My family is now switching to a healthier 00:00:01.40\00:00:03.92 meat poultry chicken and turkey and not the 00:00:04.19\00:00:06.92 red meat because that's a healthier meat so they 00:00:07.11\00:00:09.81 say even now you are that's what you are 00:00:09.99\00:00:11.56 thinking today's program may be just for you 00:00:11.71\00:00:14.22 entitled poultry problems so stay by. 00:00:14.49\00:00:17.81 Hi! Welcome to Abundant Living. This is Curtis 00:00:45.39\00:00:47.66 Eakins your co-host. And I would like to introduce 00:00:47.78\00:00:49.87 my lovely bride Paula Eakins. How are you doing 00:00:50.02\00:00:52.75 today my love? I'm absolutely wonderful. 00:00:52.92\00:00:54.46 You're absolutely beautiful as well. 00:00:54.70\00:00:56.32 Thank you. You are welcome. Any comments 00:00:56.45\00:00:58.65 you want to give towards me in return. Like what. 00:00:58.73\00:01:02.03 Whatever is on your mind baby? You are 00:01:02.91\00:01:05.26 very handsome. Okay, we can continue. I was all 00:01:05.35\00:01:11.11 set for poetry and everything but poultry 00:01:11.28\00:01:14.52 poetry, so I'll go with the poultry, although one day 00:01:15.05\00:01:19.89 I might do the poetry. Okay, okay, now, let's say 00:01:19.98\00:01:22.77 a poem and talk about poetry too, yeah lot of 00:01:22.94\00:01:26.89 people making switch they are moving from the 00:01:27.01\00:01:29.70 red meat to they call the white meat. The white 00:01:29.87\00:01:32.56 meat looking at chicken poultry and so, I guess 00:01:32.59\00:01:36.29 my first question is or about heart diseases as 00:01:36.42\00:01:38.90 it relates to poultry, eating. Yeah, now of 00:01:38.93\00:01:42.20 course lot of people again switching from red 00:01:42.34\00:01:44.13 meat to poultry and let's define the term poultry 00:01:44.25\00:01:47.87 first. Poultry takes now only just chicken 00:01:48.16\00:01:50.39 because people think of we say poultry they think 00:01:50.55\00:01:52.71 of chicken also turkey and duck. So, those foods 00:01:52.76\00:01:57.46 are but we're gonna zero in on mainly chicken, 00:01:57.50\00:02:00.53 but we will hit on turkey as well. But as for 00:02:01.02\00:02:04.93 as cardiovascular disease is concerned let's put it 00:02:05.09\00:02:08.10 that way, chicken or poultry in itself is not 00:02:08.23\00:02:12.47 healthier than red meat. Now there are certain 00:02:12.67\00:02:15.07 components that will create a increase of coronary 00:02:15.30\00:02:18.44 artery disease, you have cholesterol, you have 00:02:18.55\00:02:23.21 saturated fat. Those two in combination will 00:02:23.71\00:02:27.86 dramatically increase coronary artery disease, 00:02:28.11\00:02:31.73 heart attack by every 32 seconds, a stroke about 00:02:32.51\00:02:35.48 every minute. Therefore with that in mind it's a 00:02:35.74\00:02:38.20 number one killer in United States 00:02:38.34\00:02:40.58 cardiovascular. Now almost a million people 00:02:40.92\00:02:44.04 about 900,000 per year, having said that you take 00:02:44.21\00:02:47.62 one ounce of beef, okay, one ounce of chicken 00:02:47.91\00:02:51.90 each has about the same amount of cholesterol 00:02:53.53\00:02:56.62 which is 25 milligrams so, there is no gain as far 00:02:57.09\00:03:01.64 as switching from red meat, beef to poultry or 00:03:01.74\00:03:04.87 chicken because that has the same amount of 00:03:05.21\00:03:06.92 cholesterol about 25 milligrams per ounce. 