Hola! Bonjour! 00:00:20.58\00:00:22.15 And welcome to Creative Cooking. 00:00:22.18\00:00:24.49 My name is Nicole Braxton, 00:00:24.52\00:00:26.02 and I will be your host and tour guide 00:00:26.05\00:00:27.86 as we travel the world one bite at a time. 00:00:27.89\00:00:31.06 Today, we'll be making a stop at the beautiful Middle East. 00:00:31.09\00:00:35.33 Some of the delicious meals we'll be making are hummus, 00:00:35.36\00:00:39.37 a delicious hummus wrap, tabouli, and beet hummus. 00:00:39.40\00:00:44.21 We're going to a place where the weather is beautiful, 00:00:44.24\00:00:47.64 the food is full of flavor and fresh ingredients. 00:00:47.68\00:00:51.35 So I am super excited to get to our first item 00:00:51.38\00:00:54.62 that we'll be cooking today. 00:00:54.65\00:00:56.15 The ingredients for our hummus include... 00:00:56.18\00:00:57.95 So let's get started. 00:01:19.77\00:01:22.18 All right. 00:01:22.21\00:01:23.55 Now for this dish, you will need a food processor. 00:01:23.58\00:01:26.08 So I have my food processor right here, 00:01:26.11\00:01:30.22 and we'll put some garbanzo beans that are already cooked, 00:01:30.25\00:01:33.46 so it makes the process more streamline. 00:01:33.49\00:01:35.42 So we'll put this into our food processor. 00:01:35.46\00:01:38.83 Alrighty. 00:01:38.86\00:01:40.90 Next, we can put some nutritional yeast flakes, 00:01:40.93\00:01:43.37 it gives it a cheesy, consistency, 00:01:43.40\00:01:46.07 and also lots of great vitamins with its B12 and amino. 00:01:46.10\00:01:50.41 Okay, so next, we'll put in some garlic, 00:01:54.74\00:01:59.18 it gives us a nice flavor. 00:01:59.21\00:02:01.18 We'll put in some paprika... 00:02:04.79\00:02:06.29 and some freshly squeezed lemon juice. 00:02:11.59\00:02:14.60 This definitely makes the dish vibrant, 00:02:14.63\00:02:17.57 and full of fresh flavors, 00:02:17.60\00:02:20.60 and makes it come alive essentially. 00:02:20.64\00:02:22.34 I really like adding the lemon juice. 00:02:22.37\00:02:23.87 We'll put that in there. 00:02:23.91\00:02:25.44 And then add a little bit... 00:02:25.47\00:02:27.38 Make sure you get all of our paprika. 00:02:27.41\00:02:30.65 Okay. 00:02:30.68\00:02:32.95 Then we'll add our cumin. 00:02:32.98\00:02:37.32 When making different dishes such as different Indian food, 00:02:37.35\00:02:40.86 it's really nice, I love putting cumin, 00:02:40.89\00:02:43.16 and mixing it with ground cumin, 00:02:43.19\00:02:45.09 mixing it with cumin seeds, 00:02:45.13\00:02:47.10 and essentially mixing that with curry 00:02:47.13\00:02:48.93 really makes a nice base. 00:02:48.96\00:02:50.30 So when we travel to other countries in the future, 00:02:50.33\00:02:52.83 remember, when you put ground cumin, cumin seeds, 00:02:52.87\00:02:56.17 and curry together, it makes a delicious flavor. 00:02:56.20\00:02:58.97 But back to our delicious hummus. 00:02:59.01\00:03:02.01 Okay, so we'll have some olive oil, 00:03:02.04\00:03:04.85 so we talked previously, extra virgin. 00:03:04.88\00:03:07.22 If you can get extra virgin cold-pressed olive oil, 00:03:07.25\00:03:09.42 it's better that it's less refined 00:03:09.45\00:03:11.55 than regular olive oil that you would get. 00:03:11.59\00:03:14.99 And the less refined it is, the more healthy it is for you. 00:03:15.02\00:03:18.73 Ultimately, the less oil you use, 00:03:18.76\00:03:20.50 the better it is for your body. 00:03:20.53\00:03:21.93 But if you do use it, 00:03:21.96\00:03:23.30 extra virgin cold-pressed olive oil is the best. 00:03:23.33\00:03:26.90 We're gonna put some salt to taste. 