00:01:12.70\00:01:16.24 the people are full of hospitality, 00:01:16.27\00:01:19.01 and the history is rich. 00:01:19.04\00:01:20.81 Nonetheless, when it comes to food, 00:01:20.84\00:01:23.31 they have it down packed, comfort food is a key 00:01:23.35\00:01:26.48 that we will be focusing on today. 00:01:26.51\00:01:28.45 Some of the items 00:01:28.48\00:01:29.82 that we'll be preparing are barbecue chicken sliders, 00:01:29.85\00:01:32.42 vegan slaw, and collard greens. 00:01:32.45\00:01:35.59 Now when you think of barbecue chicken sliders, 00:01:35.62\00:01:37.39 what are you thinking? 00:01:37.43\00:01:38.76 Are you thinking chicken, 00:01:38.79\00:01:40.13 of course, maybe some soy curls? 00:01:40.16\00:01:42.43 But today, we're going to try something new. 00:01:42.46\00:01:44.53 We will be making barbecue chicken sliders 00:01:44.57\00:01:47.00 and the recipe calls for... 00:01:47.04\00:01:48.70 Now when it comes to barbecued jackfruit, 00:02:00.02\00:02:03.32 we are going to be utilizing jackfruit 00:02:03.35\00:02:05.09 that you can find in an Asian market 00:02:05.12\00:02:07.66 or also a jackfruit that you can find 00:02:07.69\00:02:09.79 at your local health food store. 00:02:09.82\00:02:11.59 So let me show you what jackfruit looks like. 00:02:11.63\00:02:13.19 It's pretty cool. 00:02:13.23\00:02:15.00 You can also get it fresh. 00:02:15.03\00:02:16.50 It's a large gigantic fruit 00:02:16.53\00:02:19.03 that you can find in your local grocery store. 00:02:19.07\00:02:21.40 But I personally like to use it canned 00:02:21.44\00:02:23.41 because it gets directly to the point, 00:02:23.44\00:02:25.11 and it's already diced up for me. 00:02:25.14\00:02:27.08 So if you take a look at this, jackfruit has a spongy texture. 00:02:27.11\00:02:31.85 And it's really symbolic of how it acts 00:02:31.88\00:02:34.28 when you put different ingredients 00:02:34.32\00:02:35.65 and sauces on it. 00:02:35.68\00:02:37.02 It really absorbs all of the flavor, 00:02:37.05\00:02:39.29 and it is a great meat replacement. 00:02:39.32\00:02:42.56 So today, to make our barbecue jackfruit sliders, 00:02:42.59\00:02:45.73 we're gonna take this jackfruit, 00:02:45.76\00:02:48.96 and we're going to place it in boiling water. 00:02:49.00\00:02:51.03 And it's my goal as we're going through this cooking program 00:02:54.60\00:02:58.24 to empower you to cook at home. 00:02:58.27\00:03:00.08 At the end of the day, we can all cook, 00:03:00.11\00:03:01.81 whether it's good or bad, we can all cook. 00:03:01.84\00:03:03.65 But today, I want to empower you 00:03:03.68\00:03:05.15 and inspire you 00:03:05.18\00:03:06.51 that you can cook delicious and nutritious food at home. 00:03:06.55\00:03:09.68 So we're gonna take our jackfruit, 00:03:09.72\00:03:11.05 put it in boiling water, 00:03:11.09\00:03:12.42 and we're gonna let that simmer for about 30 minutes. 00:03:12.45\00:03:17.39 The great thing is you wanna also make sure 00:03:17.43\00:03:19.29 you get young green jackfruit because at this point 00:03:19.33\00:03:22.03 it hasn't become ripe and sweet, 00:03:22.06\00:03:25.00 and it's the perfect time to get your jackfruit 00:03:25.03\00:03:27.44 so that you can flavor it with your different seasonings 00:03:27.47\00:03:29.90 and herbs and spices. 00:03:29.94\00:03:31.41 So now we're gonna let that simmer. 00:03:31.44\00:03:33.34 And as that's simmering, 00:03:33.38\00:03:34.74 we're going to chop up our onions and garlic. 00:03:34.78\00:03:39.38 So when it goes to chopping, 00:03:39.41\00:03:41.58 I like to take my onion and dice it right in half. 00:03:41.62\00:03:45.42 Now a fun thing that I found when cutting onions 00:03:49.52\00:03:52.46 is to dice it in half first, 00:03:52.49\00:03:55.63 and then turn it the way that doesn't have the bottom, 00:03:55.66\00:04:00.84 and then just cut straight down into little components. 