amazed how easy it is. 00:01:06.33\00:01:10.27 On the menu today, we have a McHealthy meal combo. 00:01:10.30\00:01:15.37 We are starting with an amazing burger 00:01:15.40\00:01:16.91 that has a bean patty, Moroccan hummus, 00:01:16.94\00:01:20.01 fresh salad vegetables 00:01:20.04\00:01:21.68 and roasted butternut squash. 00:01:21.71\00:01:24.98 On the side, we're going to have sweet potato fries 00:01:25.01\00:01:27.78 and finishing it off with a carob ice shake. 00:01:27.82\00:01:32.95 So to start, we gonna make sure we set up our kitchen properly. 00:01:32.99\00:01:36.36 A nice clear work surface. 00:01:36.39\00:01:38.33 We've got a pan on the stove. 00:01:38.36\00:01:40.43 The oven's preheated at 350 Fahrenheit, 180 Celsius. 00:01:40.46\00:01:44.70 A sharp knife. 00:01:44.73\00:01:46.67 Good chopping board 00:01:46.70\00:01:48.10 and I've got lots of healthy ingredients 00:01:48.14\00:01:50.14 in a cupboard, in refrigerator. 00:01:50.17\00:01:53.07 So we're going to start with the sweet potato fries 00:01:53.11\00:01:56.28 and these are being nothing like 00:01:56.31\00:01:57.65 anything you've tasted before. 00:01:57.68\00:01:59.41 So we're going to start with some sweet potatoes. 00:01:59.45\00:02:01.58 And you can choose any color you want. 00:02:01.62\00:02:03.18 You can have the, the purple, the red, the orange, the gold. 00:02:03.22\00:02:06.55 And we're not going to peel them at all. 00:02:06.59\00:02:07.92 I'm not a big fan of peeling vegetables, 00:02:07.96\00:02:09.29 we don't need to 00:02:09.32\00:02:10.66 because obviously it takes time, 00:02:10.69\00:02:12.03 it creates wastage 00:02:12.06\00:02:13.53 and it has actually lots of nutrients in the skin as well. 00:02:13.56\00:02:16.60 So then to make fries, we're just gonna chop this 00:02:16.63\00:02:19.53 into nice, thick circles. 00:02:19.57\00:02:22.94 And then we're just gonna line them up together 00:02:26.78\00:02:28.98 and probably do about three at a time up here. 00:02:29.01\00:02:31.41 Skillful, and just cutting them, 00:02:31.45\00:02:33.68 whoops, we just might just do two, 00:02:33.72\00:02:35.05 I'm not offering that skill for today. 00:02:35.08\00:02:36.45 Cut two, just like that. 00:02:36.48\00:02:38.79 And you get really nice fried type size, 00:02:38.82\00:02:41.56 a nice chunky fries. 00:02:41.59\00:02:44.36 So continue with the rest of them. 00:02:44.39\00:02:47.96 So when you get fries from a fast food place, 00:02:48.00\00:02:53.54 they're generally deep fried in oil, 00:02:53.57\00:02:55.20 which means you got huge amounts of fat 00:02:55.24\00:02:58.54 and the fats being usually not very good fat as well. 00:02:58.57\00:03:03.38 Just chop this up. 00:03:03.41\00:03:05.58 Just keep cutting them into nice fry size pieces. 00:03:05.61\00:03:11.55 They all reduce a little bit when they are cooking, 00:03:11.59\00:03:14.46 so you probably want to err on the bigger side 00:03:14.49\00:03:16.86 than the smaller side. 00:03:16.89\00:03:18.29 And if you've got a long way or a short way, 00:03:18.33\00:03:20.30 make sure you get a long way 'cause you want longer fries 00:03:20.33\00:03:23.73 rather than shorter fries. 00:03:23.77\00:03:25.27 And you want to know these potatoes, 00:03:57.30\00:03:58.63 these fries is going to be a lot lower fat 00:03:58.67\00:04:00.64 than the ones you get in a fast food place. 