Hola and bonjour! 00:00:21.18\00:00:22.85 Welcome back to Creative Cooking. 00:00:22.88\00:00:24.72 My name is Nicole Braxton. 00:00:24.75\00:00:26.69 And I'm looking forward to being your tour guide 00:00:26.72\00:00:29.72 as we journey the world one bite at a time. 00:00:29.76\00:00:32.63 Today, we're going to continue with our health segment. 00:00:32.66\00:00:37.10 And we're going to make a health and hearty soup 00:00:37.13\00:00:40.37 along with cornbread and a potato leek soup. 00:00:40.40\00:00:44.67 Today's theme is dinner at the fireplace. 00:00:44.71\00:00:47.98 For our first soup, we will need... 00:00:48.01\00:00:50.35 So let's get started. 00:01:22.61\00:01:26.15 For our soup, I'm going to start it off, 00:01:26.18\00:01:28.95 and I'm going to have the two cups of water boiling. 00:01:28.98\00:01:32.32 And while that's boiling, I'll prep our veggies. 00:01:32.35\00:01:36.93 So we're going to cut our onion and dice it. 00:01:36.96\00:01:42.43 Okay, take the skin off. 00:01:49.10\00:01:55.01 And the great thing that I like 00:01:55.04\00:01:56.38 since we're speaking of boiling our water, 00:01:56.41\00:01:58.65 one of the key health principles that I found 00:01:58.68\00:02:02.22 is drinking water really helps 00:02:02.25\00:02:05.15 to do a lot of great things in our body. 00:02:05.19\00:02:07.36 For example, it can help the flow of toxins 00:02:07.39\00:02:10.33 to leave the body. 00:02:10.36\00:02:11.96 It also is really great for promoting 00:02:11.99\00:02:15.80 a good environment for vascular health. 00:02:15.83\00:02:19.93 And it can help your body to properly allow blood 00:02:19.97\00:02:25.64 to flow in your system. 00:02:25.67\00:02:28.61 So that's why I have my water here. 00:02:28.64\00:02:30.75 So when I get thirsty, don't mind me, 00:02:30.78\00:02:32.61 it's really important that we continue to consume 00:02:32.65\00:02:34.72 the amount of water we need daily. 00:02:34.75\00:02:37.95 So I'm going to keep chopping my onion. 00:02:37.99\00:02:40.86 All right. 00:02:57.77\00:02:59.11 Next, we'll add some carrots. 00:03:07.55\00:03:13.59 You can make it into three slices 00:03:13.62\00:03:15.22 or you can buy chopped carrots already prepared at the store. 00:03:15.26\00:03:18.43 And we'll start with our rocking motion. 00:03:24.13\00:03:26.13 All right. 00:03:33.34\00:03:35.11 So we've got our carrots, 00:03:35.14\00:03:38.08 and now we're going to get our lentils ready. 00:03:38.11\00:03:42.05 And a separate skillet you can also... 00:03:45.85\00:03:47.96 You can either saute your onions in the big pot 00:03:47.99\00:03:53.43 or, and if you do it in the big pot, you'll saute it first, 00:03:53.46\00:03:56.43 and then you'll add your water 00:03:56.46\00:03:57.83 or you can separate it and do it separately. 00:03:57.87\00:04:00.50 You can saute it separately in this pot. 00:04:00.54\00:04:03.54 So I'm going to use a little bit of the olive oil 00:04:03.57\00:04:05.67 that we've talked about before or water. 00:04:05.71\00:04:08.11 I highly recommend that too. 00:04:08.14\00:04:09.48 This is a great thing to saute it in so. 00:04:09.51\00:04:12.55 Actually, you can try something different. 00:04:12.58\00:04:15.05 This is Creative Cooking after all. 00:04:15.08\00:04:16.92 You can use water or you can use the olive oil as written. 00:04:16.95\00:04:21.22 So we'll put our onions into the skillet. 