And you'll be so surprised at how easy it is. 00:01:08.33\00:01:12.47 On today's menu, we have a bit of a Thai flavor. 00:01:12.50\00:01:15.60 We start off with a Thai Chickpea satay, 00:01:15.64\00:01:18.67 and we're gonna drizzle over the top of it, 00:01:18.71\00:01:20.34 Sunflower cream, which is a great healthy 00:01:20.38\00:01:22.48 alternative to saccharin. 00:01:22.51\00:01:24.98 We're gonna be serving it with Pad Thai Noodles, 00:01:25.01\00:01:27.72 everyone's favorite Thai dish, 00:01:27.75\00:01:29.82 and a beautiful fresh Asian Salad with Ginger. 00:01:29.85\00:01:33.86 And to finish it off, we have some 00:01:33.89\00:01:35.69 Apricot Bliss Balls, which are very, very moreish. 00:01:35.72\00:01:40.63 So to start with Cook: 30 cooking, 00:01:40.66\00:01:43.30 we want to make sure we set up in the kitchen, 00:01:43.33\00:01:45.20 we got our ingredients out, our bench surface is clear, 00:01:45.23\00:01:48.64 we've got our jug boiled, and everything's ready to go. 00:01:48.67\00:01:52.47 So to start with the Bliss Balls, 00:01:52.51\00:01:53.98 we're gonna start soaking the nuts and fruit. 00:01:54.01\00:01:56.68 These are gonna go on the blender later. 00:01:56.71\00:01:58.45 And to make them easy to blend, if you soak them with a bit of 00:01:58.48\00:02:01.05 boiling water to begin with, they become a lot softer 00:02:01.08\00:02:03.05 and a lot gentler on your blender. 00:02:03.08\00:02:05.65 So we're gonna start with a cup of dates, 00:02:05.69\00:02:10.33 and a cup of apricots. 00:02:10.36\00:02:13.93 I've just got some chopped dates here, 00:02:13.96\00:02:15.60 you can use whole dates if you want. 00:02:15.63\00:02:18.43 So one cup of dates and one cup of apricots. 00:02:18.47\00:02:24.81 You can be very approximate with the measurements here, 00:02:27.01\00:02:28.64 this is a very, very rough recipe, 00:02:28.68\00:02:30.55 you can change it how you want to. 00:02:30.58\00:02:32.51 And for the nuts, we're gonna use 00:02:32.55\00:02:33.88 half a cup of each of the nuts, we got four nuts, 00:02:33.92\00:02:35.92 so half cup of cashews, 00:02:35.95\00:02:40.22 half a cup of walnuts, 00:02:40.26\00:02:41.59 half a cup of sunflower seeds, 00:02:45.99\00:02:50.63 and half a cup of almonds. 00:02:50.67\00:02:55.17 And these are just full of, just awesome protein, 00:02:55.20\00:02:57.31 these are just great minerals and vitamins 00:02:57.34\00:02:58.94 in things like these nuts and fruits, 00:02:58.97\00:03:00.31 that's a really, really healthy dessert. 00:03:00.34\00:03:02.28 So what we're gonna do is add some boiling water, you know, 00:03:02.31\00:03:04.58 from the jug that I've pre-boiled. 00:03:04.61\00:03:07.78 Just gonna pour it over there, we'll drain off later. 00:03:07.82\00:03:10.79 But when we come back to this dish in about 20 or 30 minutes, 00:03:10.82\00:03:13.29 these are gonna be nice and soft and plump 00:03:13.32\00:03:15.32 and they're gonna be much easier on our blender. 00:03:15.36\00:03:19.23 So let's put them aside there, and they can just 00:03:19.26\00:03:21.30 happily, happily just soak away. 00:03:21.33\00:03:25.83 So we're gonna start the satay now, 00:03:25.87\00:03:27.84 and the first ingredient for any 00:03:27.87\00:03:29.20 good satay is always onions. 00:03:29.24\00:03:31.77 And just check if I got my pot on, nice and warm. 00:03:31.81\00:03:35.34 It's always good to start with a nice hot pan. 00:03:35.38\00:03:39.05 I'm just gonna peel and dice these. 00:03:39.08\00:03:42.02 So just some roughly diced onions, 00:04:04.54\00:04:06.51 you don't need to be too fussy on them. 00:04:06.54\00:04:08.54 Then I start off with the tablespoon of oil, 00:04:08.58\00:04:11.21 and just put them in there, and they'll start frying away, 00:04:15.08\00:04:20.22 getting nice and caramelized. 00:04:20.26\00:04:22.29 And start with two cloves of garlic, 00:04:22.32\00:04:24.59 these are a little small, 00:04:24.63\00:04:25.96 so I might use four small cloves. 