So we want to talk about this 00:07:29.34\00:07:33.55 greater light that we have experienced 00:07:33.75\00:07:35.15 and we want to share some of this light with you 00:07:35.35\00:07:37.52 in hopes that you might find comfort, find some hope 00:07:37.72\00:07:41.06 and also prevent a lot of the sicknesses and a lot of the 00:07:41.26\00:07:44.13 diseases... 'cause we find that there is a link with barbequing 00:07:44.33\00:07:48.20 and smoke, grilling, and so forth. 00:07:48.40\00:07:50.27 And we want to look into the difference between barbecuing 00:07:50.47\00:07:52.87 and grilling. In fact, Dr. Jackson, what IS 00:07:53.07\00:07:54.87 the difference? There is definitely a difference 00:07:55.07\00:07:56.81 between barbequing and grilling. 00:07:57.01\00:07:58.37 Where we find in grilling on high heat but it's fast 00:07:58.57\00:08:01.78 but the flames do not come in contact... or the meat 00:08:02.08\00:08:05.51 does not come in contact - in grilling - with the flames 00:08:05.71\00:08:09.22 and therefore it's on smoke flames 00:08:09.42\00:08:12.62 not on charcoal and wood. 00:08:12.82\00:08:14.49 Where barbecuing is smoked meat where the meat is smoked. 00:08:14.69\00:08:19.26 And where we find wood and charcoal plus the juicing of the 00:08:19.46\00:08:23.03 meat really brings out that steam and brings out the flavor. 00:08:23.23\00:08:26.84 So grilling? You can grill vegetables; you can grill 00:08:27.04\00:08:30.04 other non-flesh food. But barbecuing, remember, 00:08:30.24\00:08:33.41 is smoking the meat. Aah... and so 00:08:33.61\00:08:37.58 when we're driving around the city and you see this... 00:08:37.78\00:08:40.85 these plumes of smoke coming up... yes... 00:08:41.05\00:08:43.12 and sometimes I see them barbecuing in like a 00:08:43.32\00:08:46.96 almost like a sawed-in-half - um-hmm, yeah - oil drum 00:08:47.36\00:08:52.36 and they make it into a grill. The term is a smoker. 00:08:53.60\00:08:57.47 A smoker! That's a smoker. So intentionally 00:08:57.67\00:09:00.04 trapping the smoke, that's the kick - keeping it in - 00:09:00.24\00:09:03.14 that's right - and getting that flavor. And then you can find 00:09:03.34\00:09:05.37 certain woods such as hickory - um-hmm - that gives the hickory 00:09:05.57\00:09:09.04 flavor... but you've got to trap it to smoke it. 00:09:09.24\00:09:11.35 Grilling you don't do that. 00:09:11.55\00:09:13.08 It's just a fast, direct-heat cooking. Do you follow me? 00:09:13.28\00:09:17.09 Uh-huh, uh-huh. So smoking is what distinguishes 00:09:17.29\00:09:20.19 between those two. Now I have a sneaky suspicion 00:09:20.39\00:09:23.73 that there's some Bible - oh, yes - that talks about smoke 00:09:23.93\00:09:26.73 and things like that. I know you're going to bring that out. 00:09:26.93\00:09:28.73 OK. So we're going to see where we're going to take this to the 00:09:29.13\00:09:32.80 spiritual because we always want to bring in the spiritual 00:09:33.00\00:09:35.74 parallels because you find that as we're talking 00:09:35.94\00:09:39.37 about these physical things there is a direct correlation 00:09:39.57\00:09:42.58 to our spiritual health. But let's continue to deal with 00:09:42.78\00:09:45.21 the physical for right now. What type of things are we 00:09:45.41\00:09:47.52 talking about when we talk about barbequing? 00:09:47.68\00:09:49.68 Let's just be clear. We're not talking about vegetables here, 00:09:50.09\00:09:52.75 otherwise wouldn't be a problem, right? 00:09:52.95\00:09:54.62 Pork. Pork. That's your main one. 00:09:54.82\00:09:58.23 All your flesh foods: steaks. You catch the main one like pork 00:09:58.43\00:10:00.30 ribs? Steak... beef... You know, steak, beef, chicken. 