00:04:21.26\00:04:24.56 Okay, and then we'll put our carrots. 00:04:29.86\00:04:33.13 I can hear the water boiling, it's waiting for us. 00:04:38.51\00:04:42.51 So we have the onions going in there and the carrots. 00:04:42.54\00:04:46.85 And now we'll just stir them together, 00:04:46.88\00:04:51.19 and let them continue to saute. 00:04:51.22\00:04:54.49 And this is the critical part of the recipe. 00:04:54.52\00:04:57.76 Now, are you paying attention? 00:04:57.79\00:04:59.13 I want to make sure you're paying attention. 00:04:59.16\00:05:00.93 This is critical, this is the step in this stage 00:05:00.96\00:05:05.13 where you're going to put in all of your spices 00:05:05.17\00:05:09.30 so that the oils from it can effectively exude from it 00:05:09.34\00:05:12.61 and come into your soup, so it's important. 00:05:12.64\00:05:15.54 This is where you put your spices. 00:05:15.58\00:05:18.11 You can add it later on, 00:05:18.15\00:05:19.68 but it's the heat that inspires the different oils 00:05:19.71\00:05:24.02 from the herbs and spices to come out during this part. 00:05:24.05\00:05:27.72 So you want to put it at the base 00:05:27.76\00:05:29.09 when you have your onions. 00:05:29.12\00:05:30.76 I'm also going to put some garlic in here as well. 00:05:30.79\00:05:34.23 All right. 00:05:37.70\00:05:39.03 And if you can hear, 00:05:44.21\00:05:45.54 it's starting to saute just as fine with water. 00:05:45.57\00:05:49.48 Now I'm going to put the different spices. 00:05:54.28\00:05:57.09 So on the recipe, it says to put cayenne in. 00:05:57.12\00:05:59.95 Now, I want to let you know, 00:05:59.99\00:06:02.42 if spice is not something or hot food 00:06:02.46\00:06:06.43 in regards to the different amount of temperature it is, 00:06:06.46\00:06:09.56 like for example, if you don't like spicy food, 00:06:09.60\00:06:12.03 I will use less cayenne. 00:06:12.07\00:06:14.14 So you can just put a little bit in 00:06:14.17\00:06:15.97 and taste it and go like that. 00:06:16.00\00:06:17.77 Otherwise, if you like really spicy food 00:06:17.81\00:06:19.94 or you like a kick to it, 00:06:19.97\00:06:21.54 you can put the whole amount of cayenne. 00:06:21.58\00:06:23.65 But I would encourage you to season it as you go 00:06:23.68\00:06:26.72 to make sure it's not too spicy for you. 00:06:26.75\00:06:29.48 Then we'll put in our cumin seeds, 00:06:29.52\00:06:35.36 our cumin powder... 00:06:35.39\00:06:37.26 some Italian seasoning, thyme actually. 00:06:41.03\00:06:47.70 Okay, now we'll saute it. 00:06:47.74\00:06:52.27 And if you start to smell the aroma from the spices, 00:06:52.31\00:06:56.75 that's how you know it's almost done being sauteed. 00:06:56.78\00:07:02.08 So when you start... 00:07:02.12\00:07:03.59 Wow! 00:07:03.62\00:07:05.19 That's amazing. 00:07:05.22\00:07:06.76 It's a really, really, really good smell. 00:07:06.79\00:07:11.23 Okay, I wish you were here so you could smell this. 00:07:11.26\00:07:13.96 But okay, so we've got that going on. 00:07:14.00\00:07:16.50 Now, we're going to put this into our soup. 00:07:16.53\00:07:22.24 We've seasoned it well. 00:07:22.27\00:07:26.74 All right. 00:07:26.78\00:07:28.11 So we're going to add this to our soup. 00:07:28.14\00:07:29.91 Next, we'll put the vegetable broth. 00:07:39.42\00:07:42.72 It's a good base and gives a lot of flavor. 