00:03:26.94\00:03:29.00 All right. 00:03:33.34\00:03:35.24 Then we'll put some tahini, 00:03:35.28\00:03:36.81 this is a super star in this dish. 00:03:36.85\00:03:38.48 It really brings it together. 00:03:38.51\00:03:40.52 We'll put some tahini in there. 00:03:40.55\00:03:42.22 All right. 00:03:53.26\00:03:54.60 And if you want to add any fresh herbs, 00:03:58.23\00:04:00.10 you can do that as well. 00:04:00.14\00:04:01.57 Okay. 00:04:06.78\00:04:08.11 So now we're gonna also add some water to help it blend 00:04:08.14\00:04:14.45 and combine everything. 00:04:14.48\00:04:15.82 So now you can see everything kind of coming together. 00:04:18.99\00:04:22.66 So we'll put in our food processor top 00:04:22.69\00:04:28.96 and blend it. 00:04:29.00\00:04:32.90 Everything's coming together so nicely. 00:04:32.93\00:04:35.74 Smell is so amazing, the smell is great. 00:04:41.74\00:04:44.81 Let's keep blending. 00:04:44.85\00:04:46.18 Good. 00:04:49.75\00:04:51.09 Great. 00:04:56.22\00:04:57.56 When making your hummus, 00:05:01.70\00:05:03.47 if you find that you'll like to add some more liquid, 00:05:03.50\00:05:05.87 you can add additional water, 00:05:05.90\00:05:07.34 you can also add a little bit of oil if you like. 00:05:07.37\00:05:12.41 Just a little, and let it just come together. 00:05:12.44\00:05:15.44 Now we're gonna take out our hummus 00:05:32.03\00:05:34.66 and see what we made. 00:05:34.70\00:05:36.73 It's a very simple dish. Be careful. 00:16:55.31\00:16:57.15 And explain to everyone that you're making beets 00:16:57.18\00:16:59.18 'cause it has a really unique color. 00:16:59.21\00:17:02.08 So we'll take our beet, we'll cut it up. 00:17:02.12\00:17:06.25 It's so tender. Wow! 00:17:09.26\00:17:11.29 It's kind of hard to make hummus dish 00:17:11.33\00:17:12.73 'cause it makes me want to eat the beet as I'm chopping it, 00:17:12.76\00:17:15.43 but it is delicious. 00:17:15.46\00:17:18.30 Look at the vibrant red from the beet. 00:17:18.33\00:17:20.57 If you take a quick look at that, 00:17:20.60\00:17:22.30 it's really vibrant. 00:17:22.34\00:17:24.04 And then as you make it, you'll see in your hands, 00:17:24.07\00:17:25.91 you'll have a little bit of red, 00:17:25.94\00:17:27.48 but it just makes for a great hummus. 00:17:27.51\00:17:30.35 So now I'm going to put some chickpeas, 00:17:30.38\00:17:34.52 still use chickpeas as a base 00:17:34.55\00:17:36.02 but we're going to add the beet in there for the color 00:17:36.05\00:17:38.75 and the different taste. 00:17:38.79\00:17:40.12 So we'll put the chickpeas in here. 00:17:40.16\00:17:44.43 We'll add our beets, chop them up, 00:17:44.46\00:17:47.56 just give a processor break, 00:17:47.60\00:17:49.96 but you can throw them in whole, 00:17:50.00\00:17:51.33 especially if you let it tenderize. 00:17:51.37\00:17:53.87 Throw our beets in there. 00:17:53.90\00:17:58.11 Be careful, it's a little bit warm. 00:17:58.14\00:17:59.47 So what you can do is also let it cool 00:17:59.51\00:18:02.04 before you put it in the hummus as well. 00:18:02.08\00:18:03.88 Now, we're going to add our other spices. 