00:01:23.48\00:01:27.15 a Spanish Smoked Rice with Peanuts, 00:01:27.18\00:01:30.25 Fresh Cos Caesar Salad with Croutons, 00:01:30.29\00:01:33.46 and a Thai Green Curry Mingle. 00:01:33.49\00:01:36.62 We're gonna top it off with hummus 00:01:36.66\00:01:38.33 and finish with the Sparkling Fruity Punch. 00:01:38.36\00:01:43.33 Now, quick meals do not happen by accident. 00:01:43.37\00:01:46.13 You're gonna make sure your kitchen is setup 00:01:46.17\00:01:48.10 and ready to go. 00:01:48.14\00:01:49.47 A nice clear workspace, chopping board, sharp knife, 00:01:49.50\00:01:54.58 I've got the oven on at 400 degrees Fahrenheit 00:01:54.61\00:01:57.01 which is about 200 Celsius, a pot and a pan on the stove, 00:01:57.05\00:02:01.88 boiling water in the jug, ready to go, 00:02:01.92\00:02:04.25 and a pantry and fridge 00:02:04.29\00:02:06.62 enlightened with fresh vegetables 00:02:06.65\00:02:08.72 and all the things we're gonna need. 00:02:08.76\00:02:10.09 So a bit of preparation is really important, 00:02:10.13\00:02:12.19 and then you can make your meals really quickly. 00:02:12.23\00:02:15.43 First of beetroot. 00:02:15.46\00:02:16.90 Roasted beetroot is a great ingredient in roasting, 00:02:16.93\00:02:20.77 but it can often take up to an hour, 00:02:20.80\00:02:22.14 so we're gonna take a bit of a short cut 00:02:22.17\00:02:23.81 and get on first. 00:02:23.84\00:02:25.51 So beetroot or beets, 00:02:25.54\00:02:26.91 as you may call in some countries, 00:02:26.94\00:02:28.94 so we're just gonna, just take a raw one, 00:02:28.98\00:02:30.95 you may not have used it raw before, 00:02:30.98\00:02:33.01 and just slice it into rounds and then chop it up. 00:02:33.05\00:02:37.02 Now, we're gonna chop it up quite finely 00:02:37.05\00:02:38.99 because we want it to cook quickly. 00:02:39.02\00:02:41.22 So make sure, you keep it properly about under, 00:02:41.26\00:02:45.46 you know, half a centimeter or half to one centimeter. 00:02:45.49\00:02:49.60 So we have about two large beetroots 00:03:19.36\00:03:20.90 or around about three small ones on to a tray. 00:03:20.93\00:03:26.00 Drizzle of oil. 00:03:29.57\00:03:31.21 And we're gonna add really 00:03:35.34\00:03:36.68 beautiful spice of ground cloves. 00:03:36.71\00:03:39.05 And this beautiful... 00:03:39.08\00:03:41.82 Hmm, aromatic spice would just give a, 00:03:41.85\00:03:44.35 just a little a specialness of flavor. 00:03:44.39\00:03:47.32 So probably want to add about two teaspoons here. 00:03:47.36\00:03:50.13 Give it a good mix around. 00:03:50.16\00:03:51.89 Use your fingers, 00:03:54.40\00:03:55.73 we can mix it in the bowl if we want to. 00:03:55.76\00:03:57.77 We want to evenly coat the beetroot, 00:03:59.03\00:04:02.30 and put it straight in the oven. 00:04:02.34\00:04:04.24 So you want to make sure it has full 30 minutes, 00:04:08.81\00:04:11.21 and it will need that too. 00:04:11.25\00:04:12.58 You're gonna make sure 00:04:12.61\00:04:13.95 it kind of become soft and caramelizes. 00:04:13.98\00:04:15.75 Next ingredient is kumara or sweet potato. 00:04:15.78\00:04:18.55 I'm gonna use probably one to two large or three small. 00:04:18.59\00:04:22.69 Go with those ones. 00:04:22.72\00:04:24.19 And again, we're just gonna, gonna slice these up. 00:04:24.23\00:04:26.56 Let me just clean the knife. 00:04:26.59\00:04:28.03 We don't want beetroot all over a sweet potato. 00:04:28.06\00:04:31.63 And again, just crop it into quarters, 00:04:31.67\00:04:34.94 and then just chop them out finely. cauliflower, this is for another salad. 00:05:30.56\00:05:33.70 So we want around about a quarter of a cauliflower. 00:05:33.73\00:05:39.33 So just a quarter, dissect it 00:05:39.37\00:05:42.50 and we're just gonna pull the leaves off and manky bits. 00:05:42.54\00:05:46.11 Now, it's looking very beautiful in there. 00:05:46.14\00:05:49.01 And just gonna, just chop it up into little bite size florets. 00:05:49.04\00:05:53.01 Just keep chopping in half, half again, very rough. 