00:07:49.40\00:07:52.33 We'll also put the lentils in. 00:07:52.37\00:07:55.10 So the recipe calls for the lentils being cooked, 00:07:55.14\00:07:57.77 you can do that. 00:07:57.81\00:07:59.14 And if you have them cooked, 00:07:59.17\00:08:00.51 you put the lentils in towards the middle part of it. 00:08:00.54\00:08:02.91 So you can put them in raw as well 00:08:02.94\00:08:05.11 because it's all one pot of soup. 00:08:05.15\00:08:09.55 All right, so we're letting that cook. 00:08:09.58\00:08:12.69 All right. 00:08:12.72\00:08:14.06 Then we've got our diced tomatoes. 00:08:14.09\00:08:16.56 We'll pour this in as well. 00:08:16.59\00:08:17.99 All right. 00:08:24.50\00:08:27.44 And one of the last things you'll let it cook, 00:08:27.47\00:08:30.57 just continue to allow it to boil. 00:08:30.61\00:08:34.11 Okay. 00:08:34.14\00:08:36.81 Wow, that smells really good. 00:08:36.85\00:08:38.18 I like the citrus 00:08:38.21\00:08:41.08 that's going to be coming in when we put our lemon. 00:08:41.12\00:08:43.39 I can sense that that's going to be a good ingredient. 00:08:43.42\00:08:46.52 But I like the tomato base. 00:08:46.55\00:08:50.83 And I also like how the cumin mixes with the tomatoes. 00:08:50.86\00:08:54.06 So it has a nice contrast in this dish. 00:08:54.10\00:08:59.33 Next, we will put some coconut milk. 00:08:59.37\00:09:04.04 This makes the soup creamy. 00:09:07.21\00:09:09.31 All right. 00:09:13.65\00:09:16.45 Now we just let it cook down. 00:09:16.48\00:09:19.12 Let the... 00:09:19.15\00:09:20.49 The more time you leave in it, 00:09:20.52\00:09:22.06 you'll allow the soup to extract all the flavors 00:09:22.09\00:09:26.63 from the different ingredients. 00:09:26.66\00:09:28.00 So you want the ingredients to combine 00:09:28.03\00:09:30.70 and for the soup to become one. 00:09:30.73\00:09:32.07 So you don't want to have everything separate. 00:09:32.10\00:09:33.67 So it's really good 00:09:33.70\00:09:35.04 if we just allow time for the soup to simmer 00:09:35.07\00:09:37.71 and for all the flavors to combine effectively. 00:09:37.74\00:09:42.24 So now we're going to let that cooking, 00:09:42.28\00:09:43.61 especially if you put raw 00:09:43.65\00:09:46.11 or uncooked lentils inside of your soup, 00:09:46.15\00:09:48.85 it's important for you to give it enough time 00:09:48.88\00:09:50.45 so that they're tender. 00:09:50.49\00:09:51.82 If you put cooked lentils in, you'll need less time. 00:09:51.85\00:09:54.22 So just let that continue to cook. 00:09:54.26\00:09:56.66 And when you're done, 00:09:56.69\00:09:58.09 the last thing you'll do 00:09:58.13\00:09:59.56 is you'll put some lemon juice inside, 00:09:59.59\00:10:02.50 and you can also put some lime zest, 00:10:02.53\00:10:05.13 so you just let that cook down. 00:10:05.17\00:10:07.07 And the most important part is you need to get ready to eat. 00:10:07.10\00:10:11.21 So that brings us along to our next recipe 00:10:11.24\00:10:15.98 which is cornbread. 00:10:16.01\00:10:18.51 For this recipe you'll need... 00:10:18.55\00:10:20.28 So let's get started on this good old cornbread. 00:10:35.53\00:10:39.67 Okay, so to start it off, 00:10:39.70\00:10:42.04 what you can do is take your dry ingredients... 00:10:42.07\00:10:45.74 the flour. 