your family 00:01:24.45\00:01:26.51 and it will taste amazing. 00:01:26.55\00:01:29.58 On the menu today, we have a delicious chickpea pizza. 00:01:29.62\00:01:33.72 And on top we're gonna be making 00:01:33.76\00:01:35.09 our very own fresh hummus. 00:01:35.12\00:01:38.39 We're gonna have Bombay roasted potatoes 00:01:38.43\00:01:40.33 on the side which is a great alternative to French fries 00:01:40.36\00:01:44.20 and an amazing cashew and bell pepper dip, 00:01:44.23\00:01:47.37 to dip corn chips into. 00:01:47.40\00:01:49.50 And of course, to finish with something sweet, 00:01:49.54\00:01:52.17 a peanut butter smoothie. 00:01:52.21\00:01:55.21 So to start with, we want to make sure 00:01:55.24\00:01:56.85 our kitchen bench is nice and clear. 00:01:56.88\00:01:58.75 This will really help us make meals clear. 00:01:58.78\00:02:00.82 So we got a clear bench, we got a pan on the stove, 00:02:00.85\00:02:04.09 we got the oven, hot at 400 °F or 200 °C. 00:02:04.12\00:02:08.96 We got our potatoes out and we're ready to go. 00:02:08.99\00:02:12.26 So we're gonna start 00:02:12.29\00:02:13.63 with the Bombay roasted potatoes first. 00:02:13.66\00:02:15.56 'Cause that gonna take the longest to cook. 00:02:15.60\00:02:17.60 So we've got one kg and or two pounds of potatoes. 00:02:17.63\00:02:20.87 And I'm just gonna dice these up into, 00:02:20.90\00:02:23.37 kind of small bite size pieces. 00:02:23.41\00:02:26.51 And we're gonna leave the skins on. 00:02:26.54\00:02:28.48 Not a big believer on peeling things. 00:02:28.51\00:02:29.88 They just gets rid of all the nutrients 00:02:29.91\00:02:33.01 and causes extra time. 00:02:33.05\00:02:34.62 So don't be scared to leave your skins on, 00:02:34.65\00:02:37.39 as long as they are nice and clean, 00:02:37.42\00:02:38.75 they should be fine. 00:02:38.79\00:02:40.69 I'm just gonna chop these up and don't chop them too hard, 00:02:40.72\00:02:45.39 too large, although it'll take too long to cook. 00:02:45.43\00:02:48.23 So I'm gonna take these now 00:03:01.54\00:03:02.88 and throw them in a nice mixing bowl. 00:03:02.91\00:03:07.12 I'm gonna make them into really beautiful color. 00:03:07.15\00:03:10.22 And turmeric is one of my favorite coloring spices. 00:03:10.25\00:03:14.39 So I'm gonna add two teaspoons of turmeric 00:03:14.42\00:03:18.39 and we're gonna add two tablespoons of oil 00:03:18.43\00:03:20.63 and a teaspoon of salt. 00:03:26.33\00:03:29.37 And normally I'd use my hand to mix something like this. 00:03:29.40\00:03:32.47 However, turmeric would just get over them 00:03:32.51\00:03:33.88 for the rest of the day. 00:03:33.91\00:03:35.24 So just getting a little light mixed up like that. 00:03:35.28\00:03:39.28 Now get all mixed up and we're just gonna throw them 00:03:39.31\00:03:42.32 in an oven tray. 00:03:42.35\00:03:44.39 Something like this. 00:03:44.42\00:03:46.76 I'm gonna put them in the oven 00:03:46.79\00:03:48.12 and get them underway really quickly. 00:03:48.16\00:03:50.29 So that will take around about 30 minutes. 00:03:55.13\00:03:57.37 Sometimes a little bit more, depending on the potato. 00:03:57.40\00:03:59.63 But we want to get them in the oven really fast 00:03:59.67\00:04:01.54 so they are underway. 00:04:01.57\00:04:02.90 Now we're gonna make a delicious chickpea pizza. 