00:04:00.87\00:04:05.44 And then I'll take a line across with my knife. 00:04:09.81\00:04:14.95 And then I'll just go back and forth like a saw, 00:04:14.98\00:04:18.59 just like this. 00:04:18.62\00:04:22.69 Okay. 00:04:22.72\00:04:24.06 This is an effective way to cut onions. 00:04:28.13\00:04:31.80 You don't have to spend so much time putting 00:04:31.83\00:04:33.47 your onions in a chopper, just go back and forth. 00:04:33.50\00:04:38.37 And then if you get to the point, 00:04:38.41\00:04:39.74 you realize that you wanted to make smaller cuts, 00:04:39.77\00:04:43.35 you can put your hand 00:04:43.38\00:04:44.71 on top of your knife 00:04:44.75\00:04:46.35 and cut like this. 00:04:46.38\00:04:48.22 Okay, clean it off, 00:04:52.79\00:04:54.92 put it to the side, and continue. 00:04:54.96\00:04:58.36 You can cut off your little 00:06:14.70\00:06:16.97 the aroma is, how strong it is and potent. 00:06:17.01\00:06:19.81 The great thing about it is 00:06:19.84\00:06:21.61 it can really help build your immune system, 00:06:21.64\00:06:23.28 especially during cold season. 00:06:23.31\00:06:24.68 There's different drinks you can make out of it. 00:06:24.71\00:06:26.92 There are certain things that people call a penicillin, 00:06:26.95\00:06:30.35 which you can put garlic, and you can put lemons, 00:06:30.39\00:06:35.22 and oranges together, blend it, and it's a really good drink 00:06:35.26\00:06:38.69 to make to help you stay healthy 00:06:38.73\00:06:40.83 during the cold months and especially flu season. 00:06:40.86\00:06:44.57 So garlic is great for the system. 00:06:44.60\00:06:46.57 I'm just gonna keep chopping our garlic. 00:06:50.44\00:06:54.28 All right, so now we're going to sauté these 00:06:54.31\00:06:57.35 so we can put this into our barbecue sauce. 00:06:57.38\00:06:59.88 I'm going to use some extra virgin olive oil. 00:06:59.91\00:07:02.38 Now some of you may be wondering, 00:07:02.42\00:07:04.25 "What is the difference 00:07:04.29\00:07:05.62 between extra virgin olive oil and virgin olive oil?" 00:07:05.65\00:07:09.26 Basically, what it really comes off to, 00:07:09.29\00:07:11.83 the main principle 00:07:11.86\00:07:13.76 is how refined the olive oil is. 00:07:13.80\00:07:16.70 When it's extra virgin olive oil, 00:07:16.73\00:07:19.00 it's less refined, it's healthier for the body, 00:07:19.03\00:07:21.84 and it's better for you to cook with. 00:07:21.87\00:07:23.41 So extra virgin olive oil is preferred, in my opinion, 00:07:23.44\00:07:28.18 over virgin olive oil because it's less refined, 00:07:28.21\00:07:30.98 it's more close to its natural state. 00:07:31.01\00:07:34.72 So we're gonna take a skillet, 00:07:34.75\00:07:39.19 and we're going to put 00:07:39.22\00:07:40.56 some extra virgin olive oil in there. 00:07:40.59\00:07:46.23 And we're going to let that heat for a little bit, 00:07:46.26\00:07:48.43 check in on our jackfruit to make sure 00:07:48.46\00:07:53.07 that it's cooking well, which it is. 00:07:53.10\00:07:54.67 I'll show you a little bit. 00:07:54.70\00:07:57.51 It hasn't changed that much in its look, 00:07:57.54\00:08:00.31 but if you touch, you can see that it's getting softer. 00:08:00.34\00:08:02.54 The goal is to be able to pull it apart, 00:08:02.58\00:08:05.08 so we just want to keep tenderizing it 00:08:05.11\00:08:06.88 through boiling. 00:08:06.92\00:08:08.25 You can also bake it, but I prefer boiling. 00:08:08.28\00:08:11.09 Now as our skillet is heating up, 00:08:11.12\00:08:13.32 we're gonna put 00:08:13.36\00:08:14.69 some chopped onions 00:08:14.72\00:08:17.33 in the skillet... 00:08:17.36\00:08:21.33 as well as garlic. 00:08:21.36\00:08:25.00 Now if you can hear that sizzle, it is amazing. 