Cook 30 Food is all about using whole foods. 00:00:34.20\00:00:37.87 We're gonna be using healthy plant based proteins like beans 00:00:37.90\00:00:42.20 lentils and nuts. Whole grains like bran rice and quinoa 00:00:42.24\00:00:46.51 lots of international flavors and herbs and spices 00:00:46.54\00:00:49.91 and fresh fruit and vegetables. And the best part about Cook 30 00:00:49.94\00:00:54.38 Food is you don't have to spend hours slaving in the kitchen 00:00:54.42\00:00:57.75 to make it. In the next 30 minutes I'm gonna show you 00:00:57.79\00:01:00.82 how easy it can be to make a great healthy meal for your 00:01:00.86\00:01:04.23 family. On today's menu we have a Thai theme. We're starting 00:01:04.26\00:01:09.10 with a Thai red curry with chick peas, we're gonna be serving 00:01:09.13\00:01:12.77 over rice noodles flavored with cilantro and lime juice. 00:01:12.80\00:01:16.20 We have a Thai ginger coleslaw and to finish it off a delicious 00:01:16.24\00:01:21.74 Thai dessert. Sticky rice mango. 00:01:21.78\00:01:26.41 Okay, to make a meal in 30 minutes you gotta make sure 00:01:27.45\00:01:30.59 your kitchen is totally prepared and ready. We've got a hot pan 00:01:30.62\00:01:34.26 on the stove ready to go. Chopping board, sharp knife 00:01:34.29\00:01:38.76 clear work space. We've got some boiling water in the jug 00:01:38.79\00:01:42.93 already boiled and our fridge and pantry is stocked with all 00:01:42.96\00:01:45.97 the ingredients we're gonna need. This is the most important 00:01:46.00\00:01:48.64 part about cooking fast. A few minutes in planning can make 00:01:48.67\00:01:51.44 a big difference when you need to get things out in a hurry. 00:01:51.47\00:01:54.21 To start off with the curry, the first ingredient is onions. 00:01:55.01\00:01:57.98 So we're gonna start with this brown onion. 00:01:58.01\00:02:00.78 I'm going to chop it up, dice it up and then we're going to 00:02:00.82\00:02:05.55 sauté it with some oil and garlic. 00:02:05.59\00:02:09.22 So onions are great way to start any vegetarian meal 00:02:09.26\00:02:14.20 It gives such a great depth of flavor. 00:02:14.23\00:02:16.77 So again you don't have to chop them too fine but just put them 00:02:18.57\00:02:22.27 in one lot and then chop them a bit and you've got yourself 00:02:22.30\00:02:25.94 some really great onions ready to go. A little bit of oil 00:02:25.97\00:02:31.58 You want to make sure the pan is sizzling when you throw 00:02:38.92\00:02:43.22 things in them. Next ingredient you want two cloves of garlic 00:02:43.26\00:02:48.43 and the quickest way to put garlic in a meal is to get 00:02:50.10\00:02:53.57 two nice healthy cloves straight in the press and press through 00:02:53.60\00:03:02.74 just like that. Look at that! 00:03:02.78\00:03:08.38 We're gonna add ginger. Ginger is great for any kind of Thai 00:03:08.42\00:03:12.52 or Asian dish. So we've got two tablespoons of ginger. 00:03:12.55\00:03:15.52 I'm using ginger puree today but you can use just normal 00:03:15.56\00:03:18.59 chopped ginger if you want. Another great Thai ingredient 00:03:18.63\00:03:22.16 is lemon grass. You can use some lemon grass chopped up very fine 00:03:22.20\00:03:26.57 or there's this great lemon grass paste you can get at the 00:03:26.60\00:03:29.37 supermarket as well. So two tablespoons of lemon grass paste 00:03:29.40\00:03:33.27 and this just seals out this dish full of lovely Thai flavors 00:03:33.31\00:03:39.15 So when we come to add the final ingredient the flavor 00:03:39.18\00:03:41.45 work has already been done. 00:03:41.48\00:03:43.89 Just take about five minutes to sauté and for those onions to 00:03:46.62\00:03:50.86 caramelize and lose their raw flavor. 