00:04:00.67\00:04:03.10 Going to need some oil, 00:04:03.14\00:04:04.47 probably about two tablespoons of oil. 00:04:04.51\00:04:06.27 So this is actually very small amount 00:04:06.31\00:04:09.14 compared to what you'd be using 00:04:09.18\00:04:11.01 if you were in a fast food restaurant 00:04:11.05\00:04:12.98 deep frying. 00:04:13.01\00:04:14.35 So just toss them up like this, 00:04:14.38\00:04:17.09 just so that they're evenly coated. 00:04:17.12\00:04:19.02 It's really important that it's evenly distributed 00:04:19.05\00:04:20.52 so they, they cook and don't burn, 00:04:20.56\00:04:23.43 will help things cook faster, evenly. 00:04:23.46\00:04:26.56 And obviously, it's lots of flavor. 00:04:26.59\00:04:30.00 Oven tray, like that. 00:04:30.03\00:04:32.43 Spread them out. 00:04:32.47\00:04:35.24 Don't have to be perfectly spread out 00:04:35.27\00:04:37.74 and pop them in the oven. 00:04:37.77\00:04:39.84 So they're underway and they'll be ready in 00:04:44.98\00:04:46.55 probably around about 15 to 20 minutes. 00:04:46.58\00:04:49.12 Next ingredient is the roasted butternut squash. 00:04:49.15\00:04:52.42 And this is amazing vegetable when it's cooked 00:04:52.45\00:04:54.56 and it's an amazing ingredient for burger. 00:04:54.59\00:04:58.13 With the butternut squash, you've got this here 00:04:58.16\00:04:59.86 which is all butternut, 00:04:59.89\00:05:02.00 this here what is butternut and seeds. 00:05:02.03\00:05:04.90 So of course, when we cook, 00:05:04.93\00:05:06.27 we just going to use the top section. 00:05:06.30\00:05:07.64 And we're just going to slice off. 00:05:07.67\00:05:10.07 We're just going to slice off four rings 00:05:10.11\00:05:16.85 of butternut squash 00:05:16.88\00:05:18.71 and these are happen to be burger-shape sizes, 00:05:18.75\00:05:22.55 so they're going to be really nice. 00:05:22.58\00:05:24.39 And the skin on this is really, really soft, 00:05:24.42\00:05:26.09 so you leave it on. 00:05:26.12\00:05:27.46 We don't need to peel it. 00:05:27.49\00:05:28.82 Just put, just a touch of oil on oven, oven tray, 00:05:28.86\00:05:32.56 baking tray. 00:05:32.59\00:05:34.20 Both sides. 00:05:40.97\00:05:43.51 and it is very, very handy and versatile. 00:05:43.54\00:05:45.47 And they're non-stick as well. 00:05:45.51\00:05:47.38 So we're going to put those in the oven as well. 00:05:47.41\00:05:48.94 And there we have two jobs, they're mainly underway, 00:05:53.88\00:05:55.88 the two, the two long cooking jobs 00:05:55.92\00:05:57.79 and now we can get on with the rest of the meal. 00:05:57.82\00:06:01.82 One of the great secret to a great burger 00:06:01.86\00:06:04.26 is a great patty. 00:06:04.29\00:06:05.93 So I'm going to show you really nice, 00:06:05.96\00:06:07.30 delicious patty that you can make 00:06:07.33\00:06:08.66 that's really, really quick. 00:06:08.70\00:06:10.43 So I'm using beans, I'm using frozen soybeans. 00:06:10.47\00:06:14.14 You could use frozen broad beans, fava beans, 00:06:14.17\00:06:16.30 or any other kind of similar bean. 00:06:16.34\00:06:18.01 And we're going to use a can of white beans, 00:06:18.04\00:06:19.81 and I've got some cannelloni beans 00:06:19.84\00:06:21.31 but any kind of whitish bean would do. 00:06:21.34\00:06:23.31 This recipe is not that fussy. 00:06:23.35\00:06:25.81 So open the can beans and drain them. 00:06:25.85\00:06:28.95 And beans are a great source of protein. 00:06:28.98\00:06:32.65 So you want to have a bit of protein in, 00:06:32.69\00:06:34.19 generally in most meals, we have a meal. 00:06:34.22\00:06:37.23 And I'm just gonna put everything 00:06:37.26\00:06:38.59 into the food processor. 00:06:38.63\00:06:43.03 So one can of beans and a bag of these. 