00:03:07.14\00:03:09.72 Same thing is true for saturated fat as well. 00:03:10.29\00:03:12.58 So, with that in mind that food the poultry does 00:03:12.90\00:03:16.70 not give you any gaining ground as far as reducing 00:03:16.90\00:03:19.48 your risk of cardiovascular disease 00:03:19.67\00:03:21.33 now with that in mind there is another thing 00:03:21.52\00:03:24.02 I want to talk about which is high blood 00:03:24.11\00:03:26.20 pressure, okay. Now when a person has high 00:03:26.33\00:03:28.43 blood pressure normally the doctor says you need 00:03:28.53\00:03:30.90 to cut down your use of what? Red meat! Red meat 00:03:30.93\00:03:34.55 or salt, oh yeah well, yes, sodium, yes, yes. 00:03:34.78\00:03:38.09 And that's true because if you reduce your intake 00:03:38.26\00:03:41.36 of sodium, your blood pressure will go down. 00:03:41.41\00:03:43.79 But now there is something else we need to 00:03:44.26\00:03:45.63 understand too, sodium does not only lower your 00:03:45.66\00:03:48.43 blood pressure but it's also what we call in a 00:03:48.61\00:03:51.67 medical profession the potassium to sodium ratio, 00:03:51.83\00:03:58.06 in other words if something has a high 00:03:58.67\00:04:01.50 potassium, a low sodium blood pressure goes 00:04:01.68\00:04:05.87 down, right. If there is low potassium, high sodium 00:04:05.94\00:04:11.09 blood pressure goes up, guess what? Chicken has 00:04:11.83\00:04:15.39 zero potassium and high sodium thereby blood 00:04:15.76\00:04:20.45 pressure tends to go up. So, now we're talking 00:04:20.57\00:04:22.86 about high blood pressure which also causes more 00:04:22.94\00:04:26.36 stress on the heart muscle thereby increasing heart 00:04:26.54\00:04:30.56 attacks and strokes. So, as far as poultry is 00:04:30.59\00:04:33.88 concerned, cardiovascular system, cholesterol; 00:04:34.10\00:04:37.36 blood pressure we're not gaining ground by 00:04:37.95\00:04:40.96 switching from red meat beef to poultry. 00:04:41.22\00:04:44.23 Well a lot of reasons that people also move from 00:04:44.87\00:04:47.06 the red meat to the chicken has to do with 00:04:47.27\00:04:49.61 weight gain as well, they are thinking that if they 00:04:49.78\00:04:52.28 get away from the red meat, right, going chicken 00:04:52.80\00:04:54.76 instead. This is low in calories and therefore 00:04:55.08\00:04:58.27 they'll loose weight now it is that the case? 00:04:58.92\00:05:01.77 Absolutely not, it's not even close, alright, 00:05:02.63\00:05:05.69 now far as weight or weight gain or weight loss 00:05:06.18\00:05:08.67 is concerned switching from red meat, beef to 00:05:08.70\00:05:12.11 poultry chicken or turkey the fat grams are about 00:05:12.30\00:05:16.37 the same as well, alright. You take for instance a 00:05:16.40\00:05:19.20 3.5 ounce of lean stake and 3.5 ounce of chicken, 00:05:19.25\00:05:25.45 alright, the calories from fat is the same so, 00:05:26.12\00:05:30.12 there is no ground being gained far as fat grams is 00:05:30.23\00:05:33.12 concerned for as chicken or even turkey. Even your 00:05:33.21\00:05:36.84 turkey sometimes now you have a turkey luncheon 00:05:36.95\00:05:39.97 meat and the gram fat amount in turkey can be 00:05:40.05\00:05:44.34 very high as well. Now-a-days we just saw 00:05:44.47\00:05:46.83 last week that you have ground chicken, 00:05:47.00\00:05:50.58 just packaged, just like ground beef, alright. 00:05:51.39\00:05:53.69 So, again the fat gram amount is the same, 00:05:54.01\00:05:56.16 cholesterol is the same, the saturated fat is to 00:05:56.83\00:06:00.11 same as well as far as poultry and also the 00:06:00.25\00:06:04.22 ground beef. Well you know one of the things as 00:06:04.25\00:06:08.13 moms is concerned when our children are going to 00:06:08.28\00:06:10.80 lunch we fix those luncheon meats, 00:06:10.90\00:06:13.09 that's right. You know they can have sandwiches 00:06:13.21\00:06:14.58 and stuff so you just got finished saying that 00:06:14.61\00:06:16.42 sandwich, chicken and turkey is being also being 00:06:16.45\00:06:18.34 added in as a part of that luncheon meat so 00:06:18.53\00:06:21.22 I guess my question then how safe is, I mean 