Okay. You know, 00:00:56.56\00:00:57.93 a lot of times on our program every now 00:00:57.96\00:00:59.40 and then we'll do an all cooking show. 00:00:59.43\00:01:01.19 All cooking, today is the day. 00:01:01.22\00:01:02.59 And this is like special request because people 00:01:02.62\00:01:04.42 really ask us a lot of times. 00:01:04.45\00:01:05.82 I just love to see you guys cook. 00:01:05.85\00:01:07.24 And today is without exception. 00:01:07.64\00:01:09.01 Yeah, some guys tell me, 00:01:09.04\00:01:10.41 they like the talking portion then my 00:01:10.44\00:01:12.64 wife look at the cooking portion, so. 00:01:12.67\00:01:14.16 Well, Yeah. But its all cooking today. 00:01:14.19\00:01:16.19 All cooking today and we're doing Mexican. 00:01:16.43\00:01:18.18 I love foods from other countries. 00:01:18.21\00:01:20.41 Mexican, Caribbean, Thai, you name it, 00:01:20.44\00:01:23.37 we love it. But this very first 00:01:23.40\00:01:25.47 recipe we're gonna be doing. 00:01:25.50\00:01:26.87 Okay. Believe or not I would like to tell 00:01:26.90\00:01:28.27 you the story. We were on our 00:01:28.30\00:01:29.67 way to Atlanta where our daughter lives and 00:01:29.70\00:01:31.07 when we got there she was saying to us, 00:01:31.55\00:01:34.33 you know, I got this new 00:01:34.36\00:01:35.73 soup recipe that is so, so good and so she 00:01:35.76\00:01:38.19 started saying, I said, okay, 00:01:38.22\00:01:39.59 what goes into it? She said, 00:01:39.62\00:01:40.99 mommy you just start throwing stuff in the pot, 00:01:41.02\00:01:42.39 just throw stuff in the pot, 00:01:42.42\00:01:43.79 okay. All the leftovers, whatever. 00:01:43.82\00:01:45.19 No, it's not leftovers, but specific things that 00:01:45.22\00:01:46.59 she was using, but I mean she was 00:01:46.62\00:01:47.99 talking about the ease of it. 00:01:48.02\00:01:49.39 How easy it was to make it up, alright. 00:01:49.42\00:01:50.94 So let's go to this recipe. 00:01:51.46\00:01:53.79 Okay, Now you mentioned some ingredients in 00:02:31.17\00:02:34.31 there that may be again we're just assuming 00:02:34.34\00:02:36.51 that people may be watching for the 00:02:36.54\00:02:37.91 first time, I don't know why, 00:02:37.94\00:02:39.31 but they may be watching for 00:02:39.34\00:02:40.71 the first time, and you mentioned about 00:02:40.74\00:02:42.90 the Boca crumbles. You want to go 00:02:42.93\00:02:45.06 ahead and show that to them. Okay, 00:02:45.09\00:02:46.47 Again this is the Boca crumbles. 00:02:47.31\00:02:49.03 And again this is now at major grocery stores 00:02:49.06\00:02:52.14 across this nation as well. 00:02:52.17\00:02:53.78 And this is plant based and so get 00:02:54.44\00:02:56.40 that out there, there you go. 00:02:56.43\00:02:57.80 This is no animal protein. No animal protein. 00:02:58.11\00:03:01.21 No animal products at all, cholesterol free, 00:03:01.24\00:03:04.14 very little saturated fat and this can 00:03:04.17\00:03:06.45 take the place of ground beef, alright. 