00:10:00.50\00:10:04.40 Community... in our community we did mostly pork. 00:10:04.60\00:10:10.11 There was pork and then chicken. There was ribs as far as 00:10:10.31\00:10:12.74 ribs go. Yeah. Barbequed ribs. Barbequed ribs... that's a 00:10:12.94\00:10:15.31 big thing! That's a big thing. 00:10:15.51\00:10:17.15 And it depends on, you know, the locale... where you're from. 00:10:17.35\00:10:19.48 But like my wife said, though we were raised in the Mid West 00:10:19.68\00:10:24.09 such as Chicago, but folks migrate from the South. 00:10:24.29\00:10:27.09 But during these holiday seasons - 4th of July, 00:10:27.39\00:10:30.46 Memorial Day - we had, you know, ribs. 00:10:30.66\00:10:34.20 Um-hmm... pork ribs. Pork ribs. Now we love barbeque. 00:10:34.46\00:10:38.10 Like you said... we love barbeque. 00:10:38.30\00:10:39.70 You know, I went more from pork to beef ribs 00:10:39.90\00:10:42.40 but pork was the case. And as we understood 00:10:42.60\00:10:46.51 how that was really affecting us 00:10:46.71\00:10:50.78 we had to make some changes. 'Cause we used to travel 00:10:50.98\00:10:52.48 500 miles just to get... What? We would travel 500 miles 00:10:52.68\00:10:56.99 from another state back to Chicago to get ribs. 00:10:57.19\00:11:02.52 Barbequed rib tips. No one can barbeque 00:11:02.72\00:11:06.59 like Chicago... like Chicago. 00:11:06.80\00:11:08.20 Wow! I imagine there are people out there 00:11:08.40\00:11:10.97 who are... needless to say: "I don't know. " 00:11:11.17\00:11:12.77 There's like competition now. 00:11:13.17\00:11:15.00 Mississippi, Alabama and Texas can give it a run for its money. 00:11:15.20\00:11:18.67 You might be right. You might be right because... 00:11:18.87\00:11:20.98 If you went 500 miles... But I'm just saying 00:11:21.14\00:11:22.88 like people saying: "This is the best steak in the world! " 00:11:23.08\00:11:24.95 Now we make that statement because we've never really 00:11:25.15\00:11:26.92 tasted everything in the world. But I do know 00:11:27.12\00:11:28.75 from our perspective it was the best 00:11:28.95\00:11:31.15 'cause we checked it out in one state, another state. 00:11:31.35\00:11:33.99 A few places we went... but nothing like that. 00:11:34.19\00:11:35.76 But for 500 miles you had the opportunity to check 00:11:35.96\00:11:37.93 along the way. Organic wood? 00:12:07.16\00:12:09.92 Sickness is sick! 00:12:11.83\00:12:14.50 The 500-mile drive to get some barbeque was kind of sick too! 00:12:14.90\00:12:18.80 And that's why he... that's why he gravitates it. 00:12:19.00\00:12:23.20 I played into his hands! Yes you did. 00:12:23.41\00:12:25.14 You did exactly that. We're not preachers. 00:12:25.34\00:12:28.11 But thank God you've had the victory! 00:12:28.41\00:12:30.55 I got the victory over that! Amen! 00:12:30.75\00:12:32.28 Reidland, you were about to say something here. 00:12:32.48\00:12:33.92 Because we've just touched on how deeply ingrained 00:12:34.12\00:12:38.29 in our culture this is where we would drive 500 miles 00:12:38.49\00:12:41.82 to get the best ribs or the best barbeque in the world. 00:12:42.02\00:12:46.56 And you mentioned some of the states: Mississippi, Alabama, 00:12:46.90\00:12:50.37 Georgia - Texas - Texas, Florida. All of these states 00:12:50.57\00:12:54.24 are... are... they love their barbeque. 00:12:54.40\00:12:57.31 You know, we actually went to a birthday... was it 00:12:57.51\00:13:00.38 birthday? It's a baby shower... baby shower. 00:13:00.58\00:13:02.31 And even the baby shower this couple - our neighbor - was 00:13:02.51\00:13:04.91 wanted to grill. Wanted to barbeque actually. 