Cook 30 food is all 00:00:32.46\00:00:36.90 about using whole food, plant based ingredients. 00:00:36.93\00:00:39.83 We're going to be using great protein sources like nuts 00:00:39.87\00:00:42.87 beans and lentils. Whole grains like brown rice and quinoa 00:00:42.90\00:00:47.28 tying it all together with fresh fruit and vegetables 00:00:47.31\00:00:50.25 and international flavors and fresh herbs and spices. 00:00:50.28\00:00:54.58 And the best part about Cook 30 food is you don't have to spend 00:00:54.62\00:00:58.35 hours slaving away in the kitchen to make it. 00:00:58.39\00:01:00.39 I'm going to show you how you can make a delicious meal 00:01:00.42\00:01:03.53 for your family in just 30 minutes and you'll not believe 00:01:03.56\00:01:07.00 just how easy it can be. 00:01:07.03\00:01:09.03 On the menu today we have a delicious Mexican feast. 00:01:09.86\00:01:13.34 We have a corn and pepper fiesta served with Guacamole 00:01:13.37\00:01:17.47 Zesty Coriander Rice and a fresh Mexican Salsa 00:01:17.51\00:01:22.14 We'll heat up some black beans and lettuce and for dessert 00:01:22.18\00:01:26.11 we'll have freshly cut mangoes with lime juice. 00:01:26.15\00:01:29.32 Okay the first thing when you start a meal is to make sure 00:01:30.62\00:01:33.29 that you got your kitchen prepared. 00:01:33.32\00:01:35.39 We've got the jug boiled, boiling water ready to go. 00:01:35.42\00:01:38.29 pans on the stove, chopping board, knife, clear bench area 00:01:38.33\00:01:44.63 and a fridge and cupboards stocked with lots of healthy 00:01:44.67\00:01:49.80 foods that we can use. First thing we're going to do is 00:01:49.84\00:01:52.87 the brown rice. So I've got a hot pan here and we're going to 00:01:52.91\00:01:57.11 cook brown rice. The recipe is basically two to one. 00:01:57.15\00:02:00.58 So we're going to start with one cup. This is a big container. 00:02:00.62\00:02:03.92 One cup of brown rice, and I usually use long grain because 00:02:03.95\00:02:07.79 it generally takes less time to cook. 00:02:07.82\00:02:10.26 And then we're going to use two cups of boiling water. 00:02:11.16\00:02:16.40 This is the standard recipe for brown rice. 00:02:17.73\00:02:20.14 So we'll let that cook. Bring it to a boil, so I'll just turn 00:02:28.24\00:02:31.55 it up so it's nice and hot and then turn it back down. 00:02:31.58\00:02:35.08 Rule for cooking rice, number one - you want the lid on 00:02:35.12\00:02:37.69 This is the absorption method which means you want the water 00:02:37.72\00:02:40.46 to be absorbed into the rice not steaming out the top of the pan. 00:02:40.49\00:02:44.03 Also, don't stir it. You'll ruin the little steam holes 00:02:44.06\00:02:47.53 that come up to cook the rice. Just leave it then and when it 00:02:47.56\00:02:50.67 starts boiling and bubbling we'll turn the heat right down 00:02:50.70\00:02:53.03 so it's just simmering and just bubbling. It will take around 00:02:53.07\00:02:56.30 20-25 minutes to cook. Ok we're going to start with 00:02:56.34\00:03:00.94 the corn and pepper fiesta. 00:03:00.98\00:03:04.41 And we're going to use canned corn. If you've got fresh corn 00:03:04.45\00:03:08.98 that's great as well. Just going to open these cans 00:03:09.02\00:03:11.69 And this is a really easy salad to make. Very, very quick. 