00:01:13.17\00:01:15.44 how you can make a delicious, 00:01:15.47\00:01:16.87 nutritious meal for your family that would taste amazing. 00:01:16.91\00:01:21.24 On the menu today we have 00:01:21.28\00:01:23.08 a delicious corn and sweet potato chowder 00:01:23.11\00:01:26.15 served on freshly cooked brown rice, 00:01:26.18\00:01:28.62 the famous Revive 4C salad 00:01:28.65\00:01:31.22 which has cashews, coriander, coconut and carrot. 00:01:31.25\00:01:35.29 We have a great broccoli dish with cheesy cashew sauce, 00:01:35.32\00:01:39.33 and to top it off, a refreshing lime and lemon spritzer. 00:01:39.36\00:01:44.63 And the first place to start is the item that's gonna take 00:01:44.67\00:01:46.74 the longest to cook. 00:01:46.77\00:01:48.10 And today it's gonna be the brown rice. 00:01:48.14\00:01:49.47 And we want to get that 00:01:49.50\00:01:50.84 on the stove really, really quickly. 00:01:50.87\00:01:52.21 A lot of people are scared of brown rice 00:01:52.24\00:01:53.58 'cause they think it's too tough 00:01:53.61\00:01:54.94 and it takes long to cook. 00:01:54.98\00:01:56.31 But here is a great guaranteed recipe every time. 00:01:56.34\00:01:59.28 And one of those secrets is to use whole grain-- 00:01:59.31\00:02:01.68 a long grained brown rice 00:02:01.72\00:02:03.28 'cause it cooks slightly quicker 00:02:03.32\00:02:05.09 and the recipe is two to one. 00:02:05.12\00:02:06.59 So you want two cups of brown rice. 00:02:06.62\00:02:10.83 I'm gonna add two cups of boiling water. 00:02:10.86\00:02:13.83 So earlier I turned the jug on so it was nice and hot. 00:02:13.86\00:02:17.57 This is gonna save us a couple of minutes in cooking time. 00:02:17.60\00:02:21.34 So it's two to one 00:02:21.37\00:02:22.70 so we are doing four cups of water 00:02:22.74\00:02:24.54 to two cups to one two cups of rice. 00:02:24.57\00:02:28.51 And of course, this just change that ratio 00:02:28.54\00:02:30.15 depending upon what you're cooking. 00:02:30.18\00:02:31.51 And this may be more than you need 00:02:31.55\00:02:32.88 but brown rice is a great thing to have in a fridge 00:02:32.91\00:02:35.15 if you want to cook or stir fry the next day. 00:02:35.18\00:02:37.02 So that be good to cook little bit extra 00:02:37.05\00:02:38.42 than you think you'll need. 00:02:38.45\00:02:41.22 So we've turned that on high, and when that comes to boil, 00:02:41.26\00:02:44.29 we just gonna let it turn it down 00:02:44.33\00:02:45.66 and let it simmer really quietly. 00:02:45.69\00:02:47.03 Now care to cooking brown rice, number one, lid on. 00:02:47.06\00:02:49.96 We are using the absorption method 00:02:50.00\00:02:51.47 and number two, don't stir it. 00:02:51.50\00:02:53.44 It does a little steam holes to create on 00:02:53.47\00:02:55.30 let it cook the rice properly. 00:02:55.34\00:02:56.94 If you start stirring it, 00:02:56.97\00:02:58.31 you're gonna destroy those steam holes. 00:02:58.34\00:03:00.28 So when it starts to boil, we're just gonna turn it down 00:03:00.31\00:03:02.34 and it will take around about 20 to 25 minutes. 00:03:02.38\00:03:07.05 Now we're gonna start the corn and sweet potato chowder. 00:03:07.08\00:03:10.35 And the chowder is often thought of it as a soup 00:03:10.39\00:03:12.02 but in Revive we serve it over rice 00:03:12.05\00:03:13.42 as a main meal with chickpea 00:03:13.46\00:03:14.79 so it's actually a delicious meal. 00:03:14.82\00:03:16.42 So don't just put up in the soup category. 