00:08:25.03\00:08:29.14 I wish you were here with me so you can taste 00:08:29.17\00:08:31.91 what it smells like, actually, so you can smell it. 00:08:31.94\00:08:36.04 All right, 00:08:36.08\00:08:39.61 so now I'm just tossing around, 00:08:39.65\00:08:43.05 allowing the oils to be released 00:08:43.08\00:08:45.05 from the onion and the garlic. 00:08:45.09\00:08:50.76 Get a good view of that. 00:08:50.79\00:08:54.43 Wow! The smell is amazing. I love this. 00:08:58.03\00:09:02.37 This is a great base. 00:09:02.40\00:09:03.81 And a lot of times, 00:09:03.84\00:09:05.17 there's a principle that I'd love for you 00:09:05.21\00:09:06.74 to take with you. 00:09:06.78\00:09:08.84 You can have a base which is called a mirepoix. 00:09:08.88\00:09:11.95 A mirepoix is made of onions, garlic, and celery. 00:09:11.98\00:09:18.45 This is the critical stage 00:09:18.49\00:09:20.32 where you can season your dishes. 00:09:20.36\00:09:24.49 So we have this sautéing. 00:09:24.53\00:09:28.13 If you want at this point, 00:09:28.16\00:09:29.96 you're able to put any additional spices 00:09:30.00\00:09:31.93 that you'd like 00:09:31.97\00:09:33.30 or just want to keep allowing this to simmer. 00:09:33.34\00:09:38.37 So the good thing about the recipes here, 00:09:38.41\00:09:41.34 I really want to make sure that you stay engaged. 00:09:41.38\00:09:43.95 Each recipe that we have, we leave room for you 00:09:43.98\00:09:46.15 to add your additional seasonings 00:09:46.18\00:09:48.15 and to make adjustments, but it's very imperative 00:09:48.18\00:09:50.92 that you watch these cooking episodes 00:09:50.95\00:09:52.85 that you can see some tricks of the trade 00:09:52.89\00:09:54.76 and apply it to the recipes 00:09:54.79\00:09:56.46 when you make it or else you'll wish you did. 00:09:56.49\00:09:59.63 So thanks for tuning in. 00:09:59.66\00:10:02.13 All right, so we have those going on right now. 00:10:02.16\00:10:05.70 Onions are being sautéed. 00:10:05.73\00:10:07.40 All right. 00:10:11.07\00:10:13.11 Okay, so now for our next dish, while these are simmering, 00:10:13.14\00:10:17.51 the onions are sautéing, 00:10:17.55\00:10:19.15 we're gonna go to our next recipe, 00:10:19.18\00:10:21.12 which will be a vegan slaw. 00:10:21.15\00:10:23.55 And the slaw consists of... 00:10:23.59\00:10:24.95 Now when it comes to the slaw mixture, 00:10:35.76\00:10:39.67 I like to have a nice mix of carrots, 00:10:39.70\00:10:42.70 might have some purple cabbage, 00:10:42.74\00:10:44.94 so it just makes it a nice variety. 00:10:44.97\00:10:48.64 So now I'll take the cabbage 00:10:48.68\00:10:51.11 and I'll put it inside of the bowl like so. 00:10:51.15\00:10:56.38 You see this? Okay. 00:10:56.42\00:11:00.96 And cabbage is part of the cruciferous vegetables, 00:11:00.99\00:11:04.23 which is really healthy for our body. 00:11:04.26\00:11:10.20 Okay, so now I'm going to add in some lemon juice. 00:11:10.23\00:11:15.67 You can pour it right over. 00:11:15.70\00:11:20.21 There we go. 00:11:20.24\00:11:23.24 It's so fresh. I absolutely love lemon juice. 00:11:23.28\00:11:27.65 I really like also putting it over salads 00:11:27.68\00:11:30.45 and also having it in water. 00:11:30.49\00:11:31.95 It's really good to take the pulp of the lemon, 00:11:31.99\00:11:34.02 put it inside of your water, just let it swirl around, 00:11:34.06\00:11:36.69 and it has really good medicinal properties 00:11:36.73\00:11:39.19 that you can have, 00:11:39.23\00:11:40.56 especially if you have it in the morning. 00:11:40.60\00:11:42.03 Continue to use that in your drinks if you can. 00:11:42.06\00:11:45.50 All right, so we put 00:11:45.53\00:11:46.87 some lemon juice over our cabbage. 00:11:46.90\00:11:48.84 Next we're gonna put some Just Mayo 00:11:48.87\00:11:51.01 or some vegan mayo of your choice. 