00:03:50.89\00:03:53.73 Okay, noodles. We're gonna serve on noodles. 00:03:53.76\00:03:55.96 We've got the rice noodles you find at the supermarket 00:03:56.00\00:03:58.70 And just get some of these noodles. We're not gonna cook 00:04:00.04\00:04:03.10 them, we're just gonna put them in boiling water. Just pick a 00:04:03.14\00:04:05.74 random pot with a lid. Put the noodles in, like that 00:04:05.77\00:04:10.61 And we're gonna put boiling water which was boiled before 00:04:14.22\00:04:16.82 over the top of them and this will take anywhere between 00:04:16.85\00:04:20.26 5 to 12 minutes depending on the noodle, how thick it is 00:04:20.29\00:04:24.03 and how much water you have. Put the lid on and it will just 00:04:24.06\00:04:28.46 slowly start to cook and become soft. So by the time we're 00:04:28.50\00:04:31.13 ready to serve it will be well and truly done. 00:04:31.17\00:04:33.54 So that's a great start to our Thai meal. 00:04:34.70\00:04:37.57 Now let's add some really nice flavors to this base 00:04:39.51\00:04:41.61 We've got some coriander powder 2 teaspoons of it 00:04:41.64\00:04:46.18 and we've got some Thai Red Curry paste. This stuff is 00:04:50.12\00:04:52.82 amazing. You can make your own which is great but in a 00:04:52.85\00:04:55.02 situation like this we want a quick flavor burst this is just 00:04:56.16\00:04:59.09 excellent. So you use 2 teaspoon of this Thai curry paste 00:04:59.13\00:05:04.17 you can find them in My Super Markets and Asian stores 00:05:04.20\00:05:07.04 and again you can use as much or little as you want 00:05:09.27\00:05:12.54 just mix it with a little bit of water so that it evenly 00:05:12.57\00:05:16.64 distributes through the dish. Give it a bit of stir around 00:05:16.68\00:05:21.52 We're going to pour it in. 00:05:21.55\00:05:23.39 And I'm going to add some honey 2 tablespoons of honey or 00:05:27.69\00:05:30.99 date puree or agave or some healthy sweetener of choice 00:05:31.03\00:05:35.10 and a teaspoon of salt and stir that around and leave for those 00:05:37.37\00:05:44.31 flavors to heat. We want to activate those flavors with heat 00:05:44.34\00:05:49.71 Turn up the heat just a little bit. 00:05:53.11\00:05:56.89 You just know the curry is going to taste good with all these 00:05:56.92\00:05:59.19 flavors in the beginning. That's the secret. You need to add 00:05:59.22\00:06:01.76 the flavors at the beginning of the curries to make them taste 00:06:01.79\00:06:03.79 good. Once you get to the end and it doesn't taste quite right 00:06:03.83\00:06:05.89 it's very hard to add flavor. 00:06:05.93\00:06:09.63 We're going to add some bell peppers or capsicum. 00:06:09.66\00:06:14.44 I'm going to add half of a green one and half of a red one 00:06:14.47\00:06:16.87 just to add some color and a bit of vegetables. 00:06:19.14\00:06:21.84 We're just gonna get rid of all those seeds. 00:06:21.88\00:06:26.11 And we're gonna slice them thin. 00:06:26.15\00:06:28.68 Again you want a really nice sharp knife to be able to 00:06:29.68\00:06:33.19 do this. And often with these kind of peppers the knife can 00:06:33.22\00:06:37.19 actually slide off and get your finger. So make sure you've got 00:06:37.23\00:06:41.43 you're alert with everything and you've got a sharp knife 00:06:41.46\00:06:45.63 If you've got a blunt knife you can actually slice from the 00:06:45.67\00:06:48.27 other side and it's safer. But it's much better to do this. 00:06:48.30\00:06:51.97 When you're slicing make sure you're slicing with a rocking 00:06:52.01\00:06:53.98 action. You're not slicing down you're making the blade do 00:06:54.01\00:06:57.38 all the work. You're slicing through in a nice, gentle 00:06:57.41\00:07:00.52 rocking motion. It gets every thing cut nicely. 