00:03:16.46\00:03:18.26 Now any good kind of chowder 00:03:18.29\00:03:19.63 or curry starts with some nice fresh onions. 00:03:19.66\00:03:22.83 So we're gonna chop these up and put them in the pan. 00:03:22.86\00:03:25.00 And the hardest part of that onions 00:03:32.71\00:03:34.34 is cheering in the skin off 00:03:34.38\00:03:36.34 just so much time consuming part. 00:03:36.38\00:03:37.88 So put those in a pan. 00:03:53.63\00:03:55.96 I've got a lovely cast iron pot that I'm using today 00:03:56.00\00:03:58.13 and these are just the beautiful to cook with. 00:03:58.17\00:03:59.50 They just hold a such a great consistent heat 00:03:59.53\00:04:02.07 and they are really present well as well. 00:04:02.10\00:04:04.01 So I'm gonna turn on high just to get it up to heat. 00:04:04.04\00:04:06.88 Put these onions in. 00:04:06.91\00:04:08.24 We're gonna throw in a tablespoon of oil. 00:04:10.15\00:04:11.81 And also the one that goes well 00:04:15.52\00:04:17.55 at the beginning of the dish is some garlic. 00:04:17.59\00:04:20.09 So let's get two lovely big cloves of garlic. 00:04:20.12\00:04:23.22 Straighten the garlic press, skin and all 00:04:23.26\00:04:25.09 and we just squeeze them in like this. 00:04:27.66\00:04:29.43 Here we go. 00:04:33.94\00:04:35.47 And we're also gonna add in today some chili puree 00:04:35.50\00:04:38.97 so this just needs just a little bit of heat. 00:04:39.01\00:04:41.31 You could use fresh chilies if you have them. 00:04:41.34\00:04:43.18 But you get some really nice purees in the supermarket. 00:04:43.21\00:04:45.51 Just a little bit dash of this, 00:04:45.55\00:04:46.88 just a tablespoon of chili puree. 00:04:46.92\00:04:48.52 Just add just a little bit of heat, 00:04:48.55\00:04:50.69 leave that if you don't like heat, 00:04:50.72\00:04:52.45 add more in if you like more heat. 00:04:52.49\00:04:55.59 We're also gonna add a red onion in. 00:04:55.62\00:04:57.19 And this is primarily for extra sweetness 00:04:57.23\00:04:59.06 but also red onion does adds amazing color to dishes. 00:04:59.09\00:05:03.26 So again, we're gonna chop this up 00:05:03.30\00:05:05.07 and we're gonna make this root dice 00:05:05.10\00:05:06.47 really, really thickly so it's just big, big chunks. 00:05:06.50\00:05:09.37 If we made it too small, 00:05:09.40\00:05:10.74 it will just kind of dissolve in 00:05:10.77\00:05:12.11 and you lose the whole purpleness of the dish. 00:05:12.14\00:05:16.44 So take the skin off. 00:05:16.48\00:05:17.81 And then just into-just big, big chunks like that 00:05:20.12\00:05:27.69 and they can happily mingle with the white onions. 00:05:30.03\00:05:34.36 And we're also gonna add an ingredient some ground thyme 00:05:38.83\00:05:41.57 and thyme just goes really nicely with corn 00:05:41.60\00:05:43.61 so just a pack-- just some of the super markets. 00:05:43.64\00:05:45.87 And one teaspoon of ground thyme. 00:05:45.91\00:05:47.84 We can use whole thyme if you want. 00:05:47.88\00:05:50.38 It just creates a nice underlined flavor 00:05:50.41\00:05:53.05 that goes really well with these ingredients. 00:05:53.08\00:05:55.05 Just give it a stir up, 00:05:56.08\00:05:59.45 we turn the heat down to about half 00:05:59.49\00:06:02.42 and we're just gonna let that mingle there 00:06:02.46\00:06:03.79 and let those onions go nice and soft. 00:06:03.83\00:06:06.16 We should take about probably about five minutes. 