00:03:06.48\00:03:08.99 Ground beef, ground beef. 00:03:09.02\00:03:10.39 It has a nice texture now you like this, 00:03:10.42\00:03:11.79 there's many other ground beef 00:03:11.82\00:03:13.19 mock out there, but I think you 00:03:13.22\00:03:14.80 like Boca crumbles your personal favorite, 00:03:14.83\00:03:16.88 is that correct? Well, let me show them why? 00:03:16.91\00:03:18.45 Yes, because when we actually see it, 00:03:18.48\00:03:20.18 it looks just like that of regular ground beef. 00:03:20.21\00:03:24.80 Okay. Alright, except for fact it is so not 00:03:24.83\00:03:26.88 raw it's already cooked up and so in that 00:03:26.91\00:03:29.41 scenario whenever I am looking at something, 00:03:29.44\00:03:31.05 trying to mimic a lot of times people will 00:03:31.08\00:03:33.38 call me up and say things like you know I like 00:03:35.64\00:03:37.01 the show because there are a lot of foods 00:03:37.04\00:03:38.41 that they're used to or that exchanged, 00:03:38.44\00:03:39.81 you know on Abundant Living we try to 00:03:39.84\00:03:41.37 exchange the stuff out like what for the 00:03:41.40\00:03:43.50 ground beef we use the Boca crumbles, 00:03:43.53\00:03:45.20 if you want to do the hamburger we 00:03:45.23\00:03:46.61 use the Boca vegan burger, 00:03:46.64\00:03:48.82 alright, so they're for chicken, for fish, 00:03:48.85\00:03:51.06 you name it, there are some substitute 00:03:51.09\00:03:52.85 or we call an alternative so that we can 00:03:52.88\00:03:55.29 get rid of the cholesterol, the high cholesterol, 00:03:55.32\00:03:57.22 heart disease all those diseases are out there, 00:03:57.25\00:03:59.99 alright, now on this recipe it calls 00:04:00.02\00:04:01.89 for also McKay's beef-style seasoning. 00:04:01.92\00:04:04.78 Yes, beef-style seasoning. 00:04:04.81\00:04:06.18 And let's explain that, 00:04:06.21\00:04:07.58 and McKay's beef-style seasoning, 00:04:07.61\00:04:08.98 believe it or not, is not a actual 00:04:09.01\00:04:10.38 beef at all. It's a mock beef, 00:04:10.41\00:04:11.79 alright, flavors that go together to 00:04:11.82\00:04:13.83 make that type and it is really good also, 00:04:13.86\00:04:16.75 there's a chicken flavor and there's 00:04:16.78\00:04:18.15 also a beef flavor, okay. 00:04:18.18\00:04:19.55 Okay. Now for the sake of time we've 00:04:19.58\00:04:21.78 already done it and started getting my 00:04:21.81\00:04:23.18 water ready, okay I got 00:04:23.21\00:04:24.94 my water going and I put. 00:04:24.97\00:04:26.34 And in there is already the beef-style seasoning. 00:04:26.37\00:04:28.66 And you could smell that smell, 00:04:28.69\00:04:30.06 you could smell it coming from there. 00:04:30.09\00:04:31.46 You just try from there. And with the water too. 00:04:31.49\00:04:32.86 That's that, that's just 00:04:32.89\00:04:34.26 a beef-style and water so far it's 00:04:34.29\00:04:35.66 all I got in there, okay, and what I'm 00:04:35.69\00:04:37.06 going to do is begin to add in, 00:04:37.09\00:04:38.46 now while I'm doing this, Curtis if you would, 00:04:38.49\00:04:40.11 it does call for the bell pepper. 00:04:40.14\00:04:42.09 So if you go ahead and get the bell pepper 00:04:42.55\00:04:43.92 chopped up for me, chopped up, 00:04:43.95\00:04:45.32 see I can do this. And this is a 00:04:45.35\00:04:46.72 very easy recipe, if I say it. 00:04:46.75\00:04:48.12 We got all the different beans in it, 00:04:48.15\00:04:49.52 red beans, kidney beans, dark red kidneys we're 00:04:49.55\00:04:51.56 gonna put those all in, to the water, alright. 