for salad vegetables, hummus and a tahini dressing. 00:01:15.77\00:01:20.38 We have Spanish smoked potato wedges 00:01:20.41\00:01:23.21 and to finish off, a healthy banoffee pie. 00:01:23.24\00:01:28.35 Cooking food in a short time does not happen by accident. 00:01:28.38\00:01:31.25 You need to make sure you're well prepared 00:01:31.29\00:01:33.09 in your kitchen set up 00:01:33.12\00:01:34.72 We've got a nice clear work space. 00:01:34.76\00:01:36.83 All the dishes are out that we're going to be using. 00:01:36.86\00:01:40.00 Hot pan on the stove. 00:01:40.03\00:01:41.60 The oven is heated to 400 degrees Fahrenheit, 00:01:41.63\00:01:44.47 which is around 200 Celsius... 00:01:44.50\00:01:46.47 We've got our food processor ready, 00:01:46.50\00:01:48.70 sharp knife and a chopping board 00:01:48.74\00:01:50.87 and our fridge and our pantry are stocked 00:01:50.91\00:01:53.14 with all the ingredients we're going to need. 00:01:53.17\00:01:55.81 So, let's get underway. 00:01:55.84\00:01:57.95 To start with, we want to get the witches in the oven 00:01:57.98\00:02:00.18 because they're gonna take longest to cook. 00:02:00.22\00:02:02.45 I just got some potatoes here. 00:02:02.48\00:02:05.12 We want a round about four potatoes, four potatoes, 00:02:05.15\00:02:07.52 about a potato per person but these are quite small, 00:02:07.56\00:02:09.82 so I might do a couple of extra. 00:02:09.86\00:02:12.13 And you can never have too many wedges as well. 00:02:12.16\00:02:14.56 Just gonna chop these up into wedges, 00:02:14.60\00:02:15.93 so chop them in half 00:02:15.96\00:02:18.07 and then we just chop them into wedges, 00:02:18.10\00:02:19.77 so just go around like that and chop them. 00:02:19.80\00:02:23.61 I'm actually keeping them thin, 00:02:23.64\00:02:24.97 you don't want to make it too thick 00:02:25.01\00:02:26.34 or they take too long to cook. 00:02:26.37\00:02:27.88 So again, you start, start with a half 00:02:27.91\00:02:30.15 and then just chop around 45 degrees, 90 degrees. 00:02:30.18\00:02:35.22 Next degrees we'll have lettuce and just put them in the bowl. 00:02:35.25\00:02:38.19 And when we're chopping, 00:02:38.22\00:02:39.55 we want to chop down the thin inside, 00:02:39.59\00:02:42.46 and that means we're going to get nice sharp wedges, 00:02:42.49\00:02:44.89 and they gonna be nice and thin. 00:02:44.93\00:02:48.60 At the end of the day, any odd shape will be fine. 00:02:48.63\00:02:51.20 But probably the main thing is just keeping them 00:02:51.23\00:02:52.63 nice and sharp, and nice and thin 00:02:52.67\00:02:55.47 that will make them fast cooking. 00:02:55.50\00:02:57.91 Potatoes can take up to, you know, 40 minutes to cook. 00:03:00.81\00:03:04.45 So, in 30 minutes, we want to make sure 00:03:04.48\00:03:06.01 we're taking few little shortcuts 00:03:06.05\00:03:07.38 like cutting them thin and just probably-- 00:03:07.42\00:03:09.08 Oop, it's a little bit of a naughty bit on there. 00:03:09.12\00:03:12.92 So keeping them nice and thin and we're going to use it 00:03:12.95\00:03:15.36 at slightly hotter temperature. 00:03:15.39\00:03:17.36 We're going to be cooking them at 00:03:17.39\00:03:18.73 200 degrees Celsius which is 400 Fahrenheit. 00:03:18.76\00:03:24.40 And if you're cooking things fast, 00:03:24.43\00:03:25.77 the important, one important thing 00:03:25.80\00:03:27.14 is to make sure they're evenly covered with oil. 00:03:27.17\00:03:29.60 You don't need much oil, 00:03:29.64\00:03:30.97 but just an even covering is really important. 00:03:31.01\00:03:33.44 So I just want to put them in a bowl 00:03:33.48\00:03:34.81 so we can shake it up 00:03:34.84\00:03:36.71 with the oil and get a nice even coating. 00:03:36.75\00:03:39.05 The spice I will be using today 00:03:41.75\00:03:46.39 is smoked paprika and it's available 00:03:46.42\00:03:48.72 in pretty much most supermarkets. 00:03:48.76\00:03:50.63 And it's one I recommend you keep in your pantry 00:03:50.66\00:03:52.93 that just has a lovely smoky flavor 00:03:52.96\00:03:55.26 it's not hot at all but recently mild. 00:03:55.30\00:03:58.87 It comes like this, looks like normal paprika. 00:03:58.90\00:04:01.20 So we're gonna add around about two teaspoons. 00:04:01.24\00:04:03.00 And we're just going to give it 00:04:08.61\00:04:09.94 a bit a food processor 00:05:23.28\00:05:28.96 and while I'm working on blender, 00:05:28.99\00:05:30.33 you need a food processor. 00:05:30.36\00:05:31.76 I'm going to start with the top first 00:05:31.79\00:05:33.40 which is the kind of a cashew cream. 00:05:33.43\00:05:35.86 And the reason we're doing this, 00:05:35.90\00:05:37.23 so we don't have to clean the blender 00:05:37.27\00:05:38.60 in between all the different layers. 00:05:38.63\00:05:40.80 So for this we want, one cup of cashew nuts. 00:05:40.84\00:05:43.20 And half a cup of water. 00:05:49.18\00:05:50.51 And we just kind of blend this, 00:05:55.18\00:05:57.72 we process it briefly. 00:05:57.75\00:06:00.36 There you go. 00:06:00.39\00:06:02.96 Keep that going around. if you want. 00:07:39.92\00:07:42.52 It's one cup of dates 00:07:42.56\00:07:45.79 and half a cup of water. 00:07:45.83\00:07:47.36 We want this to be slightly thicker 00:07:53.57\00:07:55.70 so it forms a nice base. 00:07:55.74\00:07:57.14 I first had this dish probably around 00:08:03.08\00:08:04.41 about 15 years ago. 00:08:04.45\00:08:05.88 And it was just... a naughty, naughty version. 00:13:38.61\00:13:43.92 so what we've done here is we've got some chickpeas. 00:13:43.95\00:13:47.36 And these are just soaked. 00:13:47.39\00:13:48.72 And you can soak them overnight. 00:13:48.76\00:13:50.93 So, not cook just soaks so is going to drain them. 00:13:50.96\00:13:53.29 And these are an essential element of a falafel. 00:13:56.53\00:13:59.67 And once you have soaked, cooked ones if you need to out of a can. 00:14:14.25\00:14:16.52 You just end up with a more kind of mushy consistency. 00:14:16.55\00:14:19.95 We've got some soybeans 00:14:19.99\00:14:22.99 and 00:17:36.28\00:17:40.76 And we're just gonna make a little falafel size ball. 00:17:40.79\00:17:44.96 So using your hands just make little balls about that size. 00:17:44.99\00:17:49.83 And just press