00:04:04.84\00:04:07.51 And this base is probably something 00:04:07.54\00:04:08.88 like you never made it before but it's really, really easy. 00:04:08.91\00:04:12.21 We're gonna use a product called chickpea flour. 00:04:12.25\00:04:14.05 It's also called besan flour or China flour. 00:04:14.08\00:04:17.32 We're gonna start with three cups of this flour 00:04:17.35\00:04:19.85 and you can buy this at, you know, 00:04:19.89\00:04:21.22 most international stores 00:04:21.26\00:04:22.59 or especially, Indian stores as well. 00:04:22.62\00:04:25.79 So it's three cups of this flour 00:04:25.83\00:04:27.16 and three cups of water. 00:04:27.20\00:04:29.26 But the trick is, when you add the water, 00:04:29.30\00:04:30.67 it is just to add a little bit at a time. 00:04:30.70\00:04:33.64 So it doesn't go lumpy. 00:04:33.67\00:04:35.97 So we're just gonna mix it up like this. 00:04:36.00\00:04:39.51 So I had some friends over on a Saturday night one time 00:04:39.54\00:04:42.14 and someone said, "Let's go out for pizza 00:04:42.18\00:04:43.88 or let's order pizza in." 00:04:43.91\00:04:45.25 And I said, "Oh, no. I don't want 00:04:45.28\00:04:47.02 dripping cheese and white flour." 00:04:47.05\00:04:49.72 So they challenged me to make a healthy pizza. 00:04:49.75\00:04:52.82 And this is the recipe that I came up with. 00:04:52.85\00:04:57.16 So we're just doing the base here. 00:04:57.19\00:04:58.56 So it's kind of getting a bit more together now. 00:04:58.59\00:05:03.23 If you put all the water in all at once to begin with, 00:05:03.26\00:05:05.73 you'll end up with a little these lumpy bit. 00:05:05.77\00:05:07.10 So you need to spin a bit of patience 00:05:07.14\00:05:09.24 getting this stirred. 00:05:09.27\00:05:12.57 Now that it's together, 00:05:12.61\00:05:15.24 we can add the rest of the water 00:05:15.28\00:05:17.41 and stir it all up. 00:05:17.45\00:05:18.81 So now the chickpea mix is now all mixed together, 00:05:28.59\00:05:31.33 we can add some flavoring ingredients. 00:05:31.36\00:05:33.43 I'm gonna add one teaspoon of onion powder 00:05:33.46\00:05:36.10 and this reasonably available in most shops. 00:05:36.13\00:05:39.17 And half a teaspoon of garlic powder. 00:05:39.20\00:05:42.70 I generally use more onion powder. 00:05:42.74\00:05:44.77 I'm gonna use a teaspoon of salt 00:05:44.81\00:05:46.14 and just a tablespoon of oil and just keep mixing. 00:05:50.41\00:05:56.58 Now this mixture may look a lot runnier 00:05:56.62\00:05:58.65 than you think it would be is suitable for a pizza base. 00:05:58.69\00:06:01.59 But trust me, you just have to have 00:06:01.62\00:06:03.36 some faith with this one. 00:06:03.39\00:06:04.73 It'll actually harden up into a beautiful pizza base. 00:06:04.76\00:06:09.10 Now there maybe a few little lumps in there, don't panic. 00:06:09.13\00:06:11.13 They just seem to mostly cook out as long as you've got 00:06:11.17\00:06:13.20 most of them out of the mix. 00:06:13.23\00:06:16.04 I'm gonna oil the tray 00:06:16.07\00:06:19.54 just to make sure you oiling the corners 00:06:19.57\00:06:21.08 'cause that's where it generally 00:06:21.11\00:06:23.14 it tends to stick most. 00:06:23.18\00:06:25.11 Just give it a little quick oil 00:06:25.15\00:06:26.48 on a non-stick baking tray like this. 00:06:26.51\00:06:29.65 And then I'm just gonna pour it in like that. 00:06:29.68\00:06:32.65 Look at that. 00:06:32.69\00:06:34.92 So don't worry about those lumps. 