00:10:50.41\00:10:53.01 And you can substitute, 00:10:53.05\00:10:54.38 you can choose your favorite flour 00:10:54.42\00:10:57.05 that you would like to use and see how it comes up. 00:10:57.09\00:11:03.12 Okay, so we have that. 00:11:03.16\00:11:05.39 Then we'll also put in some cornmeal, 00:11:05.43\00:11:08.03 which, to me is amazing 00:11:08.06\00:11:09.96 because it's a color that I like, 00:11:10.00\00:11:12.63 and it reminds me of the sun, 00:11:12.67\00:11:14.04 which points me back 00:11:14.07\00:11:15.40 to one of the great health principles I've learned, 00:11:15.44\00:11:17.77 which is about getting a lot of exposure to the sun. 00:11:17.81\00:11:21.54 Getting enough sun exposure, 00:11:21.58\00:11:23.35 it actually can be healthy for us. 00:11:23.38\00:11:25.61 I didn't really know, after doing much research, 00:11:25.65\00:11:28.42 I found that having exposure to the sun 00:11:28.45\00:11:31.85 has the ability to boost 00:11:31.89\00:11:34.42 the melatonin output in our bodies, 00:11:34.46\00:11:36.96 which, in turn, gives us more sleep. 00:11:36.99\00:11:39.69 And who doesn't like rest? 00:11:39.73\00:11:41.46 So I think that's a really cool thing that the sun can do so. 00:11:41.50\00:11:44.83 Now I'm going to mix it. 00:11:44.87\00:11:46.50 And another great thing I found that research has shown 00:11:46.53\00:11:49.30 that it can help build your immunity, 00:11:49.34\00:11:51.61 which is really nice. 00:11:51.64\00:11:53.61 And also, it can enable your body to produce vitamin D, 00:11:53.64\00:11:58.85 which is really great to aid the calcium absorption 00:11:58.88\00:12:01.92 within your body. 00:12:01.95\00:12:03.28 So it's pretty interesting how the sun 00:12:03.32\00:12:04.72 can have some really awesome health benefits. 00:12:04.75\00:12:07.72 All right, 00:12:07.76\00:12:09.09 so we're mixing all these dry ingredients together, 00:12:09.12\00:12:12.09 and we're also going to put 00:12:12.13\00:12:13.46 some baking powder in there as well. 00:12:13.50\00:12:16.90 Okay. 00:12:16.93\00:12:18.27 Just want to make sure it's thoroughly mixed 00:12:21.87\00:12:24.94 because when you put your liquids in, 00:12:24.97\00:12:26.61 it's just going to begin to clump up, 00:12:26.64\00:12:27.98 so you want it to be one. 00:12:28.01\00:12:30.48 Okay. 00:12:30.51\00:12:33.48 There we go. 00:12:33.52\00:12:35.18 Now we're going to go to our liquid ingredients. 00:12:35.22\00:12:38.52 We will add some milk... 00:12:42.09\00:12:45.79 some pureed corn... 00:12:58.31\00:13:00.38 some olive oil... 00:13:08.55\00:13:10.49 and some honey. 00:13:15.39\00:13:16.73 All right. 00:13:24.83\00:13:26.43 Now we will just let all these ingredients 00:13:26.47\00:13:29.94 combine effectively in the blender. 00:13:29.97\00:13:32.37 I really, really... 00:13:39.41\00:13:41.98 I really, really love Vitamixes 00:13:42.02\00:13:44.09 because they're effective, effective blenders. 00:13:44.12\00:13:47.96 I mean, there are so many things that you can put in it. 00:13:47.99\00:13:50.19 You can put your smoothies. 00:13:50.23\00:13:52.56 Right now, we're mixing things for our cornbread. 00:13:52.59\00:13:55.46 I really enjoy just really having effective blenders 00:13:55.50\00:13:57.90 when you are mixing things, 00:13:57.93\00:13:59.53 so just going to allow this to combine. 00:13:59.57\00:14:00.97 All right, looks about done to me. 00:14:09.61\00:14:14.78 And, now we will take our liquid mixture... 