00:06:43.06\00:06:46.70 This is ten ounces or about 280 grams. 00:06:46.74\00:06:50.74 Hope you like that. 00:06:50.77\00:06:53.54 Beautiful color. 00:06:53.58\00:06:55.14 And these are actually kind of raw 00:06:55.18\00:06:56.98 but they're actually fine, they're stored, 00:06:57.01\00:06:58.61 they're frozen when they're fresh. 00:06:58.65\00:07:00.42 So you get a really nice fresh flavor in the burger. 00:07:00.45\00:07:03.79 Okay, now I want to add some flavor, fennel seeds. 00:07:03.82\00:07:06.45 So we're going to put about a teaspoon of fennel seeds in 00:07:06.49\00:07:08.59 and I just had this lovely, you just bite in, 00:07:08.62\00:07:10.76 you just get these little burst of really nice flavor. 00:07:10.79\00:07:14.46 Tablespoon of coriander, dried. 00:07:14.50\00:07:16.90 Gonna add a tablespoon of sweet chili sauce. 00:07:19.97\00:07:22.54 And, yeah, some cilantro or coriander. 00:07:27.41\00:07:30.55 So we're going to use the stalks 00:07:30.58\00:07:31.95 'cause, um, so chop off the in bits 00:07:31.98\00:07:34.75 and just chop, roughly chop stalks like that. 00:07:34.78\00:07:38.35 And we're going to reserve that 00:07:38.39\00:07:39.72 for garnish later for something. 00:07:39.75\00:07:43.79 Here we go. 00:07:43.83\00:07:46.19 Is everything in there? 00:07:46.23\00:07:47.56 Ah, we need a bit of flour, so I've got some 00:07:47.60\00:07:48.93 besan flour here 00:07:48.96\00:07:50.30 or also called chickpea or chana flour. 00:07:50.33\00:07:52.80 You can also use whole wheat flour or rice flour 00:07:52.83\00:07:57.31 but just a bit of flour, 00:07:57.34\00:07:58.67 just to help bind everything together. 00:07:58.71\00:08:00.84 Just a good tablespoon. 00:08:00.88\00:08:03.85 So now just put the lid on and blend or process. 00:08:03.88\00:08:08.15 We want those going around. 00:08:11.22\00:08:15.16 Plenty of noise there. 00:08:15.19\00:08:16.52 So we got a pan on the stove here, 00:08:41.15\00:08:42.72 And we're just gonna put this in here 00:08:42.75\00:08:44.62 and make little burger patties. 00:08:44.65\00:08:47.22 So, splash of oil. 00:08:47.26\00:08:49.19 Use a good non-stick frying pan. 00:08:49.22\00:08:51.69 You're going to need just a splash of oil. 00:08:51.73\00:08:53.90 I'm just going to use the hands 00:08:53.93\00:08:55.56 and just form these burgers, so... 00:08:55.60\00:08:58.60 You want them probably round about, 00:08:58.63\00:09:00.04 you know, double golf ball size. 00:09:00.07\00:09:02.30 So make them either form that are out like that. 00:09:02.34\00:09:06.37 And just put them in the pan. 00:09:06.41\00:09:10.21 And you know the pan's right when you put it in 00:09:10.25\00:09:12.61 and it's just a nice sizzle. 00:09:12.65\00:09:15.18 You don't want oil splattering everywhere. 00:09:15.22\00:09:18.05 As you can see, the beans haven't been totally blended 00:09:18.09\00:09:20.52 and that's totally fine. 00:09:20.56\00:09:22.22 You want a bit of texture. 00:09:22.26\00:09:23.83 You don't want it just be to be totally mushy. 00:09:23.86\00:09:26.29 You just want to make sure there's a nice taste in to make the hummus now, 00:10:26.79\00:10:28.12 the Moroccan hummus. 00:10:28.16\00:10:29.49 So we're going to start with a red onion, oops. 00:10:29.52\00:10:33.56 And we're just gonna cut the ends off. 00:10:33.60\00:10:36.93 Put into half. 00:10:36.97\00:10:38.43 And we're just going to gently, 00:10:38.47\00:10:39.80 we're going to fry this up and caramelize it. 00:10:39.83\00:10:41.34 And add it to the hummus whole. 