00:05:53.05\00:05:57.45 You want to make sure something that you can 00:05:57.49\00:05:58.89 pop in your mouth without becoming very rude at dinner. 00:05:58.92\00:06:03.09 So pot's already hot. 00:06:07.36\00:06:08.70 We got some boiling water here, ready to go. 00:06:08.73\00:06:10.83 They're hotter than I 00:07:08.09\00:07:10.36 We're gonna make some delicious heroine croutons 00:07:10.39\00:07:12.53 for the Cos salad. 00:07:12.56\00:07:15.26 Now, I've got some beautiful rye, dark rye bread here, 00:07:15.30\00:07:19.07 and the crouton you buy in the shop 00:07:19.10\00:07:20.44 it's just all white flour and heavily processed. 00:07:20.47\00:07:23.84 Again, just gonna cube these into little cubes. 00:07:23.87\00:07:28.18 You can use stale bread for croutons 00:07:28.21\00:07:29.78 or fresh bread, it doesn't matter. 00:07:29.81\00:07:31.91 Sometimes, staler is the better. use 00:08:37.25\00:08:38.91 and use across the multitude of different salads. 00:08:38.95\00:08:41.18 It's a tahini dressing. 00:08:41.22\00:08:42.98 So we're gonna need some tahini 00:08:43.02\00:08:44.35 which is basically ground up sesame seeds. 00:08:44.39\00:08:46.92 I'm gonna put this into blender. 00:08:46.96\00:08:48.89 You can also use a stick blender as well if you like. 00:08:48.92\00:08:51.86 So we're gonna put four tablespoons, four... 00:08:51.89\00:08:55.36 And we're gonna add a tablespoon of honey. 00:08:57.27\00:08:59.60 We can throw in some dates if you want as well, 00:08:59.63\00:09:01.24 but honey is quiet convenient and easy. 00:09:01.27\00:09:04.67 And we're gonna throw in some lemon, 00:09:04.71\00:09:06.04 so we want quarter a cup of lemon juice. 00:09:06.07\00:09:09.24 And we're just gonna slice these in half, 00:09:09.28\00:09:13.68 and use this lemon squeezer. 00:09:13.72\00:09:16.18 Lemon juice gives a really nice bite end 00:09:23.46\00:09:25.56 with the acidic to the dressings. 00:09:25.59\00:09:27.56 So pour that in here or just pour through my fingers 00:09:27.60\00:09:30.60 so that I catch most of the seeds. rice make sure you cook extra, 00:12:15.73\00:12:19.17 so you can make salads like this. 00:12:19.20\00:12:22.17 We got some green peas as well. 00:12:22.20\00:12:24.54 There's just some precooked rice, 00:12:24.57\00:12:26.24 you could cook it on the day if you wanted to. 00:12:26.27\00:12:28.34 Just want about three cups, one, two, three cups. 00:12:28.38\00:12:34.42 And we're just basing in five ingredients into this bowl. 00:12:34.45\00:12:38.55 And some frozen peas, 00:12:38.59\00:12:40.76 it seem we just kind of go about a cup of 00:12:40.79\00:12:44.13 sweet peas that are frozen, these don't need cooked, 00:12:44.16\00:12:47.53 that'll just kind of defrost as we put ingredients in. 00:12:47.56\00:12:51.53 Also gonna put some wet dressing in 00:12:51.57\00:12:53.00 as I will be dressing then I put about half a cup. 00:12:53.03\00:12:55.50 So pour that over. 00:12:55.54\00:12:59.67 And the magic ingredient for this is smoked paprika, 00:12:59.71\00:13:05.15 so we want two teaspoons of smoked paprika 00:13:05.18\00:13:07.42 and this gives a beautiful, 00:13:07.45\00:13:08.95 beautiful smokey kind of flavor. 00:13:08.98\00:13:11.39 That's about two teaspoons. 00:13:11.42\00:13:14.42 Table spoon of sweet chilly sauce. 00:13:14.46\00:13:18.56 So these are ingredients that are great 00:13:18.59\00:13:20.10 to have in your pantry. 00:13:20.13\00:13:23.06 And something that makes the rice 00:13:23.10\00:13:24.43 sort of really special is peanut, 00:13:24.47\00:13:25.83 so they just always seem to fly at the door at my cafe 00:13:25.87\00:13:28.04 when you throw peanuts into rice salad. 00:13:28.07\00:13:30.11 So about half a cup of peanuts. 00:13:30.14\00:13:33.68 We gonna dice up a red pepper, 00:13:33.71\00:13:37.45 just cut the end of some strawberries, 00:16:03.46\00:16:05.99 just gonna take strawberries and chop them up 00:16:06.03\00:16:08.96 really finely 00:16:09.00\00:16:12.20 and they just add some beautiful color.