00:14:14.82\00:14:18.55 and we'll pour it in. 00:14:23.86\00:14:25.19 Just want to keep stirring, 00:14:28.30\00:14:32.17 allowing everything to combine, 00:14:32.20\00:14:37.87 just like so. 00:14:37.91\00:14:40.61 Okay, so at this point, you can either take a mixer 00:14:40.64\00:14:45.21 or you can mix with the spoon. 00:14:45.25\00:14:47.15 Just want to mix the wet and dry ingredients together, 00:14:51.05\00:14:54.66 so they can combine effectively. 00:14:54.69\00:14:57.76 You can use a whisk, a blender, a spoon, 00:14:57.79\00:15:00.30 whichever works best for you. 00:15:00.33\00:15:01.86 Just mix it all together. 00:15:06.60\00:15:10.47 And this is a good recipe 00:15:10.51\00:15:11.87 to add to your dinner at the fireplace. 00:15:11.91\00:15:15.58 So we've made a delicious soup prior to this, 00:15:15.61\00:15:19.11 and you can accompany it with this cornbread. 00:15:19.15\00:15:22.95 Just continue to mix everything, 00:15:22.98\00:15:24.89 make sure you get everything 00:15:24.92\00:15:26.25 from the sides and continuously mix. 00:15:26.29\00:15:32.39 And if you would like 00:15:37.30\00:15:38.63 to add more moisture into your cornbread, 00:15:38.67\00:15:42.70 you can add some soy milk, 00:15:42.74\00:15:46.11 just depends on the type of texture you would like. 00:15:46.14\00:15:48.84 I cannot wait, and if you want, during this phase, 00:15:52.78\00:15:57.55 you can also taste it before you bake it 00:15:57.59\00:15:59.25 to make sure 00:15:59.29\00:16:00.62 it's the consistency that you like. 00:16:00.66\00:16:03.73 So I'll take a little taste. 00:16:03.76\00:16:05.49 The flavors are good, so I'm okay with baking that. 00:16:09.00\00:16:13.10 Now, we'll take it 00:16:13.13\00:16:18.17 and put it in our baking sheet. 00:16:18.21\00:16:21.88 We'll just put it in there. 00:16:28.92\00:16:31.75 If your pan creates things to stick to it, 00:16:31.79\00:16:36.02 you can put a little bit of oil or something or PAM, 00:16:36.06\00:16:41.26 something to just put it on the side of it. 00:16:41.30\00:16:45.90 Just essentially you want a nonstick baking pan. 00:16:45.93\00:16:52.57 Okay. 00:16:52.61\00:16:55.84 Now you'll just flatten it out. 00:16:55.88\00:16:57.95 And you want to make sure you put your oven to 350. 00:17:01.08\00:17:04.22 Got a little on the sides. 00:17:08.69\00:17:10.56 Okay, so now it's ready to go into the oven 00:17:16.80\00:17:20.34 and bake on 350 for about 20 to 30 minutes. 00:17:20.37\00:17:24.54 Make sure you check it. 00:17:24.57\00:17:25.91 And while it's baking, what you want to do, 00:17:25.94\00:17:29.68 towards the end you want to put your fork inside of it 00:17:29.71\00:17:33.25 or a knife just to make sure 00:17:33.28\00:17:34.68 that you don't have any leftover residue 00:17:34.72\00:17:37.02 when you take your fork out. 00:17:37.05\00:17:38.45 So that's a good way to check and make sure it's cooked well, 00:17:38.49\00:17:41.56 it's not too dry, nor is it undercooked. 00:17:41.59\00:17:43.66 So here is what it looks like, 00:17:43.69\00:17:45.53 and now we're going to put it in the oven. 00:17:45.56\00:17:47.96 All right. 00:17:56.17\00:17:57.51 Super excited to try that when it comes out. 00:17:57.54\00:18:00.11 Now, last but not least, 00:18:00.14\00:18:03.04 we're going to go to our final recipe today. 00:18:03.08\00:18:06.31 It is our potato leek soup. 00:18:06.35\00:18:08.02 The ingredients include... 