00:04:51.59\00:04:55.80 Ife's Taco Soup. Ife's Taco Soup. 00:04:55.83\00:04:58.46 We thank you for, Ife thank you for 00:05:00.71\00:05:02.96 sharing this recipe with us 00:05:02.99\00:05:04.77 Sharing this recipe, it also calls for 00:05:04.80\00:05:06.87 diced tomatoes. Alright, 00:05:06.90\00:05:10.16 so we're gonna put the diced tomatoes 00:05:10.19\00:05:11.56 in this as well. 00:05:11.59\00:05:12.96 And I like to keep the juice and this makes a, 00:05:13.36\00:05:15.21 makes for a good flavor. You can use fresh 00:05:15.24\00:05:18.48 tomatoes if you like. But I like to just go 00:05:18.51\00:05:21.32 ahead use the one is salt free, 00:05:21.35\00:05:22.77 that's already in the can, okay. 00:05:22.80\00:05:26.02 It also calls for salsa, 00:05:26.05\00:05:30.38 mild salsa, okay, mild, mild, mild salsa. 00:05:30.41\00:05:34.27 What if somebody wants a little kick. 00:05:34.30\00:05:35.73 Have salsa. If they want, 00:05:35.76\00:05:37.13 if they want a little kick, 00:05:37.16\00:05:38.53 what we can't see that's your preference. 00:05:38.56\00:05:39.93 Just a mild is fine, and also we have salsa 00:05:39.96\00:05:41.70 you can make also in our book as well, 00:05:41.73\00:05:43.66 so this is a salsa going in, 00:05:43.69\00:05:47.29 okay, oh! This gives nice flavor to it. 00:05:47.32\00:05:49.72 Now is this recipe in you book yet, 00:05:50.18\00:05:51.93 or this is one of your new. 00:05:51.96\00:05:53.33 This is a new recipe, once again we are 00:05:53.36\00:05:54.73 using new recipes. Okay, all these new 00:05:54.76\00:05:56.13 recipes now, alright, will be added. 00:05:56.16\00:05:58.11 Okay, now we're gonna go ahead and put in, 00:05:58.14\00:06:00.05 let's put in the Boca crumbles. 00:06:01.06\00:06:02.57 Okay, I will think of, I want them to see 00:06:02.60\00:06:04.38 that once again when you. 00:06:04.41\00:06:05.78 It comes under the package. 00:06:05.81\00:06:07.18 So that we just need three packs to a box, 00:06:07.21\00:06:08.73 and two packages makes actually a pound 00:06:08.76\00:06:11.79 equal to a pound of ground beef, 00:06:11.82\00:06:13.53 alright, and comes in a little pack 00:06:13.56\00:06:14.93 I like that, just open it up 00:06:14.96\00:06:16.34 there you have it, okay 00:06:16.37\00:06:17.85 so you want me to go ahead and open this up. 00:06:17.88\00:06:19.25 Go ahead and open that up. 00:06:19.28\00:06:20.65 And both are these going in. 00:06:21.87\00:06:24.43 Obviously, going both 00:06:24.46\00:06:25.83 is like these go ahead, 00:06:25.86\00:06:27.23 we gonna go ahead and pour those in next. 00:06:27.26\00:06:28.63 Alright, and this is also going to have and 00:06:28.87\00:06:31.71 you gonna put that one in too and 00:06:31.74\00:06:33.94 we get all the goodies and you 00:06:33.97\00:06:36.26 know all the goodies out. 00:06:36.29\00:06:37.75 Now the Boca also has the regular paddies too. 00:06:39.64\00:06:42.72 Boca has that vegan fat, vegan paddy, 00:06:42.75\00:06:45.35 that's right, that's right, alright. 00:06:45.38\00:06:46.75 Okay, now we gonna go ahead and put 00:06:46.78\00:06:48.77 those bell peppers in, okay, you see it is very, 00:06:48.80\00:06:55.79 it is cut up pretty nicely all of that, 00:06:55.82\00:06:57.19 nice color, nice color. Oh! Thinking about the color 00:06:57.22\00:06:59.90 just the way I cut them up, 00:06:59.93\00:07:01.30 I thought. Okay. 00:07:01.34\00:07:03.56 Okay, thank you. Alright, 00:07:03.59\00:07:04.96 and lastly we're gonna ahead and put in 00:07:04.99\00:07:07.02 the taco seasoning. Now this is 00:07:07.05\00:07:09.33 taco seasoning, just sprinkle on it, 00:07:09.36\00:07:10.92 sprinkle on it. Okay, this is going to be 00:07:10.95\00:07:13.33 a good soup. Isn't it gonna be good. 00:07:13.36\00:07:14.73 I think Ife