00:04:25.99\00:04:28.33 Straight in to the garlic press, 00:04:28.36\00:04:31.20 which is in with my sharp knife, 00:04:31.23\00:04:32.67 so I don't want to cut myself here. 00:04:32.70\00:04:34.04 So straight into the garlic press, 00:04:36.64\00:04:41.68 and squeeze it into there. 00:04:41.71\00:04:43.55 Look at that. 00:04:46.92\00:04:49.02 We'll just start stirring those. 00:04:49.05\00:04:50.52 These take couple of minutes just to brown up 00:04:53.56\00:04:55.59 and start caramelizing. 00:04:55.62\00:04:57.43 And one ingredient that goes really well 00:04:57.46\00:04:58.89 with anything peanut, or anything satay, is ginger, 00:04:58.93\00:05:02.13 so we're gonna be using four tablespoons 00:05:02.16\00:05:03.50 of ginger for this recipe, which is a lot of ginger. 00:05:03.53\00:05:07.80 I'm gonna empty my tube here 00:05:07.84\00:05:09.80 and these prepared gingers are excellent, 00:05:09.84\00:05:11.34 you can also chop that yourself, 00:05:11.37\00:05:12.71 chop that really fine if you're using whole ginger. 00:05:12.74\00:05:16.38 Ginger would just add just a-- 00:05:16.41\00:05:17.75 just goes with peanuts amazingly. 00:05:17.78\00:05:20.42 Now this is a satay, which is like a peanut dish. 00:05:20.45\00:05:23.72 And we're sauteing the onions, so don't get that confused. 00:05:23.75\00:05:27.02 So satay is the name of the dish, 00:05:27.06\00:05:28.79 and saute is the verb which means to saute, 00:05:28.82\00:05:32.69 or basically fry up things in a pan. 00:05:32.73\00:05:35.63 So just in case you've got your terminology wrong, 00:05:35.66\00:05:37.77 that's how it works. 00:05:37.80\00:05:40.74 This, well underway there, and they'll take 00:05:40.77\00:05:42.97 a couple of minutes and we'll come back to that shortly, 00:05:43.00\00:05:45.14 and start adding some more ingredients. 00:05:45.17\00:05:50.21 For the Pad Thai Noodles, 00:05:50.25\00:05:51.58 we're gonna be using rice noodles. 00:05:51.61\00:05:53.01 They'll come in packs like this, 00:05:53.05\00:05:54.38 available in any Asian store and most supermarkets. 00:05:54.42\00:05:57.95 So we're gonna need around about-- 00:05:57.99\00:05:59.55 How much we're needing? 00:05:59.59\00:06:01.09 Noodles, we want about 250 grams, 00:06:01.12\00:06:03.56 and there's 396 in this one. 00:06:03.59\00:06:05.29 So we probably want about two thirds of this pack. 00:06:05.33\00:06:08.33 Just unwrap them, break them off. 00:06:08.36\00:06:14.04 They go everywhere. 00:06:14.07\00:06:15.77 I'm just gonna pour some boiling water over them 00:06:15.80\00:06:18.77 and this is all you need to do to cook in. 00:06:18.81\00:06:21.81 Just cover it with boiling water 00:06:21.84\00:06:24.81 and we're gonna leave that sitting there, 00:06:24.85\00:06:27.58 for around about, probably 10 minutes or so, 00:06:27.62\00:06:30.89 and those will be cooked. 00:06:30.92\00:06:32.25 Just make sure it's all totally immersed in the water. 00:06:32.29\00:06:35.62 You don't need to put it on the stove or anything like that, 00:06:35.66\00:06:37.99 and they'll just cook happily, just in that boiling water. 00:06:38.03\00:06:42.46 I might just put a bit of a lid on there somehow to keep it, 00:06:42.50\00:06:47.37 keep it nice and warm. here, 00:06:54.88\00:06:58.28 and the next ingredient, we're gonna put the spices in. 00:06:58.31\00:07:01.15 So put a teaspoon of turmeric, 00:07:01.18\00:07:02.68 which gives it a beautiful color, 00:07:02.72\00:07:06.35 and a teaspoon of cumin, 00:07:06.39\00:07:13.56 and just a pinch of cayenne pepper, 00:07:13.60\00:07:15.13 just for a little bit of hotness, 00:07:15.16\00:07:16.50 just a little bit. 00:07:20.57\00:07:22.20 This gives it a little bit extra character and flavor. 00:07:22.24\00:07:25.21 And make sure we just mix those around there. 00:07:25.24\00:07:27.48 So that these spices activate, 00:07:31.11\00:07:32.75 it takes about probably 30 seconds of cooking 00:07:32.78\00:07:34.18 just let them to activate 00:07:34.22\00:07:35.78 and just all the beautiful flavors start coming out. 00:07:35.82\00:07:37.99 This ginger and cumin just smell amazing. 