00:18:08.05\00:18:09.52 So now to start off our soup, 00:18:27.94\00:18:30.01 what we'll do is we'll take some vegetable broth 00:18:30.04\00:18:33.14 and let it boil. 00:18:33.17\00:18:34.71 Okay. 00:18:39.95\00:18:42.28 And we'll chop up some celery as well as some leeks. 00:18:42.32\00:18:46.49 Okay. 00:18:54.80\00:18:56.13 Now we'll get our leeks in the soup too. 00:19:05.27\00:19:10.45 Once you put that in there, 00:19:10.48\00:19:11.81 we'll also put some of our vegan butter... 00:19:11.85\00:19:16.35 or if you don't want to use vegan butter, 00:19:19.15\00:19:20.86 you can just replace it and add more water. 00:19:20.89\00:19:26.26 As we spoke earlier, water is amazing. 00:19:26.29\00:19:28.76 So feel free to use it wherever you like. 00:19:28.80\00:19:33.07 So we'll add our celery inside of our soup. 00:19:33.10\00:19:36.30 That's awesome. 00:19:42.18\00:19:43.51 Now we'll add some leeks. 00:19:43.55\00:19:47.02 And the good thing about leeks, 00:19:47.05\00:19:48.58 I washed the outside of the leek, 00:19:48.62\00:19:50.69 so now I'm ready to cut. 00:19:50.72\00:19:53.05 And we'll just roll it up and just slice it. 00:19:53.09\00:19:56.93 Okay. 00:20:09.00\00:20:11.11 Now I'm going to make sure to go over it again, 00:20:11.14\00:20:13.68 just to make sure everything's sliced well. 00:20:13.71\00:20:15.74 Okay. 00:20:19.15\00:20:20.95 So next, we'll put it in, but the one thing is curious... 00:20:20.98\00:20:24.35 I'm curious about is to check on this leek. 00:20:24.39\00:20:26.82 So I washed the outside, everything looks great, 00:20:26.86\00:20:28.92 put it in there. 00:20:28.96\00:20:31.99 But I'm kind of curious about the inside 00:20:32.03\00:20:34.26 because I want to use the whole thing, 00:20:34.30\00:20:35.63 I don't want to waste something. 00:20:35.66\00:20:37.00 So let's check and see what the inside is like. 00:20:37.03\00:20:42.30 'Cause it looks good on the outside, 00:20:42.34\00:20:45.87 but it's really interesting 00:20:45.91\00:20:48.44 'cause sometimes I found when it comes to different leeks, 00:20:48.48\00:20:51.91 you see there's dirt in the inside 00:20:51.95\00:20:54.55 when you get to the core. 00:20:54.58\00:20:56.62 So going back to our principles we talked about of NEWSTART... 00:20:56.65\00:21:02.62 Sometimes in life, we can get bogged down 00:21:02.66\00:21:05.66 by all the things going on. 00:21:05.69\00:21:08.06 It's really easy to start feeling, you know, 00:21:08.10\00:21:11.17 down and out and focus on our circumstances. 00:21:11.20\00:21:14.24 But the beautiful thing is there's God. 00:21:14.27\00:21:17.54 And God is there for us whenever we need Him, 00:21:17.57\00:21:20.08 He can wipe us clean, He can come into the heart. 00:21:20.11\00:21:22.91 Sometimes, as human beings, we look so great on the outside 00:21:22.94\00:21:25.65 but inside, there's other things 00:21:25.68\00:21:27.32 that we're dealing with. 00:21:27.35\00:21:28.68 So this leek, this very simple leek is something 00:21:28.72\00:21:31.75 that is resemblance of the principle 00:21:31.79\00:21:35.52 we talked about which is trust, 00:21:35.56\00:21:37.23 trust in the Lord. 00:21:37.26\00:21:38.59 You can trust in the Lord and give your burdens to Him. 00:21:38.63\00:21:41.83 He is there for us. 00:21:41.86\00:21:43.20 So this is a cool principle 00:21:43.23\00:21:44.57 that I was taught about a leek from my mentor. 