Bonjour and Benvenuto! 00:00:21.48\00:00:25.25 Welcome to Creative Cooking. 00:00:25.29\00:00:27.19 My name is Nicole Braxton, 00:00:27.22\00:00:28.69 and I'm super excited to be here with you 00:00:28.72\00:00:31.36 as we journey around the world one bite at a time. 00:00:31.39\00:00:34.96 Today, our episode is called Mamma Mia! 00:00:35.00\00:00:38.90 As we journey to Italy, 00:00:38.93\00:00:40.27 we'll be making three amazing and delicious dishes. 00:00:40.30\00:00:43.64 They include lasagna, 00:00:43.67\00:00:45.51 eggplant paramagiana, and asparagus. 00:00:45.54\00:00:49.01 For our lasagna, 00:00:49.04\00:00:50.58 some of the ingredients include... 00:00:50.61\00:00:52.41 Now let's get started. 00:01:23.41\00:01:24.78 I'm super excited, I love Italian food. 00:01:24.81\00:01:28.08 And this is a nice plant-based spin 00:01:28.12\00:01:30.69 on the average and the normal lasagna 00:01:30.72\00:01:33.69 that we grew up with. 00:01:33.72\00:01:35.16 So we're going to start off by taking some tofu 00:01:35.19\00:01:40.96 and put it in a bowl. 00:01:41.00\00:01:43.33 You can get a tofu that is non-GMO. 00:01:43.37\00:01:49.00 So this is a part of the recipe, 00:01:49.04\00:01:50.54 you like to roll your sleeves up 00:01:50.57\00:01:51.91 and get messy 00:01:51.94\00:01:53.27 because we're going to crumble our tofu 00:01:53.31\00:01:55.98 to make it symbolize a ricotta cheese. 00:01:56.01\00:01:58.75 So this is a vegan ricotta cheese 00:01:58.78\00:02:00.55 by just putting it together with our hands. 00:02:00.58\00:02:04.65 And if you want, you can also do this with, 00:02:04.69\00:02:06.59 you know, a spoon or things like that. 00:02:06.62\00:02:08.66 This is a very hands-on process to say the least. 00:02:08.69\00:02:13.70 All right, so here is our lasagna. 00:02:13.73\00:02:18.33 This is one of my favorite recipes because it's simple, 00:02:18.37\00:02:21.77 like, once you cook it, 00:02:21.80\00:02:23.14 you can eat off a bit through the week, 00:02:23.17\00:02:25.31 most people love this recipe. 00:02:25.34\00:02:27.78 So I'm really happy to share it with you today. 00:02:27.81\00:02:30.25 Okay, so now 00:02:30.28\00:02:31.71 we have our tofu ready. 00:02:31.75\00:02:36.52 And if you look, now it has a consistency, 00:02:36.55\00:02:39.05 a little similar to like a vegan ricotta. 00:02:39.09\00:02:44.26 Now only thing that's left is the flavor. 00:02:44.29\00:02:47.50 So one of the things 00:02:47.53\00:02:49.46 that I found of eating plant-based 00:02:49.50\00:02:52.63 is that you can be really healthy 00:02:52.67\00:02:56.24 and also have delicious meals 00:02:56.27\00:02:58.44 if you put a lot of fresh herbs and spices in it. 00:02:58.47\00:03:01.44 And I didn't always eat this way, not at all. 00:03:01.48\00:03:04.91 I grew up eating all different types of food, 00:03:04.95\00:03:08.08 and so it's really nice to find food 00:03:08.12\00:03:10.42 that I'm used to, but that's healthier. 00:03:10.45\00:03:13.52 And once I try different meals, 00:03:13.56\00:03:17.63 you know, vegetables weren't necessarily seasoned 00:03:17.66\00:03:20.30 when I try different types of meals. 00:03:20.33\00:03:21.90 So I was wondering, 00:03:21.93\00:03:23.26 "Is it possible to eat a healthy food 00:03:23.30\00:03:25.70 that actually tastes good?" 00:03:25.73\00:03:27.27 And luckily, I'm very thankful 00:03:27.30\00:03:30.21 that I was introduced to a chef that taught and trained me. 00:03:30.24\00:03:33.94 And I realize 00:03:33.98\00:03:35.31 that all the different foods that you use, 00:03:35.34\00:03:37.01 it's really good 00:03:37.05\00:03:38.38 to put fresh herbs such as basil, 00:03:38.41\00:03:41.38 like we will put in today and thyme into the food, 00:03:41.42\00:03:44.95 because it really... 00:03:44.99\00:03:46.72 the food absorbs it. 00:03:46.76\00:03:48.09 For example, tofu acts like a sponge, 00:03:48.12\00:03:50.09 whatever types of ingredients and different sausage 00:03:50.13\00:03:53.90 you put on top of your tofu, it directly absorbs it. 00:03:53.93\00:03:57.30 So that's a great thing about tofu. 00:03:57.33\00:03:59.47 So now, I'm going to add 00:03:59.50\00:04:03.27 some just mayo into the tofu. 00:04:03.30\00:04:05.37 Okay. 00:04:10.31\00:04:12.15 And I will mix it around. 00:04:12.18\00:04:13.52 Can I add a little bit more?