00:03:13.29\00:03:17.69 Very nice and Mexicany. Two cans of corn, drained in the sink. 00:03:19.73\00:03:26.94 And I'm going to mix it in the bowl we're serving it in. 00:03:32.44\00:03:36.01 We can save a lot of dishes by doing that. 00:03:36.04\00:03:39.65 Two cans of corn. Lovely yellow batch that one. We have a 00:03:44.55\00:03:50.23 red capsicum or bell pepper. Depends what country and what 00:03:50.26\00:03:54.00 you call them. Take out the insides and we're just going to 00:03:54.03\00:03:57.60 dice this really finely. So to start with you want to slice it 00:03:57.63\00:04:01.70 really finely. You want a really sharp knife for this. 00:04:03.67\00:04:06.34 It can slide off and take your finger off. 00:04:06.37\00:04:10.98 And what we're going to do with every dish which I try to make 00:04:15.75\00:04:18.45 is to add a lot of color. And color just makes food look good 00:04:18.49\00:04:23.66 and if it looks good, it will generally taste good. 00:04:23.69\00:04:28.26 Line them up together, chop them up together. 00:04:28.30\00:04:31.40 Another run through as well. 00:04:31.43\00:04:34.77 You want to make sure it's no bigger than the corn. 00:04:34.80\00:04:37.77 Put that in there as well. 00:04:41.61\00:04:46.51 Going to add some spring onions or scallions or green onions 00:04:47.88\00:04:52.05 or whatever you call these. Going to add three of these. 00:04:52.09\00:04:56.42 These add lovely color, chop off any ends that aren't fresh 00:04:56.46\00:05:03.43 Chop off these ends as well 00:05:03.47\00:05:07.07 Cut them in half and just slice them through. It's quite nice 00:05:07.10\00:05:12.34 to slice things diagonally if you get a chance, like this 00:05:12.37\00:05:15.11 really fine and when you're slicing these type of things 00:05:15.14\00:05:18.71 you want to make sure your knife is going all the way 00:05:18.75\00:05:20.38 through to the board or else you're going to end up with 00:05:20.42\00:05:22.48 all these bits that are joined together. 00:05:22.52\00:05:24.55 So a nice slice, rocking the knife back and forth 00:05:26.52\00:05:29.62 so you're getting a clean contact with the board. 00:05:29.66\00:05:32.33 And you don't end up with too many bits joined together. 00:05:32.36\00:05:36.56 Catch any of the ends that have missed out. Look at that. 00:05:41.54\00:05:47.14 Put that in as well. Lovely colors. Ok, the rice as you 00:05:47.18\00:05:51.81 can see is now bubbling away so I'm going to turn that down 00:05:51.85\00:05:55.18 to very, very low heat so it will keep simmering gently. 00:05:55.22\00:06:00.76 So now we have to add a bit of dressing to this. So we'll add a 00:06:03.56\00:06:05.76 tablespoon of oil, I've got some extra virgin olive oil 00:06:05.79\00:06:10.30 just a good sprinkle of salt 00:06:12.23\00:06:14.80 and I think that's pretty much all the ingredients. 00:06:16.81\00:06:20.91 Just mix it up, the oil sinks down. You don't need sweetness 00:06:20.94\00:06:26.82 for this one because the corn is very sweet. Mix it around. 00:06:26.85\00:06:31.75 Just like that. Make sure you leave some green at the top. 00:06:31.79\00:06:35.12 And that is ready to go to the table. How quick is that? 00:06:35.16\00:06:39.29 It wouldn't be Mexican without Guacamole. So we'll get two nice 00:06:41.56\00:06:45.20 avocados. I'm going to cut into them, cut them in half long ways 00:06:45.23\00:06:49.10 Lovely. Just going to get the stone out of that 00:06:57.28\00:07:03.59 Take off the skin, it's a great way of getting the creamy flavor 00:07:16.13\00:07:19.53 in a Mexican meal. You can buy some prepared guacamole but 00:07:19.57\00:07:24.44 I've never had any success. I've got a beautiful 00:10:54.52\00:10:57.95 yellow one, look at that. So for salsa you want them really thin 00:10:57.99\00:11:03.29 for the salsa I like. You still want it a bit chunky not blended 00:11:03.32\00:11:08.50 So chop it into rounds like that and chop through it 00:11:08.53\00:11:17.27 And then the other way with the knife, like that 00:11:24.65\00:11:28.98 And then the same with these guys. It's really nice making your own salsa 00:11:43.53\00:11:47.54 You can buy salsa at the super market but I think making 00:11:47.57\00:11:51.14 your own, it only takes a couple of minutes and the flavor is 00:11:51.17\00:11:54.38 just WOW compared to what you can get in a package. 