00:21:44.60\00:21:47.57 It really taught us that food is more than food. 00:21:47.60\00:21:50.11 It can be healing, it can be tasty, 00:21:50.14\00:21:52.97 and also, there are some very key characteristics 00:21:53.01\00:21:55.04 and principles you can find just from cooking. 00:21:55.08\00:21:57.88 So I'm going to add this into our soup. 00:21:57.91\00:21:59.71 All right, next, we'll put in our chicken style seasoning. 00:22:05.19\00:22:11.16 We'll put in our sage, 00:22:15.70\00:22:21.77 some olive oil or water. 00:22:21.80\00:22:23.81 Now we'll just stir it, and allow it to simmer, 00:22:28.71\00:22:35.15 and we're going to put in our potatoes and rosemary next. 00:22:35.18\00:22:39.85 So with rosemary, you can just take the stock, 00:22:39.89\00:22:42.72 put your hands like this, and just peel it down. 00:22:42.76\00:22:49.36 Rosemary is one of my favorite, favorite herbs. 00:22:49.40\00:22:53.57 It has such an amazing smell, 00:22:53.60\00:22:56.04 and it tastes really good in different foods, 00:22:56.07\00:22:58.17 such as the soup. 00:22:58.21\00:22:59.54 I love it on pizza. 00:22:59.57\00:23:00.94 It's one of my favorite, favorite herbs. 00:23:00.98\00:23:04.15 So I just chop it and put it inside of our soup. 00:23:04.18\00:23:06.85 It gives it that extra flavor element we need. 00:23:06.88\00:23:10.32 It's really nice 00:23:10.35\00:23:11.69 when the difference spices and herbs blend together. 00:23:11.72\00:23:15.89 So that you can really 00:23:15.92\00:23:17.26 have this explosion in your mouth of flavor, 00:23:17.29\00:23:19.66 it's not bland, you want to have flavor. 00:23:19.69\00:23:21.96 And it's amazing how we've been given so many natural plants, 00:23:22.00\00:23:26.87 herbs, and spices to really season our food. 00:23:26.90\00:23:30.64 We were made with so many different taste buds, 00:23:30.67\00:23:33.94 and it's important that we, 00:23:33.98\00:23:35.31 you know, cater to them in a healthy way. 00:23:35.34\00:23:37.28 So there's no need to have bland plant-based food. 00:23:37.31\00:23:40.42 You can always season it with fresh herbs and spices. 00:23:40.45\00:23:43.75 Just going to keep cutting this. 00:23:49.66\00:23:55.16 Alrighty. 00:23:55.20\00:23:56.53 So we'll put this inside of our soup. 00:23:56.56\00:23:58.47 I'm starting to smell... 00:23:58.50\00:24:00.04 Wow! 00:24:00.07\00:24:01.40 It smells amazing, amazing, amazing. 00:24:01.44\00:24:04.31 Okay. 00:24:04.34\00:24:07.58 Now we're going to add some potatoes in there 00:24:07.61\00:24:10.98 as the broth is going... 00:24:11.01\00:24:12.75 your potato, you'll just cut it in half. 00:24:19.59\00:24:23.43 You can almost use the same principle 00:24:33.90\00:24:35.40 we used for the onions earlier, and then, you'll just dice. 00:24:35.44\00:24:41.38 So depending on what type of shape 00:24:41.41\00:24:43.01 you would like for your potatoes, 00:24:43.04\00:24:44.48 so just dice it. 00:24:44.51\00:24:49.18 And if you find you would like it a little smaller, 00:24:49.22\00:24:52.15 you can just chop it, like so. 00:24:52.19\00:24:58.36 Now we'll put our potatoes in the soup. 00:24:58.39\00:25:00.70 Finish it off. 00:25:07.44\00:25:11.24 And when it comes to different health concerns, right now, 00:25:11.27\00:25:14.58 I'm just using a regular potato, 00:25:14.61\00:25:19.38 but if you notice that, 00:25:19.41\00:25:22.02 