00:07:00.55\00:07:03.92 Put these in there. I'm not going to overcook those 00:07:05.29\00:07:11.53 because I want them to retain color and shape 00:07:11.56\00:07:14.46 Now I've got some crushed tomatoes. They're good to bulk 00:07:14.50\00:07:20.37 up the dish, add a bit of redness and they're just quite 00:07:20.40\00:07:23.87 nice in a red curry. Again we've got crushed tomatoes. 00:07:23.91\00:07:27.44 It's mainly like a tomato puree rather than chunks of tomato 00:07:27.48\00:07:33.35 in water. If it's just chunks of tomato or whole tomatoes, 00:07:33.38\00:07:36.89 make sure you blend it out first for a nice thick consistency 00:07:36.92\00:07:40.89 I've got some garbanzo beans or chick peas 00:07:45.96\00:07:49.16 This is going to be the protein part of the curry 00:07:49.20\00:07:52.23 Again for this type of curry you can add tofu or any kind 00:07:53.87\00:07:57.61 of beans or lentils. It's very, very flexible with what sort of 00:07:57.64\00:08:01.41 additions you want to make to it. 00:08:01.44\00:08:03.95 Just drain those in the sink 00:08:05.45\00:08:10.52 And we're just going to pour them in. 00:08:12.02\00:08:14.16 And this is pretty much most of the ingredients in the curry 00:08:18.03\00:08:21.40 It will be left here to sit for the next 10-15 minutes until 00:08:21.43\00:08:24.43 we serve and all these flavors are going to start to mingle 00:08:24.47\00:08:28.50 they're going to be heated through and right at the end 00:08:28.54\00:08:31.44 we're going to add a little bit of coconut cream to thicken it 00:08:31.47\00:08:34.14 So there we go. The main part of the curry is underway 00:08:34.81\00:08:37.88 I've got a really delicious coleslaw to make. 00:08:41.98\00:08:44.19 If you don't like coleslaw, you're gonna love this one 00:08:44.22\00:08:46.65 A Thai ginger coleslaw. 00:08:46.69\00:08:49.06 To start with we're going to make the dressing 00:08:49.09\00:08:51.33 To save dishes we're going to make the dressing in the bottom 00:08:51.36\00:08:52.93 of the bowl. So again we're going to the lemon grass 00:08:52.96\00:08:56.10 We're going to put in two table spoons of lemon grass and again 00:08:56.13\00:08:59.97 if you wanted to you could use chopped lemon grass, some ginger 00:09:00.00\00:09:05.11 a tablespoon of ginger puree I'm going to add some limes 00:09:05.14\00:09:10.51 and lemon juice which is a great addition to 00:09:10.55\00:09:12.88 any good dressing. You want about 2-3 tablespoons of each 00:09:12.91\00:09:20.22 of lemon juice and lime juice 00:09:20.26\00:09:24.13 I think we're getting about a tablespoon per half 00:09:24.16\00:09:29.73 And you can save on dishes by making the dressing in the bowl 00:09:31.80\00:09:34.90 I'll pour it in, strain it through my fingers. 00:09:43.91\00:09:47.88 Don't know if any lemon seeds made it in there. 00:09:47.92\00:09:52.49 Just grab those out. 00:09:52.52\00:09:56.19 Going to get some honey. One tablespoon of honey. 00:10:00.80\00:10:03.63 For a bit of sweetness. Here are some chili seeds. I couldn't 00:10:03.67\00:10:09.20 find any chilies that are really, really hot 00:10:09.24\00:10:12.67 or had no flavor at all. So I'm adding some chili paste 00:10:12.71\00:10:15.68 That's about half a teaspoon there. That's probably a little 00:10:15.71\00:10:20.42 bit more. You want to go under rather than over. 00:10:20.45\00:10:22.38 Just a little sprinkle of salt. Two tablespoons of sesame oil 00:10:23.79\00:10:30.49 This is the ingredient that's going to make this taste 00:10:30.53\00:10:33.29 amazing. So there we go. Just going to stir it up. 00:10:33.33\00:10:40.90 Mix it up so ingredients are combined. 