00:06:06.19\00:06:08.56 In the mean time you can see 00:06:08.60\00:06:09.93 that rice is bubbling away nicely 00:06:09.96\00:06:12.33 so we're gonna leave, 00:06:12.37\00:06:13.70 turn that right down to the lowest heating we can 00:06:13.74\00:06:16.67 and make sure it doesn't burn 00:06:16.71\00:06:19.24 and better if we just keep cooking there happily. 00:06:19.27\00:06:21.08 So we made a good start for our Cook: 30 meal. 00:06:23.81\00:06:26.25 The rice is away in bubbling. 00:06:26.28\00:06:27.62 We can forget about that, 00:06:27.65\00:06:29.02 the onions are on for the chowder. 00:06:29.05\00:06:30.89 So now we can make the 4C Salad. 00:06:30.92\00:06:33.46 This is made up of carrot, cashew, coriander and coconut. 00:06:33.49\00:06:37.69 And the secret to this 00:06:37.73\00:06:39.06 is pre-roasting all those yummy ingredients. 00:06:39.09\00:06:42.13 So first we're gonna add into a bowl 00:06:42.16\00:06:43.70 half a cup of coconut 00:06:43.73\00:06:45.47 and you want to get that shredded style coconut, 00:06:45.50\00:06:48.10 the ones that have got the very-- 00:06:48.14\00:06:49.47 kind of long stringy bits. 00:06:49.50\00:06:51.64 And it's really how fun 00:06:51.67\00:06:53.01 to find coconut without sugar in it. 00:06:53.04\00:06:55.34 So make sure you get the unsweetened coconut. 00:06:55.38\00:06:57.08 Some of those are just loaded with sugar. 00:06:57.11\00:06:59.21 We're gonna add some cashew nuts. 00:06:59.25\00:07:01.85 And we've got one cup of cashew nuts 00:07:01.88\00:07:03.22 we're gonna throw in here. 00:07:03.25\00:07:04.59 We're gonna put in some ground coriander 00:07:07.92\00:07:10.16 and coriander is a nice sweet spice. 00:07:10.19\00:07:12.43 So we've got two teaspoons of coriander. 00:07:12.46\00:07:14.10 And then we're gonna just add two tablespoons of oil. 00:07:17.70\00:07:21.00 This is kind of a nut base 00:07:21.04\00:07:22.84 that we're gonna bake in the oven. 00:07:22.87\00:07:24.31 So give it a quick stir around. 00:07:24.34\00:07:27.14 Just to mix it up so that oil coats all the nuts. 00:07:27.18\00:07:32.75 And we're just gonna put on to a baking tray, 00:07:32.78\00:07:37.82 mingled around, 00:07:37.85\00:07:40.59 so it cooks evenly 00:07:40.62\00:07:42.39 and we're just gonna fry that in the oven 00:07:42.42\00:07:44.33 and we're at about 300 A°F/150A°C 00:07:44.36\00:07:47.56 and then it will take around 00:07:47.60\00:07:48.93 about 10 to 15 minutes for those nuts and that coconut 00:07:48.96\00:07:51.47 to kind of just cook beautifully 00:07:51.50\00:07:53.60 and it will just smell 00:07:53.64\00:07:54.97 and it just add such a great aromatic flavor to the salad. 00:07:55.00\00:07:58.27 Now let's look up the onions in the chowder, 00:07:58.31\00:08:01.81 are coming on nicely. 00:08:01.84\00:08:03.18 Look that I lovely and soft and delicious. 00:08:03.21\00:08:05.68 They just smell amazing. 00:08:05.71\00:08:07.18 You can really smell that thyme coming out there. 00:08:07.22\00:08:09.72 So we're gonna add some potatoes. 00:08:09.75\00:08:11.99 We can add this one large potato 00:08:12.02\00:08:13.96 or three small ones. 00:08:13.99\00:08:15.32 I couldn't find any large potatoes. 