00:11:51.04\00:11:53.58 So I'll put that in there. 00:11:53.61\00:11:54.94 This is a very simple slaw 00:11:54.98\00:11:57.78 because we don't want to take too much attention away 00:11:57.81\00:12:01.15 from the superstar, 00:12:01.18\00:12:02.58 which is our barbecue jackfruit. 00:12:02.62\00:12:05.79 So we're gonna put this inside. 00:12:05.82\00:12:07.86 And if you find, 00:12:07.89\00:12:09.22 when you're making your mixture, 00:12:09.26\00:12:10.59 you would like to add 00:12:10.63\00:12:11.96 a little more Just Mayo, do as such. 00:12:11.99\00:12:13.33 Remember, these recipes are a great background 00:12:13.36\00:12:17.23 and base for you to build and make them your own. 00:12:17.27\00:12:20.84 My goal is to empower you, so please take the challenge on 00:12:20.87\00:12:24.74 and feel free to just recipe to your liking. 00:12:24.77\00:12:27.81 Now I'm gonna add some celery seeds, 00:12:27.84\00:12:30.78 and I'll sprinkle this over there. 00:12:30.81\00:12:33.31 Now before I continue with the slaw, as you notice, 00:12:33.35\00:12:36.55 majority of the meals that we're cooking, 00:12:36.58\00:12:38.35 essentially all of the meals 00:12:38.39\00:12:39.75 that we're making today are plant based, 00:12:39.79\00:12:41.99 and the reason for that is the different 00:12:42.02\00:12:44.26 health properties, 00:12:44.29\00:12:45.63 nutritional values found in plant based foods. 00:12:45.66\00:12:48.60 Research and evidence has shown 00:12:48.63\00:12:51.10 that having a more plant based diet, 00:12:51.13\00:12:53.60 essentially all plant based diet, 00:12:53.64\00:12:55.90 really helps to impact our bodies in a positive way. 00:12:55.94\00:12:58.97 It enables us to have optimal health, 00:12:59.01\00:13:01.84 health of the mind, the body, and the spirit. 00:13:01.88\00:13:04.61 I mean this is a stepping stone. 00:13:04.65\00:13:07.68 But eating well helps you to live well. 00:13:07.72\00:13:10.22 So that's why you'll notice, 00:13:10.25\00:13:11.59 majority of our food is plant based. 00:13:11.62\00:13:13.56 Actually, all of our food is plant based. 00:13:13.59\00:13:15.69 So sprinkle some celery seeds over this. 00:13:15.72\00:13:18.53 Make it fresh. 00:13:18.56\00:13:21.26 But I do wanna warn you, 00:13:21.30\00:13:23.77 there are some negative drawbacks 00:13:23.80\00:13:26.03 from having a plant based meal 00:13:26.07\00:13:29.47 and a plant based diet. 00:13:29.50\00:13:32.61 I don't know 00:13:32.64\00:13:33.98 if I should share this with you, 00:13:34.01\00:13:35.34 I know I'm cooking plant based, 00:13:35.38\00:13:36.71 this might get in the middle of things, 00:13:36.75\00:13:38.08 but it's a secret. 00:13:38.11\00:13:40.18 Do you mind coming a little bit closer? 00:13:40.22\00:13:42.98 Yeah, come a little bit closer. 00:13:43.02\00:13:45.55 All right, the negative thing is you might lose weight, 00:13:45.59\00:13:51.39 you might gain energy, 00:13:51.43\00:13:54.50 and you might live longer in a healthy way. 00:13:54.53\00:13:57.30 And I don't know if you want the good things in life, 00:13:57.33\00:13:59.87 but if so, this is for you. 00:13:59.90\00:14:02.04 Sorry, I'm joking, I'm being sarcastic. 00:14:02.07\00:14:03.81 Plant based is great. 00:14:03.84\00:14:05.81 I've really found, 00:14:05.84\00:14:07.18 since I've adopted more of a plant based diet 00:14:07.21\00:14:08.84 that I've had more energy, I am able to really meet 00:14:08.88\00:14:13.62 all the different things of life better 00:14:13.65\00:14:15.38 when I eat better, 00:14:15.42\00:14:16.75 I work out, and this is just one component. 00:14:16.79\00:14:18.95 So this is our vegan slaw. there are 9 essential amino acids 00:24:32.70\00:24:35.10 that are taken directly from the food that we consume, 00:24:35.14\00:24:37.47 and that's the only place that we can get it.
