Yes, where it is. 00:01:18.62\00:01:20.03 Well, celiac disease of course those who have 00:01:21.43\00:01:25.39 intolerance to gluten is known as celiac disease. 00:01:25.42\00:01:28.39 And it is very prevalent here in United States. 00:01:28.98\00:01:31.26 Now it's about 1 in 133. So, that's about 1% of the 00:01:32.02\00:01:37.40 population, which is little bit over 2 million people. 00:01:37.43\00:01:40.73 And it is so prevalent that now it is the number one 00:01:41.37\00:01:45.01 fastest growing health food product on a market, 00:01:45.04\00:01:50.09 gluten free products, the fastest growing right now and 00:01:50.12\00:01:53.72 2001 market value was about $210 million 00:01:54.14\00:02:00.21 at that growing rate by 2010 it would be $1.7 billion 00:02:00.65\00:02:06.65 as far as product market is concerned for gluten 00:02:06.68\00:02:09.83 free products. So, it's very prevalent and it's growing 00:02:09.86\00:02:13.17 at a growing rate. As a matter of fact, I know just 00:02:13.20\00:02:16.03 realized just recently that there are actually celiac's 00:02:16.06\00:02:21.42 camp for children for the summer. 00:02:21.45\00:02:24.59 You know you got summer camps, but there is actually 00:02:24.62\00:02:26.91 a camp celiac and it's all over the nation and it's just 00:02:26.94\00:02:31.15 popped up I guess within the last 10 years. There is 00:02:31.18\00:02:33.95 celiac camp in Washington State, there is one in Rhode 00:02:34.56\00:02:37.79 Island, there is one in North Carolina, 00:02:37.82\00:02:40.67 there is one in Texas. So, all these camps are for 00:02:40.70\00:02:44.07 children who have celiac's disease. So, it's really 00:02:44.10\00:02:48.44 prevalent and it's going at a growing rate. 00:02:48.47\00:02:50.57 So it's a result of gluten, you are saying is a result. 00:02:50.60\00:02:54.19 Yes, And from the gluten it's called celiac. 00:02:54.22\00:02:57.03 Right celiac disease. Okay, okay, so what 00:02:57.06\00:03:00.71 exactly then is the celiac disease. What happens? 00:03:00.74\00:03:04.17 Well celiac disease is actually a chronic 00:03:04.20\00:03:06.79 digestive problem, where person cannot tolerate 00:03:06.82\00:03:11.66 gluten and so with that in mind you have a several 00:03:12.17\00:03:15.76 symptoms and problems associated with that. 00:03:15.79\00:03:18.06 So, when a person cannot tolerate gluten of course 00:03:18.09\00:03:21.53 you have digestive upsets. So, it's a chronic disease 00:03:21.56\00:03:24.83 dealing with that particular issue. 00:03:24.86\00:03:26.39 So, they are actual gluten products still on the 00:03:27.16\00:03:29.55 market... You are saying they are marketing now you 00:03:29.58\00:03:31.94 are saying products that are gluten free, right. 00:03:31.97\00:03:35.26 Right now, now on the market now there are 00:03:35.51\00:03:39.10 wheat free, yeah, and sometimes they labeled as 00:03:39.84\00:03:43.49 gluten free. They are not the same. 00:03:43.74\00:03:46.12 Wheat free does not mean gluten free and let me 00:03:46.86\00:03:50.87 explain this. First of all, wheat contains the 00:03:50.90\00:03:54.84 protein gluten. We know that and within that wheat 00:03:54.87\00:03:58.18 category you have semolina, you have durum, 00:03:58.21\00:04:02.93 you have spelt, that's wheat. Now that's true gluten. 00:04:03.37\00:04:06.58 But, in addition to that you also have grains 00:04:07.19\00:04:09.91 that's not in the wheat category, but still 00:04:10.14\00:04:12.33 contains gluten rye and barley. 00:04:12.36\00:04:16.40 So, therefore those also other than the wheat that also 00:04:17.36\00:04:21.74 contains gluten, so if you see a product that says 00:04:21.77\00:04:23.80 wheat free it does not mean it's gluten free, 00:04:24.18\00:04:27.08 if it contains rye or barley. Now there is other grains 00:04:27.42\00:04:30.76 one in particularly is oats. Now it just appears on the 00:04:30.79\00:04:34.78 resource and what clinical studies you look at some 00:04:34.81\00:04:37.74 people say that people who have intolerance to 00:04:37.77\00:04:41.13 gluten cannot oats. Some studies said that you can. 00:04:41.16\00:04:44.95 The reason why there is a mix up as far as whether 00:04:44.98\00:04:48.87 or not oats is