00:10:41.37\00:10:44.11 Normally you might get something like this to a dip 00:10:44.14\00:10:46.78 and blend it in. 00:10:46.81\00:10:48.14 That's really nice, these beautiful, 00:10:48.18\00:10:50.15 sweet strands of red onion 00:10:50.18\00:10:53.65 running through a hummus or dip, 00:10:53.68\00:10:55.68 especially in a burger. 00:10:55.72\00:10:57.15 So just slice them as thinly as you can. 00:10:57.19\00:11:01.32 And again, when you're slicing, 00:11:01.36\00:11:03.09 you're slicing through the, through the onion. 00:11:03.12\00:11:08.93 You want to make little high hustle. 00:11:25.51\00:11:28.32 Doesn't take much room on the stove 00:11:28.35\00:11:29.68 and you can put them straight in the dishwasher. 00:11:29.72\00:11:31.75 So put it on there, and 00:11:58.31\00:11:59.65 We can use a stick blender if you want. 00:11:59.68\00:12:01.18 Just going to make a reasonably standard 00:12:01.22\00:12:02.98 hummus recipe. 00:12:03.02\00:12:04.49 And the first ingredient is garbanzo beans or chickpeas, 00:12:04.52\00:12:08.32 I mean what country you come from, 00:12:08.36\00:12:10.33 all the same thing. 00:12:10.36\00:12:12.19 Um, can is obviously the most convenient way 00:12:12.23\00:12:14.50 of getting them. 00:12:14.53\00:12:15.86 But they're also-- 00:12:15.90\00:12:17.23 generally at home we'll cook them up, 00:12:17.27\00:12:19.73 cook a big batch up. 00:12:19.77\00:12:21.20 Store them, place in containers, 00:12:21.24\00:12:22.74 put them in the freezer 00:12:22.77\00:12:24.11 and you've got fresh chickpeas available whenever you want. 00:12:24.14\00:12:27.88 So one can or around about two cups. 00:12:27.91\00:12:30.61 Lemon juice is an essential ingredient for hummus. 00:12:30.65\00:12:33.92 So we want juice, around about four tablespoons, 00:12:33.95\00:12:37.35 which is usually around about two lemons. 00:12:37.39\00:12:42.62 That just gives it a lovely sharp note to the hummus. 00:12:42.66\00:12:47.53 Pour it in through my fingers to catch the pips. 00:12:47.56\00:12:49.96 I think I caught all of them. 00:12:53.13\00:12:54.47 Look over there, this is, whoops. 00:12:58.04\00:13:01.68 This is cracking away already. 00:13:01.71\00:13:06.28 Tahini is an essential element for hummus 00:13:06.31\00:13:08.28 and tahini, you just grind up sesame seeds. 00:13:08.32\00:13:11.15 You can buy these at most supermarkets 00:13:11.19\00:13:12.85 or around health stores. 00:13:12.89\00:13:14.52 So I got two tablespoons in here. 00:13:14.56\00:13:16.39 Two good tablespoons. 00:13:16.42\00:13:17.79 'Cause it's Moroccan, we want to add 00:13:20.13\00:13:21.46 a Moroccan flavor, so we're going to put 00:13:21.50\00:13:23.43 a tablespoon of cumin powder. 00:13:23.47\00:13:25.00 You can smell that, beautiful. 00:13:28.57\00:13:31.44 And we want to put about a half teaspoon of salt. 00:13:31.47\00:13:35.28 And we need some water. 00:13:35.31\00:13:38.01 So we get some water on hand 00:13:38.05\00:13:40.22 and every bit of your hummus you'll make is different. 00:13:40.25\00:13:43.02 So you've kind of got to taste it as well, 00:13:43.05\00:13:45.19 so start with a half cup of water. 00:13:45.22\00:13:47.72 And also we're going to add some garlic, 00:13:47.76\00:13:49.39 we can't forget garlic in hummus. 00:13:49.42\00:13:52.86 So just, probably two good cloves 00:13:52.89\00:13:57.40 or perhaps use these, uh, one big and two little. 00:13:57.43\00:14:01.97 You just need garlic press. 00:14:02.00\00:14:03.34 Squeeze it straight through.
