Nice sharp knife. 00:01:43.60\00:01:46.63 We've boiled the jug. 00:01:46.67\00:01:48.04 And we got two pans on, nice and hot and ready to go. 00:01:48.07\00:01:51.14 It will save us quite a few minutes 00:01:51.17\00:01:52.51 in the cooking process. 00:01:52.54\00:01:54.14 First thing to get underway is the stir fry. 00:01:54.18\00:01:56.58 We want to start with some onion. 00:01:56.61\00:01:58.38 We're gonna start with some red onion today, 00:01:58.41\00:01:59.75 primary for color. 00:01:59.78\00:02:01.75 I'm just gonna slice this up into long slices. 00:02:01.78\00:02:09.69 So this will be the thing that would take the longest to cook. 00:02:24.94\00:02:26.98 You really want to make the onions cook well. 00:02:27.01\00:02:29.11 So start off with a tablespoon of oil. 00:02:29.14\00:02:33.21 And get these onions underway. 00:02:33.25\00:02:39.75 Press them down a bit. 00:02:39.79\00:02:41.12 And just start on the other vegetables. 00:02:41.16\00:02:42.66 So I've got a nice red bell pepper 00:02:42.69\00:02:46.49 and we're gonna just chop this up into cubes. 00:02:46.53\00:02:54.40 We're doing this nice and chunky. 00:02:59.11\00:03:01.31 Making sure you're caramelizing all the cuts. 00:03:01.34\00:03:04.88 We're got a squash or a courgette or a zucchini, 00:03:04.91\00:03:07.95 whatever they call them in your country. 00:03:07.98\00:03:10.29 And all these different colors 00:03:10.32\00:03:11.65 just add up to make a great dish. 00:03:11.69\00:03:14.29 So when you're cooking make sure 00:03:14.32\00:03:15.66 you're choosing lots of different colors. 00:03:15.69\00:03:18.13 I'm cutting these nice and chunky. 00:03:18.16\00:03:20.40 They're gonna be taking a while to cook. 00:03:20.43\00:03:24.13 And they'll become smaller and more bite sized 00:03:24.17\00:03:26.90 when they get through the cooking process. 00:03:26.94\00:03:30.51 Let's give that a bit of a stir up. 00:03:30.54\00:03:35.74 We'll just let that sit there for a couple of minutes. 00:03:35.78\00:03:37.25 We're gonna also add some ginger, 00:03:37.28\00:03:39.81 and this ginger puree 00:03:39.85\00:03:41.18 is a great addition to any meal. 00:03:41.22\00:03:42.55 So I've got two table spoons of ginger puree. 00:03:42.58\00:03:45.25 You can use normal chopped ginger 00:03:45.29\00:03:48.12 if you like, if you've got it fresh. 00:03:48.16\00:03:49.86 This is such so quick. 00:03:49.89\00:03:52.23 Garlic. So grab two pieces of garlic. 00:03:52.26\00:03:57.23 They're quite small so I might grab three. 00:03:57.27\00:04:03.57 And then the garlic press. 00:04:03.61\00:04:06.41 I'm just gonna squeeze them right through into the dish. 00:04:06.44\00:04:11.51 Look at that. 00:04:11.55\00:04:17.25 Just gonna leave that their on a reasonably medium heat. 00:04:17.29\00:04:20.06 Just to... 00:04:20.09\00:04:21.42 just saute away and those will caramelize 00:04:21.46\00:04:24.16 and come nice, nice and flavor some 00:04:24.19\00:04:26.09 and provide a really great base for the stir fry. 00:04:26.13\00:04:30.17 Just putting my things in the bin. 00:04:30.20\00:04:32.73 Keep it clear work space at all times. 00:04:32.77\00:04:36.94 So we're gonna do some sesame tofu 00:04:36.97\00:04:38.64 which is a lovely Asian product. 00:04:38.67\00:04:40.58 You can get this at most supermarkets. 00:04:40.61\00:04:42.54 Just gonna drain it. Get most of the water out. 00:04:42.58\00:04:48.05 And we're just going to cut it into nice big slices. 00:04:48.08\00:04:55.99 Might need a bit of knife help there. 