part of this gluten free line here is 00:04:48.90\00:04:52.58 that according to the New England Journal of 00:04:52.61\00:04:54.99 Medicine, oats have less than 10% of the gluten 00:04:55.02\00:05:00.53 in its product. Thereby and a lot of cases people 00:05:00.56\00:05:04.67 who have gluten intolerance can digest 00:05:04.70\00:05:07.67 oats without any problem, others cannot because 00:05:07.70\00:05:11.01 it has less than 10% then it's like any gray 00:05:11.04\00:05:13.88 area, but again your buckwheat and amaranth also in 00:05:13.91\00:05:17.81 the gray area as well. So, you have products that 00:05:17.84\00:05:20.06 are known to have gluten, the wheat, okay, and then 00:05:20.09\00:05:23.74 also they spelt semolina and also the durum, rye 00:05:23.77\00:05:27.87 and barley, that's known cause to have those 00:05:27.90\00:05:30.63 digestive upsets. Now in the gray areas is the buck 00:05:30.66\00:05:34.27 wheat and amaranth and those are in the gray area. 00:05:34.30\00:05:37.60 Now oats most people can take oats because oats 00:05:37.99\00:05:41.06 has less than 10% of the gluten protein, so most 00:05:41.09\00:05:45.78 people can digest oats without any upset 00:05:45.81\00:05:47.92 according to the New England Journal of Medicine. 00:05:48.50\00:05:50.41 And so now in the safe area you have rice and 00:05:50.92\00:05:55.48 corn also we can call maize. So, those are in 00:05:55.51\00:05:59.78 safe area for those who have gluten intolerance. 00:05:59.81\00:06:02.91 So, then what are some of the overlooked offenders? 00:06:04.18\00:06:07.13 Okay. Now good question because most people 00:06:07.16\00:06:09.27 know about the offenders the wheat, semolina, 00:06:09.30\00:06:13.07 durum, spelt also the rye and the barley. 00:06:13.38\00:06:17.16 But, now sometimes there are some overlooked 00:06:17.52\00:06:19.55 offenders that people may not be aware of that can 00:06:19.58\00:06:22.33 also cause these digestive upsets. Let's go to our 00:06:22.36\00:06:25.54 next graphic and see what these 00:06:25.57\00:06:26.94 overlooked offenders are. 00:06:26.97\00:06:28.34 Here they are folks, soy sauce, brown rice syrup 00:06:29.35\00:06:33.47 sometimes from malt barley, malted barley, 00:06:33.50\00:06:36.78 vegetable protein, modified food starch and 00:06:37.23\00:06:42.43 of course we mentioned already the durum, wheat, 00:06:42.46\00:06:44.82 semolina and also the spelt. So, some of these are 00:06:44.85\00:06:48.00 some overlooked offenders that people may 00:06:48.03\00:06:50.51 not be aware of and they may be listed on a container. 00:06:50.54\00:06:55.08 So, it may not have the word wheat, it may not 00:06:55.11\00:06:58.03 have rye or barley, but they have those things 00:06:58.06\00:07:01.53 listed on the ingredient list and they can also 00:07:01.56\00:07:04.96 cause GI symptoms for those who 00:07:04.99\00:07:08.56 have intolerance for gluten. 00:07:08.59\00:07:09.96 What are some of the typical symptoms then? 00:07:10.72\00:07:12.35 Well the typical symptoms of course we 00:07:12.85\00:07:14.54 missing at the teas again to reiterate the bloating 00:07:14.57\00:07:18.16 abdominal pain. We also have digestive upsets 00:07:18.98\00:07:23.15 such has flatulence and so cramping and bloating 00:07:23.18\00:07:28.09 and those kind of things nausea, upset stomach, 00:07:28.12\00:07:31.35 those are the typical symptoms for those who 00:07:31.38\00:07:34.12 have gluten intolerance or celiac disease. 00:07:34.15\00:07:37.70 Now the National Institute of Health discovered 00:07:37.73\00:07:40.57 that 1 or 2 million have been under diagnosed 00:07:40.60\00:07:44.95 because sometimes these symptoms 00:07:44.98\00:07:46.97 are not always typical. There are some other 00:07:47.00\00:07:50.73 symptoms that when you look at this also attribute 00:07:50.76\00:07:53.89 to gluten intolerance. Let's go to our next graphic 00:07:53.92\00:07:57.93 and see what these symptoms are. 00:07:57.96\00:07:59.33 Non GI symptoms that's gastrointestinal you can 00:08:00.54\00:08:04.27 also have fatigue, weakness, unexplained 00:08:04.30\00:08:09.24 headaches, muscle weakness, depression, 00:08:09.27\00:08:13.26 we can add to that list non-Hodgkin's lymphoma, 00:08:13.29\00:08:17.17 seizures as well. All these can be result of a person 00:08:18.26\00:08:22.78 who has intolerance to gluten. 