00:18:09.05\00:18:12.69 I'll wipe my hands really quick. 00:18:16.52\00:18:18.26 We're going to add garlic, paprika. 00:18:18.29\00:18:21.40 The garlic in. 00:18:21.43\00:18:25.17 Okay. 00:18:25.20\00:18:26.67 We have our paprika, 00:18:26.70\00:18:29.80 have our nutritional yeast flakes, 00:18:29.84\00:18:33.01 ground cumin, 00:18:33.04\00:18:34.38 so the similar things that we made 00:18:34.41\00:18:35.74 for our first hummus. 00:18:35.78\00:18:39.28 We have some more lemon juice keeping it fresh 00:18:39.31\00:18:42.92 and put that citrus in there, 00:18:42.95\00:18:45.19 some salt to taste, 00:18:45.22\00:18:49.19 some tahini... 00:18:49.22\00:18:51.79 which, again, is a really good acid to this beet, 00:18:51.83\00:18:56.30 really helps bring everything together. 00:18:56.33\00:19:00.07 Okay, then we're going to add some olive oil. 00:19:00.10\00:19:02.60 Alrighty. 00:19:07.31\00:19:09.94 Now we're going to put in the processor 00:19:09.98\00:19:15.42 and let it blend. 00:19:15.45\00:19:16.79 Wow! 00:19:20.29\00:19:21.72 Look at that. 00:19:21.76\00:19:23.09 Amazing! 00:19:27.66\00:19:29.16 Now if you see, 00:19:29.20\00:19:30.53 all of the colors are coming together, 00:19:30.57\00:19:32.43 and it really shows the vibrant red from the beet. 00:19:32.47\00:19:37.77 Really nice. 00:19:37.81\00:19:39.14 Wow! 00:19:50.32\00:19:51.65 This looks amazing. 00:19:51.69\00:19:54.42 So purple is one of my favorite color. 00:19:54.46\00:19:56.32 So having this color as a hummus 00:19:56.36\00:19:59.66 that I'm going to eat, I'm super excited. 00:19:59.69\00:20:01.10 It's beautiful, and it is going to be delicious. 00:20:01.13\00:20:04.43 So let's give it a try. 00:20:04.47\00:20:05.80 You can let it blend as long as you want. 00:20:05.83\00:20:07.67 If you want it smoother, 00:20:07.70\00:20:09.04 let it stay in the processor for a little longer time. 00:20:09.07\00:20:11.67 But if you like the consistency as a little thicker, 00:20:11.71\00:20:14.88 just have less time. 00:20:14.91\00:20:17.11 All right. 00:20:17.15\00:20:18.48 I'm gonna take this hummus. 00:20:22.48\00:20:25.55 Actually, I think I will put it in this bowl. 00:20:25.59\00:20:29.16 So you can have this over on with pita bread, 00:20:42.04\00:20:45.17 you can dip fresh veggies in it. 00:20:45.21\00:20:47.58 There's so many things, 00:20:47.61\00:20:48.94 you can put it as a base for a sandwich. 00:20:48.98\00:20:50.98 So here is our beet hummus, and you can make it smoother, 00:20:51.01\00:20:57.19 I have mine a bit chunky but it's really flavorful. 00:20:57.22\00:21:01.52 And just to give it a try, 00:21:01.56\00:21:03.22 I'm going to dip a red pepper in it, 00:21:03.26\00:21:05.89 see how it tastes. 00:21:05.93\00:21:07.26 Wow! 00:21:10.97\00:21:12.63 I do recommend this at home, 00:21:12.67\00:21:14.54 dip red peppers in your beet hummus, 00:21:14.57\00:21:18.07 it is delicious. 00:21:18.11\00:21:19.44 I'm using the other end, 00:21:19.47\00:21:20.81 just in case someone else wants to try. 00:21:20.84\00:21:25.21 Amazing. 00:21:25.25\00:21:26.61 All right, I'm having too much fun. 00:21:26.65\00:21:28.85 We have one more recipe. 00:21:28.88\00:21:31.25 And we are going to be making some tabouli. 