will be proud It smells wonderful, 00:07:14.76\00:07:17.07 it smells wonderful. Now, I tell you this 00:07:17.10\00:07:20.70 gets nice and hot. Now believe it or not, 00:07:20.73\00:07:23.37 she did hers in a crock pot. 00:07:23.40\00:07:24.77 Okay, she sure did. Did in a crock pot. 00:07:25.02\00:07:26.61 And then she just kind of sits, 00:07:26.64\00:07:28.27 she says what she does is she starts it 00:07:28.30\00:07:29.67 off and puts everything in that crock pot and then 00:07:29.70\00:07:31.96 she'll go shopping or clean the house, 00:07:31.99\00:07:33.79 or whatever she is gonna be doing should do that 00:07:33.82\00:07:35.81 and that way when she comes back home she 00:07:35.84\00:07:37.86 has it on low in her crock pot then 00:07:37.89\00:07:39.68 it's ready to go. It's that simple. 00:07:39.71\00:07:41.08 Okay, Yeah, but you know what's going 00:07:41.11\00:07:42.51 to happen and that is that not right this 00:07:42.54\00:07:44.55 moment we are actually going to move to our 00:07:44.58\00:07:46.98 next recipe and when we do that because 00:07:47.01\00:07:49.70 I know you're gonna ask me can you have 00:07:49.73\00:07:52.41 some soup. Now, how did you know that? 00:07:52.44\00:07:54.60 I know you're gonna ask me. 00:07:54.63\00:07:56.00 I know you're gonna do that. 00:07:56.03\00:07:57.40 From past experiences. 00:07:57.43\00:07:58.80 And I really want to see your face when 00:07:58.83\00:08:00.20 you see how really good this is, 00:08:00.23\00:08:01.60 okay. I gonna like this program already. 00:08:01.63\00:08:03.00 Now, the next recipe, believe it or not, 00:08:03.81\00:08:05.40 I have been looking for things like different 00:08:05.43\00:08:08.04 kinds of Lasagnas, okay, and this particular 00:08:08.07\00:08:10.43 one I came across and it was a lasagna that 00:08:10.46\00:08:13.23 actually was done with corn tortillas, 00:08:13.26\00:08:15.40 the soft tortillas shells, okay, rather than the 00:08:15.43\00:08:18.43 actually lasagna noodles. And so it's very, 00:08:18.46\00:08:21.18 very healthy, once again it's an 00:08:21.21\00:08:23.07 excellent item to use in a place of and 00:08:23.10\00:08:27.21 it looks just like regular lasagna except it 00:08:27.24\00:08:29.31 has that Mexican flair to it, 00:08:29.34\00:08:31.12 oh! Okay, alright, alright, 00:08:31.15\00:08:32.52 so we're gonna go to the recipe for this one, 00:08:32.55\00:08:34.26 okay. Its called Mexican-Style Lasagna. 00:08:34.29\00:08:37.70 You know, Curtis this is one 00:09:07.96\00:09:09.33 of my favorites as I said before, 00:09:09.36\00:09:11.16 okay, and so with this recipe this is very, 00:09:11.19\00:09:13.29 very simple once again, easily-to-fix, 00:09:13.32\00:09:14.86 okay and it actually calls for the olive oil, 00:09:14.89\00:09:17.27 we heat olive oil a little bit there in a pan. 00:09:17.30\00:09:19.09 And then we're gonna take our stewed tomatoes. 00:09:19.38\00:09:21.72 Alright. And we're gonna go ahead and pour 00:09:21.75\00:09:24.05 those into the skillet. Now one of the 00:09:24.08\00:09:28.34 ingredients was the Mexican corn. 00:09:28.37\00:09:30.42 What's the different between Mexican corn 00:09:30.45\00:09:32.37 and American corn or I am looking 00:09:32.40\00:09:34.69 at this here, 'cause I see only 00:09:34.72\00:09:36.24 thing other than the corn, 00:09:36.27\00:09:37.64 the only difference in that of course the 00:09:37.67\00:09:39.75 black beans are mixed in