00:08:23.18\00:08:25.86 Therefore, sometimes that's why some doctors 00:08:26.36\00:08:30.39 may not diagnose it properly because it mimics 00:08:30.42\00:08:35.25 other symptoms as well such as irritable bowel 00:08:35.28\00:08:38.65 syndrome, inflammatory bowel disease, chronic 00:08:38.68\00:08:42.93 fatigue syndrome, where person may not have that 00:08:42.96\00:08:46.49 disease, but it may be celiac disease. 00:08:46.52\00:08:49.52 But, it is not diagnosed that way because they are 00:08:49.97\00:08:52.50 not looking at the typical symptoms that may be 00:08:52.53\00:08:55.18 some other symptoms we just 00:08:55.21\00:08:56.58 numerated there on the screen. 00:08:56.61\00:08:57.98 Then how can it really be diagnosed? 00:08:58.44\00:09:00.05 Well, now the gold standard to diagnose 00:09:00.53\00:09:03.84 celiac disease is intestinal biopsy, where they take a 00:09:03.87\00:09:06.93 tissue from intestines and they look under the 00:09:06.96\00:09:09.67 microscope and can determine whether or not 00:09:09.90\00:09:11.60 the person has celiac's disease. Now also there is 00:09:11.63\00:09:15.83 other tests done to you have the serum test, 00:09:15.86\00:09:18.64 antibody test, and there are about three other 00:09:18.90\00:09:21.82 different tests that you can take as well. 00:09:21.85\00:09:23.56 But, the main thing is that if a person does have 00:09:24.05\00:09:26.33 these typical symptoms the GI upsets or the 00:09:26.36\00:09:30.16 non-GI upsets as well then I suggest that those who 00:09:30.19\00:09:35.30 have those symptoms to lay off the gluten 00:09:35.56\00:09:38.98 products the things that we mentioned. 00:09:39.01\00:09:41.38 Okay. For at least two weeks, and then monitor 00:09:41.41\00:09:45.04 one's digestive upsets. If they subside they are 00:09:45.07\00:09:49.41 more unlikely the person has celiac disease, but 00:09:49.44\00:09:52.46 again we should not neglect intestinal biopsy 00:09:52.49\00:09:56.93 because that's like the gold standard for that. 00:09:56.96\00:09:59.07 And again if one has these symptoms if one lay 00:09:59.60\00:10:03.36 off of these products in about three to five days 00:10:03.39\00:10:06.48 the symptoms should subside. Now most people believe 00:10:06.76\00:10:10.02 that celiac disease in inherited and one reason 00:10:10.05\00:10:13.98 for that because there was a study 00:10:14.01\00:10:15.38 done in Denver, Colorado. They took a tissue sampling 00:10:15.41\00:10:18.99 of over a thousand newborns and of that one 00:10:19.02\00:10:23.03 thousand newborns about 1 in 100 about 1% had 00:10:23.06\00:10:29.73 gluten intolerance, which is really the national average. 00:10:30.97\00:10:34.10 Now these are newborns, so it indicates that gluten 00:10:34.67\00:10:38.02 intolerance could be an inherited situation. 00:10:38.05\00:10:42.02 So, that's why sometimes only way of getting 00:10:42.64\00:10:46.29 around that is simply to lay off of the gluten products. 00:10:46.32\00:10:49.72 So, again make sure that if it says wheat free it's 00:10:50.06\00:10:53.35 not necessarily gluten free, had to be gluten free. 00:10:53.38\00:10:57.87 And the National Institute of Health is mandated in 00:10:58.38\00:11:02.14 the Food and Drug Administration to make a 00:11:02.17\00:11:04.94 definitive statement as to what is gluten free on 00:11:04.97\00:11:09.28 products starting 2008, wow! wow! because it is 00:11:09.31\00:11:13.44 epidemic and is growing at a growing rate. 00:11:13.47\00:11:16.60 So, then there is a possibility that some 00:11:17.23\00:11:19.14 individuals, who are adults now from what you 00:11:19.17\00:11:22.62 are saying actually had a problem 00:11:22.65\00:11:24.15 earlier and did not know it. 00:11:24.18\00:11:25.64 They were simply misdiagnosed. Okay. Right, 00:11:25.67\00:11:28.87 Okay. That's why it's very important to understand 00:11:28.90\00:11:30.82 because they are doing all these things being treated 00:11:30.85\00:11:33.86 with irritable bowel syndrome, inflammatory 00:11:33.89\00:11:35.78 bowel disease, chronic fatigue syndrome, 00:11:35.81\00:11:37.67 the problem is not going away because it could be 00:11:38.00\00:11:40.70 celiac disease, that's why the gold standard is 00:11:40.73\00:11:43.82 intestinal biopsy that they can see definitively 00:11:43.85\00:11:47.37 whether or not the person is indeed a 00:11:47.40\00:11:49.99 candidate for celiac disease. 