let's say, if you have diabetes or any other health concerns, 00:25:22.05\00:25:27.02 you could potentially substitute it out 00:25:27.06\00:25:29.52 with a sweet potato 00:25:29.56\00:25:31.93 because sweet potatoes are a complex carbohydrate, 00:25:31.96\00:25:36.16 which essentially means 00:25:36.20\00:25:37.53 it breaks down slower into the body. 00:25:37.57\00:25:39.13 It doesn't spike your sugars as fast, 00:25:39.17\00:25:41.77 your glucose levels as fast as, you know, 00:25:41.80\00:25:45.41 when it comes to like white flour 00:25:45.44\00:25:48.44 or different things like that. 00:25:48.48\00:25:50.01 So if you would like to use a more complex carbohydrate, 00:25:50.05\00:25:53.65 I would recommend using a sweet potato. 00:25:53.68\00:25:57.95 Now we're going to stir our soup and check in on it. 00:25:57.99\00:26:01.19 Wow! 00:26:05.66\00:26:07.00 Okay, so the potatoes like we just put them in, 00:26:07.03\00:26:09.13 so they have some time to cook, 00:26:09.16\00:26:10.87 but I want you to take a look at how beautiful 00:26:10.90\00:26:12.93 and how green and rich the soup is. 00:26:12.97\00:26:17.61 It has a lot of different herbs and spices, 00:26:17.64\00:26:22.88 lots of fresh products. 00:26:22.91\00:26:25.28 So if you look and see the soup, 00:26:25.31\00:26:32.12 you can see the different colors. 00:26:32.15\00:26:34.29 And just one spoonful of it, 00:26:39.93\00:26:42.33 you can see that 00:26:42.36\00:26:43.70 it has all the rich green leeks and celery, 00:26:43.73\00:26:48.50 and now it has the potatoes, 00:26:48.54\00:26:50.07 the fresh herbs, and spices. 00:26:50.11\00:26:54.44 All right. 00:26:54.48\00:26:56.68 That's a really flavorful dish. 00:26:56.71\00:26:58.71 We're just letting it simmer down. 00:26:58.75\00:27:01.02 But we had a ball today. 00:27:01.05\00:27:03.79 Again, as always, 00:27:03.82\00:27:05.15 it's a pleasure cooking with you 00:27:05.19\00:27:07.29 from my kitchen to yours. 00:27:07.32\00:27:09.32 Let's review what we made today. 00:27:09.36\00:27:11.79 We had our leek soup that we just finished. 00:27:11.83\00:27:17.93 We also did some delicious cornbread 00:27:17.97\00:27:22.70 as well as our hearty holiday soup. 00:27:22.74\00:27:26.81 These are all great meals 00:27:26.84\00:27:28.31 that you could eat at a fireplace, 00:27:28.34\00:27:30.48 bring some friends together, 00:27:30.51\00:27:32.28 and just spend time together over a great meal. 00:27:32.31\00:27:35.15 That's a great thing about food, 00:27:35.18\00:27:36.52 it can bring people together, 00:27:36.55\00:27:38.19 you can share memories and learn about each other. 00:27:38.22\00:27:40.86 At the end of the day, 00:27:40.89\00:27:42.22 I went to school in a small college town, 00:27:42.26\00:27:44.53 and one of the things 00:27:44.56\00:27:45.89 that I really enjoyed about it 00:27:45.93\00:27:47.26 is that there weren't many things around, 00:27:47.30\00:27:48.96 but we had each other, 00:27:49.00\00:27:50.33 and therefore we built really strong relationships. 00:27:50.37\00:27:52.83 So take some time out, have dinner at a fire, 00:27:52.87\00:27:56.34 and enjoy yourself. 00:27:56.37\00:27:57.77 At the end of the day, I had a blast with you. 00:27:57.81\00:28:00.08 Thank you again for tuning in to Creative Cooking, 00:28:00.11\00:28:03.35 and be sure to tune in next time. 00:28:03.38\00:28:05.35