00:06:21.33\00:06:24.08 we know before that we talked about luncheon 00:06:24.18\00:06:25.87 meat, right, sodium nitrates which is all over the 00:06:25.96\00:06:28.62 news for some time and still on the new for 00:06:28.76\00:06:30.73 sometime, right. So, then how does the chicken 00:06:30.76\00:06:32.52 and turkey combination in a luncheon meats 00:06:32.71\00:06:35.27 add up? Yeah, you know years ago now you 00:06:35.37\00:06:38.30 go to some very popular Fast food restaurants and 00:06:38.42\00:06:43.02 those restaurants are primarily selling hamburger 00:06:43.64\00:06:46.86 they are known for selling hamburgers. Now you go 00:06:46.89\00:06:49.79 to so many fast food restaurants, we did this 00:06:49.82\00:06:52.20 going through airport just looked on the menu now 00:06:52.77\00:06:55.43 more sandwiches are chicken than hamburgers, 00:06:55.89\00:06:58.81 absolutely. Although they are selling when 00:06:58.94\00:07:01.29 they first started years ago hamburgers there is 00:07:01.33\00:07:03.48 more chicken sandwiches and more chicken is 00:07:03.56\00:07:05.76 the salad as well, because chicken has doubled 00:07:05.79\00:07:10.28 more than doubled since 1970. Turkey is 00:07:10.46\00:07:14.71 increasing at an increasing rate. So, thereby a lot 00:07:15.03\00:07:18.37 of people are moving to poultry thinking that is 00:07:18.40\00:07:20.00 healthier. Now as far as, what you just asked me? 00:07:20.18\00:07:23.21 I asked you, about the luncheon meat. Oh, 00:07:23.45\00:07:25.48 the luncheon meat, yeah. Now when you go to 00:07:25.51\00:07:27.29 the grocery store folks and this is something you 00:07:27.32\00:07:28.87 can do in the grocery store. You looked up the 00:07:32.72\00:07:34.09 package container on the back and look and see the 00:07:34.12\00:07:36.46 amount of calories on that luncheon meat, 00:07:36.61\00:07:39.53 the poultry, either turkey or chicken. Okay. Okay, 00:07:40.33\00:07:42.76 that's very important but what's more important than 00:07:42.90\00:07:45.41 that is the calories from fat. Now they'll say that 00:07:45.44\00:07:51.22 you wanna loose weight you wanna make sure that 00:07:51.32\00:07:53.31 your calories from fat is no more than about 00:07:53.38\00:07:55.38 maybe 20%, 30% at max, okay. Now, for instance 00:07:55.50\00:08:00.11 if a package has lets say a 100 calories then the 00:08:00.97\00:08:04.70 calories from fat which is on the label let's say it is 80 00:08:04.79\00:08:08.97 you wanna leave that on a shelf because that's 80%, 00:08:09.88\00:08:12.34 alright. Chicken sometimes can be 80 and 90% 00:08:12.90\00:08:16.92 of the calories from fat. And turkey as well can 00:08:17.35\00:08:20.82 be over half of the amount of fat in the calorie so 00:08:20.92\00:08:24.38 therefore with the luncheon meats we wanna 00:08:24.61\00:08:26.95 look at the calories and also the calories from fat 00:08:27.09\00:08:30.41 also tells a story far as fat gram amounts. 00:08:31.20\00:08:33.83 You know we've talked before on Abundant Living 00:08:34.14\00:08:35.74 about the importance of reading those labels, 00:08:35.87\00:08:37.85 I mean it will means you have to go to store a 00:08:38.11\00:08:39.70 little bit earlier it just means it's a good idea 00:08:39.85\00:08:41.89 because that fat gram is really important, yes. 00:08:41.99\00:08:45.29 Not only the fat gram but the calorie amount all 00:08:45.54\00:08:47.32 that, so just read them and the labels are so much 00:08:47.35\00:08:49.41 more simpler to read now than before, yes. So you 00:08:49.57\00:08:52.06 wanna take some time out and read the label and 00:08:52.10\00:08:54.04 see exactly what you are getting. Absolutely! 