it that's just for 00:09:39.78\00:09:41.15 the time sake but the only the difference is the 00:09:41.18\00:09:43.15 Mexican corn does have peppers, 00:09:43.18\00:09:46.09 red and green peppers in it, 00:09:46.12\00:09:48.01 right, right, okay. So red and green 00:09:48.04\00:09:49.41 peppers becomes Mexican corn. 00:09:49.44\00:09:50.81 That's all, okay, that's all. 00:09:50.84\00:09:52.21 Just checking. Now we have beans 00:09:52.24\00:09:53.61 in here though. And we also, yeah, 00:09:53.64\00:09:55.01 because this is going to be one of the layer 00:09:55.04\00:09:56.41 kind of lasagnas so we're gonna actually, 00:09:56.44\00:09:58.47 believe or not, I'm gonna put my 00:09:58.50\00:09:59.87 crumbles in. Okay, we've seen that before. 00:09:59.90\00:10:02.02 Okay. Alright. Alright. Two packs equals to 00:10:02.05\00:10:05.87 one pound, alright, we're gonna stir that 00:10:05.90\00:10:08.89 in there also. Because this is part 00:10:08.92\00:10:11.38 of the layering effect for this is 00:10:11.41\00:10:13.80 Mexican Lasagna. Mexican style Lasagna. 00:10:13.83\00:10:17.11 Doesn't that smell good? Now so people in 00:10:17.14\00:10:18.51 Mexico this is the kind of Lasagna they eat. 00:10:18.54\00:10:20.75 I have no idea. But I do know that 00:10:20.78\00:10:23.30 when I saw this recipe they had, 00:10:23.33\00:10:25.24 they had the ground beef in it, 00:10:25.27\00:10:29.00 ground beef and pork, alright, and I was trying 00:10:29.03\00:10:31.84 to figure out how to change it up and 00:10:31.87\00:10:33.24 it's actually called Mexican Lasagna 00:10:33.27\00:10:35.52 so you have to probably ask somebody 00:10:35.55\00:10:37.74 that question. Go to Mexico and ask 00:10:37.77\00:10:39.88 somebody, will you eat this kind of it, 00:10:39.91\00:10:41.70 well a number of that, but well in America 00:10:41.73\00:10:43.10 this what we're gonna eat today. 00:10:43.13\00:10:44.50 Anyway, anyway, anyway. Now what I am going 00:10:44.53\00:10:48.70 to do is in our dish we're gonna actually lay 00:10:48.73\00:10:51.89 down and we already made a comment about. 00:10:51.92\00:10:53.29 This is corn tortillas, 00:10:53.32\00:10:54.69 okay, we're gonna be using, 00:10:54.72\00:10:56.24 this is soft, okay, soft, soft tortillas. 00:10:56.27\00:10:59.21 This can be purchased at our grocery store. 00:10:59.24\00:11:00.61 Absolutely, absolutely, now these you put like 6 00:11:00.64\00:11:03.12 of them down 1, 2, 3. Kind of overlap then, 00:11:03.15\00:11:05.06 yeah, alright, go ahead and put three more now. 00:11:05.09\00:11:07.89 On the same side. On the same side. 00:11:07.92\00:11:09.29 You're gonna have to do your side of it 1, 2, 00:11:09.32\00:11:11.50 and 1 more, okay, and once again like I said, 00:11:11.53\00:11:16.04 it's a very easy one, so let me just put this 00:11:16.07\00:11:17.44 out of the way, do they come up 00:11:17.47\00:11:18.84 on the side? No, no, no, they don't 00:11:18.87\00:11:20.24 let them to come on the side. Okay. 00:11:20.27\00:11:21.64 Alright. go and put that in a trash for me 00:11:21.67\00:11:23.58 there and what I'm gonna do is I'm gonna 00:11:23.61\00:11:25.57 actually brings closer to me because what I 00:11:25.60\00:11:28.29 would like to do now is this is nice and warm. 00:11:28.32\00:11:30.91 So the Boca ground beef and tomato, 00:11:30.94\00:11:36.10 now we're gonna go ahead, 00:11:36.13\00:11:37.50 so this is gonna be like a layer or. 00:11:37.53\00:11:38.90 It's going to be layer, so it's a double layer 00:11:38.93\00:11:40.30 and you just gonna move it around so 00:11:40.33\00:11:42.11 that you actually get it, 00:11:42.14\00:11:43.79 oh I see, okay, nice big chunks of 00:11:43.82\00:11:46.97 tomatoes and also that mock beef. 00:11:47.00\00:11:50.81 Now, again this is one of your newer recipes, 00:11:50.84\00:11:52.83 not in the book yet. Yeah. Okay, 00:11:52.86\00:11:54.59 it will be add it later. 