00:13:05.11\00:13:07.12 You know, to smoke it and do what he does. 00:13:07.32\00:13:10.19 And you can... The aroma that comes out... 00:13:10.39\00:13:13.02 it really is... it smells wonderful! 00:13:13.36\00:13:15.86 That's right. But when you consider the fact that 00:13:16.06\00:13:19.59 the smoke is almost equivalent to the exhaust that comes from 00:13:19.79\00:13:23.03 the car - That's right. What? Carbon monoxide. - 00:13:23.23\00:13:25.83 the carbon monoxide that comes from that grill 00:13:26.03\00:13:27.74 that smokes your meat... hydrocarbons. Mercy! 00:13:27.94\00:13:30.81 It's the same thing in the car. So then you're actually 00:13:30.97\00:13:33.58 just eating the... You mean the chemicals? By-products? 00:13:33.78\00:13:37.38 The by-products of that. And it's like smoking. 00:13:37.58\00:13:40.95 Eight pounds... just a steak. It's like smoking 00:13:41.15\00:13:44.35 six hundred cigarettes. Wow! 00:13:44.55\00:13:46.32 If you never smoked and you just barbequed 00:13:46.52\00:13:48.99 that steak or that pork on those charcoal briquettes - 00:13:49.19\00:13:52.23 yes - you might as well smoke 600 cigarettes. 00:13:52.43\00:13:54.50 And a person cannot do that in one day. 00:13:54.70\00:13:56.77 So the person who is eating barbequed meat 00:13:56.97\00:13:59.67 and says: "Well I eat my meat and I enjoy it but I don't 00:13:59.87\00:14:03.04 smoke! " Yeah. They're really smoking. 00:14:03.24\00:14:05.07 They smoke; they smoke. They're really smoking. 00:14:05.27\00:14:07.28 You know, this brings up a word: carcinogens. Yes. 00:14:07.58\00:14:11.45 Carcinogens. It's not a word that is familiar with a lot of 00:14:11.85\00:14:15.75 people - right - but we want to look at that word. 00:14:15.95\00:14:18.15 I'm going to sort of step into this territory 00:14:18.35\00:14:21.19 by looking at a video. So lets take a look at this... 00:14:21.39\00:14:24.26 this little news clip and let's get an understanding of 00:14:24.46\00:14:26.90 carcinogens and what might be happening as we 00:14:27.10\00:14:29.70 barbeque meat. 00:14:29.90\00:14:31.30 The sizzle, the smoky flavor, the grill lines. 00:14:34.87\00:14:38.74 Barbequed meats are not only delicious but healthy too, 00:14:39.04\00:14:42.21 right? Grilling is a low-fat method of cooking 00:14:42.41\00:14:44.48 but we have to be aware that it can increase our risk 00:14:44.68\00:14:46.75 of cancer if we eat grilled meats too often. 00:14:46.95\00:14:49.08 It's true. Those juicy burgers, especially the charred ones, 00:14:49.38\00:14:53.36 can contain cancer-causing chemicals called carcinogens. 00:14:53.56\00:14:56.93 When you grill meat, some of the fat does drip down 00:14:57.13\00:14:59.26 onto the charcoal or the flame. 00:14:59.46\00:15:01.50 And when fat meat's that really high temperature 00:15:01.70\00:15:03.23 it develops a carcinogen. And the smoke carries the carcinogen 00:15:03.47\00:15:06.74 back up to the meat which can be dangerous for our bodies. 00:15:06.94\00:15:09.07 Now before you get all "fired up" 00:15:09.47\00:15:11.44 there are some ways to grill safer. 00:15:11.64\00:15:13.88 One way is to simply avoid burning or searing meats. 00:15:14.08\00:15:16.34 Cooking food longer at lower temperatures is best. 00:15:16.54\00:15:20.32 To also cut down on carcinogens you can decrease the amount of 00:15:20.52\00:15:23.08 time that the food is actually on the grill. 00:15:23.28\00:15:25.02 Pre-cook the meat in either the oven or in the microwave 00:15:25.22\00:15:27.96 and finish it up on the grill just to give it a little bit of 00:15:28.16\00:15:29.76 crispness and a little bit of flavor. 