00:10:40.94\00:10:45.17 Lots of great Thai flavors in there and flavors when they're 00:10:50.98\00:10:53.92 raw like this will be different than the flavors in the curry. 00:10:53.95\00:10:56.99 Here we go. So now it's time to add our vegetables 00:11:00.69\00:11:05.79 to the coleslaw. So we'll start with the carrots. 00:11:05.83\00:11:08.56 Put the top on here. Oops it's on! 00:11:08.60\00:11:11.53 I'm going to grate these carrots quickly. I want 7 cups in all 00:11:11.57\00:11:17.27 So I'm going to use about 3 carrots for this coleslaw 00:11:17.31\00:11:21.68 Just chop the ends off. And just turn it on. 00:11:30.49\00:11:38.33 And look how fast it can make some grates. 00:11:38.36\00:11:44.37 Here we go. We start with the carrots. 00:11:46.94\00:11:49.24 And now we're going to use the slicer blade 00:11:49.27\00:11:51.97 And this is another blade. This one can actually turn it 00:11:56.68\00:11:59.21 to make it as wide or thin as you want. 00:11:59.25\00:12:01.88 Some come with a thin slicer on one side and a thick slicer 00:12:01.92\00:12:05.79 on the other side. So we'll go medium slice. 00:12:05.82\00:12:09.89 So once you use these tools that are in your kitchen 00:12:11.83\00:12:15.90 you're gonna wanna use them all the time. 00:12:15.93\00:12:17.83 So get another cupboard and get using them. 00:12:17.87\00:12:19.93 So we'll start with cabbage. We want to take the leaves off 00:12:19.97\00:12:25.34 the outside and we just want to have it big enough so it can 00:12:26.57\00:12:30.31 put it through the top of the food processor. 00:12:30.35\00:12:37.15 Just like this. 00:12:40.66\00:12:48.20 Look how quick that makes a great amount of salad. 00:12:48.23\00:12:52.63 And here you go, simply 00:12:56.30\00:12:58.54 Empty the coleslaw mix into the bowl. Kind of mix it around as 00:13:00.28\00:13:06.72 you do and we're going to dress it before we serve 00:13:06.75\00:13:09.48 if we dress it now it's going to start going, you know 00:13:09.52\00:13:13.46 the dressing is gonna go into the vegetables. We're just 00:13:13.49\00:13:15.72 gonna leave it at the bottom and give it a tossup right 00:13:15.76\00:13:18.09 before we serve and that way maximize the amount of freshness 00:13:18.13\00:13:22.16 we have in the coleslaw as well. 00:13:22.20\00:13:23.53 Just give it a bit of, play around at the top 00:13:23.57\00:13:28.84 the red cabbage is an important ingredient for a lot of color 00:13:28.87\00:13:31.17 and we'll garnish that with some cilantro as well 00:13:31.21\00:13:33.51 to make it nice and green. 00:13:33.54\00:13:34.88 If you've just joined us at Cook 30 we're making a 00:13:37.75\00:13:39.75 delicious Thai meal. We have an amazing Thai ginger coleslaw 00:13:47.69\00:13:52.63 and to finish, Sticky Rice Mango a favorite Thai dessert 00:13:52.66\00:13:57.23 So, speaking of dessert, let's crack into it. 00:13:57.27\00:14:00.44 I'm going to get some rice out of the fridge. When you're 00:14:00.47\00:14:03.10 cooking rice make sure you cook extra, have it in the fridge 00:14:03.14\00:14:06.17 cause there's so many things you can make really quickly 00:14:06.21\00:14:08.68 with pre cooked rice. So we're gonna start with a hot pan 00:14:08.71\00:14:12.51 and we're gonna put in two cups or thereabout of pre cooked rice 00:14:12.55\00:14:16.48 You can use long grain or short grain whichever you prefer 00:14:16.52\00:14:20.79 and we're just going to add some coconut milk to this. 