00:21:31.29\00:21:33.79 The ingredients for tabouli is... 00:21:33.82\00:21:35.69 To start this off, let's look at our fresh veggies 00:22:01.62\00:22:05.22 we have inside of this tabouli. 00:22:05.25\00:22:08.19 So I like to get my tomatoes off the vine. 00:22:08.22\00:22:11.93 So I'll take some tomatoes, 00:22:11.96\00:22:13.86 and we'll dice it into four first. 00:22:13.90\00:22:17.20 So one down the middle, and we'll chop it. 00:22:17.23\00:22:22.04 And what you want to do... 00:22:22.07\00:22:23.77 And so if you see the tomato, 00:22:23.81\00:22:25.94 it has the inside which has all the different seeds. 00:22:25.97\00:22:30.25 I kind of look at it as the heart of the matter. 00:22:30.28\00:22:32.31 So what you want to do is go around the outside 00:22:32.35\00:22:36.95 and take out the seeds for this tabouli. 00:22:36.99\00:22:43.09 Okay, and you just cut. 00:22:43.12\00:22:45.46 So now you see, it looks like this 00:22:45.49\00:22:47.80 after you take the seeds out. 00:22:47.83\00:22:52.13 And you'll do that for each part of the tomato. 00:22:52.17\00:22:57.41 So you'll cut it around. 00:22:57.44\00:22:59.01 All right. 00:23:03.95\00:23:06.11 So this helps so when you make your tabouli 00:23:06.15\00:23:08.08 doesn't add extra juices from the tomato, 00:23:08.12\00:23:11.59 you can really just get the flavor 00:23:11.62\00:23:13.36 and some of the nutrients from the tomato 00:23:13.39\00:23:15.29 as opposed to the seeds and all the extra liquid. 00:23:15.32\00:23:20.23 So putting that to the side. 00:23:20.26\00:23:21.86 And also another thing, for our tabouli, 00:23:27.17\00:23:30.51 we are using couscous. 00:23:30.54\00:23:32.27 So when you make it, you will take your couscous, 00:23:32.31\00:23:36.01 you let it boil, and then as it's boiling, 00:23:36.04\00:23:38.85 you let it cook for about 30 minutes, 00:23:38.88\00:23:41.18 you'll pour it in. 00:23:41.22\00:23:43.08 And then when you're done cooking your couscous, 00:23:43.12\00:23:45.85 you'll refrigerate it. 00:23:45.89\00:23:47.46 And you can refrigerate it overnight 00:23:47.49\00:23:49.46 or just refrigerate it for two hours, 00:23:49.49\00:23:52.36 and then you're ready to start dressing 00:23:52.39\00:23:54.66 your couscous with all of these fresh ingredients. 00:23:54.70\00:23:58.10 So now you just chop up your tomatoes. 00:23:58.13\00:24:03.61 I like this tabouli 00:24:03.64\00:24:05.97 because it's a Middle Eastern fresh spin, 00:24:06.01\00:24:09.48 and it also combines a little bit 00:24:09.51\00:24:11.01 of Mediterranean cuisine with inside of the tabouli. 00:24:11.05\00:24:15.65 I was trained in how to kind of fuse 00:24:15.68\00:24:18.25 different countries' cuisines, 00:24:18.29\00:24:21.62 and this is a nice fusion. 00:24:21.66\00:24:23.02 So we have the tabouli with a lot of fresh herbs 00:24:23.06\00:24:27.23 that you'll see soon and veggies. 00:24:27.26\00:24:29.56 So it makes it really refreshing when you eat it. 00:24:29.60\00:24:32.90 Okay, so we're going to chop the tomato. 00:24:32.93\00:24:37.21 All right. 00:24:37.24\00:24:38.57 All right, so then you have your tomatoes chopped up. 00:24:46.58\00:24:48.92 Now, you'll move on to your cucumber. 00:24:54.02\00:25:00.90 And you can cut it in the middle, 00:25:00.93\00:25:04.57 and you can cut it down, 00:25:04.60\00:25:05.93 and you can cut it into three or four sections, 00:25:10.07\00:25:15.34 do three. 