that a little bit more to us. 00:05:35.00\00:05:36.25 But what are some of the kinds of problems... 00:05:36.28\00:05:38.28 You know, you mentioned Parkinson's, 00:05:38.31\00:05:39.90 but anything else that the excitotoxins can lead to? 00:05:39.93\00:05:44.20 Yes, there are a number of diseases that are present 00:05:44.23\00:05:47.26 in people who use these things to excess. 00:05:47.29\00:05:49.94 We might just name them. 00:05:49.95\00:05:51.22 I think that most of them are things that people will 00:05:51.25\00:05:53.10 recognize... Parkinson disease 00:05:53.13\00:05:56.09 which Dr. Blalock's father died of; 00:05:56.12\00:05:58.40 Alzheimer disease which is extremely 00:05:58.43\00:06:01.02 common in our world today; 00:06:01.05\00:06:03.25 Huntington disease which actually is a hereditary disease 00:06:03.28\00:06:07.37 but it seems to be accentuated by these excitotoxins... 00:06:07.40\00:06:10.86 And then we have amyotrophic lateral sclerosis, 00:06:10.89\00:06:14.15 commonly known as "Lou Gehrig disease" or ALS, 00:06:14.16\00:06:17.68 and then multiple sclerosis. 00:06:17.71\00:06:20.29 We have lupus erythematosus, and even birth defects 00:06:20.32\00:06:25.02 are caused by these toxic substances. 00:06:25.05\00:06:29.85 You were mentioning to me, all of those, 00:06:29.86\00:06:32.38 we can do a program on each of those, I'm sure, 00:06:32.41\00:06:34.33 and I know people that are watching today maybe knows 00:06:34.36\00:06:36.47 someone that has one of these situations, or whatnot... 00:06:36.50\00:06:39.00 So I know that you're listening very closely. Anything else? 00:06:39.03\00:06:41.68 You had mentioned before the break, some other things 00:06:42.40\00:06:44.11 that they're thinking that maybe 00:06:44.14\00:06:46.57 these excitotoxins are related to. 00:06:46.61\00:06:48.00 Yes, the ones that we talked about that we showed 00:06:48.04\00:06:49.94 just before on the previous graphic here, 00:06:49.97\00:06:52.72 are things that are pretty well proven... 00:06:52.75\00:06:54.67 that the substances at least play a part in causing them... 00:06:54.70\00:06:58.05 But there are some other diseases which is 00:06:58.08\00:07:00.73 suspected that the excitotoxins may play a part... 00:07:00.76\00:07:03.53 Include things like even the desert storm syndrome 00:07:03.56\00:07:06.45 which has caused a lot of furor in the last few years. 00:07:06.48\00:07:09.79 It's not been proven that it caused it, 00:07:09.82\00:07:11.81 but there's a strong suspicion. 00:07:11.84\00:07:14.27 Strokes, various types of brain injury. 00:07:14.30\00:07:17.49 If a person has a brain injury, he's more likely, 00:07:17.52\00:07:19.64 or more susceptible to the adverse effects of excitotoxins 00:07:19.67\00:07:24.30 Even hypoglycemia seems to be accentuated 00:07:24.33\00:07:27.33 or aggravated by them. 00:07:27.36\00:07:29.19 And seizures, migraine headaches hypoxic brain disease. 00:07:29.22\00:07:34.65 In other words, a person is in the condition which his 00:07:34.66\00:07:37.91 respirations are interfered with, 00:07:37.94\00:07:39.73 and doesn't have enough oxygen in his body; becomes hypoxic, 00:07:39.76\00:07:43.65 then the brain cells are more susceptible to damage 00:07:43.68\00:07:46.80 from these excitotoxins. 00:07:46.83\00:07:49.02 ...Then well, the common problem of fibromyalgia 00:07:49.05\00:07:52.50 is something that has become very prevalent in the world 00:07:52.53\00:07:56.36 in the last decade or so, 00:07:56.39\00:07:58.39 and there's the suspicion that these excitotoxins may even 00:07:58.40\00:08:01.09 play a part in the development of this disease as well. 00:08:01.12\00:08:04.24 So something as simple as someone watching today 00:08:04.27\00:08:06.18 as a headache, maybe they need to look at their diet, 00:08:06.21\00:08:09.82 and different things and say, 00:08:09.85\00:08:10.92 "Hey, are there some of these excitotoxins here" 00:08:10.95\00:08:13.27 "Maybe this could be part of the problem" 00:08:13.30\00:08:15.26 And certainly simplifying our life could be helpful. 00:08:15.27\00:08:19.35 Let me ask you another question... 00:08:19.38\00:08:21.08 There's another thing I wanted to bring in... 00:08:21.11\00:08:23.34 One of the problems in diagnosing what causes diseases 00:08:23.37\00:08:27.61 is the lag time that it takes many times from when a 00:08:27.64\00:08:30.02 person ingests a certain substance or begins to ingest 00:08:30.05\00:08:33.37 it over a long period of time, 00:08:33.40\00:08:34.68 and the development of that disease. 