00:04:56.02\00:05:00.00 Just slice it up, this is firm tofu, 00:05:00.03\00:05:01.53 go for the firmest tofu you can get. 00:05:01.56\00:05:03.97 I mean, just stays together a bit easier 00:05:04.00\00:05:06.74 and just into nice probably, what's that? 00:05:06.77\00:05:08.94 One centimeter, half inch, third inch, 00:05:08.97\00:05:11.11 kind of, sized pieces of tofu. 00:05:11.14\00:05:15.81 Got another hot pan here. Nice non stick pan. 00:05:15.84\00:05:19.11 Table spoon of oil, we don't need much at all. 00:05:19.15\00:05:21.98 And we're just going to start that cooking away. 00:05:22.02\00:05:28.96 Whoa! 00:05:28.99\00:05:33.93 Water and oil always seem to splatter a bit. 00:05:33.96\00:05:37.27 So I might turn it down a little bit. 00:05:37.30\00:05:42.94 And here we go. 00:05:42.97\00:05:49.41 That'll just gently cook away. 00:05:49.44\00:05:52.61 You want to get some of the moisture out of it, 00:05:52.65\00:05:54.32 and it will just come to become golden brown. 00:05:54.35\00:05:57.39 Say it will probably take a couple of minutes just to, 00:05:57.42\00:05:59.82 just to gently pan fry the-- 00:05:59.85\00:06:02.26 Now to go with that afterwards is a really nice marinade. 00:06:02.29\00:06:05.53 So we're gonna add some-- Make a nice marinade. 00:06:05.56\00:06:07.63 We're gonna use honey. So what have we got here? 00:06:07.66\00:06:11.53 We have four tablespoons of liquid honey. 00:06:11.57\00:06:14.30 One, two, three, four. 00:06:14.34\00:06:19.67 Some soy sauce or tamari. 00:06:19.71\00:06:23.24 And we need two tablespoons of that. 00:06:23.28\00:06:26.55 That's about one tablespoon, two tablespoons. 00:06:26.58\00:06:32.55 Gonna use some lemon juice. Just the juice of one lemon. 00:06:32.59\00:06:40.23 Just squeeze it through your fingers to catch the, 00:06:40.26\00:06:45.13 catch the pips. 00:06:45.17\00:06:48.67 You can use lemon squeezer if you want, 00:06:48.70\00:06:50.04 but I'm all for shortcuts when making quick meals. 00:06:50.07\00:06:57.88 And some more ginger. 00:06:57.91\00:06:59.91 Never have too much ginger, 00:06:59.95\00:07:01.28 so another two tablespoons of ginger. 00:07:01.32\00:07:06.99 And just add a little bit of water, 00:07:07.02\00:07:08.36 probably about four tablespoons of water. 00:07:08.39\00:07:12.13 And we give that a bit of a stir around. 00:07:12.16\00:07:15.73 And this will make a really nice marinade 00:07:15.76\00:07:19.13 that we're gonna pour over the tofu when it's cooked. 00:07:19.17\00:07:22.80 Traditionally marinades, you probably marinade 00:07:22.84\00:07:25.54 the tofu before you cooked it, 00:07:25.57\00:07:27.78 but I think it's much better to cook the tofu 00:07:27.81\00:07:29.51 that's nice and hot, when we add this marinade, 00:07:29.54\00:07:31.78 it just sucks it into the tofu 00:07:31.81\00:07:33.31 and flavors it really, really quickly. 00:07:33.35\00:07:35.88 So we're not gonna do this now, 00:07:35.92\00:07:37.25 but we're just getting this job underway 00:07:37.29\00:07:38.62 so that when the tofu is finished 00:07:38.65\00:07:39.99 we can put it straight on. 00:07:40.02\00:07:46.26 So just leave that there. 00:07:46.29\00:07:48.23 Also we're gonna be putting sultanas in the stir fry. 00:07:48.26\00:07:51.13 And there is nothing better than-- 00:07:51.17\00:07:52.90 Sultanas come in normally quite dry like that. 00:07:52.93\00:07:55.90 But it's really nice to give it a bit of boiling water. 00:07:55.94\00:08:02.24 And we're just gonna soak them. Got some boiling water there. 00:08:02.28\00:08:08.15 We got one cup of sultanas. 00:08:08.18\00:08:11.15 And in about probably five minutes 00:08:11.19\00:08:12.85 they're gonna be nice and plum and juicy. 00:08:12.89\00:08:14.99 When we add them to our stir fry 00:08:15.02\00:08:16.36 they'll be just a nice, 00:08:16.39\00:08:17.73 really nice, juicy sultana stir fry. 00:08:17.76\00:08:22.53 Now we're gonna make the most delicious 00:08:22.56\00:08:23.90 and easy salad you'll ever have seen. 00:08:23.93\00:08:26.07 A sesame Asian greens. 