00:08:15.36\00:08:17.39 So we're gonna chop these up into cubes 00:08:17.43\00:08:21.20 and we want to chop them reasonably fine 00:08:21.23\00:08:23.73 but we're gonna be blending it later 00:08:23.77\00:08:26.13 so we're gonna be mashing it later. 00:08:26.17\00:08:27.50 So we don't have to be too fussy 00:08:27.54\00:08:29.27 on the shape and size of it at all. 00:08:29.30\00:08:31.94 We just want to make sure it cooks reasonably quickly. 00:08:31.97\00:08:33.98 Now put these in. 00:08:40.62\00:08:41.95 And we've got some sweet potatoes. 00:08:49.02\00:08:50.39 Sweet potato is just amazing. 00:08:50.43\00:08:52.23 They call them kumara in New Zealand 00:08:52.26\00:08:53.70 where I come from. 00:08:53.73\00:08:55.10 I'm the sweet potato lover. 00:08:55.13\00:08:56.46 Just make sure to get those little ends of them. 00:08:56.50\00:08:58.60 And again, just chop them up and put them in the pot. 00:08:58.63\00:09:02.20 People just love this beautiful orange color. 00:09:02.24\00:09:04.44 Here we go, into the pot. 00:09:27.96\00:09:31.10 We've got some water left in the kettle. 00:09:31.13\00:09:33.40 So I'm gonna add some boiling water. 00:09:33.44\00:09:35.00 And we want around about four cups which is a quart. 00:09:36.60\00:09:40.78 I'm gonna pour that in and again using boiling water 00:09:40.81\00:09:43.24 really speeds up the cooking process. 00:09:43.28\00:09:45.01 Just give it a little stir around. 00:09:49.18\00:09:51.45 This will take probably about five or ten minutes to cook 00:09:51.49\00:09:53.69 till they are soft enough to mash. 00:09:53.72\00:09:55.59 So turn that heat up, get really delicious lime and lemon spritzer. 00:10:12.91\00:10:16.41 So we're gonna need some ice from the freezer 00:10:16.44\00:10:19.98 and I'll get some mint. 00:10:20.02\00:10:22.58 And I've got some sparkling water. 00:10:22.62\00:10:24.65 This is just a great refreshing drink 00:10:26.45\00:10:28.69 and there is no added sweetness or anything like that. 00:10:28.72\00:10:30.83 Just a lovely, lovely drink. 00:10:30.86\00:10:32.56 So we're gonna chop up a lime and a lemon. 00:10:32.59\00:10:35.53 So the first half we're just going to chop in half 00:10:35.56\00:10:39.33 and just need to keep it cold with some ice. 00:11:54.04\00:11:57.05 So we've got some ice from the freezer. 00:11:57.08\00:12:01.55 Don't add too much 00:12:01.58\00:12:02.92 but just enough to keep it nice 00:12:26.88\00:12:32.71 So in about 10 or 15 minutes or so we have come to drink it, 00:12:32.75\00:12:35.25 it'll be nice and cold 00:12:35.28\00:12:37.02 and just a beautiful refreshing spritzer So next job we need to do is prepare the cheese sauce 00:13:21.80\00:13:25.27 for the broccoli. 00:13:25.30\00:13:26.63 Broccoli by itself is a great vegetable 00:13:26.67\00:13:28.30 but add a delicious cheesy sauce 00:13:28.34\00:13:30.04 and we've got something that tastes amazing. 00:13:30.07\00:13:32.14 So this is very, very simple. 00:13:32.17\00:13:34.08 What we're gonna do is use a blender 00:13:34.11\00:13:36.81 and we're gonna find some ingredients in here. 00:13:36.85\00:13:38.75 We're gonna put in a cup of cashew nuts, 00:13:40.08\00:13:42.98 we're gonna put in 00:13:46.49\00:13:47.82 one and a quarter cups of water, 00:13:47.86\00:13:49.19 half a teaspoon of salt, 00:13:55.10\00:13:58.13 we're gonna add some turmeric 00:13:58.17\00:13:59.50 and turmeric will make this cheesy sauce 00:13:59.53\00:14:00.87 look lovely and yellow, 00:14:00.90\00:14:02.30 so about a quarter of a teaspoon, 00:14:02.34\00:14:03.74 so just a little dash, 00:14:03.77\00:14:05.17 just to get a little bit of color. 