00:08:34.71\00:08:37.41 So that this is one of the reasons that we don't know 00:08:37.44\00:08:39.38 whether these things are really caused by excitotoxins... 00:08:39.41\00:08:41.69 Could be something we ate 6 months ago. Yes, that's right! 00:08:41.72\00:08:45.36 Well, take me back... You know, how did this get in 00:08:45.39\00:08:50.58 I'm sure that Dr. Blalock is not 00:08:50.61\00:08:52.09 the only one that knows about this; 00:08:52.13\00:08:53.54 although he probably did a lot of the research... 00:08:53.58\00:08:55.68 but what's some of the history of some of these things; 00:08:55.71\00:08:58.19 maybe NutraSweet, or some of these others that 00:08:58.22\00:09:00.55 you've mentioned, artificial sweeteners... 00:09:00.58\00:09:03.31 How did they get where they are now? 00:09:03.32\00:09:06.12 Well I think it's kind of interesting to go into the 00:09:06.15\00:09:07.72 background of some of these. 00:09:07.75\00:09:08.78 MSG for instance, has been used by the Japanese for many years. 00:09:08.81\00:09:13.74 It comes from a seaweed... they call it "sea tangle" 00:09:13.77\00:09:17.87 or the Japanese word for that is "kombu" 00:09:17.88\00:09:20.42 And I was looking at something in the food store 00:09:20.45\00:09:22.85 just the other day, and I noticed that kombu 00:09:22.88\00:09:24.65 was listed as one of the ingredients on it there. 00:09:24.68\00:09:27.81 But now, once it was discovered, 00:09:27.84\00:09:30.20 it's become a multimillion dollar business. 00:09:30.23\00:09:32.77 And the way it was discovered is kind of interesting... 00:09:32.80\00:09:34.87 As I said, it was used by the Japanese for a long while, 00:09:34.90\00:09:37.61 but during World War II, as our allied forces were 00:09:37.64\00:09:41.43 coming up, island-hopping up the Pacific, 00:09:41.46\00:09:43.65 they captured the Japanese. 00:09:43.68\00:09:45.36 They found that their field rations were much more 00:09:45.39\00:09:50.27 delectable, much more tasty than the Gls' field rations was 00:09:50.30\00:09:53.77 which were abominable. Oh, I see... 00:09:53.80\00:09:55.83 And so the Americans sampled the Japanese food; 00:09:55.84\00:09:59.92 found it tasted delicious, and they found out that it was the 00:09:59.95\00:10:02.71 MSG that the Japanese were adding to it that made it 00:10:02.74\00:10:05.72 taste so good, and so out of this, 00:10:05.75\00:10:07.62 became a multimillion dollar business! 00:10:07.65\00:10:10.67 You know, people like Oscar Mayer and Pillsbury 00:10:10.70\00:10:13.41 and Campbell's food, and a lot of the rest of them 00:10:13.42\00:10:16.49 started using this... and actually the use of it 00:10:16.52\00:10:19.43 has doubled every decade since the 60s. 00:10:19.46\00:10:22.57 So it was exciting to them, but we're finding out that now 00:10:22.60\00:10:26.33 there could be some toxic things that are involved as well 00:10:26.36\00:10:29.01 Any other histories, this is interesting! 00:10:29.04\00:10:30.71 Well on this one, in 1957, was the first discovery 00:10:30.72\00:10:34.33 in laboratory animals that there might be... this is MSG, 00:10:34.36\00:10:38.53 there was damage to the nerve cells in the retina of the eye, 00:10:38.56\00:10:42.79 and in the 1967, it was found out it was toxic to the brain, 00:10:42.82\00:10:47.47 and it's been found that it's particularly harmful to infants. 00:10:47.50\00:10:51.23 Their nervous systems are much more delicate, 00:10:51.26\00:10:53.74 and it has a worse effect on them. 00:10:53.77\00:10:56.84 Now back to aspartame, or on to aspartame, NutraSweet, 00:10:56.87\00:11:00.70 or Equal, whatever you want to call it, 00:11:00.73\00:11:02.43 it's been found that this is a very similar neurotoxic effect 00:11:02.46\00:11:06.59 as MSG, and it's interesting how it was discovered! 00:11:06.62\00:11:10.44 There was a chemist who was working for a drug company 00:11:10.47\00:11:13.32 with the chemical called "aspartame" 00:11:13.35\00:11:16.39 and they were investigating it 00:11:16.42\00:11:18.50 as a possible treatment for ulcers... 