00:06:34.96\00:06:36.89 And again, we're gonna put it in the oven 00:06:36.93\00:06:38.69 with the potatoes. 00:06:38.73\00:06:43.16 Now this will take around about, oops, wrong oven. 00:06:43.20\00:06:46.74 We'll put it in this one here. 00:06:46.77\00:06:48.54 This one will take around about 15 to 20 minutes to cook. 00:06:48.57\00:06:53.27 Make sure it's on level surface and it'll come out 00:06:53.31\00:06:55.88 to be a nice beautiful firm pizza base. 00:06:55.91\00:06:58.58 So we have two important jobs out of the way. 00:07:01.65\00:07:04.09 We have the potatoes roasting away in the oven 00:07:04.12\00:07:06.55 and the pizza base starting to crispen up. 00:07:06.59\00:07:09.02 So we're gonna take a few moments now 00:07:09.06\00:07:10.39 just to prepare some of the toppings 00:07:10.43\00:07:12.03 for the pizza. 00:07:12.06\00:07:13.40 So first up we're gonna use a tomato sauce on a pizza. 00:07:13.43\00:07:16.10 Now normally I would make my own 00:07:16.13\00:07:17.47 tomato sauce from scratch. 00:07:17.50\00:07:18.83 And I'll show you in some future programs 00:07:18.87\00:07:20.34 how to do this. 00:07:20.37\00:07:21.70 But for sometimes, it's just easy, 00:07:21.74\00:07:23.07 just to get a nice healthy preservative free 00:07:23.10\00:07:24.71 tomato sauce to use. 00:07:24.74\00:07:26.71 So we're gonna put two cup of pre-made 00:07:26.74\00:07:29.51 tomato sauce in a pan. 00:07:29.54\00:07:31.35 I'm just gonna warm it up. 00:07:31.38\00:07:32.88 So I'll turn the gas on and get that warming up. 00:07:32.91\00:07:37.49 So I put it on a low, I just kind of just simmer away this. 00:07:37.52\00:07:40.62 So when we add to the pizza, 00:07:40.66\00:07:41.99 it's all nice and warm and ready to go. 00:07:42.02\00:07:44.39 We also gonna chop up some onion. 00:07:44.43\00:07:46.59 An onion is lovely and sweet when it's cooked. 00:07:46.63\00:07:49.60 So I'm just gonna chop this up in some rings. 00:07:49.63\00:07:54.67 And we're gonna put this in the pan 00:07:54.70\00:07:56.10 with a little bit of oil. 00:07:56.14\00:07:57.47 So I'm just gonna put that in a pan, turn the heat on 00:08:17.16\00:08:19.83 and just put about a table spoon of oil. 00:08:23.16\00:08:25.17 And just let that slowly cook away and saute. 00:08:25.20\00:08:28.17 So by the time I come to dress our pizza, 00:08:28.20\00:08:31.04 we'll have some nice caramelized sweet onion 00:08:31.07\00:08:34.84 that we can put on it as well. 00:08:34.88\00:08:37.11 So that's two little more jobs out of the way. 00:08:37.15\00:08:38.91 We're gonna make a very, very lovely dip. 00:08:42.82\00:08:45.62 This is very, very easy. 00:08:45.65\00:08:46.99 Once you made it once, you're gonna make it 00:08:47.02\00:08:48.36 all the time. 00:08:48.39\00:08:49.72 It's a cashew and bell pepper dip. 00:08:49.76\00:08:51.86 So I'm gonna start with a bell pepper. 00:08:51.89\00:08:53.23 These are actually called capsicums 00:08:53.26\00:08:54.60 in New Zealand where I come from. 00:08:54.63\00:08:55.96 So we can call them bell peppers or capsicums. 00:08:56.00\00:08:58.97 So we're just gonna deseed them. 00:08:59.00\00:09:00.97 Take out the seeds and cut them in half. 00:09:01.00\00:09:06.91 These are the lovely fresh flavor. 