00:15:29.96\00:15:31.29 Another tip: choose leaner cuts. Wow! 00:15:31.49\00:15:34.00 Now you heard that. They talked about carcinogens. 00:15:34.36\00:15:37.73 But then that brought up the other "C" word... cancer. 00:15:37.93\00:15:43.81 Carcinogens equal cancer. 00:15:44.11\00:15:48.01 So while we may have loved it, maybe have driven 00:15:48.21\00:15:53.72 500 miles, we get... you know, the waft of that smoke, 00:15:53.92\00:15:59.09 that's very pleasurable. The smell of barbequing: 00:15:59.29\00:16:05.19 it leads to cancer. Yes. 00:16:05.49\00:16:08.96 Now that's a little word with a lot of impact 00:16:09.16\00:16:13.54 on a lot of families. And we're going to do a program 00:16:13.74\00:16:16.17 actually about cancer. I'm going to talk about that 00:16:16.37\00:16:19.07 in detail. But right now we're talking about 00:16:19.27\00:16:21.38 something that has become almost synonymous 00:16:21.58\00:16:24.78 with holidays and special occasions. 00:16:24.98\00:16:27.98 And we enjoy them, but we're finding that 00:16:28.18\00:16:31.12 it's leading to cancer... which is the #2 killer 00:16:31.32\00:16:35.56 in America after heart disease. After heart disease. 00:16:35.76\00:16:38.06 Worldwide. So the smoke... the smoke... 00:16:38.66\00:16:44.57 Did you hear what they said? The smoke? The smoke! Yes. 00:16:44.77\00:16:47.77 When we think about smoke... You know, they say when there's 00:16:47.97\00:16:51.14 smoke there's fire. And when I think about fire 00:16:51.34\00:16:54.91 I think about inflammation - that's right - right? Um-hmm. 00:16:55.11\00:16:58.35 Inflammation. So that's like burning in the body. 00:16:58.55\00:17:03.49 And if you have a pro-inflammatory, that means 00:17:03.69\00:17:07.36 you're having an inflamed situation all the time 00:17:07.56\00:17:11.49 it's going to lead to cancer. That's right; that's right. 00:17:11.69\00:17:14.76 So let's talk about that. You know, there's a Bible text, 00:17:14.96\00:17:17.70 Rico, in Psalm 102 verse 3 as you spoke of that. 00:17:17.90\00:17:22.17 Notice what the Word of God says. And as brother said here 00:17:48.60\00:17:51.43 it's like - you know - putting your nose down at the tail pipe 00:17:51.63\00:17:55.04 of your automobile and inhaling that. Who would do that? 00:17:55.24\00:17:58.51 No one. And even people say: "Well just a little bit. " 00:17:58.81\00:18:01.54 You know, the Bible says the little foxes spoil the vineyard. 00:18:01.74\00:18:04.45 And so just a little bit is enough to create a condition 00:18:04.85\00:18:08.88 in your body for which we go to the doctor and say: 00:18:09.08\00:18:11.12 "Well I don't know how I ended up with cancer. 00:18:11.32\00:18:13.02 Doesn't run in my family! " 00:18:13.36\00:18:15.06 But just look how many grills you have used over the 50 years. 00:18:15.26\00:18:18.59 Now, now... someone would say, 00:18:19.39\00:18:21.46 you know, well... 'cause people are watching this 00:18:21.66\00:18:24.70 and they're thinking. You're thinking: "Are they telling me 00:18:24.90\00:18:28.77 that I can't barbeque? That I can't go out and have my 00:18:28.97\00:18:32.17 steak on the barbeque grill 00:18:32.37\00:18:34.88 or have my chicken on the barbeque grill? " 00:18:35.08\00:18:37.65 Yes we are... if you want to avoid this issue. 00:18:39.58\00:18:44.09 Now here's the thing: there's something called 00:18:44.29\00:18:46.96 heterocyclic amine. Heterocyclic amines, and it 00:18:47.16\00:18:51.13 doesn't matter. If it's meat it's going to produce that, and 00:18:51.33\00:18:55.40 that is the carcinogen that we're talking about. 00:18:55.60\00:18:57.60 That's right.