00:08:26.10\00:08:27.97 But in supermarket there's all these 00:08:28.00\00:08:29.34 delicious green vegetables. 00:08:29.37\00:08:31.67 This is bok choy. I found this one today as well. 00:08:31.71\00:08:34.51 I've got no idea what the name of it is, 00:08:34.54\00:08:35.98 but it looks green 00:08:36.01\00:08:37.35 and it's delicious and it's fresh. 00:08:37.38\00:08:38.98 So just go to your supermarket, 00:08:39.01\00:08:40.35 anything that looks green and fresh 00:08:40.38\00:08:41.72 and it will probably be fine. 00:08:41.75\00:08:43.08 Got some, I think these are mustard greens as well. 00:08:43.12\00:08:45.49 Just, just a nice big handful of beautiful green produce. 00:08:45.52\00:08:49.49 Just chop off the ends. We don't want those. 00:08:49.52\00:08:52.73 They're a little bit hard. 00:08:52.76\00:08:54.20 Might chop a little bit more off. 00:08:54.23\00:08:56.23 And basically slice it up. Slice small up. 00:08:56.26\00:09:01.10 And don't forget these nice end buds 00:09:01.14\00:09:02.50 can be really nice and crunchy and juicy. 00:09:02.54\00:09:05.11 So don't leave too many of them off. 00:09:05.14\00:09:08.38 Chop it up. 00:09:08.41\00:09:09.81 Always going across the grain, 00:09:09.84\00:09:11.18 'cause some of them can be quite stringy. 00:09:11.21\00:09:13.28 But try to eat one of these by it self, 00:09:13.31\00:09:14.65 it's very, very chewy. 00:09:14.68\00:09:16.02 But the minute you cut it, 00:09:16.05\00:09:17.39 it becomes a very pleasant experience. 00:09:17.42\00:09:20.59 Chop these up into one inch strips. 00:09:20.62\00:09:23.66 Pour them in a nice bowl to present it with. 00:09:23.69\00:09:29.33 So these beautiful greens 00:09:29.36\00:09:33.07 full of so many vitamins and nutrients. 00:09:33.10\00:09:36.44 Gonna just add just a bit of color as well. 00:09:36.47\00:09:38.41 So I've got another bell pepper or capsicum here. 00:09:38.44\00:09:42.24 And we're just gonna julienne this up, 00:09:42.28\00:09:43.61 so it's nice and finely sliced. 00:09:43.65\00:09:51.52 Be really careful when you get to the end, 00:10:09.70\00:10:11.04 because it's very easy 00:10:11.07\00:10:12.41 for the knife to slide into fingers. 00:10:12.44\00:10:14.74 So just slow down when you get to the end. 00:10:14.78\00:10:17.81 Taking your fingers off is not a good thing to do 00:10:17.85\00:10:20.38 when you're cooking. 00:10:20.42\00:10:21.75 Give that a nice little mingle around. 00:10:21.78\00:10:26.59 And then what we're gonna do is drizzle some honey. 00:10:26.62\00:10:29.02 So probably about two tablespoons of honey over it. 00:10:29.06\00:10:35.23 Going to drizzle some sesame oil, 00:10:35.26\00:10:37.93 has a beautiful flavor, 00:10:37.97\00:10:40.24 add the one-two table spoons depending on how much you want. 00:10:40.27\00:10:42.97 Just give it a light, kind of, pick up and dress around. 00:10:43.00\00:10:45.31 Little, kind of, drizzle through the salad. 00:10:45.34\00:10:49.34 Perhaps, just another top-off with honey. 00:10:49.38\00:10:54.95 And then just a bit of sesame seeds. 00:10:54.98\00:10:57.32 We got white sesame seeds. Just a light sprinkling on top. 00:10:57.35\00:11:03.36 And some black sesame seeds. 00:11:03.39\00:11:04.73 And these are reasonably available 00:11:04.76\00:11:06.09 from all your health stores and some supermarkets. 00:11:06.13\00:11:10.27 And how simple is that salad for something 00:11:10.30\00:11:12.27 that's very delicious, green healthy and fresh? 00:11:12.30\00:11:16.64 So yeah, just go for those greens in your supermarket. 00:11:16.67\00:11:18.71 They're fantastic. 