We're gonna use some coconut. 00:03:30.34\00:03:34.34 And coconut is great because it has-- 00:03:34.38\00:03:36.24 when it's toasted, it has a delicious flavor. 00:03:36.28\00:03:38.48 If you don't like coconut, you can just leave it up-- 00:03:38.51\00:03:40.18 leave it out. 00:03:40.22\00:03:41.55 So one half cup of coconut. 00:03:41.58\00:03:44.79 And try to get the stuff that's really long and stringy, 00:03:44.82\00:03:49.02 it just gives a nice texture in the mouth. 00:03:49.06\00:03:51.26 And also try and get the unsweetened coconut, 00:03:51.29\00:03:52.83 which can be very hard to find. 00:03:52.86\00:03:54.20 So switch it out and get the stuff 00:03:54.23\00:03:55.56 that isn't loaded with sugar. 00:03:55.60\00:03:58.40 Almonds toast up beautifully. 00:03:58.43\00:04:00.64 So we're gonna use half a cup of almonds. 00:04:00.67\00:04:03.47 And get the slivered ones, 00:04:03.51\00:04:04.84 the ones that are already pre-cut. 00:04:04.87\00:04:06.51 Again, nice texture and mouth-feel 00:04:06.54\00:04:08.51 and they will toast up really quickly. 00:04:08.54\00:04:10.21 If you use whole almonds, 00:04:10.25\00:04:11.58 they'll probably take a little bit too long. 00:04:11.61\00:04:14.12 So half a cup of almonds. So we've got some firm tofu. 00:08:16.59\00:08:20.16 And this is available in any supermarket 00:08:20.20\00:08:21.70 or Asian shop. 00:08:21.73\00:08:23.06 We just drain out the water. 00:08:23.10\00:08:24.43 And with this tofu, we're just gonna crumble it in. 00:08:29.24\00:08:31.94 And obviously scrambled tofu is as healthy as scrambled egg. 00:08:31.97\00:08:35.31 So we kind of want that bitty scrambled egg 00:08:35.34\00:08:37.41 kind of a texture going on. 00:08:37.45\00:08:40.92 So just basically crumble it in. 00:08:40.95\00:08:42.82 Just pick off the bits and you want 00:10:22.65\00:10:23.99 So get some nice mushrooms. 00:10:24.02\00:10:25.35 And one thing about mushrooms is they always reduce in size, 00:10:25.39\00:10:27.42 so you need to get more than you think you're gonna need. 00:10:27.46\00:10:31.13 So they just come pretty clean 00:10:31.16\00:10:32.49 but there's always little bits of stuff on them. 00:10:32.53\00:10:33.86 So just into a colander, give