00:14:20.82\00:14:26.26 So this can of coconut milk I'm gonna use half for the dessert 00:14:26.29\00:14:29.06 and half for the curry. Just stir and pour it in there 00:14:29.10\00:14:37.14 And we're just gonna stir that and the rice is going to soak up 00:14:43.28\00:14:47.35 all that lovely coconut milk and become the base for dessert 00:14:47.38\00:14:52.42 Add a little sweetness. So again some honey. You can use 00:14:53.79\00:14:57.03 any healthy sweetener you've got about 1-2 tablespoons honey 00:14:57.06\00:15:02.06 and we're going to add some lime juice just to give it a bit 00:15:03.03\00:15:06.50 of flavor in the dish itself. The juice of one lime 00:15:06.53\00:15:13.48 It's probably around 1-2 table spoons. Again a very flexible 00:15:13.51\00:15:18.38 mixture to have. I'll turn the gas up a bit. 00:15:18.41\00:15:21.85 And when it starts bubbling it will start to thicken 00:15:21.88\00:15:25.05 and be the sticky part of the sticky mango rice. 00:15:25.09\00:15:28.56 So just leave it there on low heat and it will slowly start 00:15:28.59\00:15:32.26 to thicken. Okay, Mango. And on top of that all you need to put 00:15:32.29\00:15:37.73 is just mango. So select a nice mango and be sure to get some 00:15:37.77\00:15:41.47 nice cheeks off. Just cut around the stone. Figure out where the 00:15:41.50\00:15:46.14 stone is and cut as close as you can, like that 00:15:46.17\00:15:51.21 And then I just like to slice off the peel of the mango 00:15:52.41\00:15:56.85 like this. Of course you need a very good, sharp knife 00:15:56.89\00:16:01.96 I've traveled to Thailand and they make this in all their 00:16:06.86\00:16:10.90 food courts in the side of the road, it's delicious street food 00:16:10.93\00:16:14.17 although being in Thailand all of these processed sugars and 00:16:14.20\00:16:17.64 lots of things you want to _. This is a good 00:16:17.67\00:16:21.01 healthy food you can make at home. 00:16:21.04\00:16:23.71 Here we go and again we're just going to slice it up 00:16:30.95\00:16:34.82 really thinly and when you slice it you may have to hold 00:16:34.86\00:16:40.20 each slice as you slice so it doesn't jump up 00:16:40.23\00:16:44.17 cause you want all slices to remain together 00:16:44.20\00:16:47.70 One mango done and two mangoes. 00:16:49.97\00:16:54.14 Again roll your knife through you're not going up and down 00:16:55.28\00:16:58.21 you're going sliding through in a kind of knife action 00:16:58.25\00:17:01.65 Look at that. This is thickening up nicely it may take a few more 00:17:01.68\00:17:06.29 minutes. We'll just check on the curry while we're here 00:17:06.32\00:17:11.09 This is going lovely. Want to add a little bit of water 00:17:11.13\00:17:15.76 It's just that it's getting quite thick. Just to keep it 00:17:15.80\00:17:20.74 hydrated. As you can see all those flavors are intensifying 00:17:20.77\00:17:24.67 and there's the lovely base of all those delicious Thai flavors 00:17:24.71\00:17:27.81 So while the rice is thickening up we can finish the noodles 00:17:30.65\00:17:34.32 Just see what's going on here. See all the noodles here 00:17:34.35\00:17:38.35 Giving it a quick taste. Perfect It is just hard enough to the 00:17:38.39\00:17:44.29 bite but they're not hard and chewy. 00:17:44.33\00:17:46.09 Drain all the water out. Now you might want to serve the 00:17:57.27\00:18:01.94 curry over the noodles like this and they will be perfectly 00:18:01.98\00:18:04.25 acceptable but it's much more fun to add some extra flavors. 