00:11:50.02\00:11:51.58 What about nutritional deficiencies and if you 00:11:51.61\00:11:53.49 are having a problem of bloating and diarrhea and 00:11:53.52\00:11:55.41 all that, how is the nutrition or the 00:11:55.44\00:11:57.80 nutrients getting into the system. 00:11:57.83\00:11:59.57 Well good question because the point of it is 00:11:59.93\00:12:02.24 that once they have those symptoms the nutrition is 00:12:02.27\00:12:05.46 not going into the system because of the situation, 00:12:05.49\00:12:08.55 okay, in the intestines and so therefore what you 00:12:08.58\00:12:11.70 have is those who have celiac disease is like a 00:12:11.73\00:12:14.12 double whammy. You have the intestinal upsets, 00:12:14.15\00:12:16.77 but also the foods cannot simply, the nutrients from 00:12:16.99\00:12:20.87 the food cannot simply go into the system. 00:12:20.90\00:12:22.77 So, those who have celiac disease usually are iron 00:12:23.21\00:12:26.65 deficiency, so you have anemia because iron is 00:12:26.68\00:12:29.84 not getting into the system because of the GI upset. 00:12:29.87\00:12:32.89 Also you have osteopenia and also osteoporosis 00:12:33.52\00:12:37.87 because the calcium is not getting absorbed into the 00:12:38.06\00:12:41.18 system as well. Also the fat soluble vitamins, 00:12:41.21\00:12:46.43 that's vitamin A, D, E and K. We call that ADEK group, 00:12:47.16\00:12:54.71 ADE and K, those vitamins in particular 00:12:54.91\00:12:58.27 have a hard time going to a system from the food 00:12:58.71\00:13:00.94 that a person eats because of the 00:13:00.97\00:13:02.84 digestive upset as well. So, vitamin B, folic acid 00:13:02.87\00:13:08.38 again because of the problem with the upset 00:13:08.76\00:13:12.74 stomach or digestive upset. So, with those people it 00:13:12.77\00:13:17.05 may be better to take some type of multi 00:13:17.08\00:13:19.77 supplement to offset the deficiency based on the 00:13:19.80\00:13:23.55 symptoms from celiac disease. 00:13:23.58\00:13:25.58 Woh! Okay. That's a lot. 00:13:25.61\00:13:27.97 Yeah. As a matter of fact I got a couple of friends 00:13:28.00\00:13:30.40 that have some problems with the gluten intolerance. 00:13:30.43\00:13:32.35 Yes. I just kind of wonder if they I guess certain 00:13:32.38\00:13:35.62 culture or certain group that actually has the 00:13:35.65\00:13:39.49 problem with celiac disease from what you are 00:13:39.52\00:13:41.34 saying that is something that could be anybody, yeah, 00:13:41.37\00:13:44.53 anybody, it could be anybody. Yes. No certain group 00:13:44.56\00:13:46.80 because of there has been some good studies 00:13:46.83\00:13:48.86 published in the New England Journal of 00:13:49.23\00:13:50.91 Medicine and also the Journal called 00:13:50.94\00:13:53.03 Gastroenterology, they both suggest that again 00:13:53.06\00:13:56.20 particularly from that study done in Denver, 00:13:56.81\00:13:58.90 Colorado that these are newborns. 00:13:58.93\00:14:01.21 Okay. 1 in 100, which is really the national 00:14:01.24\00:14:04.44 average, which is 1 in 133. So, again that's why they 00:14:04.47\00:14:07.86 figure that it is probably inherited disposition 00:14:07.89\00:14:12.14 as far as being intolerant to gluten. 00:14:12.17\00:14:14.47 Well I do remember I know one thing for sure 00:14:15.32\00:14:17.18 and that is that there are foundations out there like 00:14:17.21\00:14:20.90 you said the Celiac Foundation and when we 00:14:20.93\00:14:23.44 go in the kitchen room, show them the booklets 00:14:23.47\00:14:25.63 up way, they have a websites you can, yeah 00:14:25.66\00:14:27.74 actually go to, many websites 00:14:27.77\00:14:29.14 And get information from, but I know now that 00:14:29.17\00:14:31.96 when I go to store and that's just the regular 00:14:31.99\00:14:33.53 store because we flour it was an health food store, 00:14:33.56\00:14:35.53 where you only saw it.