00:25:15.38\00:25:17.51 And then you'll do that rocking motion 00:25:17.55\00:25:19.35 that we talked about earlier. 00:25:19.38\00:25:21.35 So you just rock it. 00:25:21.38\00:25:23.02 Okay. 00:25:29.99\00:25:31.33 And then if you want it smaller, 00:25:31.36\00:25:32.89 you can just cut on top of it. 00:25:32.93\00:25:35.43 Do the same thing for the other section, 00:25:39.03\00:25:41.14 cut it into three. 00:25:41.17\00:25:43.87 Cucumber is great, you can also make 00:25:43.91\00:25:45.44 a nice cucumber water from the cucumber. 00:25:45.47\00:25:49.44 It's a great thing to add to water if you're detoxing 00:25:49.48\00:25:53.25 or just cleansing your body. 00:25:53.28\00:25:54.82 It's a good thing if you make cucumber water 00:25:54.85\00:25:56.72 to put cucumbers in your water 00:25:56.75\00:25:58.09 and let it sit overnight. 00:25:58.12\00:25:59.79 So it can be infused in your water. 00:25:59.82\00:26:02.62 So now we have our tomatoes and our cucumbers. 00:26:02.66\00:26:05.76 Next, we're going to be utilizing 00:26:05.79\00:26:08.56 our fresh herbs and spices. 00:26:08.60\00:26:10.20 We have mint, we have basil, 00:26:10.23\00:26:13.50 and we're going to add this as well. 00:26:13.54\00:26:17.14 So this is a new, unique spin 00:26:17.17\00:26:21.38 on the delicious tabouli. 00:26:21.41\00:26:24.31 So we just chop those up. 00:26:24.35\00:26:26.55 Now we're going to add all of our ingredients. 00:26:26.58\00:26:28.38 We'll put our onions in. 00:26:28.42\00:26:32.22 We'll add our cucumber, our tomatoes, 00:26:32.25\00:26:38.06 our mint, and our basil. 00:26:38.09\00:26:42.06 We'll also add some garlic. 00:26:42.10\00:26:44.00 There we go, some lemon juice, 00:26:47.20\00:26:52.61 olive oil, and salt to taste. 00:26:52.64\00:26:56.21 Now we'll mix it up. 00:26:56.24\00:26:59.65 Then you'll let it refrigerate, 00:26:59.68\00:27:02.72 so all of the different flavors can combine effectively. 00:27:02.75\00:27:06.82 And then you can serve it to your family. 00:27:06.86\00:27:10.19 So this is our finished tabouli, 00:27:10.23\00:27:11.73 you let it sit, 00:27:11.76\00:27:13.09 and let it marinate to get all the different flavors. 00:27:13.13\00:27:15.26 So we cooked a lot today, 00:27:15.30\00:27:17.57 and I'm so excited to try all this 00:27:17.60\00:27:19.47 fresh and flavorful food. 00:27:19.50\00:27:21.47 Today, we made our hummus which is really delicious. 00:27:21.50\00:27:25.67 You can add this to different wraps, 00:27:25.71\00:27:27.61 as you see, our next dish, 00:27:27.64\00:27:29.48 we had our wrap infused with all the different beans, 00:27:29.51\00:27:32.91 and we had the different red bell peppers, 00:27:32.95\00:27:38.02 and we had corn, and then we had our beet hummus 00:27:38.05\00:27:41.59 as well as our tabouli. 00:27:41.62\00:27:43.12 So we had a full meal today. 00:27:43.16\00:27:46.73 This might seem light but once you start eating this, 00:27:46.76\00:27:49.10 especially with the beans, it's really filling. 00:27:49.13\00:27:51.30 So as always, it is a pleasure to travel with you 00:27:51.33\00:27:55.80 one bite at a time. 00:27:55.84\00:27:57.41 Thank you again for tuning in 00:27:57.44\00:27:59.31 and be sure to check us out 00:27:59.34\00:28:01.54 on our next Creative