00:18:04.28\00:18:08.25 So I'm going to add some cilantro or coriander depending 00:18:12.05\00:18:18.73 on what country you come from. A nice big handful of cilantro 00:18:18.76\00:18:25.17 cut very thickly. We're going to add a bit of oil, 00:18:25.20\00:18:30.64 about 1-2 tablespoons. I'm going to add some salt 00:18:30.67\00:18:38.45 and some lime juice. And this combination of flavors 00:18:38.48\00:18:45.25 really make these noodles enjoyable rather than just 00:18:45.29\00:18:49.02 a bland accompaniment. It's going to be absolutely 00:18:49.06\00:18:54.90 delicious. So again with any curry you want to serve with 00:18:58.17\00:19:00.24 some kind of grain so we have rice noodles here. Or you could 00:19:00.27\00:19:03.24 serve it over brown rice, serve it over quinoa, or over bulgur 00:19:03.27\00:19:07.78 wheat which is tabbouli. So there's plenty of lovely 00:19:07.81\00:19:11.25 dishes you can serve it with. Just kind of mix it around 00:19:11.28\00:19:15.82 it's going to be a beautiful addition to all this. 00:19:22.12\00:19:24.19 Have a bit of a try. Mmm. Just a touch more salt. 00:19:24.23\00:19:30.27 There we go. I'm going to serve it in a bowl. 00:19:37.01\00:19:41.11 I'm going to put it here and it can go on the table 00:19:41.14\00:19:45.45 just like that. Oops!. 00:19:45.48\00:19:48.78 That's ready to serve. We'll put a lid on it to keep warm 00:19:53.99\00:19:57.69 in the meantime. That is finished. 00:19:57.73\00:19:59.76 Now my sticky rice is getting stickier, check that out 00:20:01.26\00:20:07.30 Oops, dropped a bit of curry in there! 00:20:08.84\00:20:11.37 So we're going to put that on a plate 00:20:11.41\00:20:17.05 and on top I'm going to put a lovely mango 00:20:26.45\00:20:31.23 And a good way when you've got any kind of fruit is to fan it 00:20:31.26\00:20:35.93 grab it like this and then just fan it like this 00:20:35.96\00:20:38.83 into a nice little angle. Just present it a little better 00:20:38.87\00:20:44.11 Give it a little fan, adjust it like that 00:20:44.14\00:20:47.44 and put it on like that. Here we go, that's one jumped out 00:20:47.48\00:20:52.41 It's a great dessert. To finish it just a little bit of 00:20:52.45\00:20:56.58 drizzle of coconut cream over the top 00:20:59.45\00:21:03.16 and on top a really delicious ingredient, toasted sesame seeds 00:21:03.19\00:21:08.60 You can buy them toasted or if you don't have toasted seeds 00:21:08.63\00:21:12.10 just pour them in a pan and heat them in a dry pan for 3-4 00:21:12.13\00:21:16.87 minutes Over the mango just a lovely subtle dressing 00:21:18.14\00:21:23.35 and there you have a healthy version of sticky rice mango 00:21:23.38\00:21:27.38 Ready for the table. Okay the curry is now looking lovely 00:21:27.42\00:21:33.82 Look at that! Beautiful. So to finish it off we're going 00:21:33.86\00:21:38.93 to add the rest of the coconut milk 00:21:38.96\00:21:42.20 and stir that around 00:21:42.23\00:21:47.77 and that just gives it that nice creaminess that curries have 00:21:47.80\00:21:53.11 and again another great garnish to have on top is cilantro 00:21:53.14\00:22:00.48 more of the cilantro that's here. Just chop this up 00:22:00.52\00:22:03.99 and put it on top 00:22:04.02\00:22:09.96 Turn off the heat and it's ready for the table as well. 00:22:09.99\00:22:15.70 The coleslaw is ready as well. We're going to pick up 00:22:20.64\00:22:24.67 the coleslaw with all that beautiful dressing underneath 00:22:24.71\00:22:28.84 all that lime juice, lemon juice. I'm just going to dress 00:22:28.88\00:22:34.18 that salad just subtly and bring it to the top 00:22:34.22\00:22:37.59 it's going to be lovely and fresh. 00:22:37.62\00:22:42.89 This coleslaw is probably the most popular coleslaw in my 00:22:45.03\00:22:48.66 cafe.