00:11:18.74\00:11:20.61 The next thing I'm going to prepare is edamame 00:11:20.64\00:11:22.11 which are soybeans and you buy these frozen from-- 00:11:22.14\00:11:28.38 Most supermarkets have them, Asian stores definitely do. 00:11:28.42\00:11:31.65 And these are just little soybeans in pods. 00:11:31.69\00:11:34.66 Just like that. Quite solid and frozen. 00:11:34.69\00:11:38.63 So we're just going to put this in the, in a bowl. 00:11:38.66\00:11:44.53 Oops! 00:11:44.57\00:11:46.13 And then pour some boiling water over it. 00:11:46.17\00:11:49.60 And in about five or ten minutes 00:11:49.64\00:11:50.97 it will be nicely defrosted 00:11:51.01\00:11:53.01 and also, you don't really need to cook it. 00:11:53.04\00:11:54.91 Just needs to be defrosted and, kind of, warmed up. 00:11:54.94\00:12:00.15 Sometimes come pre-cooked, sometimes they come just raw. 00:12:00.18\00:12:02.85 So you just have to just play around 00:12:02.88\00:12:04.22 with the ones you get. 00:12:04.25\00:12:05.59 So just going to let them sit for a couple of minutes 00:12:05.62\00:12:07.52 five or ten minutes, and that will be ready to-- 00:12:07.56\00:12:09.72 When we prepare-- Ready to serve our meal. 00:12:09.76\00:12:14.36 Our meal is well underway. 00:12:14.40\00:12:16.30 Our tofu is nicely browning in the pan. 00:12:16.33\00:12:18.53 The stir fry is caramelizing 00:12:18.57\00:12:20.14 and nearly ready to add all the flavor ingredients. 00:12:20.17\00:12:22.37 We got the marinade done for the tofu. 00:12:22.40\00:12:24.64 Sultanas over there are soaking. 00:12:24.67\00:12:26.74 We got the edamame cooking there in the boiling water. 00:12:26.78\00:12:29.71 And we finished the green Asian salad. 00:12:29.74\00:12:32.71 If you just joined us on Cook 30? 00:12:32.75\00:12:34.22 We're cooking a delicious Asian meal. 00:12:34.25\00:12:36.48 We have an Asian peanut stir fry. 00:12:36.52\00:12:39.79 Accompanied by honey glazed tofu. 00:12:39.82\00:12:42.66 And on the side a deliciously fresh Asian sesame green salad. 00:12:42.69\00:12:47.23 We also are serving with a side of edamame, 00:12:47.26\00:12:49.00 that's soybeans. 00:12:49.03\00:12:50.37 And to finish deliciously fresh sliced pineapple 00:12:50.40\00:12:53.80 with mint and lime. 00:12:53.84\00:12:58.14 Now let's just check on the tofu, 00:12:58.17\00:12:59.61 see how that's going. 00:12:59.64\00:13:00.98 We'll just flip some of this over. 00:13:01.01\00:13:04.51 Look at that, look how golden brown that's going. 00:13:04.55\00:13:06.95 Isn't that just beautiful? 00:13:06.98\00:13:08.68 That's just lovely and brown, so it's half done. 00:13:08.72\00:13:11.39 So just flip all these guys over here 00:13:11.42\00:13:13.92 and we can do the other side. 00:13:13.96\00:13:15.92 And this will soak up our marinade beautifully 00:13:15.96\00:13:18.26 when we get to that. 00:13:18.29\00:13:21.46 Whoever said tofu is boring 00:13:21.50\00:13:23.83 never added any kind of flavors to it, but it's-- 00:13:23.87\00:13:26.13 Tofu just sucks up the flavors amazingly. 00:13:26.17\00:13:28.97 That's a great ingredient to use. 00:13:29.00\00:13:31.84 So the stir fry, I'll just get this back up 00:13:31.87\00:13:34.74 and running again. 00:13:34.78\00:13:36.64 We'll just turn this up a bit. 00:13:36.68\00:13:38.81 So these vegetables are beautifully caramelized now. 00:13:38.85\00:13:41.82 Getting nice, and soft, and cooked, 00:13:41.85\00:13:43.79 and these provide a really great base 00:13:43.82\00:13:45.42 for the rest of our stir fry. 00:13:45.45\00:13:47.79 So we're going to start adding lots of lovely flavors of this. 00:13:47.82\00:13:50.96 So first, it being a peanut stir fry, 00:13:50.99\00:13:52.43 you wanna add some peanut that's happening. 00:13:52.46\00:13:54.96 So we'll start with two tablespoons of peanut butter. 