00:11:54.41\00:11:57.95 Get it chopped up right through, looking beautiful. 00:12:19.93\00:12:25.17 Ok, we're going to add some red onion. We'll use the one we 00:12:29.01\00:12:31.68 used before. Again, a quarter. The big onion is better than 00:12:31.71\00:12:36.18 the small onion, and we're going to make little cuts 00:12:36.22\00:12:43.96 dice this up really finely 00:12:43.99\00:12:46.70 Here we go. We're going to add some cilantro. 00:12:50.80\00:12:53.64 This is lovely as well. We're going to cut this up finely. 00:12:55.07\00:12:58.27 We're going to cut all the leafy bits 00:12:58.31\00:13:02.04 that's half the cilantro and we're going to preserve the rest 00:13:02.08\00:13:07.38 of the stalks for the cilantro rice later. 00:13:07.42\00:13:09.98 You want the juice of some limes. I'll just grab 2 limes 00:13:12.85\00:13:17.53 They're juicy and we're going to juice these 00:13:17.56\00:13:23.37 You want about 4 tablespoons of lime juice 00:13:26.70\00:13:32.21 and add a bit of salt, half teaspoon of salt 00:13:34.94\00:13:40.05 And that's pretty much every thing. Ah, chilies. 00:13:40.08\00:13:43.39 We can't go without chilies. I've got a nice chili here 00:13:43.42\00:13:45.75 They're not too hot. So again taste your chili, know what 00:13:45.79\00:13:49.42 your capabilities are. We're just going to dice this chili 00:13:49.46\00:13:53.03 really finely slice it. You've got some nice hot flavors 00:13:54.53\00:13:58.47 coming through. This one is a really mild one 00:13:58.50\00:14:01.87 but just go cautious if you need to. 00:14:01.90\00:14:05.94 Put the seeds and all in. 00:14:11.21\00:14:13.35 And we'll just squeeze a clove of garlic in as well 00:14:16.69\00:14:19.95 Where's that? Every one can customize their meal 00:15:47.61\00:15:50.45 how they want. So it's a really fun way to eat. I love this 00:15:50.48\00:15:52.58 style of cooking. So we're going to add some black beans 00:15:52.61\00:15:55.52 which is very Mexican. We're just going to empty the beans 00:15:55.55\00:16:00.86 into the pan and warm them up. You can get great canned 00:16:00.89\00:16:03.69 beans from the supermarket and most of them don't carry lots 00:16:03.73\00:16:08.63 of preservatives and things. And before we start dessert we want to make sure we 00:17:30.55\00:17:32.65 flip the cutting board so we don't get the oniony flavors 00:17:32.68\00:17:35.32 coming through in the dessert. One of the things I love doing 00:17:35.35\00:17:38.52 when I go shopping is looking at people with shopping trolleys 00:17:38.55\00:17:40.76 Not in any way to judge them but just to see what people eat 00:17:40.79\00:17:44.69 And sometimes you see mothers with children putting into the 00:17:44.73\00:17:48.46 trolleys absolutely, stuff that is not food it's just full of 00:17:48.50\00:17:53.64 sugar full of flavorings, preservatives, processed foods 00:17:53.67\00:17:57.07 and it just so many more amazing things God has created 00:17:57.11\00:18:01.21 for us to eat. Things like a simple mango. A mango 00:18:01.24\00:18:05.18 at the end of a meal will be much more satisfying and 00:18:05.21\00:18:07.88 enjoyable than some chocolate encrusted, white flour sugared 00:18:07.92\00:18:11.65 horrible dessert. So I encourage you to make really good choices 00:18:11.69\00:18:16.02 when you go to the supermarket and get good healthy stuff. 00:18:16.06\00:18:18.19 So I've got a great Mexican finish off for this and that's a 00:18:18.23\00:18:22.16 mango. So slice them the long way around the stone 00:18:22.20\00:18:30.34 so you're just missing it. Let's see if we can get 4 good cheeks 00:18:30.37\00:18:34.28 Look at that 4 beautiful cheeks. We're going to eat this later. 