00:08:54.12\00:08:57.13 You know, you know sometimes we just don't 00:08:57.30\00:08:58.75 read those labels and if you go to a grocery store 00:08:58.94\00:09:01.09 you'll find yourself reading labels all the time than 00:09:01.79\00:09:05.05 you are in a wrong place because fruits and 00:09:05.08\00:09:07.33 vegetables have no label. So, I mean in that sense 00:09:07.42\00:09:11.56 so if you understand what I'm saying, what about 00:09:12.06\00:09:13.95 the impact then of cancer what relationship do we 00:09:14.00\00:09:17.36 have as far as cancer as it relates to poultry 00:09:17.43\00:09:20.65 problems. Yeah, now as far as cancer is concerned 00:09:20.72\00:09:23.32 folks that it is really down hill, I mean there 00:09:23.40\00:09:27.12 several carcinogens found in the flesh of animals in 00:09:27.28\00:09:30.60 muscle of animals, yeah, Benzopyrene, 00:09:30.72\00:09:33.27 Methylcholanthrene, but the main thing that most 00:09:33.43\00:09:35.36 people heard of is Heterocyclic Amine, HCA in 00:09:35.40\00:09:42.81 Medical Journals, you know what been talking 00:09:42.84\00:09:44.59 about. And heterocyclic means it's the number 00:09:44.62\00:09:47.44 one carcinogen found in dead flesh. Chickens 00:09:47.47\00:09:52.20 loaded with it, let's go to our first graph and let's 00:09:52.40\00:09:55.23 see about Heterocyclic Amines or cancer causing 00:09:55.33\00:09:58.44 agents found in several of their flesh at this 00:09:58.69\00:10:01.17 time. Now first of all this called the Cancer Score 00:10:01.34\00:10:04.34 alright. Now the first thing we're gonna look 00:10:04.85\00:10:06.57 at is the steak and now the steak this is a grilled 00:10:06.71\00:10:12.28 stake or 2.5 ounce of grill Steak now the 00:10:12.52\00:10:15.50 Heterocyclic Amines or cancer causing agents in 00:10:15.77\00:10:18.27 this steak is 30 ng now nanograms is one billionth 00:10:18.42\00:10:24.20 of a gram of carcinogen alright 30. Now let's go 00:10:24.37\00:10:27.55 to next one Hamburger, Hamburger it is 33 ng 00:10:27.67\00:10:34.94 of carcinogens in the hamburger. Now folks, 00:10:35.45\00:10:38.38 hold on to your seat the last one is chicken this is 00:10:38.82\00:10:42.27 a oven fried pan broiled chicken it is a whopping 00:10:42.40\00:10:46.76 480 ng of carcinogens in the chicken alone. 00:10:47.60\00:10:53.08 This report even surprised the National 00:10:53.78\00:10:57.50 Cancer Institute so thereby switching from 00:10:57.80\00:11:01.65 red meat, beef to poultry chicken is really worse 00:11:01.87\00:11:06.58 than ground beef when we switch to this so 00:11:07.09\00:11:10.52 called Healthier Meat. Okay, that's a real eye 00:11:10.76\00:11:14.99 opener. Yes it is. Okay, you know looking at 00:11:15.15\00:11:18.54 the nanograms and then trying it and 00:11:18.57\00:11:20.36 automatically you automatically feel that the 00:11:20.41\00:11:23.47 chicken is going to be a better one. Yes. And so, 00:11:23.82\00:11:25.61 now we see that is not really a better one. 00:11:25.82\00:11:27.44 It's not, now of course some people will take 00:11:27.47\00:11:29.18 the skin off a little bit you do gain something in 00:11:29.30\00:11:31.78 that but still you get the cholesterol, saturated 00:11:31.93\00:11:34.48 fat still in a muscle of the chicken because 00:11:34.57\00:11:37.21 remember now all fast foods have what we call 00:11:37.40\00:11:40.22 inherent fat. That means the fat that is within the 00:11:41.20\00:11:45.87 muscle of the flesh of the animal that you cannot 00:11:46.04\00:11:48.84 cut away is call inherent fat, so therefore lot of 00:11:49.06\00:11:53.43 the fat you get you just can't cut away you get 00:11:53.46\00:11:55.69 that by eating the flesh itself. Well you know 00:11:55.80\00:11:58.67 over and over again as we are watching TV or 00:11:59.31\00:12:01.46 listening on a radio or picking up the newspaper 00:12:01.56\00:12:03.73 these days we've been seeing