00:07:38.02\00:07:41.76 So peanut butter is now an important ingredient for this. 00:07:41.79\00:07:46.29 So we're gonna have half a cup of peanut butter. 00:07:46.33\00:07:49.73 Where are we, come on, it's going. 00:07:49.76\00:07:52.40 And try to get the natural peanut butters where you can. 00:07:52.43\00:07:54.60 A lot of them are just loaded with sugar 00:07:54.64\00:07:56.17 and preservatives and things. 00:07:56.20\00:07:57.54 But this one here is just, just peanuts. 00:07:57.57\00:08:00.61 And we're gonna add some water, half a cup of water. 00:08:00.64\00:08:06.65 I'm just gonna stir it and mix it up, 00:08:06.68\00:08:08.65 and this will sure that the peanut butter 00:08:08.68\00:08:10.02 is more evenly distributed through the dish. 00:08:10.05\00:08:11.72 So they're starting to come together 00:08:28.70\00:08:30.04 a bit more evenly distributed, 00:08:30.07\00:08:31.41 don't need to have to be perfect. 00:08:31.44\00:08:32.77 We'll throw that in the satay. 00:08:32.81\00:08:35.38 I might just turn the heat up a bit. 00:08:35.41\00:08:38.01 And now we've got some great cans here to open 00:08:38.05\00:08:40.82 'cause we're gonna throw in two cans of diced tomatoes. 00:08:40.85\00:08:42.82 So put these in. 00:08:58.37\00:09:02.10 They are a little bit runny but that will thicken up 00:09:02.14\00:09:04.54 as the curry progresses. 00:09:04.57\00:09:06.14 And two cans of chickpeas or garbanzo beans, 00:09:06.17\00:09:09.48 same product, just different name. 00:09:09.51\00:09:13.45 And you can buy these cans, 00:09:13.48\00:09:15.22 there are my most favorite bean you can get. 00:09:15.25\00:09:18.69 Great for Hummus and stir fries and things, 00:09:18.72\00:09:22.06 and satays and you can also cook them yourself. 00:09:22.09\00:09:27.13 Just need to soak them, put them in -- cook them, 00:09:27.16\00:09:29.26 put them in the freezer. 00:09:29.30\00:09:30.77 But having them in a can is a much more 00:09:30.80\00:09:33.67 convenient way, there you go. 00:09:33.70\00:09:36.74 So turn up the heat a little bit, 00:09:36.77\00:09:38.11 just to get that simmering. 00:09:38.14\00:09:39.47 So that this juice just bubbling 00:09:39.51\00:09:41.74 and that will take around about probably another 00:09:41.78\00:09:45.48 10 or 15 minutes, and it will just start 00:09:45.51\00:09:47.42 thickening up and become beautiful. 00:09:47.45\00:09:49.48 I'm just gonna add some honey, so two tablespoons of honey, 00:09:49.52\00:09:54.39 and a teaspoon of salt. 00:09:54.42\00:09:58.03 So let that simmer and we'll come back to that later. 00:10:05.63\00:10:08.24 Now we have a very delicious Sunflower Cream, 00:10:11.84\00:10:14.61 this is a great alternative to saccharine. 00:10:14.64\00:10:17.35 We're gonna start with a blender, 00:10:17.38\00:10:18.98 you can also use a stick blender as well. 00:10:19.01\00:10:20.95 And first we want some water, so we want three quarters 00:10:20.98\00:10:22.88 of a cup of water, in the blender. 00:10:22.92\00:10:29.82 And a cup of sunflower seeds, that's about a cup. 00:10:29.86\00:10:35.96 We want some onion powder 00:10:36.00\00:10:37.33 just to give it a bit of an extra kick. 00:10:37.37\00:10:38.90 So we want one teaspoon of onion powder, 00:10:38.93\00:10:43.77 just about a teaspoon there. 00:10:43.81\00:10:45.87 And some lemon juice, lemon juice adds 00:10:45.91\00:10:47.34 a really nice bite to this. 00:10:47.38\00:10:49.51 So the juice of probably around about two lemons, 00:10:49.54\00:10:51.11 you want up to a quarter of a cup. 00:10:51.15\00:10:53.58 Let's see if we can get these, not very juicy lemons 00:10:53.62\00:10:56.89 but we can get some lemon juice out of them. 00:10:56.92\00:11:00.56 So this is probably about a quarter of a cup. 00:11:11.10\00:11:13.97 I'm just gonna pour them in there, thick side, 00:12:10.83\00:12:13.03 I might add a little bit more water, 00:12:13.06\00:12:15.20 'cause you want it to be out pourable, 00:12:15.23\00:12:17.83 probably up to another half cup. 00:12:17.87\00:12:19.23 So you can adjust it to whatever texture you like. 00:12:19.27\00:12:21.34 Looking pretty good.