00:18:44.95\00:18:47.56 What we're going to do is slice them through here, you know 00:18:48.16\00:18:51.46 this trick and create lovely edible squares that we can eat 00:18:51.49\00:18:57.40 with the skin. Ever since I started 00:19:36.30\00:19:38.81 eating healthy food about 10 years ago, I need less sleep 00:19:38.84\00:19:41.81 I have more brain power, life is so much more better when you 00:19:41.84\00:19:46.85 have a clear brain and a healthy mind and body. 00:19:46.88\00:19:49.68 And not to mention that you're not going to get all those 00:19:49.72\00:19:51.19 horrible diseases that you can get. 00:19:51.22\00:19:52.62 So basically you just flip them out, like that. They might 00:19:52.65\00:19:57.06 break apart. Let's turn that off. And generally that's a good way 00:21:38.03\00:21:40.43 of telling your rice is finished It's all finished and as you 00:21:40.46\00:21:43.16 can see it's nice and fluffy which is great. 00:21:43.20\00:21:45.27 I've made twice as much rice because I'm going to store some 00:21:45.30\00:21:52.54 So grab some kind of container and put some rice in here 00:21:52.57\00:21:56.11 and that means tomorrow when you want to make a nice healthy 00:21:56.14\00:21:58.71 breakfast of stir fry or have a curry on rice, you've got 00:21:58.75\00:22:02.75 some rice in the fridge. This will keep round about 3 days 00:22:02.78\00:22:06.52 The trick is to make sure it cools off and then put it in 00:22:06.55\00:22:11.63 the refrigerator and it should last a few days. 00:22:11.66\00:22:16.67 I'll put it aside for it to cool off, won't put the lid on yet 00:22:18.50\00:22:21.57 Just a handy tip to keep your fridge stocked with useful foods 00:22:21.60\00:22:25.57 So that was beautiful rice. Now we wanna make it more delicious 00:22:25.61\00:22:31.71 Now you can serve curries and things with plain rice like this 00:22:31.75\00:22:35.38 but with Mexican we want to add a little more flavor 00:22:35.42\00:22:38.49 So I've got the coriander or cilantro stalks I used before 00:22:38.52\00:22:42.06 I'm just going to trim off the ends. 00:22:42.09\00:22:45.29 And we're just going to slice these 00:22:45.33\00:22:48.00 really thinly and these little ends of the coriander 00:22:49.53\00:22:55.60 are really delicious and add lots of flavor 00:22:55.64\00:22:58.81 Just take your time and cut through 00:22:58.84\00:23:01.44 with the leaves as well so we want a really nice even covering 00:23:03.38\00:23:08.32 If there's one thing you could probably use to improve cooking 00:23:12.69\00:23:16.99 and give more flavor is the use of fresh herbs. 00:23:17.03\00:23:20.50 You've probably noticed that I use a lot of herbs in my cooking 00:23:20.53\00:23:23.63 Coriander or cilantro is lovely to have in a lot of dishes 00:23:23.67\00:23:28.74 You want some fresh parsley, mint is really amazing too 00:23:28.77\00:23:33.54 in savory dishes and in some sweet dishes. You can grow thyme 00:23:33.58\00:23:38.38 oregano, there are so many beautiful flavors you can have 00:23:38.41\00:23:43.85 to add to your meals. So if you have a little herb garden 00:23:43.89\00:23:46.79 at home I've got one. Pop out anytime, pick some herbs 00:23:46.82\00:23:50.89 and then instant flavor, instant freshness 00:23:50.93\00:23:54.30 There's one thing you can do try getting some herbs. You can 00:23:54.33\00:23:56.80 buy them at the supermarket as well 00:23:56.83\00:23:58.57 but there's nothing like having a garden at home. 00:23:58.60\00:24:00.94 So we're going to put this in with the rice 00:24:00.97\00:24:04.31 I'm going to add some lime juice. Fresh lemon and lime 00:24:05.34\00:24:09.98 is another thing as well. It makes such a difference. 00:24:10.01\00:24:14.18 Cut these limes in half.