00:09:06.94\00:09:09.81 I'm just gonna roughly chop them up. 00:09:09.84\00:09:11.35 So when that chopped up, we're gonna 00:09:25.66\00:09:27.00 throw them in the pan. 00:09:27.03\00:09:30.57 And we're gonna turn the pan on quite hot, 00:09:30.60\00:09:37.71 the tablespoon of oil 00:09:37.74\00:09:42.14 and we're gonna add some cashew nuts, 00:09:42.18\00:09:43.95 one and a half cups of cashew nuts. 00:09:43.98\00:09:49.05 And we're just gonna toast those 00:09:49.08\00:09:50.42 for about five or six minutes 00:09:50.45\00:09:53.02 and that would just-- that flavors of the cashewnut 00:09:53.05\00:09:55.16 would be kind of roasted flavor 00:09:55.19\00:09:57.23 and the bell pepper would just taste 00:09:57.26\00:09:59.16 really lovely as well. 00:09:59.19\00:10:01.26 So we've got three things on the stove now. 00:10:01.30\00:10:02.76 We got the tomato sauce going with the onions sauteing away, 00:10:02.80\00:10:07.00 do need a few tosses to stop them burning. 00:10:07.04\00:10:11.34 And we've got these going away. 00:10:11.37\00:10:12.71 These will start to become very hot 00:10:12.74\00:10:14.38 and these will be able to provide 00:10:14.41\00:10:15.74 an excellent flavor base 00:10:15.78\00:10:17.11 for the dip we got coming up shortly. 00:10:17.15\00:10:18.48 We're gonna add some fresh hummus 00:10:20.78\00:10:22.35 on top of the chickpea pizza. 00:10:22.38\00:10:23.95 There's nothing more beautiful than freshly made hummus. 00:10:23.99\00:10:27.12 You can of course, buy hummus in the super market 00:10:27.16\00:10:28.79 in containers like this and that is actually fine 00:10:28.82\00:10:30.96 because these dips are actually a lot healthier 00:10:30.99\00:10:33.26 than some of other options that are out there. 00:10:33.29\00:10:35.26 But there's still full of all these preservatives 00:10:35.30\00:10:36.93 and a lot of ingredients that I can't really pronounce. 00:10:36.97\00:10:39.03 So it's probably better to make your own. 00:10:39.07\00:10:41.64 The next best option is to use canned chickpeas. 00:10:41.67\00:10:44.51 And canned chickpeas are excellent 00:10:44.54\00:10:45.87 because you can just have them in your pantry, 00:10:45.91\00:10:47.84 whip them out and make fresh hummus any time. 00:10:47.88\00:10:51.55 But the best way is to freeze your-- 00:10:51.58\00:10:53.85 is to cook and freeze your own chickpeas. 00:10:53.88\00:10:56.45 And what I do at home is I cook my chickpeas up 00:10:56.48\00:10:59.32 and I freeze them in little containers like this. 00:10:59.35\00:11:02.52 And it's great because it only takes a few moments 00:11:02.56\00:11:04.96 to defrost them. 00:11:04.99\00:11:07.06 So what we do is put them in a colander 00:11:07.10\00:11:10.87 and defrost them under some water 00:11:10.90\00:11:12.30 and within literally 30 seconds, 00:11:15.57\00:11:18.04 these will become defrosted ready to use chickpeas, 00:11:18.07\00:11:21.74 almost as good as fresh. 00:11:21.78\00:11:23.91 So make sure you stock your fridge up 00:11:23.95\00:11:26.58 or you freezer up with some chickpeas like this. 00:11:26.61\00:11:29.78 So if you make-- buy hummus from the super market, 00:11:29.82\00:11:31.65 it might cost three to four dollars for a pack, 00:11:31.69\00:11:34.39 if you make them with canned chickpeas, 00:11:34.42\00:11:35.76 it might cost, you know, one to two dollars. 