00:11:54.62\00:11:55.99 Alright, and then the next layer, 00:11:56.02\00:11:57.39 believe it or not, on top of this we're 00:11:57.42\00:11:59.74 gonna also put on the beans and corn, 00:11:59.77\00:12:03.33 alright, okay, Now this is the Mexican corn, 00:12:03.36\00:12:10.29 yes, yes, but with the beans in it, 00:12:10.32\00:12:12.44 with the beans, with the beans. 00:12:12.47\00:12:13.84 And also black beans and corns. 00:12:13.87\00:12:15.24 Oh! I just kind of put them together, 00:12:15.27\00:12:16.64 that way you keep with them you know 00:12:16.67\00:12:18.04 and save your dishes, okay, okay, 00:12:18.07\00:12:20.31 you make sure you save enough because this 00:12:20.34\00:12:21.78 is also going to be another layer. 00:12:21.81\00:12:23.18 Now you also have something there and that 00:12:23.21\00:12:25.55 is the cheese we're gonna be using. 00:12:25.58\00:12:27.77 Yeah, maybe we want to get a close 00:12:27.80\00:12:29.17 up with this. This is the tofutti 00:12:29.20\00:12:30.82 cheese and again this is, lot of these foods are, 00:12:30.85\00:12:34.67 why don't you get the garter out, 00:12:34.70\00:12:36.07 there we go. All of these foods 00:12:36.10\00:12:37.47 now are purchased in your major grocery 00:12:37.50\00:12:39.81 stores because people are simply demanding these 00:12:39.84\00:12:42.07 type products. This is casing 00:12:42.10\00:12:44.31 free by the way. This cheese does melt. 00:12:44.34\00:12:47.34 This is soy based. And so this is the 00:12:47.37\00:12:50.55 cheese that we are using today, 00:12:50.58\00:12:51.95 milk free, cholesterol free, 00:12:51.98\00:12:53.42 and so what we're gonna do here. 00:12:53.45\00:12:55.43 So, what we're gonna do is we just 00:12:55.46\00:12:56.83 take the cheese and we are going to 00:12:56.86\00:12:58.23 take it out because it's not hard like regular 00:12:58.26\00:13:00.12 cheese and this is sort of soft, 00:13:00.15\00:13:01.52 so it's very pliable but it acts like this. 00:13:01.55\00:13:04.30 This is also a Cheddar and all I do is 00:13:04.33\00:13:07.06 just lay it down, lay it down on top, 00:13:07.09\00:13:09.59 okay, and come down the sides and you know 00:13:09.62\00:13:13.59 what I'm gonna do is I'm actually going to now 00:13:13.62\00:13:16.47 put on my next amount of same thing. 00:13:16.50\00:13:20.12 We're gonna repeat this same thing again and when 00:13:20.15\00:13:23.55 we repeat it we're gonna top it off 00:13:23.58\00:13:25.89 of course with the cheese. 00:13:25.92\00:13:27.84 So I know you want to see it again, 00:13:27.87\00:13:30.58 so we put it in the oven for about 400 degrees 00:13:30.61\00:13:33.74 and it bakes for about 30 minutes, 00:13:33.77\00:13:35.87 okay and you may want to take a break 00:13:35.90\00:13:37.28 and finish this off and then we will come back 00:13:37.31\00:13:39.17 with another recipe what do you think honey? 00:13:39.20\00:13:40.81 Yes, indeed, yes indeed. So stay by. 00:13:40.84\00:13:43.62