00:11:18.53\00:11:21.83 And as he was working with it, 00:11:21.86\00:11:22.86 of course, he got some on his fingers, and then he was 00:11:22.89\00:11:25.00 turning in his notebook and licking his fingers in order to 00:11:25.03\00:11:29.19 turn his notebook pages, and found that it had that 00:11:29.22\00:11:31.43 it had that sweet taste, and so out of this 00:11:31.46\00:11:33.71 a multibillion dollar industry came. 00:11:33.74\00:11:36.45 In fact, it promoted G.D. Searle who is the 00:11:36.48\00:11:41.07 people who manufacture and sold it to the #9 00:11:41.10\00:11:43.82 and the Fortune 500 businesses just in a short time. 00:11:43.85\00:11:47.30 Just by taste and just by exciting people's taste buds 00:11:47.33\00:11:50.19 all that money was made and so... 00:11:50.22\00:11:51.59 follow the money here. Right, exactly. 00:11:51.62\00:11:53.54 Then the third item in the excitotoxin list is a 00:11:53.57\00:11:56.58 "hydrolyzed vegetable protein" 00:11:56.61\00:11:58.06 This one is less well known among the general public. 00:11:58.09\00:12:01.38 It can be used as a substitute for MSG. 00:12:01.41\00:12:04.17 It has a very similar taste enhancing effect as MSG has. 00:12:04.20\00:12:08.79 Actually, it's made from junk vegetables; 00:12:08.82\00:12:10.95 vegetables that are no longer saleable from the supermarket. 00:12:10.98\00:12:15.05 They want to do something with them. 00:12:15.08\00:12:16.30 They salvage what they can from them. 00:12:16.33\00:12:18.26 So they take these and they boil them with an acid 00:12:18.29\00:12:21.31 and then they neutralize this with caustic soda, 00:12:21.34\00:12:24.86 and the protein is then separated out 00:12:24.89\00:12:26.57 and it floats to the surface, and them skim it off, 00:12:26.60\00:12:28.62 and dehydrate it, and then this becomes 00:12:28.63\00:12:31.29 hydrolyzed vegetable protein, 00:12:31.32\00:12:33.25 and it's used as a seasoning for our foods. 00:12:33.26\00:12:35.93 So this has a similar effect to aspartame and MSG. 00:12:35.96\00:12:41.60 They all have a harmful effect on the nervous system, 00:12:41.63\00:12:45.08 and then they interfere with the 00:12:45.12\00:12:46.78 transmission of the nerve impulse. 00:12:46.81\00:12:48.44 In just a few moments we're going to go to a break, 00:12:48.47\00:12:50.56 but we've been talking with Dr. Glen Wiltse 00:12:50.59\00:12:54.79 He is a consultant for the 00:12:54.82\00:12:56.06 Black Hills Health and Education Center 00:12:56.09\00:12:58.61 We're talking about excitotoxins. 00:12:58.64\00:13:01.23 Just before we go to the break, you mentioned how these work... 00:13:01.26\00:13:04.71 You said that the nerves in our bodies, 00:13:04.74\00:13:09.24 they fit together somehow... 00:13:09.27\00:13:10.54 Let's say, you had mentioned this is one nerve 00:13:10.57\00:13:13.19 and this is the next one; they kind of fit together... 00:13:13.22\00:13:15.18 And then these excitotoxins, they act right here, 00:13:15.21\00:13:18.08 at this place? Is that where they're acting? 00:13:18.11\00:13:19.61 That's right. This is called the "synapse. " 00:13:19.64\00:13:21.85 And the nerve impulse starts down... comes down here, 00:13:21.88\00:13:26.58 and in order to make this transfer to the next nerve cell 00:13:26.61\00:13:30.48 to transfer the impulse on these amino acids, 00:13:30.51\00:13:34.67 from side-to-side, they make that transfer 00:13:34.70\00:13:38.47 from one nerve cell to the next, 00:13:38.50\00:13:39.82 and when there are too many of them there, 00:13:39.83\00:13:41.28 the nerves continue to be stimulated, 00:13:41.31\00:13:43.66 and actually causes the nerve cells to die. 00:13:43.69\00:13:46.52 And that results in... 00:13:46.55\00:13:48.28 And that's what those excitotoxins do... 00:13:48.31\00:13:50.11 that's where they're acting. What should I do? 00:18:27.32\00:18:28.87 Okay, well there are a number of things that we can do to help 00:18:28.90\00:18:32.14 First of all, we need to avoid a number of things... 00:18:32.17\00:18:35.66 There are a number of terms that we need to become familiar with 00:18:35.69\00:18:38.33 so that we can look for them when we're looking at 00:18:38.36\00:18:40.91 ingredient labels on foods. 00:18:40.94\00:18:43.79 "Plant protein extract" is one of those. 00:18:43.82\00:18:46.69 So if it says that on the label, watch out! 00:18:46.72\00:18:48.96 We ought to leave it on the shelf, 00:18:48.99\00:18:50.29 and let someone else buy it. All right. 00:18:50.30\00:18:53.39 Sodium or calcium caseinate. 00:18:53.42\00:18:57.00 Now casein is a milk protein, an amino acid, 00:18:57.03\00:19:01.26 and it's present in milk. 00:19:01.29\00:19:02.89 It's an excitotoxin. ...