an awful lot about 00:12:04.08\00:12:05.84 food poisonings, you know as it relates to the 00:12:06.14\00:12:08.81 meat industry or meat poultry, talk a little bit 00:12:08.84\00:12:12.23 about that. Yeah we years ago we went to one 00:12:12.37\00:12:16.35 place I am not gonna list the name but he is a third 00:12:16.57\00:12:20.58 generation chicken farmer. I remember that, and 00:12:20.75\00:12:23.66 you know what I am talking about, yeah, anyways 00:12:24.17\00:12:25.54 I talked to him about couple of weeks ago before 00:12:25.57\00:12:27.44 we came up here to make sure I get the story 00:12:27.47\00:12:29.30 straight but we went there and he went outside 00:12:29.36\00:12:32.30 one morning he told he was just going out the next 00:12:32.96\00:12:34.88 morning to feed his chickens I said what time 00:12:34.99\00:12:37.48 you are going to get up he said about maybe 00:12:37.54\00:12:39.35 5 o'clock in the morning, I said well get me up 00:12:39.46\00:12:41.08 I have my camera. And now we can show this 00:12:41.24\00:12:44.01 graphic right now because we're going to his 00:12:44.07\00:12:46.00 chicken house and so he put on his mask, he put 00:12:46.15\00:12:51.76 on his boots. I was wondering why did he do 00:12:51.95\00:12:54.14 that? Yeah. When I was walking towards this 00:12:54.22\00:12:56.48 chicken house we see right there about maybe 50 00:12:56.62\00:13:00.22 yards when I got close to the chicken house, 00:13:00.38\00:13:02.89 thank you for that graphic. When I got close 00:13:03.10\00:13:05.36 the chicken house I began to smell the order 00:13:05.43\00:13:07.88 coming from that chicken house. Then I opened up 00:13:08.12\00:13:12.11 the door, the stench just, it rocked me so much the 00:13:12.97\00:13:19.80 Fumes, the Ammonia order was just unbearable 00:13:20.12\00:13:23.31 then I understood why he had a mask and he had 00:13:23.74\00:13:28.67 his boots. Do you have a mask on too? No I did 00:13:28.81\00:13:30.86 not. Oh, my goodness. Because I am from the city 00:13:31.17\00:13:33.30 you know I can take care of it, yea right. 00:13:33.51\00:13:35.19 Okay and my glasses were fogged up and so 00:13:35.35\00:13:38.29 what happens is that you have a lot of fecal matter 00:13:38.80\00:13:41.59 and cysts and puss and larvae and the chickens 00:13:42.00\00:13:44.50 are walking around in that, then the legs and 00:13:44.57\00:13:47.24 feet become infected they're breathing in all this 00:13:47.58\00:13:51.17 ammonia goes into the respiratory system into 00:13:51.43\00:13:53.91 the tissues so when we eat this chicken and these 00:13:54.06\00:13:57.81 chicks and things like that and it becomes an 00:13:58.10\00:13:59.84 awful mess and so therefore we're taking 00:13:59.88\00:14:02.14 all this into our system as well. And I said to 00:14:02.17\00:14:05.69 him well exactly what do chickens eat? Let's go to 00:14:05.72\00:14:10.80 our next graph and let's look at foul feed! Is what 00:14:10.91\00:14:14.81 I call it? Alright, let's go to first one, number 00:14:14.89\00:14:17.92 one is arsenic, he said that what they do if they 00:14:17.95\00:14:20.68 will inject the chickens with arsenic, it will 00:14:20.71\00:14:23.41 immobilize their muscles well therefore they cannot 00:14:23.83\00:14:26.52 move around well therefore if they are not moving 00:14:26.63\00:14:29.00 around the weight comes on faster so Arsenic. 