00:11:35.79\00:11:38.39 If you make it yourself, this probably gonna only cost 00:11:38.43\00:11:40.96 about 50 cents with the same amount of hummus 00:11:41.00\00:11:43.23 and you can save huge amounts of money 00:11:43.26\00:11:45.20 and at lots of freshness just by a little preparation 00:11:45.23\00:11:48.17 in cooking your chickpeas in advance 00:11:48.20\00:11:49.80 and keeping them in the freezer. 00:11:49.84\00:11:53.41 So these are ready to go we can now make our own humus 00:11:53.44\00:11:57.38 with these beautiful chickpeas. 00:11:57.41\00:12:00.65 So a food processor or blender is what we need here. 00:12:00.68\00:12:03.95 We can use a liquidizer or blender 00:12:03.99\00:12:05.52 like this one over here. 00:12:05.55\00:12:07.06 But that would generally end up with-- 00:12:07.09\00:12:09.32 you need add a liquid here type hummus. 00:12:09.36\00:12:11.06 But you want a thick hummus 00:12:11.09\00:12:12.43 you generally need to have a food processor like this 00:12:12.46\00:12:14.73 so it can work. 00:12:14.76\00:12:16.23 The recipe is for the perfect hummus every time 00:12:16.26\00:12:19.53 is two cans of chickpeas or basically three cups. 00:12:19.57\00:12:23.94 It's about three cups. 00:12:23.97\00:12:26.07 I'm gonna add some tahini, and tahini is sesame seed paste 00:12:26.11\00:12:30.25 and is an excellent ingredient to use. 00:12:30.28\00:12:32.81 Sometimes it comes with-- 00:12:32.85\00:12:34.55 needs a little bit of stir around. 00:12:34.58\00:12:37.29 And we're gonna add two tablespoons of tahini. 00:12:37.32\00:12:40.42 We're gonna put two generous tablespoons of tahini in. 00:12:40.46\00:12:45.26 Now one thing that most chickpea recipes have is oil. 00:12:45.29\00:12:49.40 Not that you saw my hummus without oil, 00:12:49.43\00:12:52.07 we can actually make great hummus 00:12:52.10\00:12:53.44 so you do not necessarily need to add oil. 00:12:53.47\00:12:56.00 We're gonna add some salt. 00:12:56.04\00:12:57.74 We've got half a teaspoon of salt, 00:12:57.77\00:13:00.61 lemon juice is an essential ingredient. 00:13:00.64\00:13:03.68 So we're gonna add 00:13:03.71\00:13:05.05 four tablespoons of lemon juice. 00:13:05.08\00:13:07.35 Just squeezing through my hands so they don't, 00:13:07.38\00:13:10.19 I think one jumped in, but it will get blended up 00:13:10.22\00:13:11.99 so no one will notice. 00:13:12.02\00:13:16.32 It's a lemon juice soaked tahini chickpeas. 00:13:16.36\00:13:20.46 And we need a little bit of water 00:13:20.50\00:13:21.83 which we'll get from the tap. 00:13:21.86\00:13:26.74 And the amount of water you need would vary 00:13:26.77\00:13:28.34 depending on the batch. 00:13:28.37\00:13:31.21 So just check my recipe 00:13:31.24\00:13:33.27 and we need two cloves of garlic. 00:13:33.31\00:13:34.64 Garlic is an essential ingredient 00:13:34.68\00:13:36.08 for hummus, gives it a really, really nice tang. 00:13:36.11\00:13:39.15 So all ingredients in, lid on the food processor 00:13:51.76\00:13:56.67 and we blend away. 00:13:56.70\00:13:58.23 Now every time I make hummus, it turns out different. 00:14:02.74\00:14:05.24 I'd love to give you a recipe 00:14:05.27\00:14:06.61 that was almost perfect every time 00:14:06.64\00:14:08.98 but the reality is lemons are always different, 00:14:09.01\00:14:11.18 chickpeas are always different. 00:14:11.21\00:14:12.88 So it's really important that you taste your hummus 00:14:12.91\00:14:14.85 when you make it. 00:14:14.88\00:14:17.52 And if it's not going around, you may need to add 00:14:17.55\00:14:19.19 some more water so give it a taste