00:14:05.21\00:14:07.51 And we're gonna use some arrowrootal corn starch 00:14:07.54\00:14:09.74 and this will thicken it up nicely. 00:14:09.78\00:14:11.81 So we're gonna add 00:14:11.85\00:14:16.22 a half a teaspoon of arrowroot or corn flour. 00:14:16.25\00:14:20.09 I think that's all 00:14:20.12\00:14:21.46 and nutritional yeast flakes is the next ingredient 00:14:21.49\00:14:23.66 and these are just 00:14:23.69\00:14:25.03 a great way of amping up bit of flavor 00:14:25.06\00:14:26.56 and gives a great cheesy taste. 00:14:26.59\00:14:28.26 So we're gonna add one tablespoon 00:14:28.30\00:14:30.57 of nutritional yeast flakes. 00:14:30.60\00:14:34.04 Put the blender on and give it a whirl around. 00:14:34.07\00:14:36.00 Well, let's go over and I'm just gonna go 00:14:38.37\00:14:39.71 and stir the chowder 00:14:39.74\00:14:41.28 which is happily mingling away here. 00:14:41.31\00:14:44.51 It's tighter and the sweet potato 00:14:44.55\00:14:46.82 is starting to break down nicely. 00:14:46.85\00:14:48.85 Just give a little bit of stir. 00:14:48.88\00:14:50.35 The rice is going well. 00:14:50.39\00:14:52.19 And we get back and this will be mixed up. 00:14:52.22\00:14:57.93 And pour this into a pan. 00:14:57.96\00:14:59.69 Turn the gas on to quite high. 00:14:59.73\00:15:03.67 And this takes a very, very short time 00:15:03.70\00:15:05.20 to thicken up. 00:15:05.23\00:15:06.87 Just gonna pour it in there and you really need it 00:15:06.90\00:15:11.17 give this a blend around to give it a-- 00:15:11.21\00:15:12.77 to make it sure it is nice and well mixed in. 00:15:12.81\00:15:16.85 So we're gonna mix it around, we stir it around. 00:15:16.88\00:15:18.68 If you start with a nice hot pan, 00:15:21.38\00:15:22.72 this should only take really 30 seconds to a minute 00:15:22.75\00:15:25.32 before it starts to thicken up really, really nicely. 00:15:25.35\00:15:28.29 So it seems to be thickening up nicely, 00:15:33.06\00:15:34.70 just keep stirring, turn the heat up 00:15:37.00\00:15:39.23 and when that's thick you turn the heat down 00:15:39.27\00:15:40.67 straight 00:15:45.07\00:15:46.74 As you can see all the-- the sweet potato and the potato 00:15:46.78\00:15:50.35 really nice and soft. 00:15:50.38\00:15:52.01 So just grab in a common potato masher. 00:15:52.05\00:15:54.88 I'm just giving this a bit of a mash through. 00:15:54.92\00:15:57.75 It doesn't take long at all. 00:15:57.79\00:16:00.36 And you don't want to mash it so it's totally 00:16:00.39\00:16:01.89 pulverized. 00:16:01.92\00:16:03.43 We're gonna keep some chunks in there 00:16:03.46\00:16:04.79 just to give a kind of bit of rustic feel. 00:16:04.83\00:16:06.16 It's always nice when you're eating dishes 00:16:06.19\00:16:07.53 to come across a nice, you know, 00:16:07.56\00:16:09.03 a chunk of sweet potato rather than 00:16:09.06\00:16:10.77 a totally mashed up kind of a dish. 00:16:10.80\00:16:13.54 So this is ready to go. 00:16:13.57\00:16:14.90 So we're gonna just turn that and keep that low. 00:16:14.94\00:16:17.21 And I'm gonna fire in some fresh ingredients.