00:14:29.28\00:14:33.59 Let's go to the next one, antibiotics of course now 00:14:33.82\00:14:36.71 this will cut down on some of the pathogens or 00:14:36.89\00:14:40.35 such as salmonella, Campylobacterales, Listeria, 00:14:40.39\00:14:43.78 there is a whole list of them but again a lot of chickens 00:14:43.82\00:14:46.40 still have these things as well, this also adds 00:14:46.43\00:14:49.27 weight to the system as well. Let's go to the next 00:14:49.35\00:14:51.50 one growth hormones, again they're trying to 00:14:51.60\00:14:54.66 fatten up these chickens as fast as they can as 00:14:54.78\00:14:58.57 cheap as they can. So, instead of giving them 00:14:58.76\00:15:01.24 to weight 4 pounds in 12 weeks. They weight 00:15:01.38\00:15:05.47 four pounds in five weeks, half of the time. Let's go to 00:15:05.60\00:15:08.88 the last one Dead chickens, dead chickens 00:15:08.91\00:15:12.91 thank you for that graphic I want to talk 00:15:13.35\00:15:14.72 about the dead chicken before we go into the 00:15:14.75\00:15:16.13 kitchen. There was a container outside of this 00:15:16.34\00:15:20.08 chicken house and you know, you saw that and if 00:15:20.20\00:15:23.80 showed you it folks, this program probably will not 00:15:24.17\00:15:27.33 air, you'll be too graphic. That's right. I said 00:15:27.58\00:15:29.96 what's inside that container? He says with 00:15:30.34\00:15:32.42 a smile open it up. So I opened it up took a 00:15:32.47\00:15:35.82 picture of it and there were dead chickens there, 00:15:35.85\00:15:37.65 I said what happens to these dead chickens 00:15:37.94\00:15:39.94 because I looked around I didn't see any chicken, 00:15:40.51\00:15:42.97 chicken cemeteries he said what they do is they 00:15:43.21\00:15:45.89 grind up these chickens and then also the baby 00:15:46.08\00:15:49.02 male chicks because they are not useful they 00:15:49.26\00:15:50.97 don't lay eggs and then he said they will cook it 00:15:51.00\00:15:53.37 down and then they will turn into a powder and 00:15:53.53\00:15:57.47 they mix it with other protein and feed it back 00:15:57.50\00:15:59.94 to the chickens that are alive and because its 00:16:00.00\00:16:02.75 cheap feed alright, and therefore we take all that 00:16:02.89\00:16:05.95 into our system and that's why there is a lot 00:16:06.18\00:16:08.88 of problems with Campylobacterales, diarrhea, 00:16:09.10\00:16:12.30 fevers, cramps, Salmonella, E-Coli and 00:16:12.46\00:16:15.15 you know food recalls or just about every single 00:16:16.03\00:16:19.13 week that covers several states so that's why there 00:16:19.26\00:16:22.55 is so much involved in this problems of poultry 00:16:22.58\00:16:26.55 so we got problems with poultry folks. And its, 00:16:26.64\00:16:29.36 I am not saying everything that I can say 00:16:29.70\00:16:31.55 but hopefully just enough to let people know that this 00:16:31.74\00:16:34.41 is not a health meat at all. Well I think you 00:16:34.61\00:16:38.22 changed Ann's mind and I'm sure that Bob said 00:16:38.45\00:16:41.19 enough with the chicken, yes, and after all I mean 00:16:41.54\00:16:44.29 we're the whole thing is talking about chicken. 00:16:44.42\00:16:47.12 We're gonna in the kitchen because we can 00:16:47.50\00:16:48.87 talk about the farm raised basically verses 00:16:48.90\00:16:51.44 the free range type chickens that are there. 00:16:51.47\00:16:53.94 I know you say what in the world are they gonna 00:16:54.23\00:16:56.02 cook that and knock chicken totally out. 00:16:56.21\00:16:57.99 So, believe it or not every time Curtis, 00:16:58.91\00:17:02.45 tells me what he is gonna do on our program 00:17:02.89\00:17:04.99 I turn around and I say okay let me match it up 00:17:05.15\00:17:07.02 with a recipe and so yes indeed we do have a 00:17:07.10\00:17:09.24 recipe and no it is not chicken. However we are 00:17:09.44\00:17:12.50 going to do a mock chicken strips that's gonna do 00:17:12.66\00:17:15.66 the stimulation of chicken. I am telling you 00:17:15.74\00:17:17.34 it is going to taste absolutely good look good you 00:17:17.37\00:17:19.30 need to get your paper and pencil 00:17:19.33\00:17:21.37 and meet us in the kitchen. 00:17:21.41\00:17:23.93