00:13:55.00\00:13:59.47 One and two. 00:13:59.50\00:14:01.40 And we're gonna mix this with around 00:14:01.44\00:14:02.77 about four tablespoons of water. 00:14:02.80\00:14:07.44 And this will just-- 00:14:07.48\00:14:09.14 You just put the peanut butter, now this is, this lays as it is. 00:14:09.18\00:14:11.38 It won't mix and you have clumps of peanut butter. 00:14:11.41\00:14:13.42 So this will give like a nice peanut sauce. 00:14:13.45\00:14:15.68 It's kind of like the cheese peanut sauce 00:14:15.72\00:14:17.05 that we can put through. 00:14:17.09\00:14:24.99 So we're just gonna pour this over the stir fry like that. 00:14:30.40\00:14:36.57 We're gonna add some honey. Nice healthy sweetener. 00:14:36.60\00:14:40.01 Two tablespoons of honey. 00:14:40.04\00:14:44.85 Two tablespoons of soy sauce or tamari 00:14:44.88\00:14:48.78 just to give it a bit of nice saltiness. 00:14:48.82\00:14:53.09 I'll just turn it up a bit, so it starts cooking. 00:14:53.12\00:14:59.66 We'll just start stirring it together. 00:14:59.69\00:15:01.80 And these flavors will start to infuse 00:15:01.83\00:15:03.70 in all those vegetables 00:15:03.73\00:15:05.50 and make them taste really yummy. 00:15:05.53\00:15:09.90 Gonna put in some spring onions or scallions. 00:15:09.94\00:15:16.81 So just gonna just slice these thinly. 00:15:16.85\00:15:20.02 It's always good to have things 00:15:20.05\00:15:21.38 and minimize only your chopping. 00:15:21.42\00:15:23.85 You don't want to chop every single scallion individually. 00:15:23.89\00:15:27.49 So let that cook in there as well. 00:15:27.52\00:15:30.29 And will put some peanuts. 00:15:30.33\00:15:31.69 We'll put half a cup of peanuts. 00:15:31.73\00:15:35.83 Generous half cup. It's turned out bit more. 00:15:35.86\00:15:41.34 And you can see it's coming together nicely. 00:15:41.37\00:15:45.31 Now the most important thing 00:15:45.34\00:15:46.68 of a stir fry is obviously rice. 00:15:46.71\00:15:48.44 So in the fridge what I've done is yesterday 00:15:48.48\00:15:50.81 we had a rice meal and we had some rice leftover. 00:15:50.85\00:15:54.05 And this is brown rice, 00:15:54.08\00:15:55.72 so whenever you have cooked rice 00:15:55.75\00:15:57.25 always cook a little bit extra and put it in your fridge. 00:15:57.29\00:15:59.85 And that'll last, last a couple of days 00:15:59.89\00:16:01.92 and you can use it in a stir fry 00:16:01.96\00:16:03.29 and you don't have to go 00:16:03.32\00:16:04.66 to all the trouble of cooking it again. 00:16:04.69\00:16:06.03 So if you're thinking ahead like that, 00:16:06.06\00:16:07.40 it always works out better. 00:16:07.43\00:16:09.86 So we're just gonna put in 00:16:09.90\00:16:12.50 two to three cups of brown rice that's precooked. 00:16:12.53\00:16:17.44 Or you can just cook it, cook it before, 00:16:17.47\00:16:20.58 at the beginning of this meal if you want to as well. 00:16:20.61\00:16:23.31 I'm just gonna fold that through 00:16:23.35\00:16:24.81 and that rice is just gonna soak up all that lovely flavor. 00:16:24.85\00:16:30.65 Look at that. 00:16:30.69\00:16:32.02 So stir fry, you don't want to be too, 00:16:32.05\00:16:33.82 generally as quite have a little bit of moisture, 00:16:33.86\00:16:36.09 that's just not a liquid event. 00:16:36.12\00:16:38.56 So it's just a combination of all this rice, 00:16:38.59\00:16:40.43 but you don't want it to be too dry. 00:16:40.46\00:16:41.80 So as you can see, we've got a nice, moist peanut butter. 00:16:41.83\00:16:44.97 The soy sauce and the honey 00:16:45.00\00:16:46.33 just giving it that bit of moisture 00:16:46.37\00:16:47.80 to make it into authentic stir fry. 00:16:47.84\00:16:52.14 We also got these sultanas, which are actually raisins, 00:16:52.17\00:16:54.01 I got that wrong before.
